Horse ranch opens
T
he lake is a diverse area. Right in the center, you’ll find a hub of commerce and plenty of events and places to socialize yearround. For those who only come to visit during the summer, though, it may not be as well known that there is a whole world of farmland just off the highway. Sarah Fields opened her new horse training ranch, SD New Horizons Ranch, earlier this year and hopes to expose more people to the rural side of the lake. Fields’ ranch offers lessons for beginner to advanced riders. Horsemanship is at the center of the training, teaching a rider how to understand their horse. Before getting on the saddle and riding, Fields goes through how to care for the horse and how to even equip the saddle in the first place. “I teach everything from cleaning stalls to daily chores,” Fields said. “If they want to own a horse, these are the things you’ll need to know.” For those already experienced with these fundamentals, Fields offers advanced lessons on maneuvers and body control. The goal is to help any owner become comfortable with their horse and understand the full scope of what it means to be an owner. She says that once the foundation of training has been established, any discipline of horse riding can be learned. Fields allows for anyone to bring in their horse to train on-site, and also has eight horses available for anyone to take lessons with. In 2022, Fields will head to Arkansas to take part in a prestigious horse-training program led by Clinton Anderson. Anderson has been featured in a number of magazine articles on horse training and is well known in the field. Once certified through this program, Fields hopes to take her training to the next level and draw in people from all over the country. Originally from Savannah, MO, Fields graduated out of high school with an EMT. She planned to go into the field of Oculoplastics (eye surgery) and continue on with her healthcare experience. While studying in this field, Fields taught lessons as a side gig in Kansas City on the weekends. Her fiancee Derek would later convince Fields to move down to the lake and commit to horse training full time. Now, Fields wants to bring a new spotlight to the more rural areas of the lake. Being a few miles off of US54 and the main roads of the lake, she feels that what she offers may not be known to those coming to visit the area. Pulling in that crowd is a goal for her moving deeper into 2021, even if the locals have already filled up the ranch’s waiting list. “We want people coming through the area to know that there is a whole other side to the lake,” Fields said. The ranch is equipped with an indoor and outdoor training facility on 20 acres of pasture. Lessons are offered Monday through Saturday. Organized trail rides are not currently offered. Lessons cost $35 an hour, or $140 for a weekly lesson during a month’s time. Larger and smaller horses are available for adults and kids, respectively. The ranch is open year-round. Roaring River State Park

A
bout eight miles south of Cassville is a state park that is world-renowned for trophy trout fishing. Roaring River State Park sits on 4200 acres in Barry County, and is administered by the Missouri State Park system. In 1928, Thomas Sayman, a St. Louis businessman, bought 2,400 acres surrounding the river and, within a month, donated the land to the state. Many of the park’s existing facilities were built by the Civilian Conservation Corps (CCC) in the 1930s, including some of the buildings that make up Camp Smokey, the park’s organized group camp. With easy access to the Roaring River, anglers of any age or physical ability can fish here. An average of 20 million gallons of water rush from the spring daily, spilling into a clear blue spring pool below the cliff in the Roaring River Spring. Roaring River is stocked regularly by the park’s hatchery, managed by the Missouri Department of Conservation. The park store sells everything one needs to fish for trout, including licenses, daily trout tags, tackle, bait, and camping supplies. It’s located in the Emory Melton Inn, near the park entrance. Waders can be rented at park stores if you choose to take a stroll in the stream for your fishing enjoyment. Baiting trout varies greatly, the favorite for our family has always been a can of corn. A very small treble hook helps hold corn kernels on, loading one kernel on each treble tip. Salmon eggs, another favorite trout bait, is secured on the hook the same way. Crappie rod and reels work well for the usual size trout caught at the park. The park also offers single cabins, duplex and fourplex units. Rooms and cabins are available March through October. Reservations are required. Visitors are far from off grid here as Wifi is available in the lobby and meeting rooms of the inn, and an onsite restaurant makes feeding the family easy. It’s a welcome comfort after a long day of fishing or hiking.

The Roaring River Restaurant is open 7 days a week, from 8 a.m.-8 p.m. Sitting by the window for the magnificent view of the park is highly recommended, as service can be a little slow. The menu is a throwback to the 50s, but food is good, reasonably priced homestyle fare. Of course, trout is on the menu, as well as a nice chicken fried steak. The menu features a fresh catch special for those that actually catch their own. For $7.99 they will bake or fry your cleaned, fresh caught trout, give you soup or salad, two sides and a roll. The rustic lodge setting and the view of the Roaring River Valley makes it worth a visit. Breakfast is a busy affair, but service is a little quicker in the morning. The skillet potatoes are excellent. There are other offerings nearby, as the inn’s restaurant does not offer alcohol. Geraldi’s Italian Restaurant at 397 Sale Barn Road, Cassville, has homemade pizza, pasta, and salads, tiramisu, and cannolis. Wine is served at Geraldi’s. Hungry Hollow Brewery at 14396 Farm Road 2140 serves self described “hillbilly” beer crafted on wood fire and steam, prompting them to be recently featured in Feast Magazine. The Farmer’s Daughter; An Ozark Eatery specializes in farm to table eats, but has the most extensive offering of spirits of any Cassville restaurant, including locally crafted drinks.

HIKING
If hiking is more to your liking, there are seven different trails to explore at Roaring River State Park. • Deer Leap Trail leads to an overlook and boardwalk above the fish hatchery and the spring at the head of Roaring River. From the overlook, it is easy to see the axle shaft from an undershot waterwheel that powered a gristmill in the mid-19th century. The Civilian Conservation Corps built the trail in the 1930s after harvesting the rocks used for the steps from the park. • Devil’s Kitchen Trail has a name which is derived from an odd rock outcrop that formed a roomlike enclosure. According to legend, this room, which has since collapsed, was used as a hideout by Civil War guerrillas. A self-guided interpretive brochure for this trail is available at the nature center and the park office. In addition to the Devil’s Kitchen, the interpretive trail provides information on other geologic features such as caves and different landscapes and plants visitors will find along the trail. • The Ozark Chinquapin Nature Center exhibits interpretive displays that inform visitors on the park’s natural history. If you are just learning the game the range is probably the best place to start. Work on your fundamentals, get comfortable with making solid contact consistently, and then try to take your game to the course. If you have been playing for some time and are looking to improve your scoring, then a playing lesson may be exactly what is needed. A playing lesson lets a golf professional see where you are losing strokes to better understand how to help you improve. A playing lesson highlights your flaws as there is no consequence to hitting a poor shot on the range. A great format to use during your playing lesson or when working on your game individually is called the two-ball drill. Hit two shots off the tee and select the best one. Hit two second shots and select the best one, and so on. The idea is to see how well you could score if you actually focused properly on each shot. You will be amazed how well you can score doing this and it will breed confidence and give you something to focus on the next time you play only one ball. Either way lessons are a great way to build confidence and enjoy the game more.

Will single rider carts ever become the norm even after the concerns of COVID 19 subsides? Hank E., Russellville
If you’re looking for style points, most definitely focus on how you look swinging the club. If you are looking to improve your score, concentrate and focus on how it works. Some of the best players in the world have very different looking swings. Look at Jim Furyk, Bubba Watson, and even Dustin Johnson, and you would not say they were the picture you envision what a golf swing should look like. All have had tremendous success but I don’t see many trying to emulate their technique. We all have individual swing characteristics based on our instincts, physiologies and physical abilities. The best players develop the ability to put the ball on the clubface with accuracy and consistency. Focus on this and not how it may look to others, and you will find yourself having greater success shooting low scores.
The use of single carts has certainly taken on a new meaning in 2020 with social distancing mandates and concerns. From a players standpoint the benefits of having your own cart are numerous. Speed of play, convenience, ability to play your own music, never having to go to another’s ball are just a few. Golfers are really enjoying being able to have their own cart. What will prevent this from becoming the norm is obvious to most. Wear and tear on the course, cost for additional gas or electricity to run the carts, and probably the biggest reason is availability. Most facilities if not all build their storage facility for the amount of the carts they will need to operate. For a normal 18 hole facility that would be between 72 and 75 carts to accommodate 144 players. If single rider carts become the norm, golf facilities could only accommodate half the number of players on the course at one time, severely limiting the revenue that can be generated. Adding additional carts to their fleet is costly and storage will be an issue. For these reasons it will be extremely difficult for the majority of golf courses to operate allowing individuals the option to take their own cart without passing the cost on to the consumer.

The annual Lake of the Ozarks St. Patrick’s Day Parade will begin at 1 p.m. on Bagnell Dam Boulevard. Deck out the family, bring a few lawn chairs and watch as floats, cars, motorcycles and other dressed up vehicles drive by. The parade route extends along most of Bagnell Dam Blvd to the Strip. n a little more than four months, The Strip in Lake Ozark will be alive with the sights and sounds of boat racing as the Offshore Powerboat Association will hold one of its races here June 3-5. Plans are continuing to develop, but the OPA website shows Lake Ozark on its lengthy schedule of boat racing. One thing for sure, the race will be returning to Lake Ozark after a two-year absence. The race moved to the 7-mile two years ago after host-location Beaver’s at the Dam closed, and then the threat of COVID-19 forced organizers to cancel last year. Now, Beaver’s has been sold and is expected to reopen this spring as Neon Taco. In addition, a local racing enthusiast and marine owner fronted funds to bring the OPA race here. Parking and transportation issues have plagued special events such as Meet and Greets, car shows, parades, Hot Summer Nights. A lack of public parking has been a concern among business owners for several years as more events have attracted more people. No Special Event Application has been received by the City of Lake Ozark yet, but Mayor Gerry Murawski reported to the board of aldermen that a Lake Ozark restaurant owner has stepped forward with plans to help alleviate some of the problem during the boat race and give residents and visitors easier access to locations on The Strip. Two 14-person golf carts will shuttle people back and forth from near Christ the King Lutheran Church to Bagnell Dam. Mayor Murawski also reported that The Strip Express will be coming back for the boat race – and possibly other events on The Strip. At least for the race, the multi-passenger bus will transport passengers from The Strip area to lodging facilities in Lake Ozark and Osage Beach. “We will be the only city at the lake to have a transportation system, although it’s unique,” the mayor said.

I
nspired by a father’s hobby and a daughter’s dream, the Simmons family has opened Serendipity Coffee Roasting Company for Eldon’s residents and the greater Lake community. Cliff Simmons, his wife Marilyn, and daughter Sariah are the mainstays at Serendipity, each contributing their talent and art to a budding business. Two sons add their labor as well. Opened on July 1, 2020, in a difficult year, Serendipity continues to exceed the Simmons’ expectations. During a visit and interview in early September, Serendipity was busy with walkin take-out customers while others enjoyed WiFi or quiet conversation. What all have come for is the good, savory flavors of a fine coffee bean, America’s favorite way to kickstart any day. Somewhere between the first and second crack of a green coffee bean resides its full flavor in a light to medium air roast. At Serendipity, the Columbian Triple Ferment bean delivers complex notes of citrus fruits and berries. Father and daughter Cliff and Sariah delight in rendering that flavor and several more for customers. They began to do so online on January 1, six months before they opened the retail coffee shop on Maple Street in Eldon. That online business supported their dream to provide a welcoming gathering place for people to enjoy baked goods and fine coffees. One of Cliff and Sariah’s favorite coffees is the Frozen Cherry. That roast is aptly named because the green coffee beans are flash frozen, sun dried, and flash frozen again in a 34 VACATION NEWS
400-hour process that becomes a dark bean with cherry undertones. The team also agree that Columbian Triple Ferment and Ethiopian Blueberry are fine roasted beans as well. Both are popular at Serendipity, online or in-store, but both sell out quickly. Some of these coffees are the base for pour-over and art in a cup. In her role as barista, co-owner Sariah meticulously made a Hot Honey Lavender Macchiato, served in a large, wide ceramic mug. The creamy surface held lavender buds providing the clean scent of herb gardens and open fields. It invites patrons to sip and relax. It had me at first sip. Another true Serendipity delight is the Vietnamese coffee, a participation beverage — so-called because the customer finishes the preparation. The coffee arrives on a quality wood serving tray featuring Serendipity’s logo. On that tray is a glass of iced espresso and a smaller glass showcasing layers of cream and more espresso. The customer uses a small coffee spoon to stir the two layers into a rich, caramel blend before pouring the blend over the iced coffee and stirring again. The completed drink is both satisfying and delicious. A featured pour-over at Serendipity begins with Geisha coffee, an Ethiopian bean trending in the 21st century. The Simmons acquire this bean, as they do all their beans, through a supplier sourcing from Columbia, South America. However, the Simmons attend U. S. Coffee championships when travel and business demands allow. They taste and learn. They study March 5-18, 2021
DRINK & DINE and build on their at-home pan-roasting experiences. They listen and welcome mentoring by the owners and managers at Three Story Coffee in Jefferson City. They are serious about the coffee community — as serious as they are about providing clean, discernible flavors in every roasted bean. For their business, the Simmons’ team chose an Artisan 3 air roaster. This allows customers to select a green bean from tall dispensers on the wall. Their selections can then be roasted on site and bagged or brewed. The process is thus not proprietary at all. Roaster and patron complete the full circle from bean to steaming cup together. Marilyn Simmons, Cliff’s wife and Sariah’s mother, honed her home baking skills to a high art. She adds that art to Serendipity’s success. One of her contributions is light as air cupcakes under sweet frosting crowns. The Lemon Lavender proves Marilyn delivers delicious goods in every bite. She also provides flaky croissants, creamy cheesecakes, a fine six-inch chocolate chip cookie, and muffins, rich in berries and nuts. On Mondays, those muffins include dairyfree, gluten-free versions. For non-coffee drinkers and children, Serendipity has Bubble Fraps, otherwise known as creamy deliciousness
in a soda-fountain glass. Made with fruits such as mango or strawberry, half-and-half, and Boba bubbles, the frap (frappe) is finished with a mound of whipped cream. It will delight the child in us all, but if fewer calories are what the customer has in mind, Serendipity makes a Lavender Lemonade that is very popular, too. Serendipity Coffee Roasting Company has brought to life a building dating from 1890. The ceilings and floor are original. Tall windows let light pour in, bathing the space in warmth. Bright yellow chairs and accents, ivory walls, and warm, fine-grain wood tables create a homey, cozy space. A display shelf showcases honey from two local beekeepers, The Bee Team and Pure Hardesty. Coffee mugs made by Muddy Otter are also for sale. Serendipity will add gift baskets, pour-over sets, and t-shirts as the holidays approach. For September 11, Serendipity will be home to an evening of music. It has been the gathering place for Bible study groups, community meetings, and a baby shower — exactly what the Simmons hoped for when they opened the shop. The name of the shop, Serendipity, may best describe the business itself. A father’s hobby became a family’s vocation; a daughter’s dream became a real business now thriving. These are everyday occurrences colliding with good intentions, and those have beneficial results for both the Simmons’ family and Eldon.

lanting something in this rocky Lake of the Ozarks soil usually requires a pickaxe and a lot of patience. It’s a good thing we have a bountiful lake as our primary resource. But entrepreneurs like Jed Mathany and his wife, Jackie, often see the forest and the trees and are still willing to take risks most of us are not. Mathany of Mathany Family Vineyards is moving through the processes of gaining approval of a multi-component winery in the City of Lake Ozark. He received the good graces of the Planning and Zoning Commission in early December and the board of aldermen a week later to operate a winery in a C-2 (General Commercial) district just off Bagnell Dam Blvd. Another agreement involving the transfer of Tax Increment Financing (TIF) rights from property owner LPS One, LLC., was authorized just this week.

WHAT’S NEW Matheny and Jackie, who will handle sales and marketing, closed on the 10 acres Wednesday, Jan. 27. The winery would be located east of the Tomahawk Motel and Rainbow Academy. What sets the proposed Mathany vineyard apart from others it that could involve three components: agriculture, production and retail -- growing of the grapes, production of the wine and retail sales of the final product. Aldermen have agreed to amend the Municipal Code to allow for development of a winery including a definition for an industrial winery which would be allowed by Special Use Permit in the C-2 district and M-1 (manufacturing) district. This would be a first for the City of Lake Ozark. “We applaud the vision of Jed and his family in expanding their operation into Lake Ozark,” noted Harrison Fry, assistant city administrator and community economic development director. “It’s refreshing to see developments other than the typical retail outlets realizing Lake Ozark has a lot to offer.” Mathany Family Vineyards currently operate a vineyard on a 160-acre farm on Bear Creek Road near Highway 42 and the Lake of the Ozarks State Park. The family raises grapes on 10 acres of land. “We hope to develop a production facility here in Lake Ozark,” he told the P&Z. Commission recently. Bulldozers should be moving dirt in a couple of weeks. The Matheny’s plan to build cellars and a tasting room later this spring with the hope of opening this summer. According to their Facebook page, the Mathanys use a farmmade biodynamic compost as a base for their grape vines. Biodynamics is a holistic, ecological and ethical approach to farming, gardening, food and nutrition. Mathany spent time in Burgundy, France, in the fall of 2018 and upon his return began the unique composting process. Mathany is no stranger to the wine industry. He has worked for Stone Hill Winery and then began an around-the-world wine tour including Napa Valley, Calif., New Zealand, Australia and France. “I’ve worked with some pretty good (wine) producers,” he offered. Jackie’s father, Neil Faiferlick, started Missouri Furniture in Camdenton in 1977. After his passing Jed and Jackie started their winery business to “keep their roots deep at the Lake.” March 5-18, 2021
