Eat the Rainbow Fruit Salad

Orange Honey Rainbow Fruit Salad Prep time: 30 minutes Servings: 12

Nothing completes a spring/summer meal like a fabulous fruit salad. And this Orange Honey Rainbow Fruit Salad is like a party for your senses! You can customize the fruits to your tastes, and let the colors of the rainbow guide you! The magic of this fruit salad is the dressing. Simply combine orange juice, good honey, lemon juice and a special ingredient, fresh mint! in a mason jar, and shake it all up - so simple and tasty! Going to a picnic? This is the perfect fruit salad to take with you! Simply layer it in a bowl with the firmest fruit at the bottom and work your way up. Carry your dressing separately, and drizzle over top and toss to coat shortly before serving. This salad is also perfect for helping you get in those daily 2 cups of fruit recommended by the USDA Dietary Guidelines. Simply, mix it up with your weekly meal prep, and then you can enjoy it at breakfast with a drizzle of that delicious dressing throughout the week! Also makes the perfect addition to a brunch, shower or any celebration. Enjoy!

Ingredients

1 (1 lb.) package strawberries, quartered 1 (6 oz.) package raspberries 1/2 (6 oz.) package blackberries 1 (6 oz.) package blueberries 1/4 fresh pineapple, cut into bite-size pieces 2 kiwi, sliced 1/4 cantaloupe, cut into bite-size pieces ½ cup green grapes, halved 1 medium banana, sliced and dipped in lemon juice 4-5 Mandarin oranges, divided Sweet Dressing 1/4 cup fresh orange juice 2 tablespoons fresh lemon juice 2 tablespoons good honey 4-10 mint leaves, rough chopped + extra for garnish

Combine fruit in a large serving bowl (except bananas). Set aside. Combine dressing ingredients in a mason jar. Shake vigorously to combine (shaking helps get the best flavor out of the mint). Pour the dressing over the salad shortly before serving. Gently toss fruit to coat in dressing. Garnish with bananas. Serve and enjoy!

NOTES

• Feel free to use frozen thawed fruit, if you don’t have fresh fruit available. • If you don’t have all of these fruits on hand, do not worry. Simply cut back on the dressing, adding just enough to lightly coat the fruit. LimitlessMagOnline.com | June 2022 19
