From computer programmer to
pork producer
I
n the era of grocery store shortages, we all need to get to know our local, small batch food producers a bit better. In Eldon, we are fortunate to have Carl Blake, a transplant from Iowa, who has taken the craft pork world by storm. His farm, Rustik Rooster gives us another local heritage farmer drawn to the area. Luckily Carl has found small butcherers willing to process meat adding to the reason that he relocated his successful farm from Iowa to Eldon. Blake was featured on Bizarre Foods Delicious Destinations with Andrew Zimmern while still farming in Iowa in 2013. That appearance grew to other appearances on the national stage with articles in the New York Times, a guest appearance on The Stephen Colbert Report, and Somebody’s Gotta Do It with Mike Rowe. He even had a short run TV show on the Nat Geo channel titled “Little Pig Man” featuring his family farm in 2014. “Bizarre Foods was looking for iconic food people to feature from the state, and chefs that they had talked to referred the show’s team to me,” Blake shares about how his first television appearance came about. Blake is humble one minute, especially about his persona on television. “I have a face made for radio” he jokes. But he confidently struts around New York City in his signature overalls with one strap hanging off of the shoulder in his YouTube videos, while posing for pics with Times Square’s Naked Cowboy. It’s not what you would expect from a former Apple Computer company engineer — it is what you would expect a guy running a farm located between Eldon and Tuscumbia to don, even when visiting New York City. Blake is true to himself and where he is from, and supremely confident with what he is doing in life. Blake appeared on The Tiny Sirko Show holding and cuddling a baby pig and then had a documentary produced with the Jackson Wild Media company title Pork.0. Pork.0 follows Blake as he combats factory-farming by inventing his own breed of pig. A statement from Jackson Wild Media about the documentary describes him as “A former computer engineer who returned to the farm after a harrowing car accident, Carl is changing the pork system by producing some of the tastiest and happiest pigs, all using sustainable methods. He’s reached fame and success, but hasn’t finished his quest of making the perfect pig. Pork.0 is not only about a farmer who wants to bring accountability back to pork production, but also of a selfless man who will stop at nothing to change a flawed system. You see the scars of what the meat industry (especially pork) has done in the Midwest, and to tell the story of a guy that is successfully combating that by doing it the right way, and with a pig he invented himself, was something that really interested me.” Filmmaker Brett Kuxhausen was also quoted about the Pork.0 documentary when asked “What impact do you hope this film will have?” “I hope that it makes people think twice about where they are getting their meat from, and how it is raised. My goal isn’t to turn anyone vegetarian, but I think that we need to consume less meat and eat it more consciously. I also really hope that it challenges preconceived notions on what the contemporary American farmer is like,” Kuxhausen said. The Pork.0 Documentary can be found online at Vimeo. Blake began by raising pigs for county fairs as a young man. Then, he found a love for computers. His tinkering brain, even in middle school, led him to a career building internet portals for Apple. But farming still called Blake, and with an obsession to find the perfect pork taste, he took that ingenuity and parlayed it into cross breeding an exceptional tasting breed — one that is more meaty, smooth, and fatty than commercially-raised breeds. Blake crossed a Russian wild boar and a Chinese variety Meishan pig, and came up with his unique and exclusive Iowa Swabian Hall pigs. Restaurants and chefs nationwide have been knocking at his door for the delectable craft pork ever since his appearance on TV. Blake’s swine isn’t fed any normal diet. He raises

FEATURE hydroponic barley plots that are fed out to the lucky herd that also enjoy a lot of pasture time. If all of these ventures aren’t enough, Blake’s engineering ways never seem to stop. Perhaps it’s why world-famous traveler and chef Andrew Zimmern refers to his friend as a savant. He began constructing American Hot Box, a self fabricated metal hog roasting box designed for 100 pounds of fatty goodness that you can easily roast in four hours, rather than Provided photos digging a pit and dropping a pig in the ground overnight. It’s been very popular, especially with the custom logo option available screened onto the box. Blake delivers the hotboxes nationwide, often appearing himself with a pig ready to go in the box, instructing the new users on the fine art of whole hog roasting. That industry garnered the attention of Menards, who now offers Blake’s standard version online. It’s hard to believe that all of these ventures have grown out of Blake’s rural Miller County farm, where he continues to build the hotboxes in his shop and grow pigs for nationallyknown chefs. He delivers hotboxes and pork to New York, San Francisco, St. Louis, and Chicago. Blake also likes charcuterie, and struggled to get some of his swine cured and processed, one of the reasons he moved to Eldon from his Iowa farm. “I moved here because processors quit butchering for small farms,” he said. “The huge amount of snow in Iowa is another reason that I moved here.” Still not finding butchers that cure, he put his intelligence to work again and started curing pigs himself. “After recreating a pig from 1821 the best we could I think we got real close. With the pig winning many competitions and appearing on the Andrew Zimmern show, the Mike Rowe show, the Colbert Report, New York Times, Professional Farmer, and hundreds of other publications, the only thing I hadn’t been able to do was get our pig cured and aged,” Blake explains. “Sitting around waiting for it to cure is the hardest thing, after all the hell and everything else I had to go through to get to this day...it was worth it.” Indeed, Blake’s venture into self cure netted him prizes in San Francisco and elsewhere. Many local FFA students will understand this struggle, working toward that award-winning ham or bacon slab at their county and state fairs. Unless you are the parent of one 12 VACATION NEWS
of those students, you don’t really understand the time that goes into self curing meats. The tall, ponytailed, always denim overallclad farmer can be seen off the farm giving hog roasting seminars in New York and Connecticut for American Hotbox. He maintains a relationship with Andrew Zimmern who declared Blake’s Swabian Hall pork to be the best he has tasted in the whole world, by supplying Zimmern’s restaurants with his breed of pork. “Carl has some big ideas, radical in one sense, but rooted in the way we farmed and fed ourselves a few generations ago,” Zimmern says about Blake on his website (andrewzimmern.com). “He has successfully established several new breeding programs including his stellar Iowa Swabian Hall hogs. He has figured out how to grow a better tasting, healthier hog that’s affordable for all. He has created a sustainable food system and most importantly one that’s economically sustainable. Thanks to all the attention he is getting, he now has a lot of demand for his pork. Bottom line — helping America’s family farmers solve our biggest health problem in our country is something we should all want to invest in. Decentralizing our food system, making healthier and better tasting pork that costs less, reinvigorating our farm economy and solving food security issues is everyone’s responsibility. He is also resuscitating the family-farm concept, remaking the diet of his animals and at the same time has stumbled onto a grow-system that I think has global applications for solving food security issues all over the world. He is a savant, and my friend.” Endorsements don’t get any grander than that for a farmer, and keeps Blake producing his now world-famous, exclusive Swabian Hall in Miller County. Blake has been busy breeding a new variety of craft pork developed for Missouri, the Ozark Mountain Wattle, which is a faster growing, meatier pig derived from his Iowa Swabian Hall crossed with an Andrus Red Wattle. He’s also making fodder boxes which are about to debut from his farm shop. he Missouri Department of Conservation (MDC) will offer a beginner fly fishing clinic from 10 a.m.–noon on Nov. 8 at Columbia’s Cosmo-Bethel Park, 4300 Bethel St. This FREE Discover Nature – Fishing workshop will teach the basics of fly fishing, including history of the sport, specialized tackle, and how to cast. Participants will then get an opportunity to practice their skills and do some fishing. Fishing will be catchand-release only. “This is a great way to try something new with the family,” said MDC Angler Education Assistant Ashley Edwards. “If you like fishing but have been looking for more of a challenge, come on out and see just what fly fishing is all about. This is a beginner course, so no experience is needed, and this is definitely a great way to get together and have lots of fun!” All equipment will be provided for this FREE course, though participants are welcome to bring their own rod, reel, and tackle, if they wish. Participants should wear appropriate clothing for the weather, and bring water or something to drink if they want. This workshop is free and open to ages 13+. Participants age 16 and older must possess a valid fishing license. All participants must practice physical distancing and wear a mask covering their mouth and nose when unable to maintain at least six feet between each other. Celebrating the holiday season

f you haven’t noticed already, it’s getting colder outside. That means the holiday season is right around the corner. How do you plan to celebrate? While some things have been postponed this year, there are a few events you’ll be able to visit with Santa, do some holiday shopping, and help out local families in need this season. Here are a few ways you can spend the holidays at the Lake.
While many people enjoy cooking and hosting a table full of family and friends, there are ways you can make it a little less stressful. Grocery stores, restaurants and hotels offer catering and full holiday buffets so you can spend more time out of the kitchen and enjoy time with the ones you love. Local grocery stores offer a variety of catering options. You can have the entire meal prepared or just order a few sides. Many locals choose to spend their Turkey Day at local resorts where you can find large buffets with everything from Oysters to Prime Rib and dozens of desserts. Check out the Lodge of Four Seasons, Margaritaville Lake Resort, Old Kinderhook, the Inn at Grand Glaize, the Regalia Hotel & Conference Center, and the Lodge at Port Arrowhead to see what they are serving. Camden on the Lake is offering Thanksgiving meals to-go this year. Cost is $25/person with a 10-person minimum. Go to a charity event
It wouldn’t be the holidays without helping someone in need. A couple of great charitable events being held this year are Christmas for Kids on December 12, Party with a Purpose on November 14, and the Gala of Trees November 11-21. Christmas for Kids will be held at Campana Hall at the Lodge of Four Seasons beginning with a cocktail party at 5:30 p.m. and dinner at 6:30 p.m. A large silent and live auction is held. Entertainment will be provided by Tony B the Piano Man. Attendees are asked to bring a new, unwrapped toy ($20 value) or a $20 cash donation to the event. The gifts are given to needy families. Tickets are $70/person with sponsorships available. Party with a Purpose will be held at Margaritaville Lake Resort starting at 6 p.m. The evening of dinner, dancing and entertainment is a fundraiser for Wonderland Camp, a non-profit serving children and adults with disabilities. Tickets are $100 and includes an auction, dinner and cocktails served at unique food stations, and music by the i-Berrys. For more information, call 573-392-1000 or email Mike@wonderlandcamp.org. The Gala of Trees is held at Wobbly Boots where Christmas trees and wreaths are decorated in an unusual and traditional way. Bid on the one you’d like to take home. The Enchanted Village of Lights will be open for the season at the Laurie Fairgrounds each night from November 19-January 2. It’s the largest drive-through light park in the Lake area. Old Kinderhook turns into a winter wonderland each year when they open up the ice rink on Thanksgiving weekend. Daily and season passes are available. While you are there, spend time with Santa and the elves during the Christmas Village held Friday-Sunday from November 27-December 20. Festivities include Friday night Character Nights on the Ice, MU Synchro Skaters performances, winter bingo, movies in the Hook, elf storytelling, s’mores, letters to Santa, DIY ornaments and tons of other activities. Hayrides are held from 5:30-9:30 p.m. every Friday & Saturday. Cost is $10 per person (ages 4 and under free). Blankets and music provided during the 20-30 minute ride. Looking for something different for someone on your gift-giving list? Find some unique ideas at local markets this year. The Camden County Museum in Linn Creek will host all kinds of vendors November 20 & 21 for the Holiday Market at the Museum. Held from 9 a.m.-4 p.m. both days, crafts and gifts will be for sale. While it might be a little smaller this year to allow for social distancing, the annual School of the Osage Holiday Bazaar will be held December 5 from 9 a.m.-3 p.m. There will be a maximum of 80 vendors, with a variety of great items for sale — from food to handmade gifts, crafts and spirit wear. Attendees will be encourage to wear masks.

How did the band get its start?
We all started at a young age playing music. All four of us have been playing in bands around Missouri for decades now and we are finally making a push for national recognition. What kind of music do you play?
Etched in Embers is a high-energy modern hard rock band with twin guitar driven melodies and big three part harmony vocals. Definitely on the heavy side of things but dynamic as well. Who is in the band, and what do they play?
The band consists of Russ Rhodenizer, lead vocals and guitar; Tyler Kenyon, lead guitar and backing vocals; Tony Mckee, drums; Adam Sudduth, bass and backing vocals. What is it about music/performing that you enjoy?
For all of us the main thing we love about playing is the energy we feel from our fans! We love playing shows and connecting with people from all over the world and from all walks of life. Unfortunately, with the world the way it is right now our live shows have been few. However, this has lead us to something else we really enjoy and that is writing and recording music. I think our focus on that aspect has been helping us get some notoriety, and slowly as things open up, we should be back out playing live. Either way, it’s a win/win for us.

What would you like for people to know about the band?
We would like people to know that there is a stellar original music scene in the Ozarks and statewide. We really hope anyone who likes modern rock and lives in the area would check out our music on the web and realize that we are trying to bring fun concerts with original music to the Lake area. If you check out the music and dig it, please share with your friends. Talk about it on Facebook, Twitter etc. That support really goes a long way! What are you working on now, and what are your future plans?
The Radio Campaign is the next step for an up-and-coming band to make it into the national arena. We have been fortunate enough to work with one of the big dogs in the industry, Landshark Promotions and our campaign with them started in October. We have been added to over 40 radio stations nationwide and are looking to branch to Sirius and XMAS radio as well. The next steps for us are to hopefully get signed to a record label, get more radio play and hopefully get on the road doing what we do best — rocking out! Where can people hear your music?
