-MUESLI ANDHONEY MUFFINS

- INGREDIENTS -

2 oz/50 g walnuts or walnut pieces

3 oz/90 g soft margarine

2 oz/50 g soft brown sugar

2 level tablespoons thick honey

I egg (size 2)

1f4 pintll50 ml milk

5 oz/150 g muesli

5 oz/I 50 g wholemeal flour

I teaspoon baking-powder

1f3 nutmeg

2 oz/50 g mixed dried fruit

2 oz/50 g raisins

Bun tins or paper cases

-METHOD -

Pre-heat the oven to 350°F. 180°C. Gas Mark 4. Grease the bun tins (if using) with oil. Roughly crush the nuts.

2 Mix the margarine and sugar. Stir in the honey. Beat in the eggs and stir in the milk. Blend together the muesli, walnuts. flourand baking-powder and grate in the nutmeg. If necessary. separate any fruit which has stuck together and add to the flour. Stir the flour mixture into the milk and honey mixture. Spoon into the bun tins or papercases and bake in the oven for 15-18 minutes or until a warm golden-brown.
