By Laura Dolce When it comes to the dining scene in the Kennebunks, everyone talks about lobster and pictures bowls of chowder, and a bright-red lobster on a plate next to a cup of melted butter. Of course, there are plenty of places to find – rather sublime – versions of that meal, but the truth is that in the last decade the dining scene in the Kennebunks has expanded to include a diversity of cuisines and chefs honing their craft in a way that has put the community on the culinary map. “Our restaurants and food makers translate our local, heritage ingredients like seafood, blueberries, and maple syrup (to name a few), and use them as the building blocks for a dis-

tinct culinary language that is unique to the Kennebunks,” said food writer Kristin Fuhrmann Simmons. And while that cuisine might be “authentic” to the area, it goes beyond what diners find on their plates. “What it means to be ‘authentically Maine’ has also transformed,” Simmons said. “We are so much more than our signature ingredients. Authenticity extends to the way in which we build relationships with our local growers and respect the time, process, and expertise it takes to bring these ingredients to the table, no matter what the application.” That sea of change in the way food is approached has brought with it a

edge, but rooted in tradition bumper crop of passionate food professionals who spur each other on. “We have some superbly talented chefs and restauranteurs in a relatively small area,” said Jackson Yordon, chef-owner of Salt & Honey in Kennebunkport. “The competition restaurants face for locals and tourists alike means a dining scene constantly evolving to stay current with trends in the ever-changing business of food. The result of all this competition means that tourist and locals benefit with a higher standard of cuisine across the board.” That puts more pressure on chefs to up their game all around – and to expand their offerings – even when it comes to lobster.

“While one chef makes a fantastic classic pot pie using loads of fresh local lobster, topping it with a handlaminated crown of hand-made puff pastry, another chef halves and stuffs it with artichokes and serves it Thermidor-style,” Simmons said. At the same time, she added, the scope of what is popular locally has changed and expanded. “You can eat gorgeously fried foodtruck Belgian French fries, or eat a roadside box of the freshest fried clams, lightly battered and served up with a creamy white pepper slaw. skill of our local talent, and that intangible and craveable taste-ofplace.” Sometimes that taste of place, though, is more rooted in tradition. Much of that can be found in the Kennebunks as well. “The food that I ate as a child, and that my parents and grandparents ate before me, can still be found in the Kennebunks,” said Chef Rebecca Charles, owner of both Pearl in Manhattan and Pearl Kennebunk Beach. “That continuity is what I love about the area. I can still get fried clams at the Clam Shack and eat them on the bridge like I did when I was a child, with the Shackford and Gooch

Fish Market next door. I still go to Nunan’s, for a no-frills lobster on a tray. This food is what inspired me to open my tiny restaurant Pearl in Greenwich Village 23 years ago.” So is lobster still king in Maine?

“Ironically, my New York restaurant, Pearl Oyster Bar, orders 8001,200 pounds of live lobsters every week for the lobster roll alone, which put us on the map 23 years ago,” Charles said. “But we actually sell comparatively little lobster at Pearl in Kennebunk, and when we do sell it, it’s more the lobster pot pie and lobster stew. I think people feel they can get lobster anywhere here in Maine.” Another constant in the Ken-

nebunks: the number of independently owned eateries remains high.

“As relatively small towns, the Kennebunks have always been populated with independent businesses,” Charles pointed out. “Even though times have changed and corporate hospitality groups have moved in and expanded, the charm of the town is still best represented by its small businesses.” And those small businesses can be vulnerable. So the best thing you can do is EAT THERE. “Independent businesses are slowly being forced to close, due to skyrocketing operating costs,” Charles said. “Support your local, independent restaurants and other businesses before they’re gone.”

Captain’s Cook-Off: Watch local chefs turn Maine ingredients into a gourmet dish, and see one crowned the winner.
