SIMPLY SMITTEN A “girly girl” I am not. Glitter and glam aren’t much my thing. I’m more of a T-shirt, blazer, skinny jeans and flats kind of girl. There is one giant exception though. LYME DISEASE IS SNEAKY. IT’S CALLED THE GREAT IMPOSTER FOR A REASON. IT RARELY LOOKS THE SAME FROM ONE PERSON TO THE NEXT. The Great Imposter

Caused by a simple tick bite, Lyme Disease may appear early on as a rash, fever, headache, a few muscle aches and pains, and then may go away as strangely as it came on. Or it may not. It may cause no symptoms at all. And you may never have seen a tick at all. Kinda mysterious. But then, years later, it can come back. It can flare up again. And when it does, it can look like, well… anything really. That’s why it’s called the Great Imposter. For many, the primary problem may be fatigue, sometimes extreme, chronic, debilitating fatigue. Or weakness. Or poor stamina. For others it may be joint pain. Or back pain. Or muscle pain. Or stiffness. Or neurological symptoms like numbness and tingling, dizziness, or a hypersensitivity to noises, light, or smells that never before were a problem. Or strange skin rashes that come and go unpredictably. Or just come and never go. Or persistent, daily headaches. Or emotional symptoms like depression or anxiety. Or problems with concentration, memory, and “brain fog.” Here’s the problem, though. There are LOTS of things that can cause fatigue. Like lack of sleep. Or deficiencies in important nutrients like iron, folate, or Vitamin B12. Or poor diet. Or lack of exercise. Or thyroid dysfunction. Or other hormone issues. Or heart problems. The list is long, indeed. And there are LOTS of things that can trigger joint pain, muscle pain, back pain, numbness, tingling, dizziness, headaches, or strange, mysterious rashes, and brain fog. And because there are lots of possible causes for all those things, and because Lyme is rare (actually, not so rare, see box), most people, including many physicians, never think of Lyme.

Testing

And there’s another problem, too. It’s the problem of testing. Even the very best blood test available today, done by the very best labs in the world, often results in something called a “false negative,” which means that even though the infection is present, the test just can’t find it. (Remember, it’s sneaky.) So, if someone you know has been suffering with any (or several) of the symptoms that Lyme can cause, and if they’ve not yet been able to figure out why, then encourage them to ask their doctor about the possibility of testing for Lyme. It can’t hurt to ask or to test. And if you don’t test, you’ll never find it.

Weddings and etiquette go together like flowers and perfume. If there were ever a place to “get it right” this would be it. Unfortunately, there are a lot of opportunities for embarrassing blunders. Here, Susan Beckwith answers some FAQs on how to be a lovely wedding guest.

What should a guest avoid wearing to a wedding? The wedding is about the bride and groom. Guests should show respect by making an effort and dressing appropriately. While attempting to look your best is important, the goal should never be to upstage or detract attention from the happy couple. Avoid wearing white, which is an old tradition but it still holds true today. Here are a few other items to never wear to a wedding: plunging necklines, all-over animal prints, over-the-top make-up, and anything too short or midriff baring. You also don’t want to draw attention by dressing overly casually. If there were ever a time to make the effort, it’s for a wedding. Need inspiration? Is it in poor taste to have your gift shipped (think Amazon) instead of hauling it to the venue? For many years, the expectation has been that guests should bring gifts to the reception. However, with the rise of online registries, the trend has shifted. An added bonus of having your gift sent directly to the couple’s doorstep is that it circumvents the couple or their family the hassle of having to transport everything home at the end of the night. It’s still acceptable to take a gift to the wedding, but it’s definitely kosher to have one delivered as well.

What should a guest wear to different types of weddings? Are rompers OK?

When deciding on your wardrobe for the occasion, take into consideration the venue and time of day the ceremony is to be held. Generally, the more formal the wedding, the later in the day it is set. Your attire should be in alignment with the overall formality of the festivities. For example, a floor-length gown would not be a good choice for a rustic outdoor wedding. You shouldn’t wear a breezy sundress to black-tie-required nuptials. It is OK to wear black but remember, it’s a wedding not a funeral. You want to avoid wardrobe selections

that look too stuffy. What about rompers? My personal opinion is that dressy pant rompers are an acceptable choice. I would not opt for short rompers, even for a laid-back wedding; they’re typically too casual and too revealing for the occasion.

What should you do If you want to bring a significant other to the wedding but the invite only has your name on it?

If the envelope does not include your boyfriend’s or girlfriend’s name on the invitation, or specifically state “plus one,” they’re not invited and you should not plan for them to accompany you to the festivities. The exception is if you’re engaged or married. Weddings can be costly, and having to pare down the guest list is often one way couples try to keep expenses from becoming too exorbitant.

Who traditionally hosts bridal showers?

Historically, throwing the bridal shower has been the responsibility of the maid of honor or bridesmaids. However, that is no longer the case. It can be hosted by whomever really wants to host it. Oftentimes, it’s a combined effort. It’s definitely helpful to have multiple parties involved to break up the responsibilities and expenses. Also, having others outside of the bridal party help host can be

For example, my best friend and maid of honor lived in Waco, Texas, when I got married. She coordinated efforts with my aunt to host a shower in her home. It would have been unrealistic to expect her to plan the event without help from someone local.

What about wedding gift selections and how much to spend on a close friend or relative vs. not so close?

I say stick to their registry, or give money. There was a reason they spent time identifying things they want and/or actually need. If you decide to go with a monetary gift, the amount to give is a widely debated topic. Traditional etiquette says it should be equivalent to the estimated cost of hosting you at the reception. However, modern resources such as The Knot believe you should spend what “is appropriate to the relationship to the couple and also consider what’s reasonable in your city.” The Knot suggests these gift amounts: “Coworker and/or a distant family friend or relative: $50-$75. SAYS SHE’D DO IT ALL OVER AGAIN, IN A HEARTBEAT Alma “Sis” Kincaid was only 55 when doctors told her it was no longer safe for her to live alone. She would leave the stove on or burn potpourri, forgetting until the pot was scalded black. The family knew something had to be done, but what and who? Darla Israel, one of Alma’s seven children, decided she would become her mother’s full-time caregiver. That was 24 years ago.

For the next 24 years, Darla cared for her mother, who suffered from Friedreich’s ataxia, a rare inherited disease that causes nervous system damage and movement problems. About four years after moving in with her mom, Alma told her daughter she wanted to move back to their hometown of Indianapolis to be closer to other family members. Darla bought a house near Fountain Square.

“My mom is my mom, and you only get but one,” Darla says.

With help from neighbors and family, they planted a flower garden decorated with wind chimes that were among Alma’s most cherished gifts. Life as a caregiver was hectic, though. Darla balanced caring for her mom with raising two sons. And she also volunteered at their school.

Darla received CICOA’s 2018 Caregiver of the Year Award on April 18 during the nonprofit’s ninth annual Signature Breakfast. The award honors a personal caregiver in Central Indiana who models courage, sacrifice, strength and creativity while caring for another person. When the call came for help, Darla was recently divorced and raising two young sons alone. They lived about 20 minutes from her Alma, who had a mobile home in Portland, Tenn. “I talked to my boys, and I told them, we’re moving in with my mom. They were happy about it,” she says.

“Darla is not just a caregiver full of compassion, love and dedication, but she is a hero,” wrote Miranda Brickley, Darla’s niece, in a letter nominating her for CICOA’s Caregiver of the Year Award. She wrote that her aunt is “someone who, because ‘life happened,’ grew strong, took courage in herself and found that life presents us the greatest gifts when we make ourselves, by our actions and deeds, a gift to others.”

“SOMEONE WHO ... FOUND THAT LIFE PRESENTS US THE GREATEST GIFTS WHEN WE MAKE OURSELVES, BY OUR ACTIONS AND DEEDS, A GIFT TO OTHERS.“ Darla never imagined herself as a caregiver. “I realized the care I was giving — by giving Mom her shots, changing and bathing her, and doing therapy with her — these were things I never imagined having the strength to do,” she says. “The strength I found in myself and the love I felt for my mother got me through the difficult parts and surprised me.” As Alma’s conditioned worsened (there is no cure or treatment for Friedreich’s ataxia), Darla realized she needed help. About eight years ago, her mother spent several months in the hospital and became bedridden. When she was released back to Darla’s care, a nurse referred her to CICOA. “I called and said, ‘I don’t know what you can do for me, but I need help,’” Darla recalls. “CICOA helped me get aides and nurses. They helped me with meals. My care manager helped me with everything. Without CICOA, I was totally lost.”

CICOA also funded a home modification to make their bathroom handicapped accessible. Meanwhile, Darla worked with her mom to help her build back strength so that she could once again move from one room to another with a walker. Alma Kincaid died last fall at the age of 79. While Darla says there are challenges to being a caregiver, she would do it all over again given the chance. “In a heartbeat. Just waking up and seeing her smile. That would make my day knowing I did something right,” Darla says. “It made by day, because she was happy.” It was good for her sons, too, she says, and helped them develop empathy for others who are struggling. One day she knows she may need to lean on her children, because like her mother and her four sisters, she also has Friedreich’s ataxia. She takes it all in stride though, and says the key to being a caregiver is very simple. “Have a kind heart,” she says. “That’s what my mom always told me.”

At what stage of family planning should someone look for an OB?

Ideally, a woman will already have a relationship with an OB even before she starts trying to conceive. This is a great way to make sure she has a good rapport, that she’s already established there and the practice is familiar with her medical history. That being said, a lot of women choose a group after they’ve become pregnant. With that in mind, St. Vincent offers a meet-andgreet visit for new patients who just want to meet one of the doctors and tour the office.

Pregnancy brings a lot of questions, both from the pregnant woman and the OB. The woman needs to feel comfortable asking and answering everything! If she’s intimidated or just not comfortable with an OB, they’re probably not the right fit for her.

When selecting an OB, there a few questions to keep in mind. No. 1: Does the OB deliver at the hospital where you want to deliver? No. 2: Is the OB in a practice or solo, and is it a guarantee who will deliver? For example, our practice is a four-doctor practice and we rotate who covers the hospital, so any of the four of us may deliver. This is pretty common these days, so it’s best to know up front. No. 3: Does the OB offer services you’re really interested in? For example: midwife services, tub bath, nitrous oxide for pain control, postpartum tubal ligations, etc.

What are a few things every mom should know?

Most importantly, every pregnancy is different. And it’s also unpredictable. We all want to have a perfect, uncomplicated pregnancy and labor and delivery, but that’s not always a reality. Things happen. Don’t go in with any set expectations, and don’t compare your pregnancy to anyone else’s. Every woman has her own story, and that’s what makes the experience so amazing!

A 2017 study by Welch’s — yes, the grape jelly folks — of 2,000 moms of kids ages 5-12 drew a lot of attention. Among its findings: the average mom works a about 98 hours a week! That’s a lot of overtime. According to Indianapolis life coach Mary Beth Braun, finding balance in the bustle of everyday life is all about managing your energy. “Awareness is the first thing,” she says. “You might get a warning sign — a headache, a craving, being short with your family — and that means it’s time to put on your oxygen mask.” Mary Beth says we should constantly assess our energy throughout the day, attending to our basic human needs when it’s exceptionally low. “Go back to the basics. Address your sleep and nourishment and pinpoint what you need the most. Hydration, breath and rest are particularly important.” But don’t overdo it. “We tend to fall for these huge 180s,” she says, “the extreme diets or the latest workout trend. Just notice that you need more veggies and water today and start there. Don’t let others tell you what you need. Notice what the warning signs are telling you that you need.”

She’s also a proponent of “doubling up,” a term she uses for focusing on herself while completing everyday tasks. “First, figure out what the ‘game changer’ is for you. What gives you a return on energy? It doesn’t have to be something big. For me, it’s movement. So, when I go to my son’s lacrosse game, I walk around the track. It works with breathing, too. Whenever I’m waiting for something, I focus on my breath for a bit.” When all else fails, Mary Beth encourages women to master the art of starting over. “Every day the sun comes up, you get a clean slate. We all go through cycles where we’re running on empty for some time and then we can breathe again. Figure out your own rhythm.”

Laura helped her own mom, mother-ofthe-bride Andra Walters, break the norm for her bridal shower attire. “Moms of brides, hear me on this: You don’t have to wear a dress to be elegant!” Laura says. Andra wore a very polished play on menswear. The metallic and green shades also complemented Andra’s skin tone. Everybody can shine in what they’re wearing — not just the bride! Lydia’s bridal shower dress was feminine and flattered her skin tone, but most importantly, it was comfortable. “I want every client to feel amazing in what they wear,” Laura says. “I believe in self-love and representing your true self. A wedding is a great time to see family and friends, but they can also be stressful. With so much planning already involved in a wedding, consider skipping the headacehes that traditional rehearsal dinners can bring with them. I personally love the idea of hosting the rehearsal dinner at home or in a parktype setting. You can gather friends and family members and know the food will be fantastic. An at-home rehearsal dinner also gives you the flexibility to spend time with your closest friends and relatives in a comfortable setting. With just a little delegation, hosting can be done without a hitch. Start by enlisting loved ones who like to cook. Making a few key dishes ahead of time and setting up beforehand can be fun, and is truly a labor of love. I strongly recommend outsourcing your main meat. I’ve included a list of some of my most-trusted places, and some even offer delivery and setup — and side dishes! To supplement your meal, here are a few recipes, each serving 20 people. The quantities can be easily doubled or tripled, and generally can be prepared ahead of time.

Swiss Chard Salad I loved the wilted salad from my childhood, but as an adult, I prefer my greens on the crisp side, with plenty of flavor. (Yields about 20 servings.) SALAD 1 /2 cup olive or grapeseed oil 12 pieces thick-cut bacon, fried and crumbled (reserve 3 tablespoons fat) 3 /4 cup finely chopped shallots or red onion 3 tablespoons sugar 5 pounds Swiss chard (or greens of your choice), stems removed (and reserved), cut into 1 to 11/2-inch strips 3 tablespoons reserved bacon fat 1 /2 cup chopped walnuts or cashews 1 /2 cup diced green olives Zest of 4 lemons 1 /2 cup pickled stems (see below) Cracked pepper, to taste

1| Heat oil and bacon fat in a large skillet over medium heat. Add the shallots and sautĂŠ until translucent. Stir in the sugar and cook until the shallots start to caramelize. 2| Allow the shallots to cool slightly, and then toss and coat your greens. You can store the greens, covered, in the refrigerator for 24 hours. 3| Just before serving, toss in the crumbled bacon, chopped nuts, olives, freshly grated lemon zest, and pickled stems. Season with cracked pepper, to taste.

QUICK-PICKLE CHARD STEMS Reserved chard stems 1 /2 cup cider or rice vinegar 2 tablespoons water 4 tablespoons sugar Suggested flavorings, or use your favorite herbs and spices: 1 teaspoon brown mustard seed, 1 teaspoon yellow mustard seed, 1 sliced garlic clove, pink pepper corns (2 per jar), sprinkle of red pepper flakes 1| Chop the chard stems to fit according to the jar size you’ve chosen. (I used two 5-ounce canning jars: one with stems long, one chopped.) 2| Bring the vinegar, water and sugar to a boil, stirring until the sugar dissolves. Let the mixture cool a bit and then pour into prepared jars. 3| Add flavorings to each jar, and then fill the jars with the stems. Cover and store in refrigerater up to 30 days.

Potatoes in Vinaigrette WITH FRESH HERBS

This easy-to-prepare dish can be made the day before your rehearsal dinner. While tri-colored potatoes are pretty and are great to use, red potatoes work, too. You’ll steam them, but you’ll want to check them with a fork or knife to ensure they are fully cooked. (You certainly don’t want undercooked potatoes, but overcooked potatoes? That means mush.) Add some fresh herbs and serve at room temperature. (Yields about 20 servings.)

EQUIPMENT Large stockpot with tight-fitting lid Flexible steamer to fit in the bottom of the pot

INGREDIENTS 7 pounds red skin potatoes 2 tablespoons coarse salt 2 tablespoons smoked salt 1 /2 cup rice wine or red wine vinegar 3 tablespoons dill pickle juice 2 /3 cup Dijon mustard (or your favorite mustard) 1 cup olive oil 1 /4 cup capers 1 cup chopped parsley, stems removed 1 /4 cup fresh thyme, stems removed 1 /2 cup fresh dill, chopped with some sprigs for garnish 1 /4 cup chopped basil 8-10 green onions, thinly sliced

1| Wash the potatoes thoroughly. Fill the stockpot with about 11/2 inches of water and place your steamer in the bottom. Add half of the potatoes, about 3.5 pounds, to the steamer. Sprinkle the batch of potatoes with 1 tablespoon each of the two salts, cover and turn on high heat. Check the potatoes after 10 minutes, and then every 2 minutes, until they are tender all the way through. Strain, and repeat the process with the remaining potatoes. 2| To make the vinaigrette, blend the rice wine, dill pickle juice, and Dijon mustard with a whisk or immersion blender. Slowly add the olive oil. 3| Toss the mixture with the warm potatoes, and sprinkle with the capers. At this point, store the potatoes in the refrigerator until time to serve them. 4| Add the herbs and scallions just before serving. Don’t be afraid to go big on the herb — you’ll thank me later.


Buttermilk Cake

WITH FRESH STRAWBERRIES & WHIPPED CREAM CAKE 21/2 cups cake flour 1 /2 teaspoon salt 2 teaspoons baking powder Zest of 2 lemons 11/2 sticks butter, room temperature 11/4 cups granulated sugar 4 large egg whites, room temperature 2 teaspoons vanilla 11/4 cups buttermilk 1| Preheat oven to 350 degrees. Line three 9-inch cake pans with parchment paper. Sift together the flour, salt and baking powder in a bowl and stir in the zest. 2| In a separate bowl, beat the butter and sugar until fluffy, scraping sides often. 3| In a third bowl, whisk the egg whites, vanilla and buttermilk. 4| Add the flour mixture and the buttermilk mixture alternately to the butter and sugar, beginning and ending with the flour. Mix on medium, scraping the sides until blended. Do not overmix. Pour the batter into the prepared pans and bake for about 30 minutes. (After 25 minutes, keep a watchful eye on the oven.) When the centers of the cakes spring back, remove them from the oven. 5| Cool on a rack for about 5 minutes, and then carefully invert and finish cooling. Once cooled, they can be assembled or wrapped and frozen for later use.

WHIPPED CREAM & TOPPING 2 tablespoons instant vanilla pudding 1 quart heavy whipping cream 2 quarts fresh strawberries, cleaned and sliced (reserve the prettiest ones for the top of the cake) 1 /2 cup granulated sugar Juice of 2 lemons 4 tablespoons powdered sugar 1 tablespoon vanilla extract 1 /2 teaspoon almond extract (optional) 1| For the whipped cream, add the vanilla pudding mix to 1/2 cup of the heavy whipping cream. Whisk and then set aside. 2| Mix the strawberries, granulated sugar and lemon juice together and set aside. 3| Add the powdered sugar, extracts, and pudding/cream mixture (which should have thickened) to the remaining heavy whipping cream. Beat slowly for a few minutes until blended. Taste the cream and add more powdered sugar if you want it sweeter. 4| To assemble, arrange one layer of the cake on a cake stand. Neatly arrange the sliced strawberries on the cake. Cover them with the whipped cream and repeat. Spread or pipe whipped cream on the sides and top (though it’s not required to cover the sides). Decorate the top with the reserved whole strawberries. (If I were serving 20-plus people, I would make two cakes.)

Steamed Deviled Eggs Deviled eggs are often overlooked. As crowd pleasing as they are, the process can be a pain. For me, hard-boiled eggs were never consistent. And they were always unnerving to peel … until I started steaming my farm-fresh eggs. It’s such a small change, but it makes a world of difference. You get perfect cook-and-peel eggs, and can steam dozens at a time. For events like rehearsal dinners, I like to make a base recipe, and then add different flavorings. (Fillings are like iced tea — sweet or not, everyone has their preference.) Since we’re doing such a large quantity, bring out the pastry bag. Do a simple pipe, and let your garnishes do the rest. Serve on a decorative egg platter or simple board with rock salt and fresh herbs. (Yields 48 deviled eggs.) EQUIPMENT Large stockpot with tight-fitting lid Flexible steamer to fit in the bottom of the pot Ice bath and/or cold running water 2 16-inch pastry bags or 2 plastic zipper bags with 1 of the bottom corners snipped off to make a 2/3-inch opening

INGREDIENTS 2 dozen farm-fresh eggs 4 teaspoons ground yellow mustard seed Salt, smoked paprika and/or black pepper, to taste 2 cups olive oil mayonnaise 1 /3 cup (or to taste) sweet relish, drained 1 /3 cup (or to taste) dill relish, drained 1| Fill the bottom of the pot with 11/2 inches water and bring to a boil. Add about 12 eggs to the steamer, lower into the stockpot, cover and cook for 12 minutes. (You can drop an egg into the ice bath and peel it just to check before breaking them all, but 12 minutes works perfectly for me every time.) Drain the hot water and place the eggs in an ice bath or under running water. Crack them all and quickly peel them under running water. Repeat this step as many times as necessary for all eggs. 2| Working quickly, slice the eggs and place the yolks in a medium-sized mixing bowl. Cover the yolks with a warm, wet paper towel to prevent them from drying out. Soak the white halves of the eggs in cold water for 5 minutes. Then place them in a covered container and refrigerate until ready to fill. 3| Using a handheld mixer or immersion blender, beat the yolks until they have a crumbly texture. Sprinkle in the ground mustard; season with salt and pepper, to taste. Add the mayonnaise in batches, mixing on a low speed and scraping the bowl frequently. The mixture should resemble a thick paste. (Too thin means too much mayo.)

4| Once the filling is at the desired consistency, then comes “the great divide.” To accommodate everyone’s tastes, I add sweet relish to half of the filling and dill relish to the other half. 5| Place the whites on a serving platter. Fill the pastry bags with each filling and pipe each egg. Then comes the fun part: garnishing with your choice of accoutrements! My go-tos are olives, roasted peppers, fresh herbs, truffle paste or leftover relish.
