Fruit & Marzipan Stollen (cover) PREP TIME: 20 MINUTES | RISE TIME: 1 HOUR AND 45 MINUTES BAKE TIME: 35 MINUTES | MAKES 2 LARGE LOAVES
INGREDIENTS 4 to 4-1/2 cups bread flour or all-purpose flour 2 teaspoons grated orange zest 2 teaspoons grated lemon zest 1/2 teaspoon ground cardamom, optional 1 package rapid-rise yeast 3/4 cup milk 1/2 cup water 1/3 cup granulated sugar 1/4 cup (1/2 stick) butter 1/2 teaspoon salt 7 oz. bag Sun-Maid Fruit Bits 1/2 cup unsalted almonds, rough chopped 1 package (7 oz.) marzipan, cut into small chunks 2 tablespoons butter, melted Powdered sugar 2
DIRECTIONS 1. BLEND 2 cups flour, cardamom, yeast and zests in a separate bowl. 2. HEAT milk, water, sugar, butter and salt to 120-130°F. Pour into a large mixing bowl or an electric mixer bowl. 3. ADD beaten egg, mix to blend. 4. ADD flour mixture to milk and egg mixture. 5. MIX with wooden spoon, or dough hook until well blended. Add bag of Fruit Bits and almonds. Gradually add enough additional flour to make a soft dough, about 4 cups flour total. 6. TURN dough out onto a floured surface. Knead with hands until smooth and no longer sticky. Place in a lightly floured bowl. Cover and let rise in a draft-free place until doubled, 45-60 minutes.
7. PUNCH dough down and knead in half the marzipan. Divide dough into two. Place on a lightly floured surface and pat each piece into a 10 x 8-inch oval. Scatter remaining marzipan lengthwise on center of dough. Fold long edge over to 1-inch from opposite edge. Place on a parchment-lined baking sheet, using one baking sheet per loaf. Cover with a towel and let rise until double, 30-45 minutes. 8. HEAT oven to 350°F. Place pans on separate racks if needed, switching pans half-way through bake time. Bake 30-35 minutes until golden brown and loaf sounds hollow when tapped. 9. BRUSH hot loaves with melted butter. Dust generously with powdered sugar. Cool completely.

Greek Style Orzo Salad MAKES 6 SERVINGS
INGREDIENTS 8 oz. dry orzo (about 1-1/4 cups) pasta cooked and cooled 1 cup cherry tomatoes, halved 1 cup thinly sliced cucumber 1/2 cup Sun-Maid Natural California Raisins 1/2 cup pitted Kalamata olives, quartered 1/4 cup thinly sliced red onion 4 oz. feta cheese, crumbled or diced 1/4 cup toasted pine nuts 3 tablespoons chopped fresh mint 1 lemon
1/4 cup olive oil 2 tablespoons red wine vinegar 1/4 teaspoon each salt and pepper Baby spinach leaves DIRECTIONS 1. COMBINE pasta and next 8 ingredients (tomatoes through mint) in a large bowl. 2. GRATE zest of lemon over ingredients in bowl. Squeeze lemon juice to measure 2 tablespoons. 3. WHISK together lemon juice, olive oil, vinegar, salt and pepper in a small bowl. Pour over salad and stir gently to
combine. Let stand for 30 minutes for flavors to blend. 4. SERVE over spinach leaves for a vegetarian entree, or top with grilled chicken or sausage. NOTE: Leftover salad keeps well refrigerated for up to 2 days.

Classic Raisin Oatmeal Cookies PREP TIME: ABOUT 10 MIN. | BAKING TIME: 15 MIN. | MAKES 3 DOZEN

INGREDIENTS 3/4 cup softened butter or margarine 1 cup packed brown sugar 1/2 cup sugar 1/4 cup milk 1 large egg 1 teaspoon vanilla extract 1 cup all-purpose flour 1 teaspoon ground cinnamon 1/2 teaspoon baking soda 1/4 teaspoon salt
3 cups quick or old-fashioned oats 1 cup Sun-Maid Natural California Raisins 1 cup coarsely chopped nuts (optional) DIRECTIONS
4. ADD to butter mixture and mix well.
1. HEAT oven to 350°F.
5. STIR in oats, raisins and nuts, if using. Drop by tablespoonfuls onto greased cookie sheets.
2. BEAT butter, brown sugar, granulated sugar, milk, egg and vanilla until light and fluffy. 3. COMBINE flour, cinnamon, baking soda and salt.
6. BAKE 12 to 15 minutes. Remove from cookie sheets. 7. COOL on wire racks.
