INGREDIENTS 12 oz. cream cheese, softened 1 c. shredded Cheddar 1 tsp. garlic powder 1 tsp. paprika kosher salt Freshly ground black pepper 8 slices bacon, cooked and finely chopped 1/3 c. finely chopped fresh chives 1/3 c. finely chopped pecans DIRECTIONS Mix together cream cheese, cheddar, garlic powder, paprika and season with salt and pepper. Form into 18 small balls and refrigerate until firm, 1 hour. In a shallow bowl or on a plate, stir together cooked bacon, chives, and pecans. Roll balls in bacon-chive-pecan mixture and insert a pretzel stick in each ball. Serve. (If not serving right away, loosely cover with plastic wrap and return to fridge. Let sit at room temperature 15 minutes before serving.)

ANTELOPE BACKSTRAP IN SAGE BUTTER INGREDIENTS Antelope backstrap sliced into ½ inch pieces (10 pieces) 1 teaspoon cumin 1 teaspoon garlic powder Salt and pepper 4 tablespoons butter Fresh sage leaves DIRECTIONS Cut antelope backstrap into 10 – ½ inch thick pieces. In separate bowl mix cumin, garlic powder, salt and pepper together and rub on both sides of the antelope pieces. Set meat aside. Heat cast iron skillet to Medium-high temperature. Melt butter and add sage leaves until sage leaves begin to get a little crispy. Add antelope to sage butter and cook up to 1 or 2 minutes flip antelope and continue cooking on other side – 1 minute or less. This will ensure that the antelope remains tender and flavorful. Serve immediately with a side of fresh squash and top with the left over butter from the pan.

Preparation Preheat oven to 325°. Cut 1 garlic clove in half and rub the inside of a 3-qt. shallow baking dish with cut sides. Smear butter all over inside of dish. Bring shallots, cream, salt, pepper, 1 Tbsp. thyme, and remaining 4 garlic cloves to a simmer in a small saucepan over low heat; cook until shallots and garlic are very soft, 15–20 minutes. Let cool slightly. Transfer to a blender; blend until smooth. Arrange potato slices in prepared dish, fanning out a handful at a time and placing in dish at an angle (this ensures every scoop will have tender potatoes from the bottom and crisp edges from the top). Shingle as you work until bottom of dish is covered. Tuck smaller slices into any gaps to fill. Pour cream mixture over potatoes and cover dish tightly with foil. Bake potatoes until tender and creamy, 60–75 minutes. Let cool. Place rack in highest position; heat broiler. Remove foil and top potatoes with Gruyère and Parmesan. Broil until cheese is bubbling and top of gratin is golden brown, 5–10 minutes. Serve topped with more thyme leaves. Do Ahead: Gratin can be baked 1 day ahead. Cover and chill. Bring to room temperature before broiling.

Beer Cheese Stuffing INGREDIENTS 2 tbsp. unsalted butter, cut into 1/2" pieces, plus more for baking dish 8 slices bacon 1 large onion, finely chopped 4 stalks celery, finely chopped kosher salt Freshly ground black pepper 1/2 c. medium-bodied beer, such as IPA 10 c. cubed French bread, dried overnight (from 1 lb. loaf) 1 c. sharp white cheddar, grated 1 tbsp. fresh thyme leaves 2 c. low-sodium chicken broth 1 tsp. Worcestershire sauce 2 large eggs, beaten Chopped fresh chives, for garnish DIRECTIONS Preheat oven to 425 degrees F and butter a 3-quart baking dish. In a large skillet over medium heat, cook bacon until crisp, 5 to 7 minutes (reserve fat). Transfer to a paper towel-lined plate. Let cool, then chop. Add onion and celery to skillet and season with 1/2 teaspoon each salt and pepper. Cook, stirring often, until vegetables are soft, 6 to 8 minutes. Add beer and simmer, scraping up any brown bits, until almost evaporated, about 2 minutes. Add bread, 2/3 of the cheddar, thyme, and half the bacon and toss to combine. Add broth, Worcestershire, and beaten eggs and toss to combine. Scatter with remaining cheddar and bacon. Cover skillet with foil and bake until a knife inserted in the center of the stuffing comes out warm, 45 minutes. Let rest 10 minutes and garnish with chives before serving.
THE BEST PUMPKIN MUG CAKE INGREDIENTS: 6 tablespoons vanilla cake mix 2 tablespoons canned pumpkin puree 1 teaspoon pumpkin pie spice 1 tablespoon milk 1 tablespoon vegetable oil whipped cream, for topping In a large mug, whisk (with a small whisk or large fork) together the cake mix, pumpkin puree, pumpkin pie spice, milk, and vegetable oil. Whisk until smooth. Cook in the microwave on high for 1 minute and 30 seconds. Top with whipped cream (and extra cinnamon if you love it like me!) and serve immediately!

Thanksgiving Cauliflower INGREDIENTS

1 big head of cauliflower 4 tbsp. butter, melted (divided) 4 garlic cloves (skin-on) 6 sage leaves 4 sprigs fresh thyme 4 sprigs fresh rosemary kosher salt Freshly ground black pepper GRAVY 1 tbsp. butter 1/2 Onion, finely chopped 4 oz. cremini mushrooms, finely chopped 3 tbsp. unsalted butter 3 tbsp. all-purpose flour 2-4 c. vegetable stock
Preheat oven to 450 degree F. Rub the cauliflower all over with melted butter. Season with salt and pepper. Place in cast iron skillet, surrounded by garlic, 4 sage leaves, 2 sprigs of thyme and 2 sprigs of rosemary. Bake for for 1 – 1/2 hours until charred in parts and tender throughout, brushing with more melted butter through. Pierce the cauliflower with a paring knife skewer to check the tenderness. Make gravy. Chop remaining thyme and rosemary leaves. Melt remaining butter in a small saucepan over medium heat. Add the onion and sautÊ until beginning to soften, about 3-5 minutes. Stir in the mushrooms and season mixture with salt and pepper. Add herbs and cook until the mushrooms are tender and browned. Add 1-2 cloves of the roasted garlic (skins removed), breaking up the cloves with a whisk or wooden spoon. Stir in flour and cook for 1 minute. Whisk in 2 cups of vegetable and bring mixture to a boil. Reduce heat slightly and simmer for 5 minutes, until the mixture has thickened to your desired consistency. Add more vegetable stock if desired.

Roasted Sweet Potatoes with Honey and Cinnamon Ingredients 4 sweet potatoes, peeled and cut into 1-inch cubes 1/4 cup extra-virgin olive oil, plus more for drizzling potatoes after cooked 1/4 cup honey 2 teaspoons ground cinnamon Salt and freshly ground black pepper Directions Preheat oven to 375 degrees F. Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, honey, cinnamon, salt and pepper over the potatoes. Roast for 25 to 30 minutes in oven or until tender. Take sweet potatoes out of the oven and transfer them to a serving platter. Drizzle with more extra-virgin olive oil.
Smothered Green Beans 5 (15-oz) cans green beans, drained 1 lb bacon 2/3 cup brown sugar 1/4 cup butter, melted 1/4 cup low-sodium soy sauce 1-1/2 tsp garlic powder Preheat oven to 350 degrees. Pour drained green beans in an ungreased 9x13-inch pan. In a large skillet, cook bacon until almost done but not too crispy. Remove from skillet, drain on paper towel and chop. Sprinkle cooked bacon on top of green beans. Whisk together brown sugar, melted butter, soy sauce and garlic powder. Pour over green beans. Bake for 40 minutes

Leftover Mashed Potato Pizza Pizza: 5 ounces slab bacon, finely diced (about 1 cup) 1 1/2 pounds prepared pizza dough, at room temperature All-purpose flour, for dusting Olive oil, for drizzling Kosher salt and freshly ground black pepper 3 cups leftover mashed potatoes, slightly warm 1 1/2 cups shredded mozzarella (about 5 ounces) 1 clove garlic, minced 1/2 leek (white and light green parts only), very thinly sliced 1/2 cup freshly grated Parmesan or Pecorino Romano (about 1 ounce) Directions For the pizza: Put a pizza stone on the bottom rack of the oven and preheat to 500 degrees F (for at least 30 minutes). Place a small skillet over medium heat. Add the bacon and cook until the fat renders and the bacon is just short of being crisp, about 5 minutes. Transfer with a slotted spoon to a paper-towel-lined plate to drain. Divide the dough into 2 equal portions; form each into a ball. Lightly flour a work surface. Roll one ball into a 12-inch round on the floured surface (cover the other piece with a kitchen towel). Lightly dust a pizza peel with flour and slide the dough onto the peel. Drizzle the dough lightly with oil and sprinkle with salt and pepper. Slip the dough onto the preheated stone and cook until just set, about 4 minutes. Using the peel, remove the dough from the oven and spread half of the mashed potatoes over the top, leaving about a 1-inch border around the edge. Season with salt and pepper. Sprinkle half of the mozzarella on the potatoes, then top with half of the garlic and leeks. Drizzle with a little olive oil. Return the pizza to the stone and cook until the crust is golden and the cheese is melted, 5 to 7 minutes more. Remove the pizza, top with half of the Parmesan and basil leaves and sprinkle with red pepper flakes if using. Repeat with the remaining dough and toppings.
Roasted Beets with Herbs Ingredients 2 bunches baby beets, peeled and halved Olive oil, for roasting Kosher salt and freshly ground black pepper 1 tablespoon chopped fresh parsley 1 tablespoon chopped fresh tarragon
Directions Preheat the oven to 375 degrees F. Toss the beets in enough olive oil to thoroughly coat. Season with some salt and pepper. Spread the beets on a large baking sheet without crowding. Roast until browned around the edges and fork-tender, about 35 minutes. Toss them with the parsley and tarragon and serve.
