A festive picnic is the perfect way to celebrate this wonderful time of the year with family and friends. However, if the thought of overheated kids and sand in your sandwiches has put you off picnics in the past, we have some tips to get you packing your esky once more! We also share some of our favourite recipes, ideas for entertaining the kids and tips to help you set the festive scene. SETTING THE SCENE...

ALL FUN AND GAMES…

★ The beach or park is guaranteed to be very crowded over the festive period. Use balloons tied to your esky as decoration and to direct your friends easily to your chosen spot.

Easy things to carry – frisbees, balls, twirling ribbons, hoops, skipping ropes, badminton. Or even better, near a playground! – Michelle

★ Hang brightly coloured Christmas baubles from your shade tent or gazebo. ★ Bring along some wine glass charms – everyone will know which drink is theirs and it will add an extra bit of colour.

We take our bocce set whenever we head out for a picnic – the kids and grown-ups love it! – Natasha

★ Use throws or colourful blankets to sit on instead of beach towels and get everyone to bring along a pretty cushion.

HANDY TIPS Remember a shade umbrella or gazebo to keep the kids cool. Baby wipes make quick work of sandy hands and spills. Use coasters for your drinks so they don’t topple over in the sand. Remember a bag for your rubbish. Use recyclable disposable plates and bowls, and pop them in the recycle bin on the way home. OUR FAVOURITE PICNIC

RECIPES...

Steve’s mum’s sweet rice Kerry – “This is my friend Steve’s mum’s recipe. It’s always on our table in summer.” Ingredients: • 500ml basmati rice • 2 pints water plus another 600ml • 100g ghee (or unsalted butter) • 8 cardamon pods • 2 x 2.5cm cinnamon sticks

Peach, lime and chilli salad

• 2 tsp turmeric

Christine I – “I use this regularly and it is delicious.”

• 1 tsp salt • 2 tbsp sultanas

Ingredients:

• 180g sugar

• 1 tbsp fresh lime juice

• 30g blanched slivered almonds

• 3 tsp extra virgin olive oil • 1 tsp raw sugar

Method:

• 2 limes

Wash rice in several changes of water and drain. Leave to soak in 2 pints of water for 30 mins. Drain for 20 mins.

• 8 yellow peaches, cut into thick wedges • ½ red onion, cut into thin wedges

Preheat oven to 150°C.

• 1 fresh red chilli, seeded, thinly sliced

Melt ghee in ovenproof pan over medium heat. Add cardamom and cinnamon. Stir for a few seconds.

Method:

Add rice. Stir gently for 3 mins. Turn the heat down.

Mix lime juice, olive oil and sugar together to make a dressing. Arrange the fruit and other ingredients in a bowl, then pour a little of the dressing over.

Add 600ml water, turmeric and salt. Turn heat up to medium. Stir until all water absorbed. Add sultanas, sugar and almonds. Stir to mix, cover with foil and put pan in oven for 30 mins. Remove from oven and stir. Remove cardamom and cinnamon before serving.

Best ever sausage rolls Kerry – “My entire family loves these. Especially a hit on the beach at Christmas time.” Ingredients: • 700g pork mince • 1 onion, finely chopped • 1 clove garlic, crushed • 1 carrot, grated • 1 zucchini, grated • 1 cup fresh breadcrumbs • ½ tsp ground nutmeg • 2 eggs • 3 sheets frozen puff pastry, semi-thawed • 1 tbsp sesame seeds Method: Preheat oven to 200°C and line two baking trays with baking paper.

Savoury summer fruit salad Natasha – “I’ll be making this gorgeous festive-looking salad this Christmas!” Ingredients: • 1 medium purple onion, chopped into slivers • 6 peaches cut into wedges • 1 punnet of strawberries, chopped into quarters • 6 medium dark red tomatoes • 1 bunch mint, leaves separated from vines • 1/2 bunch parsley • 1/2 bunch basil • 2 handfuls of hazelnuts, roasted and chopped • Juice of 1 lemon • Olive oil to drizzle • 2 pinches salt

Mix mince, onion, garlic, carrot, zucchini, breadcrumbs and nutmeg together in a large bowl. Season. Beat one egg and add to mixture. Divide into six portions. Cut pastry sheets in half and place a sausage-shape of mixture down the middle of each. Beat the other egg. Brush sides with egg. Roll up and cut into six pieces. Place seam-side down on baking tray. Brush the tops with egg and sprinkle over the sesame seeds. Bake for 20 minutes. Reduce heat to 180°C and bake for a further 10 minutes. Adapted from: www.taste.com.au

Layered Christmas dip Tanya – “Delicious and looks festive too!” Ingredients: • Mashed avocado • Mexican seasoning (optional) • Sour cream • Grated cheese • Sliced cherry tomatoes Method: Layer the ingredients in a clear bowl. Serve with corn chips. www.kidsonthecoast.com.au

Oreo truffles Suggested by our reader Leila Ingredients: • 300g Oreo biscuits • 250g cream cheese, softened • 50g milk chocolate Method: Crush or blend Oreos to form a fine powder. Add cream cheese and mix well. Roll mixture into small balls and place on a baking tray lined with baking paper. Melt chocolate in a heatproof bowl over a saucepan of simmering water. Remove from heat. Poke a toothpick into a truffle and dip in the melted chocolate, covering it completely. Repeat with remaining truffles. Chill in refrigerator for at least an hour. Spiced fig and ginger bread Summer sangria

Phoebe – “This has all the lovely spices that remind me of Christmas. Great for a picnic as it travels really well and lasts (if you can keep sneaky fingers away from it!)”

Ingredients: • ¼ cup water • ¼ cup sugar • 1 bottle Sauvignon Blanc • 1/2 cup passionfruit, mango or citrus-flavoured rum or vodka • 2 kiwi fruit, peeled and sliced • 1 mango, peeled and thinly sliced • 1 cup raspberries • Cracked ice

Ingredients: • 10 dried figs (preservative free) – plus 4 for garnish • 1 cup boiling hot water • 2 heaped tsp baking soda (bicarb) • 100g melted butter or coconut oil (1/2 cup) • 3 whole eggs • 4 tbsp coconut cream • 100 to 180g rice malt syrup or pure maple syrup (1/3 – 2/3 cup) • 1 tsp mixed sweet spices • 3 tsp ground ginger • 1/3 cup coconut flour • 2/3 cup tapioca flour

Method: Mix water and sugar in a pan and heat until sugar dissolves. Leave to cool completely. Mix sugar syrup, wine, rum or vodka, kiwi fruit, mango and raspberries together. Add lots of ice.

Preheat oven to 170°C. Line a baking tin with baking paper and grease with butter or coconut oil. Soak the figs and 1 heaped teaspoon of baking soda in boiling water for 5 minutes. Pour off 2/3 cup of water then add the eggs, coconut cream and syrup to the fig mixture. Puree in a food processor or thermomix. Add the flour, ginger, spices and 1 teaspoon of baking soda and process in the food processor for 5-6 seconds (or thermomix speed 6). STRAIGHT TEETH THE NATURAL WAY! Today about 80% of Australian children are growing up with crooked teeth. This is evidence of a craniofacial dystrophy (the poor development of the craniofacial structures). The craniofacial structures develop correctly only when children have: • lips together at rest • the tongue resting in the roof of the mouth • breathing through the nose (not the mouth!) • no lip or cheek movement on the subconscious swallow. Craniofacial dystrophy can be evident in the first years of life and can be treated at that age. It is best treated in the growing child, with improvements in tooth position, jaw size, jaw relationship and the airway a consequence of improved craniofacial development. Traditional orthodontic methods such as braces and extractions focus on moving teeth without regard for the underlying cause – it is not surprising that the vast majority of orthodontic treatment relapses without lifetime retention. The poor muscle and breathing patterns that originally caused the teeth to become ’crooked’ put the teeth back into that position when the retainers are no longer worn. Most orthodontic patients stop wearing retainers and see their tooth position relapse. Dr John Flutter (BDS London Dental Surgeon) provides early intervention treatment options for children that improve the underlying cause of ‘crooked teeth’ to attain stable results. This is called Myobrace Therapy. It treats children while they are still growing in order to improve cranial and jaw development. Treatment involves correcting the poor oral habits that impact negatively on the development of the face, jaws and teeth, such as mouth breathing and swallowing incorrectly. A Myobrace is a functional appliance that retrains the muscles of the lips and tongue. It is worn for an hour a day as well as all night during sleep. This is done in combination with various exercises to help retrain the muscle patterns of the tongue and lips, which are ultimately responsible for the position of the teeth. Another unique aspect of treatment is the incorporation of the ‘Breathing Retraining Programme’. Not only does breathing play an important role in the development of your child’s jaw – it also offers a world of health benefits that go beyond straight teeth! Overall this gives a holistic and less invasive approach to orthodontic treatment. The goal is to create room for all of the teeth to come into alignment, not extract them! OCTONAUTS LAUNCH ULTIMATE MISSION AT SEA LIFE MOOLOOLABA Sound the Octo-Alert! Captain Barnacles and his crew are landing the Gup-A at SEA LIFE Mooloolaba this summer as the Sunshine Coast aquarium unveils its thrilling new Octonauts experience on December 8. Young fans and their families are set to delight in the antics of Kwazii, Peso and all their favourite characters from the hit animated TV series as SEA LIFE Mooloolaba brings to life the colourful world of the Octonauts for this very special school holiday attraction.
