When the back wheels of his food truck broke down, 2014 Culinary Apprenticeship graduate Edgard Sanchez got it towed to SkyView Atlanta. Little did he know, this would be the spot where he would truly kick off his business, C’est Bon Tout 2 Eat. Edgard has gained local and national attention with features on FOX 5 Atlanta, Yahoo! Finance, Clark Howard, the Marietta Daily Journal and Atlanta Journal-Constitution. Although Edgard didn’t plan to become an entrepreneur, the stars were aligned differently. professional certificate program with our College and starting successful careers, some of our graduates have returned to the classroom to teach the next crop of professionals. Jana Jenkins, Spencer Barnett and Alicia Morales share their experiences from students to teachers.

A scholarship brought Jana Jenkins to our Project Management course. In 2014, Jana said, “I know getting this [PMP] certification will further my career, opening up opportunities for positions I may not have been qualified for. Offering scholarships for these types of classes allows seasoned professionals to continue their education and be productive in the workforce.” In addition to her position as a Lean Six Sigma leader with WellStar Health Systems, Jana now teaches Lean Six Sigma for our College. She said, “Anyone can take the classes, even if you have been exposed to very minimal math. Lean Six Sigma is great for college students starting out in the workplace, seasoned professionals who want to continue their education and business owners who need to become more competitive. If you’re currently between jobs, this can be a great addition to your résumé.”

Spencer Barnett: Culinary Apprenticeship

This 2012 Culinary Apprenticeship Certificate graduate has worked in restaurants such as Elevation Chophouse and Moore’s Gourmet Market. He recently joined the ranks as an assistant instructor in the Culinary program and teaches with his mentor, Chef Rich Bradshaw. “Receiving my certificate from KSU’s Culinary Apprenticeship program has prepared me to work in the culinary field and inspired me to give back the knowledge and techniques I’ve learned,” Spencer said. “I feel grateful in how far I have come in my culinary career and for being able to prepare aspiring chefs for their future.”

Alicia Morales: Medical Interpreter

As a clinical psychologist, Alicia Morales was familiar with some of the terms in the Medical Interpreter certificate program she graduated from in 2013. She also said her instructor, Angela Kyriacou, was always well prepared for class and made it enjoyable. When Angela needed a substitute, Alicia stepped in and has since taught another section of the course. Alicia said, “Teaching for me is a passion. I used to teach Spanish in my country for many, many years and that is my long-term plan. I am really, really grateful for the opportunity to teach at KSU. [It’s] a big [opportunity].”

NEW OP Customer Service Specialist Professional (page 7)

With employment of customer service representatives projected to grow 13% by 2022 (Bureau of Labor Statistics), honing your skills in this certificate training program will benefit you in a wide range of positions. The increase of technology has resulted in human interaction with customers becoming critical. Whether it relates to retaining customers, serving your audience, or converting inquiries from potential customers into sales, superior customer service is vital in organizational success. Baking and Pastry Apprenticeship (page 17)

Complementary to our Culinary Apprenticeship program, this unique combination of classroom and real-life experience will prepare you to build a strong foundation in the art and science of baking and pastry. You will develop an understanding of the ingredients and techniques used to create artisan breads, specialty cakes, pastries, cookies, pies, and other desserts. Hands-on training at apprenticeship sites will allow you to hone and increase your skills. This course provides aspiring cake artists looking to create a cake for a birthday party, anniversary, graduation, or other special occasion the skills necessary for success. These skills can also be used to build a new business. It doesn’t matter if you’re new to cake decorating or experienced, this class is designed to teach you how to decorate like a pro. This program will introduce the theory and concepts of successful landscape design for residential properties while teaching you the critical aspects of design necessary to prepare a basic residential landscape plan. This program examines the revolution occurring in the U.S. and the world as the average age continues to rise. By 2050, Americans aged 65 and older is projected to be 88.5 million, more than double that of 2010 (U.S. Census Bureau). Designed to offer opportunities in the field of aging for those who work with older adults, the format is organized around a partnership model honoring and utilizing the skills and knowledge of academics, practitioners, and other gerontology professionals. Students will also explore generational differences, growing diversity in aging, the social worlds and theories of aging people and their changing family roles. Certificate benefits:

Medical Assisting Certificate

Make an impact in the rapidly expanding healthcare field with a certificate that combines fast-track learning with real-world experience. Employment of medical assistants is expected to grow by nearly 30% through 2020, much faster than the average for all occupations (Bureau of Labor Statistics). Learn more than 200 administrative and clinical skills in a fraction of the time and cost of similar programs while preparing for the National Healthcareer Association Certified Clinical Medical Assistant (CCMA) exam. You will train in our combination classroom and physician office setting – featuring exam room stations, a front office simulation area, and state-of-the-art equipment for skills practice. The program includes lecture and hands-on training from instructors who are experts in their respective fields. You will learn human anatomy, medical terminology, office procedures, pharmacology, medical ethics and clinical procedures. Practical training is performed in capturing vital signs and measurements,

venipuncture, laboratory procedures, electrocardiography, and assisting with examinations and procedures. The course concludes with a 2-month, 180-hour externship in a physician office or urgent care setting. Edgard’s food truck business is called “C’est Tout Bon 2 Eat,” which is French for “It’s All Good To Eat.” His Cajun menu is a tribute to New Orleans, where he spent most of his childhood.

What started as a random idea

to pass time has turned into an entrepreneurial success story and burgeoning career. After serving a 22-year military career with the Army and Marines, Edgard Sanchez retired to civilian life in 2011. Like many of our veterans returning home, Sanchez bounced around several jobs trying to find his passion. In 2014, working as a receiving assistant in an Atlanta warehouse, he encountered a piece of mail that would alter the path of his life. With curiosity, Sanchez read through one of our Course catalog magazines and came across a story highlighting Veterans in our Culinary Apprenticeship program. “I was looking for a change, and I’ve always loved cooking,” Sanchez said. “I took this class because it sounded interesting. I wasn’t looking for a new career. I was just looking to fill some of my free time. Every time I came to class, it was awesome. I learned so much.” Having two daughters preparing for college, Sanchez transferred his GI Bill benefits giving them an opportunity he never had. However, upon further discovery, he realized he qualified for additional VA funding through the Vocational Rehabilitation and Employment services. This provided him with nine months of funding which aligned perfectly with our culinary program’s duration. “Without that program, I would not have been able to attend culinary school, and I never would’ve been able to launch my truck business,” he said. Working during the day and attending class at night, Sanchez’s journey began to catch the watchful eye of his warehouse supervisor, Milton Mouzon. A

longtime entrepreneur himself, Mouzon once owned a hot dog cart while in college and has garnered PowerSeller status on eBay. “He always encouraged me to think bigger,” Sanchez said of Mouzon. “It was his idea for me to start a food truck business. I didn’t think he was serious at first but he kept pushing me.” Mouzon was convinced of Sanchez’s talent and potential to succeed the second he bit into one of his signature Bayou Burgers at a family picnic. Mouzon’s entrepreneurial spirit kicked into high gear, and he began mentoring Sanchez as the two eventually

became business partners. With Mouzon’s backing, Sanchez began bidding on a truck he found on eBay. After losing the online auction, it was back to square one – until the phone rang. “The man who was auctioning the truck called and said the top bidder had a change of heart and offered it to me,” Sanchez said. “I thought it was a joke and it was too good to be true.” It wasn’t and Sanchez was on his way to Virginia to pick up what was to become his new food truck. After saying goodbye to his warehouse job and launching his food truck business in November 2014, it became an inauspicious start for Sanchez. While driving to downtown Atlanta for his first gig, the rear two tires become loose and detached from the truck. It eventually had to be towed to SkyView Atlanta – where he was stationed from January to April 2015 as the Ferris wheel’s sole food truck vendor. Following a year of building awareness and being the new guy on the block, Sanchez is primed for a prosperous 2016. “We’re putting out quality food and are starting to get positive reviews and repeat customers,” he said. “We’ve built a strong social media presence and food truck bookies are now pursuing us!” Currently, there are about 120 food trucks rolling through Atlanta – which is much fewer than comparable cities. With Atlanta’s market relatively new compared to others of similar size, Sanchez is predicting a boom as it trends upward. “I didn’t realize there are foodies that follow trucks everywhere,” he said. “This gives people an added convenience that’s better than fast food.” Sanchez’s vision for the coming year is to secure more catering events. His long-term plans are to build the business over the next three years and be in a position to sell it. His lifelong dream is to move to Costa Rica and start a bed and breakfast business with his wife, Angel. One of our newest certificate training programs, Construction Project Management, has been created to serve as an asset to those in the industry. The comprehensive program is designed for individuals desiring to break into the rapidly growing field and experienced professionals who require continued education to meet industry standards. Comprised of 10 relevant courses, all classes will be held at our Marietta campus (formerly Southern Polytechnic State University). This comprehensive program includes a range of courses designed for three types of students: 1. T hose already in the construction field who need CEUs to maintain their license. 2. A nyone starting a career in the construction industry. This might even be a high school student. 3. Professionals with a different background who are pursuing a new career. Camera! Action!, Little Explorers and Operation Science. Designed for rising 1st through 12th graders, the camps saw nearly 1,000 attendees in 2015 – presenting a great opportunity to make new friends. Back by popular demand is the return of the Chet Austin Teen Leadership Academy. Team building, community service and public speaking are all slated for this weeklong session named for the former CEO of Tip Top Poultry. SummerU starts June 6 and ends July 22. Camps are Monday through Friday from 9 a.m. to 3 p.m. at KSU Center. Parents can drop off children beginning at 8:30 a.m., and Extended Care is available until 6 p.m. for an additional fee. All camp assistants are CPR-trained and all campers will wear identifying wristbands. Make your summer a memorable one with SummerU!

GENERAL INFORMATION STUDENT INFORMATION All courses take place at KSU Center, located at 3333 Busbee Drive, unless otherwise noted. Room numbers will be posted inside the building. We’re located off exit 271 on I-75 and off exit 3 on I-575. Kennesaw State University is a senior unit of the University System of Georgia and is an Equal Opportunity/Affirmative Action Program Institute. Accreditation: Kennesaw State University is accredited by the Commission on Colleges of the Southern Association of Colleges and Schools to award bachelor’s, master’s, specialist and doctoral degrees. The graduate and undergraduate teacher education programs are accredited by the National Council for Accreditation of Teacher Education. The master’s and baccalaureate level business degree programs are accredited by the American Assembly of Collegiate Schools of Business. CEUs: Many of our classes award Continuing Education Units ( CEUs) upon successful completion. CEUs are educational credits recognized by employers and professional organizations. The number of CEUs earned equals one-tenth of the number of classroom hours (10 hours = 1 CEU). Books and Supplies: Unless otherwise noted in this catalog, books and supplies for the College of Continuing and Professional Education classes are available at the KSU Satellite Bookstore located in KSU Center. The hours are Monday–Thursday, 4:00–8:00 pm and Saturday, 8:30–11:30 am. You may contact the bookstore at 470-578-2342. Campus Police: Campus police officers patrol the area around KSU Center during evening hours. Whether at KSU Center or on the main KSU campus, you may request an escort to your car by calling 470-578-6206. In an emergency, there are emergency call boxes in all parking lots on the campus. You can also dial 911 from a cell phone or x6666 from any KSU office phone. Department of Public Safety: The Department of Public Safety maintains a force of certified Police Officers, whose duties include enforcing laws, preventing crimes, providing security, and encouraging safety awareness. The department, which also utilizes security officers, dispatchers, and other support personnel, strives to contribute to the academic environment by performing professional law enforcement tasks with a proactive, service-oriented and educational

Safe and Sound brochures with this information are available at the Department of Public Safety. Children: Unattended children are not allowed at KSU Center due to safety reasons. Children are not allowed to attend Continuing Education classes with adults. Student Code of Conduct: By enrolling in a College of Continuing and Professional Education class at KSU, students agree to conduct themselves at all times in a manner conducive to the promotion of a positive and pleasant learning environment for themselves and others. Belligerent, abusive, profane, threatening and/or inappropriate behavior on the part of students is a violation of the Kennesaw State University Student Code of Conduct. Students who are found in violation of the Code of Conduct may be subject to immediate dismissal and may be prohibited from registering for additional College of Continuing and Professional Education classes. All College of Continuing and Professional Education students are expected to uphold the highest honor and integrity in completing class assignments. Plagiarism, cheating and all other forms of academic dishonesty are expressly forbidden. A student engaging in, or assisting others to engage in such acts, will result in dismissal without refund and may be prohibited from registering for additional College of Continuing and Professional Education classes. CEUs will not be awarded and a failing grade will be assigned on the student’s transcript (if appropriate). Tuition and fees collected are used to pay for both direct and indirect operating expenses for the College of Continuing and Professional Education programs.

REFUND AND ATTENDANCE POLICIES: If we cancel or change a class: The College of Continuing and Professional Education at Kennesaw State University is selfsupporting. Costs associated with presenting noncredit programs are covered by student registration fees. If we do not have sufficient enrollment to cover our costs within 3 business days of the class start date, we may cancel the class. We will make every effort to notify you of changes or cancellations. In the event of a cancellation or change by us, we will provide the student with a 100% refund or transfer to an equivalent class. If you withdraw from a class or transfer to another class: • 100% refund for all withdrawals or transfers made three or more business days (Monday– Friday) before the first day of class. • 80% refund for all withdrawals or transfers made one or two business days (Monday– Friday) before the first day of class. • 0% refund for all withdrawals or transfers made the day class begins or anytime following. Exception: for Online class refund policies, please check individual course listings at our website. Please note: Classes with group bundle discounts are not eligible for refunds or transfers. Attendance: To successfully complete a class, receive CEU credits and receive a completion certificate, you must attend 80% of all class meetings. Classes with four (4) or fewer sessions require 100% attendance.
