In a large pot, add beer, salt, sugar, bay leaves, thyme, onion, lemon and garlic. Bring to a simmer for 10 minutes and remove from heat. Add the remaining ice; this will help cool the brine solution. Refrigerate for 1 hour or until brine is well chilled. Use either a large 2 gallon container or 2 gallon Ziplock bag and add the chicken, then top off with the brine. Place in the refrigerator or in an iced cooler for 12-24 hours. Brine Option 2: In a large container or 2 gallon size Ziplock bag, add all the ingredients (water instead of ice) except the chicken; mix well. Add the chicken to the bag. Place in the refrigerator or in an iced cooler for 12-24 hours. Oven Cooking Instructions:Remove the chicken from the brine, rinse well, pat dry and let rest while the over is preheating to 475°F. Place bird on a roasting rack or large sauté pan and roast until the internal temperature is 160°F, about 45 minutes. Remove from oven and let rest for 15 minutes for any carry over temperature (the chicken will continue to cook even outside the oven, do to the high heat) and the juices to redistribute, before carving. Smoking Instructions:Follow either brine option 1 or 2. Instead of using an oven, use a smoker (fire, gas or electric) and cooking using a hot smoke technique, keeping the temperature at 250°F until the internal temp of the chicken is 165°F. For wood chips, I would recommend Apple, Pecan or Cherry wood chips soaked for 30 minutes in the same beer you used in the brine. These woods give a nice sweet smoke, giving a nice background smokiness instead of over powering with the flavor of hickory

South Jersey Car Shows & Cruises Beer CraZy by Contributing Writer, Nick Gaudio This afternoon, I decided to open up a Palo Santo Marron, by Dogfish Head Craft Brewery, based in Milton, DE. I'll be honest, I'm halfway through and ready for a nap, but not because it's boring. It is anything but boring. The 12% ABV and the rich full flavor of this “brown ale” has slowed me down. Hey, can you toss me a pillow please? This is an intense beer. Labeled as a brown ale, the Palo Santo Marron is much much more. Deep brown to black in color with a creamy espresso-like head, this beer packs in the flavor, malty with a liqueur (maybe brandy) bite, and the woody flavor from aging. This beer has a mellow mouth feel and the flavors linger on the tongue and lips. The alcohol is concealed well in all the flavor. You feel the alcohol quicker than you taste it. The label on the side brags about the 10,000 gallon wooden vessel created just for this beer, and tends to sum up this beer better than I could anyway.

Microsoft Hires Rapper, Things Go Terribly Wrong
Microsoft didn't have much luck with one its latest celebrity promotions. The software giant recently hired the rapper Machine Gun Kelly (MGK) to perform at a retail store for customers in Atlanta, GA, the performance, however, didn't go exactly as planned. During his performance he said "F**k these computers," and then began jumping on top of display tables while rapping. He apparently also stomped on at least five computers, according to a report from All Hip Hop's website. Needless to say, the rapper's performance didn't last very long. The Microsoft staff shut off his music and MGK was asked to get down, to which he did not respond politely. "I'm not getting down," MGK said. MGK did, however, get down and it looks like the crowd was a little disappointed. Editor's note: This idiot won't be getting any new endorsement deals soon

F1 RACING ABOUT TO BE MORE ATTRACTIVE When you think of technology, you may drift off to a world of computers, cell phones or medical equipment. However, I cant think of any other segment of our world which incorporates technology than auto racing. From raw materials, to use of those materials and the constant change of those materials being used against (or with) the laws of physics. F1 racing with the help of technology and their rulebooks is making a more “attractive” nose. The stepped noses seen on most of this season’s Formula One cars – and deemed ugly by many – are very likely to disappear next year, thanks to a change in the FIA’s technical regulations allowing teams to cover them with special fairings. The revised rules, just published by Formula One racing’s governing body, give details of the ‘modesty panels,’ which can be used to smooth the transition between the low nose and the high chassis. The fairings will not affect the car’s aerodynamics or impact-protection properties. Article 3.7.9 of the 2013 technical regulations refers to the new panels as “an optional, single piece, non-structural fairing of prescribed laminate (whose precise lay-up may be found in the Appendix to the regulations) which may not be more than 625mm above the reference plane at any point.” The rules have also been amended, as expected, to outlaw the doubleDRS system pioneered this season by Mercedes, where the team use the DRS activation mechanism to trigger other aerodynamic changes on the car. According to Article 3.18, the moveable rear wing “cannot be used to change the geometry of any duct, either directly or indirectly, other than the change to the distance between adjacent sections permitted by Article 3.10.2.”
