It is to take place in Shanghai, China’s biggest economic city. The SIAL CHINA fair is China’s largest food trade fair and was first held in 2000. Almost 2,700 food companies from 90 countries, as well as 55,000 buyers and visitors, will attend the trade fair this year. At SIAL CHINA 2015, MAFRA

During the fair, MAFRA and aT plan to promote a variety of Korean agri-products to local buyers and consumers through the Korean food pavilion. They will exhibit the foods that receive a lot of interest from the Chinese thanks to Hallyu (the Korean culture wave). These include: traditional Korean sauces, makgeolli (Korean rice wine), and Korean convenience foods. Powdered milk for infants and snacks and beverages for children—which

A representative Korean traditional liquor, makgeolli, is also becoming popular among the young Chinese who are interested in Hallyu. In the Makgeolli Exhibit Gallery, visitors will be able to try many different types of makgeolli and taste the dishes that match the wine. The Traditional Korean Food Exhibit Gallery will display and offer for tasting the Korean dishes that use traditional Korean sauces such as gochujang (red pepper paste) and doenjang (soybean paste). Korean cooking events will also be organized. The Kimchi Exhibit Gallery will introduce visitors to kimjang (kimchi-making custom) and recipes for dishes made with kimchi. Popular K-Food in China Ginseng Chinese consumers rate Korean ginseng products as the best in terms of effectiveness and brand value. Among the Korean ginseng products, the largest exports are those of ginseng roots and processed red ginseng. They are actively distributed in department stores and health food stores. Korean ginseng roots are popular among the Chinese as a high priced healthy food to give as present. Processed red ginseng products are exported to China in various ways: as a concentrate (extract), capsule, extract pill, tea, and so on.

The popularity of yuja tea (citron tea) as a healthy beverage is never ending in China thanks to the multiple merits of this tea—its beautiful yellow color, sweetand-sour taste, and abundant vitamin C. Recently, it can easily be seen at big distributors in Chinese inland areas and on Chinese online shopping malls. The favorite of Chinese consumers is honey yuja tea. Also growing is the positive response to organic yuja tea and premium yuja tea products that contain over 30 percent yuja pulp.

Seasoned seaweed is one of the Korean foods that Chinese tourists never fail to buy on their trips to Korea. The merits of Korean seasoned seaweed include being slightly salty but aromatic, low in calories, and inexpensive in price. Recently, new products—such as seaweed snacks for children—are being actively exported to China and receiving a positive

Exports of Korean agriproducts are increasing these days thanks to several factors: the improved quality and safety of the products, the continuing popularity of Korean cultural contents, and the expansion of negotiations with foreign countries on export quarantines. It is expected that the exports will rise further due to a growing presence of Korean agriproducts in the Chinese market and their vigorous entry into the new for Korea halal market. Mr. Lee Dong-phil, Minister of MAFRA (Ministry of Agriculture, Food, and Rural Affairs of Korea), who has been in charge of Korean export policies for the past three years, discusses the Ministry’s efforts to enhance recognition of Korean agriproducts overseas and to further expand Korean agricultural exports.

You’ve just entered the third year as the Minister of MAFRA. What kind of achievements do you see in the area of Korean agricultural exports?

In 2014, Korean agricultural exports reached USD$6.18 billion, which is an 8.1 percent increase compared to the previous year. Such an outstanding achievement can be partly attributed to the fact that we have conducted indepth studies on trends in production, distribution, and consumption of Korean agriproducts as well as on the food cultures and customs of the main importers—China, six South-East Asian countries, and two countries in Central and South America. The results of the studies and surveys were provided for the reference of Korean agricultural exporters and producers. In addition, we concluded negotiations on the quarantine inspections of 15 agricultural and stockbreeding export items. Those included the quarantine of the bell pepper with the Philippines, the pear with Mexico, the grape with Australia, the cymbidium with China, poultry with Vietnam, and samgyetang (ginseng chicken soup) with the US. Further, we entered Chinese online shopping malls and opened Korean agriproduct and food shops in Chinese department stores. Last but not least, we are holding KFood Fairs in foreign countries to promote premium Korean agriproducts.

Another step is to advance from Beijing, Shanghai, and Guangzhou to other major cities of the country. In addition to the Qingdao distribution center, which will start operations in June, we will build a cold chain system in association with seven Chinese joint distribution centers. More Korean agriproduct shops will be open in online shopping malls such as Alibaba and Tmall and in famous department stores. We will also make efforts to more quickly respond to the issues related to export quarantine inspections and food hygiene through the Council for the International SPS (sanitary and phytosanitary) Measures. The latter is composed of representatives from MAFRA, MOF (Ministry of Oceans and Fisheries), MFDS (Ministry of Food and Drug Safety), and nongovernmental experts. The interest of the current administration in halal food increased after President Park Geun-hye visited the Middle East and signed a business agreement with the UAE (United Arab Emirates). However, the Middle East is still an unfamiliar food market to Koreans. What is your plan to cultivate the halal market and is the possibility of success high?

As part of such efforts, we will strive to discover promising export items for each province and city in China. We will support endeavors to customize such items for the needs of local consumers.

According to Reuters, the world’s halal market is expected to increase to USD$1.626 trillion by 2018. That is 17.4 percent of the entire world food market. Since about 30 years ago, many international food companies have been trying to enter this promising market and expand their market shares by localizing their products. Recently, Korean food companies also started exporting halal food products to the countries of GCC (Gulf Cooperation Council; includes Bahrain, Kuwait, Oman, Qatar, Saudi Arabia, and the UAE) and Southeast Asia. However, merely USD$680 million worth of the products were exported last year. Also, the exported items are limited to tobacco, coffee-based products, and beverages. Thus, we are making efforts to expand the exports to the GCC markets based on the MOU (memorandum of understanding) concluded last March with the UAE. For the same purpose, we will help Korean halal food products obtain halal certifications from Malaysia and Indonesia— countries with a great number of Muslims. There is a growing interest overseas in Hansik (Korean cuisine) thanks to the huge popularity of Korean cultural contents such as K-dramas and K-pop. However, it seems that we still have a long way to go to popularize Korean food. What is your plan to improve recognition of Hansik and build the foundation for future expansion?

Up to now, we’ve been focusing on promoting Korean food in foreign countries. The plan for the future is to link the promotion of Korean food with agriculture, culture, and tourism in a two-track strategy of expanding the overseas market while solidifying the domestic one. We will also

cultivate as tourist items some particular types of Korean cuisine. These could include royal food, head family food, temple food, and regional specialties. Further, to promote the excellence of Korean food culture, we will conduct the necessary research and make other preparations to register Hansik and the related culture as part of the UNESCO (United Nations Educational, Scientific, and Cultural Organization) World Heritage. We will also encourage Korean food companies to pioneer overseas markets by conducting market surveys and providing the companies with the results. A set of measures is being prepared to more systematically promote Korean food through international events at home and abroad.

Is there anything you’d like to say to <Korea AgraFood> readers including overseas buyers about Korean agricultural exports?

MAFRA will devise various measures to improve the quality of Korean agriproducts for export, to ensure their safety, and to increase recognition of Korean products among overseas consumers. From next year, we will make the application of Global GAP (Good Agricultural Practices) mandatory for Korean formers. We will also expand consulting services that help producers customize the packaging and design of the products to match the preferences of consumers in each country. For Korean agriproducts to win the hearts of consumers in China, Vietnam, and other countries Korea has FTAs (Free Trade Agreements) with, as well as in halal markets, we need to actively promote and market the Korean agriproducts. So, I’d like to ask <Korea AgraFood> readers to take a greater interest in Korean agriproducts.

MAFRA (the Ministry of Agricultural, Food and Rural Affairs of Korea) is devising a number of solutions to implement these projects and thereby improve the quality of Korean agri-products. Let’s take a look at the changes awaiting the exports of Korean agri-products this year.

to give an impetus to expand exports of the varieties of fresh agriproducts that have been developed by RDA (the Rural Development Administration) and are produced at a small and medium scale. In order to strengthen the food safety, starting from next year, the export complexes will be required to possess Global GAP (Good Agricultural Practices) and carried out to raise the quality competitiveness of fresh agri-products.

The Korean Government offers Korean exporters information about foreign markets through export organizations and marketing research agencies. It plans to push ahead with research on the main export items— kimchi, red ginseng, etc.—to the promising markets (such as Vietnam, Singapore, Australia, and Canada). The results of the research will be provided to Korean food exporters so

that the latter are able to export the products suited to the tastes of foreign consumers. To raise the credibility of Korean agri-products overseas, the Korean Government will study changes in the food safety related regulations of major export markets—such as the US Food Safety Modernization Act (FSMA) and the Food Safety Regulations of China. This type of information will also be shared with Korean food exporters.

inju City is famous for exporting the largest volume of agricultural products in Korea. Last year, it took the No. 1 spot as an exporter of fresh produce. The area was able to achieve such impressive results because it is blessed with a clean natural environment. The clean waters and fertile soil of the Jiri Mountains help produce high quality fresh foods that have a firm texture and high sugar content. Bell pepper is a representative item of the region. It is exported abroad and receives favorable evaluations there. There are many bell pepper farms in Jinju City. One of them is the Jinyang Bell Pepper Export Farming Association. In 2013 and 2014, for two years in a row, the farming association won prizes for the excellent quality of the bell pepper at the greenhouse complex contest held by MAFRA (The Ministry of Agriculture, Food and Rural Affairs).

Small But Strong, Jinyang Bell Pepper Export Farming Association Jinyang Bell Pepper Export Farming Association was founded in 2004. In the same year, it started exporting its products abroad. The result is that he can take the lead in managing farms and ensuring the food safety of the products. For his efforts, Mr. Jeong was selected a Master Farmer by MAFRA in 2013. Jinyang Bell Pepper Export Farming Association is planning to accumulate more exporting knowhow, expand the cultivation area, and extend its export markets to other places, such as Hong Kong. Mr. Jeong said, “We are building an additional bell pepper greenhouse facility 1ha in size. We will make further efforts—such as introducing a remote control system—in order to cultivate the bell pepper of the highest quality for overseas consumers.”

Jinyang Bell Pepper Export Farming Association introduced electric heating and geothermal heating systems in its greenhouses. It also installed additional air conditioners. The heating and air conditioners help manage the growth and development of the bell pepper by lowering the temperature of the greenhouses in the summer and raising the temperature in the winter. Mr. Jeong said, “We may be the first bell pepper association to introduce electric heaters to a greenhouse in Korea. The move allowed us to have the production volume of the bell pepper be more stable than that of other farms. Besides, we start shipping the product a month earlier on average.” He added, “We are proud of ourselves that we have the yield of 60kg per unit area, which is the highest among members of the Korean bell pepper export association KOPA INC.”

Strict Management of Cultivation and Sorting Processes…Challenging for No Problems Related to Safety After the bell pepper harvested from the farms is moved to the sorting house of the Jinyang Bell Pepper Export Farming Association, it goes through careful screening. Who Is the Association’s Master Farmer? Jeong Dae-won, CEO of Jinyang Bell Pepper Export Farming Association, has the title of master farmer. The title is granted by the Korean government to leading farmers who possess expertise, knowledge, and management skills related to fresh foods, and who can train and consult other farmers. The selection of a master farmer is a rigorous process of assessment that takes seven months. The candidates first take a written examination, then, a competency assessment test, and are finally tested on-site. Mr. Jeong was designated as a master farmer in the bell pepper field in 2013. Korean seasoned seaweed, slightly grilled and flavored with oil and salt, has captured the taste buds of fastidious Japanese consumers. Their love for seasoned seaweed is so tremendous that about 40 percent of the total production volume is exported to Japan. A similar trend is currently observed in the Chinese and American markets. New products have been developed to match the preferences of local consumers to have seasoned seaweed between meals like a snack. This point acted as a factor increasing the demand. is a company called Han Mi Rae Food Co., Ltd. It produces delicious seasoned seaweed using healthy bamboo salt. The company is located in Sangju City of North Gyeongsang Province.

Rich in Protein…Contains Important Nutrients Laver is a food made by drying a type of seaweed—marine algae—and shaping it into sheets as thin as paper. Manufacturers call it “raw laver” or “original laver” for it is the basis for seasoned seaweed products. In the old days, laver also had the names of gamtae (sweet laver) and haetae (sea moss). Most Korean laver farms are located on the coasts of the South and West Seas. The history of laver farming in Korea is very long. According to Gyeongsangdo Jiriji (The Geography of the Gyeongsang Province) written in about 1,420, laver (referred to as haeui) was a local souvenir, so it is assumed that the production of laver started even earlier. Laver is rich in nutrients such as essential amino acids, vitamins, fiber,

iron, and phosphorus. It also boasts high protein contents. The protein contained in five sheets of dried laver is equivalent to that of one egg. In particular, laver contains an ingredient that removes cholesterol from the body. Since cholesterol is known as a factor causing arteriosclerosis and hypertension, laver can be said to be a very special nutritious food. Given these properties, it is obvious that securing good raw materials is of utmost importance to the companies that make bite-sized seasoned seaweed by processing laver.

The consumers’ health is its top priority, so bamboo salt, which has lower salt contents than conventional salt, was selected as the best match. Bamboo salt has been known for its healthy attributes since ancient times and it is the favorite of many healthconscious people. Bamboo salt supplies to the body the necessary amount of salt for preventing the deterioration and decay of cellular tissues. Jung Suk-dong, President of Han Mi Rae Food Co., Ltd., said, “I established this company to enter into the Chinese market with seasoned seaweed. I have years of experience and knowhow in food distribution in China under my belt. I know that the Chinese prefer to have seasoned seaweed as a snack, so I decided to use bamboo salt out of consideration for Chinese consumers’ health. Because of that, our seasoned seaweed was able to attract attention for its safety and last year recorded USD$2.4 million in exports in just four months.”

Attempts to Enter the US Market…This Year’s Goal to Achieve USD$10 million in Exports Although Han Mi Rae Food started its business with the Chinese market in mind, this year its exports to the US are rapidly increasing. Last March, the company exported there products worth USD$500,000. It is estimated that this year’s export volume to the US can approach USD$5 million if the company signs contracts with the retailers it is currently negotiating with. To appeal to American consumers, Han Mi Rae Food launched products that use oil and bay salt. There’s wasabi flavor, teriyaki flavor, and pepper flavor. Given the current rate of growth, the company has set the goal of achieving USD$10 million in exports. Mr. Jung said, “Chinese and Americans like to eat seasoned seaweed as a snack, so we lowered the salt content. As the product is less salty, the consumer can enjoy the taste of the laver better. We entered the US market targeting the lower income bracket. But the higher income consumers also seem to enjoy our products. It makes me believe the seasoned seaweed market in the US will grow fast.”

Various Names of Korean Ginseng

Ginseng is named differently according to the way it is processed. There are susam, hongsam, baeksam, taegeuksam, and heuksam. Susam (fresh ginseng) is not processed but only washed. Hongsam (red ginseng) is made by steaming and drying unpeeled fresh ginseng. Baeksam (white ginseng) is produced through the process of drying slightly peeled or unpeeled fresh ginseng in the sun or under a hot wind. Taegeuksam is made by boiling and drying fresh ginseng. Thanks to the worldwide trend of healthy living and the Hallyu (Korean culture wave) boom, many foreigners are interested in Korean fermented sauces that determine the taste of dishes. As a result, the export volume of Korean sauces is increasing, especially to China. Korea ranked sixth among all countries that China imported sauces from in 2012, but last year it achieved the No. 1 position. jang and ganjang. That is the Korean-style dongporou. Dongporou or dongpo pork is a representative Hangzhou dish that is made by boiling and frying pork belly in spices. It is also famous as a dish invented by the great Chinese writer Su Dong Po. Korean-style dongporou boasts a clean and simple taste thanks to the usage of deonjang and ganjang. Deonjang will help you get rid of the smell of fat and also soften the meat. Ganjang is added to create a clean and savory taste that you won’t grow tired of no matter how much of it you eat. We also recommend having some vegetables as a side to the meat dish. Prepared in the Korean way by adding red pepper powder to the dressing, the vegetables will help refresh the breath and promote digestion.

Cooking Tips Keep the cooked pork belly in boiled water until you start cutting it. That will make the meat softer and prevent it from breaking into small pieces.

How to Make Korean-style Dongporou (2-3 servings) Main Ingredients: 600g pork belly, 35g water parsley, 125g pear, 100g radish, 1Tbsp deonjang, 25g garlic, 50g onion, 2 spring onions, 1/2 of a ginger root, 10 peppercorns

Salad sauce ingredients: 1 and 1/2 Tbsp red pepper powder, 1/2 Tbsp sugar, 1/2 Tbsp vinegar Meat sauce ingredients: 1/2 Tbsp sugar, 1/2 Tbsp oligosaccharide, 1/2 Tbsp crushed garlic, 1 Tbsp ganjang, 2 tsp deonjang, 50ml water 1. Put water, 1Tbsp deonjang, 25g garlic, 50g onion, 2 spring onions, 1/2 a ginger root, and 10 peppercorns in a pot and boil. 2. When the water starts boiling, add the pork belly. Boil the pork belly for 30 minutes on medium heat. 3. Cut water parsley into pieces 5cm long. Slice the radish and pear into pieces 0.5cm thick. 4. Put the sliced vegetables in a bowl and add the salad sauce ingredients. Mix them together. 5. Slice the boiled pork belly into pieces 0.5cm thick. 6. Put the meat sauce ingredients in a pan. Boil and stir them for one minute on medium heat. 7. When the sauce on the rim of the pan comes to a boil, add the sliced meat. Cook the meat down in the sauce for five minutes, turning several times. 8. Serve the pork on a plate with the vegetable garnish.

Facts about Boseong Green Tea at a Glance Boseong Green Tea Festival will take place from May 22-26 at the Korean Tea Culture Park and Boseong tea plantation area. This year—in order to take the event to the global level—the organizers have reworked the activities and prepared a variety of meaningful and well-structured programs, commemorative events, and performances. The 300m Dahyang Tunnel welcomes visitors when they first enter the festival grounds. The tunnel houses a photo exhibition of beautiful sceneries, which Boseong is famous for. In fact, the county was selected by CNN as one of the “31 Most Amazingly Beautiful Sites to Visit in the World.” As soon as you pass through the Dahyang Tunnel, you will see spacious green tea farms. Walking along the picturesque fields of green tea, you will arrive at the Main Event Hall. A variety of experience events are offered there. This year, the Dasinje Tea Ceremony (dedicated to the god of tea) is organized under the theme: The Best Gift of God, Boseong Green Tea. There is also an event intended to set a Guinness Book record. It is the challenge to make the world’s longest gimbap (Korean roll) with green tea leaves. This is in addition to a variety of other events, such as the Tea Arts Festival, the Contest of Famous Korean Teas, and the Boseong Green Tea Cooking Contest.
