Welcome to the ODFW Recreation Report FISHING, HUNTING, WILDLIFE VIEWING November 20th, 2014
Fall trout fishing continues Yes, many rivers and streams closed to trout fishing after Oct. 31, but don't put away the trout gear quite yet. Lots of water bodies are open for trout year-round, and this time of year the fish are feeding heavily in anticipation of winter. Check out the zone reports for your best bet. Late season archery deer, coast elk seasons on tap General coast elk second season runs Nov. 22-28. Late season archery deer hunting is open in select western Oregon units in November and December. Take a kid hunting Kids age 9-13 who haven't passed hunter education yet can still go hunting under the Mentor Youth program. Youth hunts on an adult's license and tag. FISHING Weekend fishing opportunities â&#x20AC;˘ Bu l l Prairie Reservoir and Long Creek, Cavender and Holliday Park ponds were all stocked in late September and trout fishing should be good through the end of the year. If your favorite fishing spot is no longer listed It's probably because that river, lake or reservoir is closed for the season, inaccessible due to snow and bad roads, or offers limited fishing opportunities during the winter months. These waterbodies will re-appear in the Recreation Report when they re-open next spring, or when access and/or opportunity improves. GRANDE RONDE RIVER: steelhead Cold weather has caused the flows to drop on the Grande Ronde River and the river is likely icy. Weather reports indicate a slight warm up later this week that could free the river. Angler success has been steady leading up to the cold weather. Also, a healthy proportion of two salt fish has resulted in a large average size this year. So, expect a few larger fish and some screaming drags! Remember, only adipose-fin clipped rainbow trout may be retained and all bull trout must be released unharmed. Fall chinook are in the lower Grande Ronde and anglers a catching a few. There is no open Chinook season on the Grande Ronde. Please release these fish immediately and allow them to finish spawning. IMNAHA RIVER: Steelhead PIT-tag detections show a number of steelhead moving up the lower river and anglers have had success finding good numbers of early fish. Afew steelhead can be found in the lower river all winter; however, the best times to catch steelhead in the Imnaha are in the early fall and spring. Fall chinook are in the lower river to spawn. There is no open Chinook season on the Imnaha River. Please release these fish unharmed and allow them to spawn. WALLOWA LAKE: rainbow trout, kokanee, lake trout Fishing for rainbow trout has slowed. However, some fish are still available and some tagged fish are occasionally being reported. Trout have been caught with a variety of methods but a simple rig with PowerBait has been most effective. If the cold weather continues and the lake freezes, ice fishing can be good for both kokanee and trout. The lake was stocked with tagged rainbow trout in an effort by ODFW to better understand the utilization of this fishery. Tagged fish have been caught at very high rates and over $2,700 in rewards have been paid. WALLOWA RIVER: steelhead, mountain whitefish The Wallowa is currently open for steelhead angling and a few fish may be available. However, the best catch rates will be in the late winter and spring. NORTHEAST ZONE HUNTING OPEN: COUGAR, BLACK BEAR(cl oses Nov.30),GROUSE, WATERFOWL BAKER COUNTY Closure of Wallowa Mountain Loop Road (Forest Road 39) Chuckar, Hun, and California Quail - The season opens Oct. 11 and ends Jan. 31, 2015. Hunters should expect another season very similar to last years. Chukar numbers are still low for the county, however quail numbers showed a slight increase from last year. Grouse - Blue grouse can be found in the higher elevations while ruffed grouse are more common in wetter areas. Hunters should expect an average year for grouse. Successful hunters are asked to place the tails and wings from harvestedbirds in the collection barrels. Bear - Successful hunters, remember check-in of bear skull is mandatory; see the regulations for details. Biologists recommend propping the bear's mouth open with a stick after harvest; it makes for easier tooth collection and measuring. Cougars can be found throughout Baker County but hunters should target areas with high concentrations of deer and elk. Setting up on a fresh kill or using distress calls can all be productive techniques. Hunters are required to check in the hide of any cougar taken, with skull and proof of sex attached. Coyote numbers are good throughout the district. Try calling in early morning and late afternoon. Remember to ask for permission before hunting on private properties. UNION COUNTY Elk hunters can expect some moist weather for the season. Elk numbers are stable in the Starkey and Catherine Creek Units, both of which are close to management objective (M.O). Bulls should be in good condition with the abundance of forage this year. Hunters are reminded that weather changes rapidly this time of year and to be prepared for snow and ice. Black Bears are plentiful throughout the county. Look for sign around fruit trees and in canyon bottoms. Hunt in the early morning and evenings for the best chance of seeing bears. Bear skulls must be checked in within ten days of harvest, see regulations. Cougars are common in Union County. Focus on game rich areas with long ridgelines or saddles that cats typically travel. Setting up downwind of a deer or elk killed by a cougar can be productive. Nonresident hunters can include a cougar tag with others tags for only $14.50. All cougars taken must be checked in within 10 days of harvest; call for an appointment before check in. Coyote numbers are good throughout the district. Try calling in early morning and late afternoon. Remember to ask for permission before hunting on private properties. Ladd Marsh Wildlife Area Ladd Marsh Wildlife Area is open Saturday, Sunday, Wednesday and federal holidays during pheasant, quail, partridge and waterfowl seasons. Visitors are advised to carefully read posted signs and consult game bird regulations before entering the wildlife area. Early season waterfowl hunting has been fair to good. Spring nesting conditions were excellent and waterfowl production on Ladd Marsh and Oregon in general was up this year. As usual waterfowl hunting will depend largely on fall wetland conditions and weather. Continued drought in NE Oregon may limit early season hunting opportunities. At this time most areas along Peach road have good water. However, wetlands west of state highway 203 remain dry. Hunters should watch local weather reports for high winds near Ladd and Pyles canyons. This generally means good waterfowl hunting at Ladd Marsh. Upland hunting has been good for pheasants and quail. Nesting conditions were good for both this year. Access for upland hunting is excellent due to low water. Hunt areas near water with dogs for the best success. WALLOWA COUNTY Closure of Wallowa Mountain Loop Road (Forest Road 39) Black Bear - A good density of black bear exists throughout the district. Most bears are in their winter dens now. For those few bears that are still active, hunters should focus efforts in berry patches and old fruit orchards. Elk - Numbers of elk are strong throughout mostof Wallowa County with goodbull to cow ratios in all units. Recentsnow storms began moving some animals to lower ranges, and secondbull season huntershad10% successduring the opening weekend. Forest Grouse hunting has been poor â&#x20AC;&#x201D; fair in recent years and this year is similar. Blue grouse numbers are below the long term average, and most birds have moved to timber stands where they spend the winter eating conifer buds. Ruffed grouse hunting opportunities will be best along riparian areas where abundant shrubs are found. Chukar hunting has been poor to fair in recent years, but this year a good hatch should produce an improvement in chukar numbers. The season started October 5. Coyote: Good numbers of coyotes can be found throughout Wallowa County. Calling coyotes with rabbit distress type calls has been effective for hunters. It is important to choose areas with abundant coyote sign and little human activity. Cougar numbers are strong throughout Wallowa County. Most lions are taken incidental to other hunting; however, calling with fawn bleat, or locating a cougar kill and waiting for a cat to return are often successful techniques.

"Perfect kid fun!" Pour off liquid from a No. 2 can of Sliced Pineapple. Replace with gelatin made with half the water on package directions. Chill until set. Run a little hot water on can sides and bottom to loosen. Then cut bottom from can and use to push mold out. Cut between pineapple slices and serve.

1/2 c. butter, melted 1-1/2 c. shredded Mexican-blend cheese 1/4 c. shredded mozzarella cheese 10-oz. jar sliced jalapeno peppers, drained 1 t. dried parsley 2-12-oz. tubes refrigerated biscuits, cut into quarters In a large bowl, combine butter, cheeses, pepper slices and parsley; add biscuits and toss to coat. Transfer to an ungreased Bundt pan. Bake at 350 degrees for 30 minutes, or until golden. Invert onto a serving plate; serve warm.

These cookie truffles are great on a stick of off!
This delicious holiday spiced creamer is great in coffee or tea, or put in a decorated container for a quick gift.
16 oz pkg of chocolate sandwich cookies crushed 8 oz pkg softened cream cheese 1 c powdered sugar

Combine all ingredients until well blended then roll into 42 balls, insert lollipop sticks, chill for one hour. After the balls have chilled dip in melted chocolate, I like dark but any flavor even mint or white chocolate works well. Then add crushed candy, chopped nuts or sprinkles as desired for decoration.
2 c powdered non dairy creamer 1/2 c packed brown sugar 1 tsp cinnamon 1 1/2 tsp pumpkin pie spice Combine all ingredients well and store in an airtight + container. Add a heaping teaspoonful to a mug :,-' of hot coffee or tea.

There are times when we need an appetizer but don't want to go to the store, this is an easy one to put together with pantry and fridge items you likely have on hand.
SUPER EASY CHEESE FONDUE 2 cans cheddar cheese soup 1/4 c grated parmesan cheese 8 oz can tomato sauce 3/4 c milk Combine well and heat to bubbling, this can be served in a small slow cooker on warm, or in a traditional fondue pot. We like it served with French bread cubes, little smokies, link sausage browned and cut into thirds, cocktail size meatballs, and sliced apples.
1 c sour cream 1 c mayonnaise 1 Tbs dried dill 1 1/2 tsp seasoning salt 1 Tbs dried parsley 2 Tbsp dried minced onion 1 tsp garlic powder Combine all ingredients well. Serve with crackers, chips, cut up veggies or

Red or green ribbon cut into 12N pieces, each one tied into a loop, save for later Combine 1/2 oz unflavored gelatin (2 envelopes of Knox) with 1/2 cup boiling water and stir till dissolved. Combine with 1 1/2 to 2 cups of birdseed stirring together to make a sticky salad! but not stiff mixture. Use large holiday shaped cookie cutters sprayed with non stick spray, place on wax paper. Fill each cookie cutter 1/2 full with mixture, place a ribbon loop in center top, till the rest of the way with seed mixture and press firmly with the back of a spoon into the mold (cookie cutter) until loop of ribbon is secured. After a few hours carefully push each birdseed ornament out of their molds and let dry for approximately 72 hours on wax paper, flipping them over every once in a while to dry completely. Hang outside on trees or bushes and enjoy!

Fire-and-Ice Holiday Centerpiece
Materials Needed: • Wg 5 cups sugar(2 pounds) Artificial or natural pine greens and pinecones 2 sticks unsalted butter Small gold plastic balls Ilir 1 cup whole milk Gold string beads 1 1/2 teaspoons of vanilla Freezer-safe container with smooth, straight sides 25 large marshmallows, ripped in half Distilled water 11.5 oz Ghiradelli 60% cocoa bittersweet chocolate chips Tea light candles in clear containers 21/2 cups powdered sugar Edged tray to hold centerpiece 3/4 cup Jack Daniels, or a whiskey you really like. You will be able to really taste it! Fresh greens Whisk whiskey with confectioner's sugar, and set aside. Directions: Foil and butter a 9 x 13 (or larger) baking pan. In a bowl, combine the cream cheese, cheddar cheese, sour cream, onions, Worcestershire and hot pepper sauce until blended. Form1/2 cup cheese mixture into a 4-in. circle. Coat with parsley. 2. Fo r m the remaining cheese mixture into a cylinder; roll in sesame seeds. Place on top of circle. Cut a piece of red pepper to resemble a flame; insert into the top of the candle. Cut one ring from the green pepper; cut in half. Position one half on the side for handle. (Save remaining peppers for another use.) Refrigerate until serving. Yield: 4-1/2 cups.

CRAB CORN PUDDING Ingredients 1/2 cup finely chopped green onions 2 tablespoons butter or margarine 21/2 cups frozen corn, thawed and patted dry 1 3/4 cups half-and-half cream 6 eggs, lightly beaten 2 cans (6 oz each) crabmeat, drained, flaked and cartilage removed
1/4 cup grated parmesan cheese 3 tablespoons all-purpose flour 1 1/2 teaspoons salt 1 teaspoon sugar 1/4 teaspoon white pepper 1/4 teaspoon ground nutmeg
Directions Lightly grease eight 8-oz. custard cups; set aside. In a skillet, saute green onions in butter until tender; set aside. Spread corn on an ungreased baking sheet. Bake, uncovered, at 350' for 20 minutes. In a blender or food processor, combine corn and cream; cover and process for 1-2 seconds. Add the eggs, crab, Parmesan cheese, flour, salt, sugar, pepper, nutmeg and reserved onions. Cover and process 10-20 seconds longer. Pour into prepared custard cups. Place cups in a large baking pan. Add 1 in. of boiling water to pan. Bake, uncovered, at 350' for 45-50 minutes or until a knife inserted near the center comes out clean. Yield: 8 servings.

Irish moss • London Ale yeast (Wyeast1028) or English Ale yeast (White Labs WLP002) • 0.75 cup corn sugar for priming Step by Step Heat1 gallon of water to 155' F. Add grain and steep at150' F for 30 minutes. Strain the grain water into the brew pot. Sparge the grains with 0.5 gallons of150' F water. Add the malt extracts, malto dextrin and bittering hops. Add water until the total volume is 2.5 gallons. Boil for 45 minutes then add 0.66 oz. of Styrian Goldings flavor hops and Irish moss. Boil for 13 minutes and add 0.5 oz. of Styrian Goldings hops. Boil for 2 minutes. Remove the pot from the stove and cool for 15 minutes. Strain the cooled wort into the primary fermenter and add cold water to obtain 5 gallons. When the wort is below 80' F, pitch the yeast and aerate well. Ferment in the primary at 68' to 72' F for 5 to 7 days. Rack to the secondary and let ferment at 70' F for 2.5 to 3 weeks until target gravity is reached. Bottle and let prime at 70' to 72' F for 2 weeks. Store at cellar temperature. Serve in a pint glass at 50' F. Partial-Mash Option Mash 2 lbs. Maris Otter two-row pale malt with specialty grains at150' F for 90 minutes. Then follow the extract recipe, omitting 1.5 lb. Muntons extra light dry malt extract at the beginning of the boil. All-Grain Option Mash 10.75 lbs. Maris Otter two-row pale malt with the specialty grains at150' F for 90 minutes. Add 5.3 AAU Progress bittering hop (24% less than the extract recipe) for 90 minutes. Add the Irish moss, flavor and aroma hops as indicated in the extract recipe. Fast Fermentation Here are some tips to ensure a speedy fermentation, so your Hobgoblin is ready for the holiday. Oxygenate-aerate your wort very well. This will ensure that your yeast will get off to a quick start. Use one of Wyeast's ready to pitch XL packs. If you keg this beer it will be ready to drink in 24 hours. If you are priming, make sure the beer is kept at 72' F for 2 weeks so that it will carbonate. 3 cups firmly packed brown sugar 1"/. cups Dijon-style mustard "/4cup salt
2 tbsp. cayenne pepper 2 gal. cold water 1 bunch fresh thyme 1 head garlic, separated into cloves an crus e 3 gal. peanut oil for frying 1 (10 - 12 Ib.) Butterball® Whole Turkey, thawed if frozen Directions Combine brown sugar, mustard, salt and cayenne pepper in large non-metallic container. Gradually whisk in the water, thyme and garlic. Remove giblets and neck from turkey. Discard or refrigerate for another use. You can use the turkey lifter while in the brine mixture only. (Do not use in the fryer.) Place turkey in brine mixture. Cover and refrigerate overnight. Preheat oil to 400'F. Pat turkey dry with paper towels. Place turkey, breast side up, in basket. Slowly lower basket into hot oil, being cautious of splattering oil. Maintain oil temperature at about 350'F. Fry turkey for 3"/. to 4 minutes per pound. Remove from oil to check doneness. Insert an instant-read thermometer into thickest part of the breast, not touching bone. Temperature should read 170'F. Insert thermometer into thickest part of the thigh, not touching bone. Temperature should be 180'F. Remove turkey from hot oil and drain on paper towels. Let rest for 15 minutes before carving. S

Brussels Sprouts with Pancetta Ingredients 2 pounds fresh Brussels sprouts, trimmed and halved 2 tablespoons olive oil 1/4 teaspoon salt 1/4 teaspoon pepper 6 (1/8-inch-thick) pancetta slices 1 tablespoon freshly grated Parmesan cheese Preparation 1. Preheat oven to 425'. Toss together Brussels sprouts and next 3 ingredients in a 15- x 10-inch jelly-roll pan. Bake 17 to 20 minutes or until sprouts are tender and edges are lightly browned, stirring occasionally. 2. Meanwhile, cook pancetta in a large skillet over medium heat 8 to 10 minutes or until crisp. Remove pancetta, and drain on paper towels. Crumble pancetta. 3. Remove sprouts from oven, and place in a large serving dish. Top with cheese and crumbled pancetta.

Ingredients 3/4 cup butter 4 poundsYukon gold potatoes,peeled and cut into 2-inch pieces 1 tablespoon salt, divided 3/4 cup buttermilk 1/2 cup milk 1/4 teaspoon pepper Garnishes: fresh parsley, rosemary, and thyme sprigs Preparation 1. Cook butter in a 2-qt. heavy saucepan over medium heat, stirring constantly, 6 to 8 minutes or just until butter begins to turn golden brown. Immediately remove pan from heat, and pour butter into a small bowl. (Butter will continue to darken if left in saucepan.) Remove and reserve 1 to 2 Tbsp. browned butter. 2. Bring potatoes, 2 tsp. salt, and water to cover to a boil in a large Dutch oven over medium-high heat; boil 20 minutes or until tender. Drain. Reduce heat to low. Return potatoes to Dutch oven, and cook, stirring occasionally, 3 to 5 minutes or until potatoes are dry. 3. Mash potatoes with a potato masher to desired consistency. Stir in remaining browned butter, buttermilk, milk, pepper, and remaining 1 tsp. salt, stirring just until blended. 4. Transfer to a serving dish. Drizzle with reserved 1 to 2 Tbsp. browned butter. Garnish, if desired. Note: To make ahead, prepare recipe as directed through Step 3. Place in a lightly greased 21/2-qt. ovenproof serving dish; cover and chill up to 2 days. Let stand at room temperature 30 minutes. Bake, uncovered, at 350' for 35 to 40 minutes or until thoroughly heated. Drizzle with reserved brown butter, and garnish, if desired.

Preparation lnstructions Pour 4 cups of milk into a stock pot or Dutch oven. Add one cup of sugar and 1 cup of vegetable oil. Stir to combine. Now, turn the burner on medium to medium-low and "scald" the mixture/lukewarm (between 90 and 110 degrees). Before the mixture boils, turn off the heat. NOW. Very important stuff here: walk away. Walk away and allow this mixture to cool to warm/lukewarm. The mixture will need to be warm enough to be No-Knead Dinner Rolls a hospitable environment for the yeast, but not so hot that it kills Ingredients the yeast and makes it inactive. Stir together and allow to sit, covered with a tea towel or lid, for an hour. After about an hour it should have almost doubled in size. If it hasn't changed much, put it in a warm (but turned off ) oven for 45 minutes or i so. When it had risen sufficiently add1 more cup of flour, 1 heaping teaspoon of baking powder, 1 scant teaspoonofbaking soda and about2 tablespoons of • salt. Stir (or knead just a bit) until combined. Butter 1 or 2 muffin pans. Form the rolls by pinching off a walnut sized piece of dough and rolling it into a little ball. Repeat and tuck three balls of dough into XMX IloIlam8 Dwe. Directions For the pumpkin: Preheat the oven to 375 degrees F. Remove the stem from the pumpkin and scrape out the insides, discarding the seeds. Cut the pumpkin in half and lay the pieces cut-side down on a rimmed baking sheet lined with aluminum foil. Rub canola oil all over the skin and bake until fork-tender, about1hour. Let cool. For the easy pie crust: While the pumpkin is cooking, make the crust. In a large bowl, combine the flour and salt. Add in the butter and work into the dough with a fork until the mixture is crumbly. Stir in just enough cold water (4 to 5 tablespoons) with a fork just until the flour is moistened. Divide the dough in half, shape each half into a ball and flatten slightly. Wrap one ball in plastic wrap and refrigerate for another use. Roll out the remaining dough ball on a lightly floured surface to a 12-inch round. Transfer to a 9-inch-diameter glass pie dish. Fold the overhangs under and crimp decoratively. Pierce the dough all over with a fork. Chill in the refrigerator for 15 minutes. Line the crust with foil, fill with dried beans or pie weights and bake until the sides are set, about 12 minutes. Remove the foil and beans. Reduce the oven temperature to 350 degrees F. For the filling: Scoop out the pulp from the roasted pumpkin and puree in a food processor until smooth (you should have about 4 cups). Add the condensed milk, cream, cornstarch, molasses, canola oil, cinnamon, ginger, salt and eggs and combine thoroughly. Pour the filling into the crust and bake until the filling is set in the center, about1hour. Transfer the pie to a rack and cool for 30 minutes. Serve at room temperature or chilled.
