Brine Option 1: If you have planned ahead, this option will give you more flavors. In a large pot, add beer, salt, sugar, bay leaves, thyme, onion, lemon and garlic. Bring to a simmer for 10 minutes and remove from heat. Add the remaining ice; this will help cool the brine solution. Refrigerate for 1 hour or until brine is well chilled. Use either a large 2 gallon container or 2 gallon Ziplock bag and add the chicken, then top off with the brine. Place in the refrigerator or in an iced cooler for 12-24 hours. Brine Option 2: In a large container or 2 gallon size Ziplock bag, add all the ingredients (water instead of ice) except the chicken; mix well. Add the chicken to the bag. Place in the refrigerator or in an iced cooler for 12-24 hours. Oven Cooking Instructions:Remove the chicken from the brine, rinse well, pat dry and let rest while the over is preheating to 475°F. Place bird on a roasting rack or large sauté pan and roast until the internal temperature is 160°F, about 45 minutes. Remove from oven and let rest for 15 minutes for any carry over temperature (the chicken will continue to cook even outside the oven, do to the high heat) and the juices to redistribute, before carving. Smoking Instructions:Follow either brine option 1 or 2. Instead of using an oven, use a smoker (fire, gas or electric) and cooking using a hot smoke technique, keeping the temperature at 250°F until the internal temp of the chicken is 165°F. For wood chips, I would recommend Apple, Pecan or Cherry wood chips soaked for 30 minutes in the same beer you used in the brine. These woods give a nice sweet smoke, giving a nice background smokiness instead of over powering with the flavor of hickory

South Jersey Car Shows & Cruises Beer CraZy by Contributing Writer, Nick Gaudio I've been told that Samuel Smith's Imperial Stout is the best beer ever, so he and I both grabbed a 4 pack and headed to the cash register. I'm pretty sure I've had this beer before, but just never wrote anything down. It's brewed by Samuel Smith Old Brewery (Tadcaster) in N. Yorks, England. The label is very busy, mostly gold and black lettering on a white background. Who, what, when, where, and medals--all included. The cap and neck of the bottle are covered with a gold foil. This is a tall skinny bottle and is actually 12 ounces, not the typical European 11.2. The story on the back tells about the beer and makes sure you know that it's fermented in stone Yorkshire squares.

Nutty and roasted aroma with plenty of caramel and raisin sweetness. There is a really nice initial sweetness--raisins and cherries and plums and toffee and caramel. Quite delicious! A hoppy balance and nice roast come along and work really well with the sweetness, though sweet wins easily in the end.

The 7% alcohol is noticeable and works with the fruit in a rum cake kind of way. The alcohol percent is just right, glad it's not a liquor bomb. Creamy, smooth, nice feel in the mouth. Finally, a really pleasant aftertaste lingers for a long time. Excellent beer. Great to try or revisit if it's been a while.

After much work and anticipation from the public, the all new Huayra has been revealed. Taking its name from the South American “God of Wind”, the Huayra is specifically marketed for the shores of the US. Ever since the development of Pagani’s new machine, the company has been struck by the US regulations that have stalled delivery. But, according to recent reports, the first Huayras should meet there new owners by summer of 2013. At a recent event, Horacio Pagani confirmed the companies goals of meeting the 2013 delivery date. “The welcome we have received by the American audience and car enthusiasts in 2011 made us eager to return in 2012 with an even stronger presence and we cannot wait to see the first US-spec Pagani Huayras on North American soil in mid2013,” he said. Due to the strict US regulations, the Huayra will sell in very limited numbers….numbers which are dwindling as customers line up to get there paws on a car that is expected to live up to the Zonda’s already stellar reputation. So, keep your eyes on the road for the new “God of Wind” as the Zonda Huayra looks like it may finally make landfall soon on US shores.
