W

hen it comes to Christmas, I’ve usually found there are two types of people: those that start the countdown in July and own an impressive array of Christmas paraphernalia, and those who are a wee bit grinchy. Admittedly, in my younger years I think I’ve generally fallen into the latter. The stress of buying presents to a set deadline and the expectation of it being a ‘perfect’ Christmas (whatever that may be), always left me feeling a little deflated. That was until recently. And I had kids. And the complete chaos they brought with them forced Christmas to be nothing traditional, and yet everything magical. By doing away with what was expected and having a day that works for everyone, around baby sleeps and toddler tantrum triggers (always use the blue spoon), Christmas began to make a bit more sense. Whether that’s a beach cricket battle followed by a sandy cheesymite scroll, or a dinner of chips and dips alongside the hilarity of charades with a 5-year-old, each year now is random, unique, and haphazardly special. So, to all the already exhausted mamas out there feeling the looming pressure of

Christmas – give yourself a break. The kids won’t remember whether the dinner was nicely presented, or the wrapping paper had matching tags. But they will remember that mum was sat beside them, relaxed and enjoying the day. To help in this quest for an easier Christmas, this issue we have a huge gift guide with everything that’s hot for under the tree this year. We also have a simple Christmas recipe for the whole family to enjoy (yup, even baby!). Even better, most of it can be made the day before and it can be packed up as a picnic if you decide to head out and about. Bella Grace ELC, Beerwah, embarked on a fundraising event for the farmers recently, by creating a farmer’s market, complete with fresh and locally grown produce from families and items grown at the service. The service also produced litres of ‘Worm Juice’ in their active worm farms, which they bottled and added to the market. The fundraising effort extended to creating a hand-made vertical garden, constructed from a recycled pallet and complete with herbs, plants and succulents, which was auctioned to families. The final week of fundraising invited families and educators to dress up in what they associate with farming, with strawberries, avocadoes, scarecrows, farmers and even a cow gracing the centre! Not only was this fundraiser a wonderful way to raise money for drought-stricken farmers, but also a great opportunity for discussions focused on mathematics, factual life cycles, weather, and community engagement. By involving the children in this process, the aim is to achieve rich conversation that would plant thought in children’s minds, regarding life choices and daily practices.

nity College opened its doors to the Caloundra community as a single-site Prep to Year 12 College with the aim of providing a flexible, supportive and encouraging learning environment for all students. We chat to newly appointed Principal, Mr Daniel McShea, to find out more about the life of this proactive and innovative college. TELL US ABOUT UNITY COLLEGE Unity College is a co-educational P-12 College, built upon 11 hectares of land in Caloundra West. We have over 1400 students enrolled in our three distinct phases of learning – Junior Phase (Years P–6) Middle Phase (Years 7–9) and Senior Phase (Years 10–12). Throughout each phase we deliver high quality teaching and learning initiatives and provide innovative

Being ecumenical means we represent more than one Church, we work with both the Caloundra Catholic and Uniting Churches. We also combine those values with our unique Celtic Christian Spirituality. WHAT DO YOU LOVE MOST ABOUT YOUR ROLE AT UNIT Y? Since commencing my role as Principal of Unity College in July this year, I have experienced the warm welcome of a positive, caring and close knit community. I have been impressed by the quality and the deep commitment from staff to ensuring that student learning and student well-being is at the forefront of everything we do. I truly believe that I have the best job on the planet and enjoy the diversity that the role brings, especially in a P-12 setting, as every day is different. From my arrival, I have found Unity College to be a place of genuine welcome and hospitality where learning is engaging and exciting and where positive relationships exist between students, staff and parents. I have a strong desire to instil a sense of hope and self-belief in young people, modelling a love of life and a love of learning to our staff and our students. I hope to continue to nurture the many outstanding things that are already happening at Unity College and to take the College to the next level as it establishes its identity and matures from its infancy to a P-12 College with over 1400 students and facilities that would be the envy of many. WHERE CURIOSITY LEADS TO DISCOVERY A new nature-inspired landscaped play space and refurbished flexible learning areas for little learners at Pacific Early Learning Centre.

ittle learners from two- to five-years old at Pacific Early Learning Centre (ELC) are enhancing their thinking skills within the newly renovated, spacious learning studios and the award-winning outdoor learning landscaped space. Underpinned by the principals of Reggio Emelia, the children are participants of a self-guided curriculum. The learning areas allow children to expand their ability to think, reflect and play as their environment is filled with natural light, has a calm ambience and readily available creative learning resources. The teaching teams empower the children to use routines to move through their day. Children embrace making decisions about their daily schedule, meeting their personal needs and identifying their own thinking and learning. The children are encouraged to inquire and investigate, recognise ideas and record their findings. The young learners also identify challenges, celebrate successes, share projects, locate resources, collaborate, brainstorm and co-construct their learning. Uninterrupted periods of play provide children with the opportunity to problem solve and further investigate an inquiry from beginning to end. Personalised learning is a term used to describe the tailoring of a student’s learning to match their learning needs and to support the development of their personal passions and interests. My learning Journal

This can happen through individual programming, small group work or by working in a flexible way with a whole group. Entry points can be designed by teachers, support staff or by the student themselves. Personalised learning is not about students meandering their way through an aimless curriculum. It is about rigorous structures with high learning expectations supported by high levels of monitoring and intervention within a range of flexible learning environments. Extensive research over recent years has shown that a personalised learning environment significantly improves student learning outcomes. The Prep and Year 1 classroom refurbishment has been designed to support such learning opportunities with flexible use of the classroom space. Large, small, circular, semicircular, individual and group work tables allow students to work in a range of ways and to maximise floor space. Lounges, beanbags and cushions provide students with a choice of working environments and promote collaboration. Classroom learning resources have been organised across the Prep and Year 1 classrooms to allow students immediate

access to the learning materials that they need generating creativity and problem solving. The computer network allows students continual access to computers either individually, in small groups or class, depending on need. Students’ voices are heard through individual conferences and class meetings. Class meetings are an opportunity for all students to share an equal voice. When a topic reaches a class meeting all interested students can have their say. 1 cup organic dried apricots (roughly chopped) 1 cup raw/activated and dried cashews 1 cup organic desiccated coconut ¼ cup coconut oil Optional: Pure Vanilla METHOD

• Place all ingredients in the food processor and blitz until the mixture is crumbly. • Spoon into moulds and press down firmly with the back of a spoon to compact. • Place in the fridge for a couple of hours to solidify then remove from the moulds and serve. NOTES

Your pregnancy questions… ANSWERED

The amount of health information available to pregnant women today can be overwhelming. We chat to Dr George Bogiatzis, leading gynaecologist, obstetrician and fertility specialist on the Sunshine Coast, to get his answers to the most common pregnancy questions.

CAN YOU DEMYSTIF Y WHAT FOODS ARE BAD DURING PREGNANCY? Listeria is a bacteria commonly found in foods and can be very dangerous in pregnancy. Listeria can be found in foods such as soft cheeses, pâté, raw meats and fish, oysters, pre-packed salads, raw or partly cooked eggs and soft serve ice cream. Patients often ask about seafood, these are all fine in moderation if you know they are well cooked and fresh. Fish with high mercury levels such as shark (flake), billfish (swordfish), catfish and orange roughie must be limited. One myth is that peanuts and diary should be avoided in pregnancy due to risk of allergies for babies. This is untrue and not based on available medical evidence. Patients should aim for a healthy balanced diet and completely avoid alcohol during and after pregnancy if they are breastfeeding. WHAT IS A NORMAL AMOUNT OF WEIGHT TO GAIN DURING PREGNANCY? Generally, a woman with a healthy weight range (BMI 18.5–24.9) can expect to gain between 10–16kg. Weight gain is distributed to different parts of a women’s changing body. For example, at full term (40 weeks), the weight of the baby may be 3.5–4kg, placenta 0.5–1kg, breast 0.5–1kg, and extra body fluid 2kg. Excess weight gain K I D S O N T H E C O A S T.C O M . is something I do monitor during pregnancy because it can increase the risk of developing diabetes in pregnancy, high blood pressure and complications during birth. I encourage patients to maintain a healthy lifestyle with a good diet and exercise. Pregnant women can exercise for the duration of their pregnancy and can help reduce some common symptoms of pregnancy such as backache and bloating/swelling. Also, it will often help maintain a healthy appetite and sleep patterns. Putting your feet up and having a ‘Nana Nap’ is also recommended in my healthy lifestyle recommendations.

Pregnancy Weight Gain Distribution:

THERE IS A LOT OF TALK IN GENETIC TESTING DURING P R EG N A N C Y, WH AT A N D WH E N DO YOU RECOMMEND TO YOUR PATIENTS? Medicine and science are changing rapidly. There are numerous tests available to enable the diagnosis of genetic diseases. Many of these are now non-invasive-meaning they can be confirmed with a single blood test, rather than the invasive tests previously used. As well, there is now a major push towards screening all women, and their partners, for diseases such as Cystic Fibrosis, Fragile X syndrome and Spinal Muscular Atrophy (three of the most common inheritable disorders), prior to conception. I suggest, when and what should be tested

WHAT ADVICE DO YOU GIVE PATIENTS REGARDING M E N TA L H E A LT H? Patients can sometimes underestimate mental health changes during and after pregnancy. I always advise women not to be too hard on themselves and that things may not always go according to plan. Often, it’s about adapting to unexpected circumstances. Women can be very critical of themselves. Setting realistic expectations and asking for help is very important. Waiting in line with crowds, the pressure of time and the noise of people walking around can be too much for many special needs children. This year, the annual photo with Santa will be less stressful for families with special needs children, thanks to an initiative running at Kawana Shoppingworld. The Sensory Santa sessions are purposely designed for those with sensitive needs. They allow children a one-on-one 15-minute session with Santa, outside of core centre trading hours, with lights dimmed and music

CHRISTMAS CRANBERRY CHICKEN Don’t let cooking dinner get in the way of all the fun on Christmas day! This fresh Australian Christmas salad is perfect for busy families, with easy options for all ages. Plus, with the luxury of cooking ahead, you’ll have more time for what’s important. Prosecco, anyone? INGREDIENTS

6 free-range chicken thighs 2 large sweet potatoes 300 grams of mixed salad greens 1 cup fresh kale, very finely shredded ¼ cup fresh snow pea sprouts, roughly shredded 1 carrot, grated ½ raw beetroot, peeled and finely grated 2 tablespoons olive oil 2 tablespoons apple cider vinegar 2 tablespoons raw honey 1 fresh lime, cut in half, juice and zest of ¼ cup cranberries, soaked for an hour in water 500 mls of bone broth (or chicken stock) 200 grams cherry tomatoes, halved ¼ cup fresh cherries, if available ¼ cup peppita seeds, (optional)

METHOD

• Cook the chicken thighs in the bone broth in a slow cooker for approx. 6 hours on medium • While the chicken is cooking, wash and chop the sweet potato into 2 cm sized pieces, leaving skin on for extra nutrients. • Place the sweet potato on baking trays and drizzle with olive oil and some Himalayan or sea salt and roast in the oven at approx. 180°C for approx. 30–45 minutes or until golden and cooked through. • In a small bowl whisk together the olive oil, vinegar, honey and fresh lime juice and zest. • Toss all the greens in a bowl with the dressing. • Arrange greens on a platter style serving dish. • Use a fork to shred the chicken and arrange on the greens decoratively. • Decorate the platter with tomatoes and roast sweet potatoes around the chicken, then sprinkle over the plump cranberries and optionally the green peppitas seeds and fresh cherries.
