ay, spring has sprung, is anyone else excited to see the mercury rising?! As we roll into summer, the first thing on many people’s minds is getting back in the water. Whether it’s splashing in the pool or taking a trip to the beach, living in a warm climate means that water activities are always on the agenda. But what if you can’t swim? I’m faced with this problem every day. As one of those unfortunate people that grew up in a big (English) city, I never learnt to swim as a child. Now I have a very profound fear of water which has stuck with me throughout my adult life. “Just jump in…” people often say, “you’ll get over your fear once you take lessons…” is another. I’ve tried, failed, tried and failed. (I know, I know, I’ll try again!) Because of this, ensuring my kids learn to swim to a high level is top of the activities list. As the biggest hypocrite ever, I’m parked on the side of the pool

(with very dry feet) coaxing them into the water to learn this vital lifesaving skill, knowing that you’ve got to do it early before they are too old and end up like me! So, this issue swim is IN! We chat to the Centre Manager at leading swim school Kingswim, to find out the critical swim skills every child should learn. And to help get your kids into the pool, we have a comprehensive directory of all the swim schools across the region. As well as getting splashy, we check out the impressive program at St Rita’s College that is enhancing girls’ participation in mathematics and numeracy programs. And we sit down with local legend Matt Golinski to find out all about his involvement in a fab charity that helps to bring veggie gardens to schools. With love,

How long should children take swimming lessons?

We all know that swimming lessons are important. But as kids get older and schedules get busy, are our little ones quitting lessons too early?

“Although it is logistically challenging to get the kids to the pool as they get older, swimming isn’t just another sporting pursuit, it’s a matter of life and death,” says Terri-Anne. “Living in Australia where 85 per cent of the population live with 50km of the coast, it’s essential we teach our kids to swim to a high level, at the minimum meeting the Australian Water Safety Council’s benchmarks.” Terri-Anne suggests all swimmers should be competent in all four of the competitive strokes: freestyle, backstroke, breaststroke and butterfly. “They should also have the ability to swim at least 400 metres freestyle non-stop, using the correct breathing and technique, and illustrate competence in the key safety skills,” Terri-Anne says. If a child is competent in the pool and is becoming bored with swimming lessons, Terri-Anne suggests creating more

water options to keep them interested and build on their water knowledge. “Sports such as kayaking, canoeing, surfing, scuba diving and yachting become accessible options and great activities for the family to do together.”

WHAT DO YOU LOVE MOST ABOUT THE SUNSHINE COAST? Having grown up on the Coast and lived here most of my life, it is definitely my home and I love every part of it. I’ve lived in other places but always come back to where my heart is. It’s hard to find anywhere in the world that has a better climate, a more relaxed lifestyle or a more diverse natural beauty than the Sunshine Coast. W H AT’S B E S T A B O U T LO C A L P R O D U C E? The key word when it comes to produce in this region is diversity. We’re lucky enough to have access to world class seafood fresh from the trawlers each day, as well as beef, pork, lamb, chicken and dairy from the hinterland, and so many different microclimates on the Coast means we have a greater variety of fruit and vegetables than probably any area in all of Australia. And what makes it the best is the pride and care taken by the producers themselves. WHERE DO YOU SOURCE YOUR PRODUCE? I have developed some great friendships with producers on the Coast over the past 30 years, and that network means I have direct access to a lot of the best ingredients available straight to the kitchen door. As a rule, the shorter the distance that your produce travels to get to you, the fresher and better quality it is, and the better the end product. T E L L U S A B O U T T H AT … Many years ago I was president of Slow Food Noosa, a convivium of a world-wide movement that advocates for good, clean, fair food. I had been to Melbourne and visited Stephanie Alexanders School Kitchen Garden in Collingwood, and saw what a powerful experience that was for the kids. I suggested to the group that this was something we should be involved in establishing within schools in our region. Slow Food Noosa has since helped lots of schools in the area set up gardens and bring kids on the coast that bit closer to understanding how food is grown and why it should be respected. I get to experiment and come up with new dishes using all the bounty of seasonal, local ingredients that are available to us in Noosa. My favourite thing about my job at Peppers is working with the great team and showing them ingredients and techniques that they may not have seen before. We’ve all grown together so much over the past 18 months. AND THE RESTAURANT ALSO HAS A VERY SUCCESSFUL APPRENTICE PROGRAM! Yes! I love teaching apprentices, they are the next generation of cooks, and any chance I get I like to teach them something new and inspire them to want to learn. It’s a tough industry with a low retention rate for young chefs, so the more we can encourage them and make working in a kitchen a fun experience the more likely we are to keep them. I’m a keen distance and trail runner, so I do a lot of that, and I also love playing music with my friends. Try getting a kid to eat a turnip normally and they’d scream the house down, so there’s something to be said for that connection to food. The communication between you and your ex is generally: A Very good: we communicate regularly and easily and agree about most parenting matters; B Good: we communicate when required and when we have differences, we work these out; C Poor: we communicate mainly by text or email and struggle to resolve our differences; D Non-existent: we are unable to communicate at all and disagree about everything. 2. The level of trust between you and your ex is generally: A Very High: we keep our word and uphold our agreements;

B High: there have been a few minor

issues with agreements not being followed; C Low: there have been times when core agreements have not been followed; D Very Low: there is no agreement to uphold. 3. Describe your preference regarding the structure for parenting arrangements: A Very Low: flexibility and being able to change arrangements as needed is a high priority; B Low: routine has a place but the ability to make changes to arrangements is more important; C High: routine is important and the ability to make changes should be limited; D Very High: consistency and certainty are very important. MOSTLY A’S: A verbal agreement may be the suitable arrangement for your family. MOSTLY B’S: A parenting plan may be the preferred pathway for your family . MOSTLY C’S: A consent order may be the best option for your family.

BROCCOLINI® HAM CHEESE MUFFIN TREES There’s no better way to sneak some veggies onto your child’s plate than to make them fun! Milder in taste than regular broccoli, Broccolini is a great choice for fussy eaters. Serves: 4 (makes 12) Prep time: 15 mins Cook time: 25 mins INGREDIENTS

2 bunches Broccolini® 2 cups self-raising flour, sifted 2 tbsp coconut or raw sugar ½ cup grated zucchini ½ cup grated carrot 2 green shallots, finely chopped 100g ham, chopped 1 cup grated tasty cheese 2 eggs ½ cup extra light olive oil 1 cup milk Extra finely grated cheese, to serve (optional)

METHOD

• Preheat oven to 180°C fan-forced. Grease a 12-hole muffin pan. • Drop 12 Broccolini® into a saucepan of boiling salted water. Cook for 2 minutes, until bright green and just tender. Drain well and pat dry with paper towel. Cut them in half crossways, set the flower ends aside. Finely chop 4-6 stems, you need 1/4 cup, set the rest aside (see tip). • Combine the flour, sugar, carrot, zucchini, shallots, ham, cheese and chopped Broccolini® stems in a large bowl. Whisk eggs, oil and milk together, season with salt and pepper. Add to ham mixture, stir gently to combine. Divide evenly among muffin holes. Bake for 20-22 minutes or until light golden and cooked through. Stand in pan for 5 minutes, then transfer to a wire rack.

• Carefully make a hole in the centre of each muffin using end of wooden spoon. Insert the Broccolini®. • Sprinkle with extra cheese and serve.
