The Ingredients for Vegan Potato Tacos are:

● Potatoes: 450 grams ● Olive oil: 1 Tablespoon ● Bell Pepper: One, Finely chopped ● Taco seasoning: 2 Tablespoons ● Black beans: 425 grams ● Refried beans: 425 grams ● Tortillas: 8 in number ● Lettuce: 2 Cups, Chopped ● Avocados: 2, Diced thinly ● Jalapeno Sauce (With Cilantro) ● Limes and additional Cilantro

How to make the Potato Tacos


The Potato Tacos recipe is super easy, and it is vegan for all the benefits.

1. Take the Potatoes and cut them into little pieces. Put all the potatoes (After chopping) in a large bowl/pot and fill it with water. Heat the water and when it starts boiling, cover it with a lid. Let the potatoes sit in the water till they turn tender. It will take around 15–20 minutes for the potatoes to turn tender. Check using a fork and turn off the heat. Drain the water and keep the potatoes to the side. 2. Now, take the olive oil in a pan and keep the pan over medium to high heat. We will start by cooking the potatoes first. Add the potatoes to the pan and let them cook in the oil for a while. Make sure not to flip over or stir the potatoes. Once you get an idea that they are crispy on one side, flip the potatoes to the other side to add the


crunchiness. Add the Chopped bell pepper to the potatoes. Add the taco seasoning to the mixture as well and combine all of these. Let the ingredients combine well, and move on to add other ingredients to the recipe. 3. The third step in the Potato Tacos recipe is cooking the beans a little. Get a pan and keep it over medium heat. Add both the black beans and the refried beans to the pan. Stir them for a while over medium heat. Turn off the heat after cooking the beans. 4. Before assembling and preparing tortillas, place the tortillas in a paper towel and let them heat in the microwave for at least 30 seconds.

Assembling the Vegan Potato Tacos

Take the tortilla and start making layers with the ingredients. First, begin with layering the cooked beans, followed by the crispy


potatoes, chopped lettuce, and thinly diced avocadoes. Add a little Jalapeno sauce made with Cilantro and wrap them as tacos, and they are ready to serve.

Jalapeno sauce

Ingredients: The ingredients to the Jalapeno sauce are:

Jalapenos — 2 in number

Cilantro — A large bunch

Garlic — 2 Cloves

Vinegar — 1 Tablespoon

Olive oil- 1/2 a cup (You can reduce the quantity if you feel the oil is too much as per the consistency and the taste).


Mayonnaise- 1/2 a cup

Lemon Juice: A juice of 1 lime serves well for this quantity.

Salt: as to taste

Making of the Sauce:

To make the Jalapeno Sauce — Add Jalapenos, Cilantro, Garlic cloves, a tablespoon of Vinegar, mayonnaise, olive oil, lime juice, and mix them in a grinder. Mix them until combined well. Use a spoon or a spatula to mix them in between. Add a little salt as per your taste, and the Jalapeno sauce is ready to be served with the Potato Tacos.

Points to Note:


● You can entirely skip adding a Jalapeno sauce and can add or substitute it for another as per your taste and liking. ● Boiling potatoes is entirely your choice. If you wish, you can cook them directly in a pan. It will consume a slightly more time. ● Using a non-stick pan, it makes cooking easier. ● You can even cook the potatoes in an air fryer. It is so much easier, and they turn out perfect. You can add a little pepper over the air fried potatoes to add some flavor. ● The Vinegar used in the sauce is apple cider vinegar. ● The Mayo used is also vegan.
