C oleslaw stands or falls according to its dressing: obviously, really crisp, fresh vegetables are also necessary, but without the contrast of a rich, creamy dressing they lose some of their impact. As the salad includes a number of sweet ingredients (carrots, mange-tout peas, apples, walnuts and raisins) the dressing also needs to be slightly sharp. The one I recommend is based on Yoghurt Cheese: I have given the alternative of an ordinaryYoghurt Dressing, but itdoes nothave quite the same richness and depth. It is not essential but a great improvement to crisp the nuts. For 3-4.
