Alternatively, if you want to eat the dish cold, dress with salad dressingwhile still warm and add parsley just before serving. Serve scattered with Croutons or Garlic Croutons if you wish.

If possible, use fairly stale bread, as fresh bread is difficult to cut tidily. For 3-4.

2 slices (about 2 oz/50 g) stale wholemeal or white bread

• METHOD .

Pre-heat the oven to 400°F, 200°C, Gas Mark 6. Trim off and discard hard crusts; cut the bread into small cubes. Cover the baking-sheet with aluminium foil, spread the bread cubes on it and bake for 12-15 minutes or until light brown.
