Ingredients • 100

ml olive oil • 3 gloves of garlic, squeezed • Half of a white onion, chopped • 1 chilli, finely chopped without seeds • 3 tb red wine vinegar • 2 tb fresh oregano • 10 grams of parsley • A dash of salt and pepper

Chimichurri salsa Cut the herbs and combine all ingredients. Place the salsa in the fridge for an hour or so to make sure the flavours will be absorbed.
