Being the

hy do customers vote a particular business Best of the Lake?

Being in the media sales business gives me the opportunity to meet and work with hundreds of business owners who have a passion for growing their business. I tell every sales executive who comes to work with us that the best part of their job will be the time spent listening to business owners and managers tell them about how their business works — why customers come to them. Then it’s our job to use the print and online products we have to connect them with consumers who will then become their customers when they understand how great they are to work with, or what terrific products or services they sell. I worked with a gentleman for a number of years who didn’t even begin the business for which he is nationally known until he was about 50. When I’d have the privilege of spending time with him in his 90s, he always wanted to spend part of our time showing me the projects he had in the planning stages. If you have a passion for the work/business you are in, you can’t wait to open for business each day. Businesses voted The Best are managed by people with a passion for their work and their customers’ satisfaction. My career took me to managing six different newspaper companies. The recognition my teams have received from having their work recognized by professional organizations who are leaders in the field of journalism and design is a great motivator. It pushes us to always be looking for ways to improve our products and provide a better experience for our readers and advertisers. The national media company we work for uses a team of professional judges in the field of journalism and design to evaluate and critique our newspapers and magazines. Lake Lifestyles magazine has been voted the best in the industry taking awards for its editorial and design, including being named Best of GateHouse (a company made up of hundreds of newspapers and print publications across the country) two years in a row. Our team of editorial writers has received awards from top associations including the Associated Press. These awards gave our team a great sense of accomplishment. To be The Best takes hard work, passion for their business, and great products and services delivered with first-class customer service. I think most of those honored this year as The Best would say that to be The Best requires great competition. Find a few new

Favorites

WE ALL HAVE OUR LIST OF FAVORITES.

Shops we frequent, restaurants we eat at — it can be hard to break from our routines. Since the nature of my job requires me to seek out the new, and sometimes unusual, I find myself eager to create new experiences. The more I get out, the more apparent it is that we are lucky to live in such a beautiful place. Part of that beauty, of course, comes from the natural resources we have within reach. And then there are the people, the number of talented professionals we have in the community. As the Lake grows, so does the diversity of our population. People come from a variety of backgrounds to relocate to the Lake for any number of reasons. As a Lake native, I’ve witnessed a growing culture that has led to many more opportunities than I had growing up. And I think that is exciting. One of the things the summer season always brings is new experiences. Businesses often spend the “slower” time of year working hard to make improvements, which are rolled out just in time for the tourist season. Take Shawnee Bluff Winery, for example. It’s under new ownership, and the new owners brought in talented chef Carol Elwyn, who is helping to reinvent the business. I got to sit down with her for our dining profile and I can describe her in one word — innovative. Innovation can be risky, but it’s one thing I look for when seeking out places to visit myself. What Carol is bringing to the winery is refreshing and helps show just how our Lake is changing. In our Best of the Lake cover story, you’ll discover other businesses that are thriving because of the innovative approaches they’re taking within their industry. Fun Run May 7

Runners and walkers are welcome to enter the 9th annual Fun Run/Walk held at Lake Regional Hospital in Osage Beach. All proceeds will benefit the Lake Regional Cardiopulmonary Rehabilitation Department. Check-in for the run/ walk will begin at 7 a.m. in parking lot A in front of the hospital’s medical office building. The 5K run begins at 8 a.m. and will follow a course from the hospital campus down Osage Beach Parkway. Fun/Walk participants will start walking immediately after the run begins. An allyou-can-eat pancake breakfast will be offered for $5 starting at 8 a.m. (free to paid run/walk participants, as well as children 5 years old and younger). Chip timing will be available. June 3 The 38th annual HK’s Hospital Benefit Golf Tournament will be held at the Lodge of Four Seasons. An invitation-only VIP/Celebrity Party will be held Friday at 6:30 p.m. On Saturday a Pairing Party and Live and Silent Auction will start at 5 p.m. in the Campana Hall. Rebuilding the Classics

hen Tom Riggins retired, he needed something to do. So he looked to his youth. He’d always had an interest in cars and, growing up, he fixed his own vehicles — mainly out of necessity. “I had to work on them to keep them running,” he said. As a teenager, his first car was a 1931 Model A Ford. When Riggins retired more than 20 years ago, he purchased a few antique cars to fix up. As his first project, he took on a 1956 Thunderbird. “I found out it didn’t drive very well,” Riggins said. So he sold it.. and a hobby was born. Riggins continued to purchase, rebuild and sell all types of classic cars. At one point, he had seven in his collection. Today, he’s narrowed the collection down to three: a 1929 Ford Roadster Highboy, a 1928 Ford Speedster and a 1928 Model A. And he has no intention of selling any of them. Now that he’s older, Riggins relies on J.D. Kudart and his team at Custom Motorcycle Creations to do the work. The team overhauls the cars, turn-

ing them into showpieces that have been frequent trophy winners at the Magic Dragon Street Meet. When Riggins first purchased the 1928 Ford, it had already been restored to its original condition. “I didn’t enjoy driving it,” he says. So it sat around for at least 10 years before he decided to turn it into a hotrod. The car was stripped and rebuilt, a process that took several people at Custom Motorcycle Creations about seven months to complete. All three of Riggins’ cars took several months to finish, because he makes sure that no shortcuts take place and no detail is spared. “Building a hotrod is very demanding and time intensive,” Riggins said. “I am so pleased that we have the talent at Lake of the Ozarks to accomplish this masterful project.” And it’s expensive. “It’s the pleasure of getting what you want out of it because there is no monetary reward whatsoever,” Riggins said. “I enjoy deciding what we want to build and taking it step by step, and coming out with a finished product that I’m proud of.”

Confirmed Boaters SNOW BIRDS HIT THE WATERS OF FLORIDA AND MISSOURI Story by Eric Davis

I

t would be difficult to find more confirmed boating enthusiasts than Rich and Cheryl Butler of Camdenton. The retired St. Louis area couple trace their love of boats back to when Rich bought his first boat, a 15-foot Elgin when he was 17. The Elgin took them up the scenic Meramec River to near Meramec Spring in the mid 1960s and Rich recalls the Elgin was replaced by a beautiful new 1968 Mark Twain. The 17foot Mark Twain made its debut at Lake of the Ozarks that same summer.

Rich is a retired field mechanic for a St. Louis Caterpillar dealer. Cheryl was an office manager for Bell Telephone. They have been married 49 years. As a computer-savvy master mechanic, Rich said nearly every boat he has owned had been bought used via e-Bay or Craigslist. “We owned five boats as of last spring,” Rich said. “We’re down to just three today.” They own a 38-foot twin engine Formula, and an older Tritoon (both at the Lake), and their Florida boat, a 26-foot Pro Line, rigged for fishing. Rich said Missouri’s winters, while not as terrible as Minnesota’s, began to grate on them both, so six winters ago they began looking for a better winter climate. They found it in North Fort Myers, Fla. “We fish Pine Island Sound and then down into the Gulf. We’re on the Florida canal system so it takes a little over an hour to get to our prime fishing spot,” Rich said. South Florida was once a swampy area with poor prospects for development but beginning in 1915 with the creation of the Tamiami Canal, agriculture flourished with rice and sugar cane as cash crops. The 2,600 miles of canals drain 16 Florida counties and are served by another 1,000 miles of levees and berms. It is said that Florida has 1 million winter visitors each year and some of these “snow birds” eventually decide to stay. With 21 million full time residents, Florida has moved into third place in population behind Texas and California. “We love our house at the Lake of the Ozarks and it truly has become our home,” Rich said. “There’s nothing like a weekend at the ‘big lake.’ It brings us back every spring.”

A dealer can offer technical support and manufacturing manuals to help bring a tired boat back to near-new condition. “Don’t get caught with a bad boat,” Rich says. “I buy them.”

O

pportunities for ladies to play golf at the Lake of the Ozarks keep growing year after year. Whether you’re looking for competitive opportunities or just having fun with friends, the courses at the Lake and the surrounding, area have you covered. I had the privilege of talking with Barb Hegelund, an avid golfer and treasurer of the Missouri Women’s 50+ golf association, about some of the opportunities they and other organizations offer. “The 50+ organization is a great way to meet other ladies who have an interest in golf and it is a perfect and affordable way to play other courses in Missouri you may not otherwise have the opportunity to play,” Hegelund said. According to their website www.mw50plusga.org, the Missouri Women’s 50+ Golf Association was established to promote an interest in golf for women in Missouri who are age 50 and over. They offer tournament opportunities for their members at various locations across Missouri. This year’s events will be Monday, June 13, at Columbia Country Club in Columbia, and Monday, September 19, at the Clinton Country Club in Clinton. A small initiation fee is required to join and a United States Golf Association handicap is required. Teams are comprised of an A, B, C and D players playing a scramble format. The teams are decided by the tournament committee so you will not have to find your own foursome. Whatever your ability you are welcome to come have fun, socialize and make some new friends. The Lake is also home to the MidMissouri Ladies Inter-City Golf League. Hegelund is currently the team captain for the team that represents Tan-Tar-A. “Inter-City is great fun, she says. “You get to meet new ladies in a friendly competition and have a wonderful lunch following play.”

Each team has three two-person teams which play a modified match play competition against another two-person team from an opposing team. Two of the teams from each facility play in the championship flight, A flight and B flight depending on their ability. Six matches are played currently, one hosted by each team in the league and a luncheon is provided after each match. This is another great opportunity to meet like-minded women who enjoy golf and networking. More teams are welcome. Organized in conjunction with the Missouri Golf Association, eight tournaments are held each year with varying formats. One- to three-day tournaments are offered throughout the season. The formats range from a two-lady shamble, four-state team events to the Missouri Women, Senior and Junior Championships. If you want to test your game against the best in Missouri and neighboring states, then the MWGA tournaments are perfect for you. Information on the association and a full listing of events can be found at www.mowomensga.org. Several Lake-area clubs offer weekly ladies’ leagues that are open to the public. Most have small initiation fees and weekly fees that include your golf, prizes and food. Skill level is not an issue as these leagues cater to all abilities. Different formats and

I have a 13 year old son who is a pretty good player. We think he has outgrown his junior clubs (US Kids). What should we do next for him? –Kelly H., Eldon This is a question that could go many different directions. My first suggestion would be to have him see a certified club fitter or your local PGA Professional for assistance. What they will look for is his height, athleticism and swing speed. The taller and more athletic he is the greater the swing speed, would be my guess. Typical junior clubs are not made for someone with a faster swing speed so getting him in a different shaft is a must. Before specific junior clubs were available we fit a junior by cutting off the top of a men’s or ladies’ club to the length we wanted. What we didn’t realize was we were making that regular shaft men’s club into a stiff or extra stiff flex just by cutting it down. In turn, they were difficult for a junior or someone with a slower swing to play with. A PGA Professional will fit him into a senior flex or ladies flex iron for length and flexibility. Also, don’t assume that he will need 14 clubs at this age. He will probably outgrow these in a few years, so I would think about getting about 10 clubs, focusing on a couple of woods, a hybrid and some irons. I wouldn’t worry about getting a 60-degree or higher lofted wedge either. One wedge around 54 degrees should do the trick. In terms of a putter let them decide what feels good. Putters are very subjective and if it is the right length and he likes it, he will probably have more confidence and putt better with it.

I keep hearing play ready golf, play ready golf. What does this really mean? I don’t want to make the others upset. Please help! –Susie S., Camdenton What a great question. Ready golf takes on several meanings and the thing you need to remember is to play without delay and without disrupting others in your group or on the course. If you play with the same group of people all the time you should talk about how you want to play to get the most enjoyment out of the round without delaying others on the course. This can be as simple as eliminating multiple practice swings, having a club ready to hit when it’s your turn and walking to hit your next shot if it is in close proximity. Most rounds are played with a cart, so the driver should drop the rider at their ball then proceed to theirs, as long as they are not interfering with them. This will keep play moving as the person driving the cart is preparing for their shot not sitting idle. Once on the green the farthest away can continue putting until the ball is holed unless they are in someone’s way. I bet by taking a few of the suggestions above you can cut that down to two hours. Look for a lost ball for five minutes while the others in your group are playing their shots. Everyone doesn’t have to congregate by someone while they are playing a shot; you should be by your ball ready to play when it’s your turn. When you get to the next tee one person can write down the scores while the others are teeing off. Have your club with you, don’t wait until someone hits before you get ready. If you waste three or four minutes each hole by not being ready, over the course of 18 holes it could equate to an hour extra spent on the course. Your group needs to decide what is appropriate, but playing over 2 ½ hours for 9 holes is probably too long. Now go out there and play some fun-ready golf!

Six Days in Washington H ISTO RY CO M ES A L I V E AT TH E N ATI ON’S C AP I TOL Story and photography by Charis Patires

A

s a self-proclaimed history geek, Washington D.C. has always been at the top of my list of places to visit. We booked a flight in late September and, with family in Georgetown, we already had a place to stay. Everybody always says there’s too much to see in one trip — and they are right. We had about six days to pack in as much as possible — and we did.

Day One Since we had scheduled a tour of the Capitol on our first day, we headed to exhibits nearby. Our first stop was the National Archives — home of the Declaration of Independence, the Constitution of the United States, and the Bill of Rights. The documents are heavily guarded and hard to read because they’re faded, but it was well worth the stop to see how our nation was born. We have a connection to someone working in the Senate, so they prearranged a personal tour of the Capitol for us. We checked in with our guide, who took us from one of the Senate administration buildings to the Capitol via an underground subway used by Congressmen. (Anyone can 26 | LAKE LIFEST YLES

get a personal tour if they contact their representative and make plans ahead of time. Otherwise, you will have to fight the ticket lines.) On the day we visited the Capitol, Speaker of the House John Boehner had resigned so it was busy with workers and press. It also happened to be the day Chinese President Hu Jintao was visiting. We caught a glimpse of him as he waved to onlookers before being escorted down a staircase. During our visit, the Capitol was undergoing renovation so some of the rotunda was difficult to see. However, we did tour the state statue collection, the House Gallery, and several meeting rooms like the Senate Appropriations Committee Room. After the tour, we headed back to Georgetown to change for dinner at the famous Old Ebbit Grill. This upscale restaurant is right around the corner from The White House and is Washington’s oldest saloon. It’s apparently the place to be seen in Washington. Better make reservations! After dining on their famous oysters, we took an evening stroll around several monuments and memorials, which I think are best viewed at night. MILES WALKED: 13


Day Two There are a number of Civil War battlefields within a short drive from D.C. so we took a trip to see the location of the battles of Manassas. The first major battle of the Civil War – also known as Bull Run – is only 45 minutes away from the city. The second battle of Manassas took place close by, so it was easy to tour both battlefields. However, it took us most of the day. A guide relayed the history and pointed out important buildings, grave sites and statues at each battlefield. We stopped at the Bull Run Winery before heading back into the city, and then picked up Thai food at a favorite local eatery in Georgetown for dinner. We later walked to Thomas Sweet for ice cream (a favorite of many, including President Obama). We visited again later in the week to pick up fudge to bring back home as gifts. MILES WALKED: 7

Day Three It was back to the city to tour a few museums. First was the United States Holocaust Memorial Museum with its four floors of exhibits. On Sundays, the oldest living survivor of the Holocaust volunteers for a few hours at a desk where you can sit and talk to her. We saw her when we came in, but by the time we came back around she was gone for the day. It took us several hours to make our way through the exhibits. We then took a short drive to Arlington National Cemetery where we visited the Tomb of the Unknown Soldier, the Arlington House and the graves of President Kennedy and family. Arlington is also the final resting place of more than 400,000 active duty service members; you’ll see monuments and memorials located throughout the cemetery. After spending a few hours at Arlington, we drove back to D.C. and walked through the Lincoln, Korean and Vietnam memorials. I was surprised by how large the Lincoln Memorial is; it ended up being my favorite. The evening ended with a walk around Georgetown to see some of the local architecture and a stop at a local brewery for a nightcap. MILES WALKED: 11 LAKENEWSONLINE.COM | 27


Day Four With so many museums to choose from, it was hard to narrow down which Smithsonian museums to visit. We only had time for two — we chose the National Museum of American History, and the National Museum of Natural History. Among the highlights, we saw the Star-Spangled Banner, a life-sized replica of Julia Child’s kitchen, Dorothy’s ruby slippers, presidential artifacts and other treasures. At the National Museum of Natural History, we got a glimpse of the Hope Diamond and other amazing jewels, sea creatures, fossils and the iconic African Elephant. After a day visiting the Smithsonian museums, we walked to the popular Washington Hotel for a drink. With cocktails going for around $15, we had one drink, took some pictures, and moved on. However, the place offers great views of Washington, including the Washington Memorial and the White House, where we could see the armed guards standing on the roof. Dinner was at another “famous” spot, The Martins Tavern in Georgetown. Founded in the 30s many presidents have dined there. We tried but didn’t get to sit at the table called the “Proposal Booth” where it is said that John F. Kennedy proposed to Jacqueline. MILES WALKED: 8.5

Day Five Because so many of the museums don’t open until later in the morning (10 a.m. or so) we visited the last of the memorials we wanted to hit. We walked around the Tidal Basin to see the Franklin Delano Roosevelt Memorial, the Jefferson Memorial, the George Mason Memorial, and the Martin Luther King, Jr. National Memorial. We also scheduled a tour of the White House for this same day. We were lucky enough that we missed the restrictions on taking photos (it was lifted in July 2015) so we were able to take photos as we toured. Be ready to arrive on time and go through a rigorous screening process. Not surprisingly, each person has to go through several security checkpoints, including what I presume was a bomb-sniffing dog. It took us just as long to go through security as it did to tour the East Wing and residence of the White House. Some rooms are off-limits of course, but we did see several, including the China Room, library, East Room and State Dining Room. Secret service personnel are happy to answer questions and know their history! Since we were the last tour of the day, we witnessed staff putting carpets back down and picking up roped off areas behind us so that the house was back in working order. It was still early afternoon so we grabbed lunch and headed to Ford’s Theatre to see where President Lincoln was assassinated. Underneath the working theater is a large museum filled with an impressive collection, including what the President was wearing the night he was shot, as well as the gun that was used in the assassination. After touring the museum, you can take stairs up to the theater box where Lincoln was sitting. The box is only visible through a glass door. Across the cobblestone street is the Petersen House, where Lincoln died. The rooms are decorated in period furniture and, next door, two floors feature even more exhibits at the Center for Education and Leadership. MILES WALKED: 7.5 28 | LAKE LIFEST YLES

Day Six We only had a half day left before we had to leave, so we took the bus to the National Gallery of Art to hit the highlights. Giotto, Leonardo de Vinci, Rembrandt, Manet and other well-known artists are scattered throughout the gallery. It took some hunting to find each piece. As an art aficionado, I was surprised by the number of artists I’d never heard of housed in the collection. Our last stop before leaving for the airport was a crowded Union Station, where we had lunch and did some last-minute shopping for souvenirs. MILES WALKED: 6

TRAVEL TIPS Georgetown is about 20 minutes away from the heart of D.C. It is well worth a side trip away from all of the city's main activities. The homes are beautiful and, most notably, known for famous residents like the Kennedys. You can easily take a walking tour to see the homes and other historic buildings. Everything we toured was free. There are very few places you will have to pay to get in. Take a jacket or wear long sleeves (the museums are cold), and wear comfortable shoes. Our trip was at the end of September. I've heard stories from others who had to wait in line for hours to get in to attractions. We never did. So if you aren't planning to go for a certain reason, go in the slower season.

Getting around I didn’t mind taking the bus. It gave us time to window watch and plan where we were headed for the day. Since the bus took busy routes, we were able to catch a glimpse of a few things we couldn’t make time to visit. When we didn’t take the bus, we’d catch a ride with family or call Uber.

In a shaker with ice add 2 oz. Svedka Citrus Vodka, ¾ oz. triple sec, 1 oz. cranberry juice and a splash of sweet and sour mix. Shake vigorously and pour in a chilled martini glass. Garnish with a lemon twist.

W

ith celebrity clients, and a bodybuilder herself, chef Carol Elwyn had to learn how to cook gourmet food on a strict diet without compromising on flavor. A blackbelt in Tae Kwon Do, 62-year-old Elwyn has a long background in the fitness industry as well as being a chef. She started working in the restaurant business at the age of 13 and continued through her early 30s until a career change brought her to work as a corrections officer. It was there she started to learn more about nutrition and body sculpting. As a Physique Competitor, her focus is on all-natural bodybuilding. “I love food, so I learned how to make gourmet food with a light touch and high flavor,” she said. She started participating in Body Physique competitions and so far has won over 30 shows. Eventually Elwyn went back into the kitchen. She moved to Hawaii where she embarked on a number of adventures. She attended the University of Hawaii Culinary School, worked in celebrity rehabs and owned a high-end bed and breakfast in Kona. For 20 years she was the owner of Carol’s Cafe, located inside of a gym. It was in Hawaii where she met Dwayne Johnson (aka. The Rock) who chose her to be his personal chef. Elwyn says she used her knowledge when working with celebrities who stick to strict diets but thrived because she created dishes they’d want to eat. She was even a television personality appearing on “Cooking with Cutty,” where she showed viewers how to make healthy recipes. The show can still be seen and is geared toward helping kids make healthy lifestyle choices. When a member of Elwyn’s family became involved in two properties at Lake of the Ozarks (Shawnee Bluff Winery and Shawnee Bluff Vineyard) she considered coming back to the mainland. After visiting the properties, Elwyn became interested in tackling the project to reinvent the food-side of the companies. She officially moved to the Lake in March and focused her energy on reviving the winery’s menu. Her healthy and innovative influences can be seen with items like grilled salmon, the chicken breast sandwich on a whole grain bun, and a variety of salads. To keep it interesting, there is a specials board where seasonal items are made available daily. If you are not watching your waistline, there are still plenty of choices for every lifestyle including the many brick oven pizzas, burgers, and tapas. The vineyard offers an assortment of meat and cheese platters. In late 2016 Elwyn plans to add a larger kitchen and a bistro at the vineyard. They hope to have facilities at both properties to be able to cater to all events which guests, attending the celebrity-studded concerts already on the books, would enjoy. In the future Elwyn said she would like to open a catering business to serve the weddings and events, as well as a nutriitional program where people can order healthy meals to go.

What is your goal in the kitchen? To compliment the wines with fresh, local and innovative foods. What is your favorite food to cook at home? Barbecue. Because it’s easy. How do you get ready for a competition? When I’m not cooking, I’m working out. I prepare five meals a day.

About the wineries Shawnee Bluff Winery and Shawnee Bluff Vineyard were purchased last fall by Barrett Elwyn and Gail Griswold. The winery is located in Lake Ozark with a 14-mile panoramic view of the Lake. The vineyard is located just off Hwy. 54 near Eldon with an indoor tasting room, outside entertainment venue, and other features. Grapes are grown on both properties with plans to produce more of their wines in the future. Currently, a variety of red and white wines are available. They bottle on site and have their own labels. Since the new owners have taken over there has been a big push to reinvent the wineries with improved menus and upgrades to the facilities. The overnight guest rooms at the winery have been overhauled with new furniture and other changes (some you can’t see) have been made. Currently they are putting in a new main bar, and future plans are to add a larger kitchen, owner Gail Griswold says. Since the vineyard has five acres of grapes and more space, they would like to increase wine production at that property. The vineyard already hosts a number of events and concerts during the summer. Burgers Without Beef BY ERIC DAVIS

American health authorities may be totally on track claiming we eat too much red meat. But, as a confirmed, decades long, beefeater, and consumer of pork chops, lamb chops, baby backs and cabrito (Mexican barbecued kid goat ribs,) I’m suspicious of such claims. But there are some excellent alternatives worth a try, which brings us to Chipotle Portobello/Poblano Sandwiches that have a distinct Southwestern tang. Doing stand-in duty for ground beef pat-

ties are portobello mushrooms — the three or four inch flat fungi that the United States Department of Agriculture classifies as a vegetable. Portobellos have a thick, meat-like bite, but not near the fat. Mushrooms generally can replace beef or pork, while providing a lesser amount of carbs and protein. Poblano peppers are said to have originated in Puebla, Mexico. Their name refers to their typical width and the green varieties are generally considered mild. Take care to select

green poblanos, not red. Red ones can be hotter than jalapeños. A key ingredient is best found in small cans of chipotle peppers — in Odobo sauce, a Mexican staple. I can eat these little smoked peppers right out of the can and the Odobo sauce, made up of paprika, oregano and garlic gives them a smoky aroma and flavor. Here’s what you’ll need to turn out a batch of four ‘BLAM-o’s. One bite will hit your taste buds Po-Blam-o!

Po-BLAM-o Sandwiches INGREDIENTS 4 large portobello mushrooms 4 poblano peppers, cored and seeded 1 small can of chipotle peppers in Odobo sauce 5 cloves garlic, minced 1 cup yellow onion, chopped 3-4 tablespoons balsamic vinegar ½ cup of vegetable oil Coarse salt and pepper to taste 2 large sweet onions, cut crosswise into slices, skewered, brushed w/butter ½ cup butter melted 4 ciabatta buns (or other rustic rolls) sliced in half 4 slices pepper jack cheese 2 avocados pitted and sliced MARINADE FOR THE PORTOBELLO MUSHROOMS: Blend chipotle chilies with Odobo sauce, garlic, chopped onion, vinegar, vegetable 36 | LAKE LIFEST YLES

oil, and salt and pepper in a blender until smooth. Pour some marinade over mushrooms in a baking dish, gill side up. Work the marinade to the gills with the back of a spoon. Allow to rest in the fridge for one hour. Save half the marinade for grilling. GRILLING: These are best prepared on a gas grill set with a hot side and cool side. Place the mushrooms on the hot side, turning after 10 minutes. Paint the flip sides with the marinade and grill for another 5-10 minutes, and then move to the cool side of the grill. Be generous with the marinade. While the mushrooms are cooking, place poblanos on the grill for 10-15 minutes, turning every few minutes until skin becomes crispy. Place skewered onions on the hot side and brush again with melted butter. Move to the cool side when well browned.

Brush melted butter on the cut sides of the buns and grill until golden brown. TO SERVE: Remove onions from skewers. Scrape charred skin from the poblanos and cut into halves. Place a mushroom gill side up on the bottom half of the bun, top with pepper jack cheese, onion, poblano pepper, and (if you can hold the sandwich together) add slices of avocado. I’ve found it’s best to serve the avocados on the side.

Serve with Dos Equis lager or a glass of Chardonnay.

T

here’s nothing Michael and Kristen Bauer like better than making that six-hour car ride from their home in Illinois to Lake of the Ozarks. Like many second homeowners, the Lake is their place to get away — close enough to visit on a whim and return often. The couple were high school sweethearts and started vacationing at Lake of the Ozarks when their children were young. To enjoy some down time from their busy schedules, they had been spending their weekends traveling to the Mississippi River but by the time they trailered their boat, uncovered it, spent a few hours on the water and headed back home, it became too much of a chore. So they started looking for places on the water at Lake of the Ozarks. In July 2012 they found what they were looking for at Sunset Palms Condominiums. “We were blown away with the friends that we met that we now call family,” Kristen said. Earlier that year their parents (Kristen’s mother and Michael’s father) passed away six days apart, so it became more important for the family to have a place where they could spend some quality time together. But they needed more room. “We needed a new place to start memories, traditions, build from scratch something that was happy,” Kristen said. So the search for a summer Lake home began.

House hunting They enlisted the help of friend and realtor Tammy Rosenthal (with the Fran Campbell Team) to be on the lookout for homes in their price range. Rosenthal had sold them their condo, so Michael and Kristen trusted her opinion since she knew what they were looking for. When the couple was at home in Illinois, Rosenthal would Facetime them to show them homes. They started getting discouraged by the size of homes for the value they were seeing so they switched gears and began looking for fixer-uppers. Still, nothing seemed to be the perfect fit. Someone had suggested Kristen pick an area she might want to live in and start driving around. So she did, and stumbled upon a home outside of Camdenton. Kristen said as she looked around the outside a couple of signs made it clear that it was the place to be. She immediately called Rosenthal who showed her the home the following day. “I knew when I walked in the front door that this was it,” Kristen said. Through Facetime she showed Michael the home and they closed in June 2015. They love it so much it’s where they plan to retire. “It was exactly what I dreamed about. It has changed our entire life, and gives us something to look forward to,” Kristen said. Kristen describes her home as casual Lakeside elegance — like what you would see in the Hamptons. The house sits at the 33-mile marker and has four bedrooms (two are master suites) and five bathrooms.

Meet the owners Kristen is a hair designer/owner of K B Bauer’s An Exclusive Salon. Michael is employed with the Whiteside County Sheriff’s Office. Kaitlyn is a sophomore at Mizzou studying pre-med and works on as a dock girl and waitress at the Lake in the summer. Grace is a junior in high school and has plans to attend beauty school in Columbia next year. Their Great Pyrenees Lila Mae and 12-year-old Golden Retriever Lucky love to visit the Lake, too. Why did you choose the Lake? We love being near water, within a days drive. We love being able to drive six hours and walk down to the dock and literally drop our boat in the water and go for a midnight drive. We park the car and go everywhere by boat. Really more than anything, we wanted to start a new family tradition with the girls, a new place to come home to for the holidays, a new meeting place or gathering for our family. We love to hang out on the dock and swim off of it — that you can’t do when you live in a condo.

Not many changes were made in the kitchen but they did turn an existing bookshelf into a built-in food and water bowl to accommodate their dogs. Kristen put a lot of effort and time into finding the right elements for the master bathroom. The corner tub was replaced with a shower. Sea glass tiles were picked up in Rockford, Ill. The floor was already marble so they put in an all-marble vanity top and custom-made trim. They plan to redo the other bathrooms with the same sink and fixtures.

An awning was installed providing some shade, and makes the home easy to spot from the water. The house faces the south which means during the summer the sun doesn’t come directly into the home heating it up but in the winter it does which provides plenty of sunshine and warmth. The day they bought the house work began to make it their own. They took out 18 trees near the Lake to open up the view. Groups making it easy to grow your own food

ardening can be a challenge, especially for people who live in an apartment or condominium, or just don’t have a green thumb. With the demand for organic food and the need for sustainability on the rise, many people are now growing their own food. It’s a hobby for some. For others, it’s a way to feed their family more nutritious meals. Here at Lake of the Ozarks, there has been a push to create community gardens to help fill those needs. Several organizations offer programs that provide the public with designated space for growing fruits and vegetables. lakenewsonline.com | 127

“More and more people are realizing it’s important what you feed your family,” says master gardener Diane Williams. But feeding more healthy foods can be expensive. About six years ago, Diane and her husband, Mike, started a community garden at their church, which had roughly three acres of unused land. The garden began with a few raised beds. Today, it’s grown into a 175 foot x 70 foot fully-equipped garden surrounded by 6 foot fencing. Anyone is welcome to use the garden; simply reserve a plot and grow what you want. Up to now, the couple has been charging people $10 a year to use a plot. But Williams says they have been able to build up enough funds and don’t plan to charge this year. All you need to get your plot started are seeds, and there is a seed sharing program where you can both donate seeds or take any you need. All equipment is provided, along with water and hoses. Williams says there are always experienced gardeners on hand to help anyone who may be new to gardening. Plots come in several sizes, and there is also a designated area to grow produce that is then donated to local food pantries. During the growing season, whatever comes from that area of the garden goes to the Hope House or Lamb House for distribution to needy families. Hope House also offers its recipients a program, with sample menus and recipes, that shows them how to best use the items they get from the pantry.

Camden County Library Community Garden The Camden County Library District started a community garden about two years ago when library director Michael Davis decided to put a large field behind the library to good use. With help from the community, local students at the Camdenton Horizons School, grants and other resources, the community garden now boasts 18 plots surrounded by an 8-foot tall fence. More beds will be added as the project continues to grow. All plots are 40 inches x 80 inches and 1 foot high. A few of the plots are reserved for organic gardening so use of pesticide is prohibited. Plots are free to use, but some rules apply. For example, those with plots agree to volunteer a few hours to help with the upkeep of the entire garden. Many of the tools are supplied; there are rain barrels for water and a mulch pile available for filling beds. And while the University of Missouri Extension has tested the soil to see what type of nutrients might be needed for plants to flourish, Davis said most gardeners need little to no fertilizer. 128 | LAKE LIFEST YLES

We’ve asked the experts what’s best to plant this time of year. If you are new to gardening. Here’s what Larry Roberts, Master Gardener and University of Missouri Specialist, recommended.

For the last five years, the local non-profit Share the Harvest Food Pantry has been working on a program to provide fruits and vegetables for clients of the food pantry. According to garden manager Sheila Morse, the pantry produces tons of produce each year which is then distributed to needy families throughout the week. With a combination of 26 raised beds, a tunnel garden and small orchard, food is harvested year round. It can take a few years, however, for some plants — like the peach, apple and pear trees — to produce any fruit. Bedding plants and herbs are available to the public on a small scale, Morse says. A majority of what comes from the garden goes to help around 1,000 families each year. She says donations of mulch, compost, potting soil and hose protectors, as well as volunteers, are needed to keep the garden open for business. This year, in time for the spring growing season, Share the Harvest implemented a program that gives away bulk seeds to families, who are encouraged to grow their own food and taught how to go about it.

Leaf lettuce: Plant anytime from March-June, and again in the fall. It’s very easy to grow. You can cut it to an inch from the ground when it gets about 8 inches tall and it will grow back. Keep cutting until it gets hot out. Radishes: Easy and healthy! It only takes 30 days and can be planted in spring, summer and fall. Snow peas: They need to be tied up. Beets: They take very little care.

any food traditions connect to a season. Summertime brings backyard barbecues, festival fare, ballpark food and road trip snacking. “For all of these summer activities, there are good food options and not-so-good food options,” says Anita Marlay, R.D., L.D., a registered dietitian for Lake Regional Cardiopulmonary Rehabilitation. “If you want to feel your best this summer — and for several summers to come — it’s important to eat well while having your summer fun.” The following is Marlay’s list of the five best, and five worst, foods of summer.

FRESH FRUITS

“Watermelon, berries, peaches — yum!” Marlay says. “Summer is prime season for the best-tasting, most affordable fruits of the year. Take advantage of the wide variety, and be sure to get your recommended two to four servings every day.”

Lettuce topped with a mix of garden veggies; a cucumber salad with onions and vinegar; a salad of fresh tomatoes and herbs; a pasta salad with zucchini — “there’s just no end to the delicious possibilities,” Marlay says. Check out farmer’s markets and stores for local produce to enjoy.

COOL DRINKS

“Ice-cold tea is a sure thirstquencher on a hot summer’s day,” Marlay says. “If you leave out the sugar, either black or green tea is an excellent, healthful choice.” Not a tea drinker? Try flavoring your water with some sliced fresh fruit.

ICY TREATS

Choose fruit sorbet, fruit ice or popsicles to satisfy your craving for a cool, creamy treat. “Most of these have fewer than 150 calories per serving — a sweet treat indeed,” Marlay says.

FIRE UP THE GRILL

“Grilling is a great way to add flavor to your food without adding extra fat and calories, plus it keeps the heat out of the kitchen,” Marlay says. Choose lean meats, and season with a delicious marinade or fresh herbs.

Fairs, festivals and ballparks are favorite summer pastimes — but deepfried Twinkies, corndogs, nachos and funnel cakes bring an overload of calories, sodium, fat and sugar. Can’t resist? “Choose smaller portions or share the treat with someone, and limit how often you indulge,” Marlay says.

ICE CREAM

We all scream for ice cream on a hot summer day. “A small cone once in a while isn’t a diet-buster,” Marlay says. “But, start adding syrupy toppings, candy or nuts to that cup of soft-serve and the calories can soar. One treat can easily add up to nearly a whole day’s worth of calories.”

Hot weather calls for cool drinks, but the calories in soda, lemonade, sweet tea and alcoholic beverages can add up quickly. “Add to that the fact that we tend not to compensate for those calories by eating less food, and weight gain is sure to happen,” Marlay says. Taking time to think about food choices and having a plan is the first step to healthy eating this summer, Marlay adds. “Decide now that whenever you are tempted to choose a ‘worst’ food, you will see whether a ‘best’ food option is available,” she says. “Make good food choices this summer, and enjoy the best foods of the year.”

Low-fat milk, egg whites and naturally low-in-fat goat cheese make this tart — brimming with summery flavors — guilt-free and satisfying. Enjoy it warm or at room temperature, as an entrée or a side dish.

INGREDIENTS Pastry dough 11-inch tart or for a 9-inch deepdish pie, homemade or store-bought 2 large eggs, plus 2 large egg whites 1 c. 1% low-fat milk 1 tbsp. chopped fresh marjoram, oregano or thyme, or a combination ½ tsp. salt ½ tsp. pepper 1 c. chèvre (spreadable goat cheese) 2 medium tomatoes, sliced 1 c. corn kernels, fresh or frozen (thawed if frozen)

DIRECTIONS 1. Preheat the oven to 400 F. 2. On a lightly floured-surface, roll dough into a 14-inch circle. Fit dough into an 11-inch tart pan or a 9-inch deep-dish pie pan, trimming any overhang. 3. Line dough with foil or parchment, then fill with pie weights or dried beans. Place on a rimmed baking sheet and bake until dough is set and pale gold along the rim, 15 to 20 minutes. 4. Carefully remove the foil or parchment and weights and set pie shell aside. (Leave the oven on.) 5. In a medium bowl, whisk together eggs, egg whites, milk, herbs, salt and pepper; pour mixture into pie shell. Crumble in ¾ of chèvre; arrange tomatoes and corn on top, pressing on tomatoes to slightly submerge. Sprinkle on remaining chèvre and bake until top is lightly browned and center is set, 30 to 35 minutes for 11-inch tart or 40 to 50 minutes for 9-inch pie. 6. Let stand 10 to 20 minutes before slicing and serving.

What goes better with grilled meat than a cool coleslaw or potato salad? “Unfortunately, salads heavy with mayo come with lots of unwanted calories and fat,” Marlay says. “Choose vinegarbased salads instead, and load up on the veggies.”

“Not only are sausages, bratwurst and hot dogs high in fat and sodium, but there is solid evidence that regularly eating processed meats can increase a person’s risk for certain cancers,” Marlay says.

S

chizophrenic. That’s how Michael Mac describes his works of art. “How I come up with a subject for a piece of art is often a mystery, even to me,” he said. “Sometimes, an idea just pops into my head and I run with it. Other times I’ll struggle with a concept for a long time until I can visualize it and then I’ll execute the work.” The Osage Beach resident has been an artist for more than 50 years, first becoming interested in art after winning a drawing contest at school. “I learned a lot on my own through practice,” Mac says. “I believe it’s all about desire. If you want something bad enough, you go after it with desire and ambition.” A troubled youth, Mac says he was positively influenced by famous art educator Dr. Arthur Westphal who he says taught him to be a real artist. So he took drawing and anatomy classes at St. John’s College in Annapolis, Md., audited art classes at the University of Kentucky and became an art director of “Fasionality” (a studentsponsored magazine for fashion and arts). He earned a certificate in Business Law for Artists from Marylhurst University. Mac works with all media but his favorites are oil and a type of chalk imported from France. He never paints on canvases, only on prepared panels. “My work, both in style and content, covers a lot of ground. I like to say ‘I change styles like most people change clothes,’” Mac says. “Don’t look for covered bridges and lighthouses or old barns from me. That’s just not my thing.” Instead, many of his pieces are abstract. “For a number of years now I have been fascinated by society’s turn to an oil, computer, machine governed civilization. I have been doing drawings and paintings that seem to reflect my concerns and fears of a society too dependent on these things,” he said. “I love drawing and painting weird, wonderful, mechanical worlds as they relate to humans. Most of his work is in private homes or other locations across the United States but you can see a few pieces locally at the Osage Beach City Hall and the Bull Pen where he was commissioned to do murals. Mac was born in Irontown, Mo. and grew up in Philadelphia, Pa., and moved to many cities throughout his childhood. In addition to his art, he has a landscaping company at the Lake. 4 1. “Spiral Nebula” was a piece that was backbreaking work. To accomplish the swirling gold dots, the painting (on plywood) had to lay flat on the table instead on an artist easel. 2. Mac started this drawing in 1992 but finished it last year. “Imaginary Lover” creates an illusion with the lines drawn down the painting using conté crayon. 3. “American Bocage” showcases his use of conté crayon (imported from France) and colored pencils. 4. This unnamed piece is made of modeling paste giving it a 3D look. It was completed using a process of sanding, airbrush and oil paints.

“We get the opportunity to do something that we love to do,” Baker said. “We are all music lovers. We may not play our personal favorites each night but we get to perform in front of people and hopefully give them an awesome experience.”

POPULAR COVER BAND RETURNS TO THE LAKE

t’s a party from the first note to the last song. When Five Turn Knot performs in the Lake area they always bring out a large crowd. Vocalist and guitar player David Baker met some of his fellow bandmates when he was involved in a theatre performance of “The Wedding Singer.” He met Conrad Hildebrand who was in charge of audio for the show, and John Breeden who was running the lighting. Eventually their friendship led to forming the band in 2009. Based out of Jefferson City, they began playing in central Missouri and now also travel to surrounding states. Each band member has a background in music making up a diversified group of talent. Everyone began playing music at a young age and started performing for a variety of reasons. Inspired by classic performers and music innovators, the cover band sticks to popular hits you are likely to know from mainstream music. “We decided early on that we wanted to set aside our personal musical tastes and play the songs that kept people dancing and coming back show after show,” Baker said. They’ve put together a setlist featuring a variety of music genres in a large stage production — from the lights to the sound to the setup.

Kyle Meagan W

hen Meagan Freeman came home from work one evening she knew something was up. She’s usually greeted at the door by Jauco, her miniature Pomeranian. But that night, the dog failed to appear. Meagan normally cooks dinner, but that night her boyfriend Kyle Simpson said he was going to grill steaks. As Meagan entered the house, she heard romantic music playing. And when she stepped out onto the patio, a candlelit dinner was waiting, along with a handwritten note that told her to look at Jauco’s collar. Meagan turned to see the dog mysteriously appear, along with Kyle, who got down on one knee and proposed. The couple would be husband and wife within a month. Kyle, a Realtor with RE/ MAX Jason Whittle All Pro Team, grew up in Camdenton. Meagan grew up on a farm in El Dorado Springs. The two met in 2014 when a friend introduced them. A few months later, Kyle asked Meagan out. “Kyle and I knew we wanted to be married within the first month of dating,” Meagan said. Once engaged, the couple wasted no time. They set a date for October 24, 2015. At first, they planned on just inviting close family, but the guest list quickly grew to about 100. Wanting a great meal with family and friends, as well as a beautiful location, they chose Porto Cima for their wedding location. Meagan’s mom Sheryl helped with all of the decorations — from making floating candles for the pool to setting up the linens, and arranging for the flowers to be shipped in from Alaska.

Making News at the Lake Lake Area Chamber of Commerce K.C. Cloke is the new executive director of the Lake Area Chamber of Commerce. Cloke, a longtime resident of the Lake area, has over 13 years in sales and marketing experience and is involved in several community organizations. Cloke is a Lake area native, a graduate from Camdenton High School. She has served as a member of the board of directors since 2013 and has been active in several of the chamber’s committees. She assumed the role of executive director in February.

Justin Farrell John Farrell Real Estate Company Realtor Justin Farrell, a sales agent with the John Farrell Real Estate Company, has been named the Missouri Realtors 2015 Good Neighbor for his work with the Lake of the Ozarks Soccer Association. The Good Neighbor Award is a $2,500 grant awarded to a Missouri Realtor to benefit the non-profit organization that is included in their nomination. Nominees were judged on their personal contribution of time as well as financial and material contributions to benefit their cause. Farrell received his Realtor salesperson license in August of 2007, and went to work for The John Farrell Real Estate Company. He is strongly involved with real estate at both the local and state level, and does all he can to serve the community and give back. In 2010, Farrell took the helm of the Lake of the Ozarks Soccer Association (LOSA). At the time the 30-acre facility was falling apart with limited funds and low participation. Since that time, he has been able to cut expenses, increase revenue and volunteer participation, improve the facility, offer free camps and provide a positive place for kids to play soccer no matter what their financial resources. 148 | LAKE LIFEST YLES
