W

hen I did my post-graduate diploma in journalism way back in 1981, there was nothing remotely related to food journalism in the course and the same went for other journalism institutes in Mumbai and beyond. It is as if “food” and “journalism” were two words that just did not belong together. The only piece of writing one could see about food was in the print media – there was no

(23) electronic media in those days and Internet was an unknown entity- which was in the shape and style of recipes in some allotted space in women’s magazines. These recipes, though written out very meticulously by experts like Premila Lal, Malini Bisen, Aroona Reejsinghani and others, in the cookery pages were sidelined by readers except those interested in cooking. It was hardly considered journalism and much less, literature. They wrote recipes for many women’s magazines like Femina and Eve’s Weekly and Vimla Patil, editor of Femina for many years, went on to write several cookery books of quickie recipes for the working woman.

Vimla Patil Over time, life has changed and so has the media, the readership profile of the masses and the manner in which food has evolved as a specialised subject in journalism. Food journalism is not about recipes, ingredients and how to cook a given dish. It reaches out much beyond the mere physicality of a recipe to represent cultural pockets of India which perhaps is the country with the wildest and widest cuisine cradle in the entire world. A young food blogger, partly by a book she landed by chance by Aroona Reejsinghani entitled Tasty Dishes from Waste Items. In her introduction to some recipes picked from the book, Mirchandani writes:

For the 1979s in India, in the midst of famine, this book was quite apropos. I remember talk of the high prices of vegetables at every social gathering. Meat for many was simply out of the question. The book begins with an acknowledgement of the scarcity that every housewife has to deal with. It goes on to celebrate the leaves, stems, peels, leftovers that must of us throw away. This article however, is not about cookery books but about the scope of food as journalism in post-modern India where fusion, tradition and modernity are constantly brushing up against each other not to fight or contradict or confuse but to create new ideologies on the entire philosophy, panorama and landscape on food. It is about food as life, food as lifestyle, food as colour, food as flavour, food as a big attraction for advertisers in the print and electronic and web media, food as health, food as taste, food as diet and of course, last but never the least, food as love. Food and restaurants, food in homestays, food at home are other extensions of the food world. Trained Chefs like Sharad Dewan of The Park Hotel in Kolkata writes prolifically on food in different magazines which makes him a food writer by choice and not a vocation. But there are umpteen young food journalists who travel widely to create a large writing base for

(24) themselves. Their experience gives them the command over the finest nuances of taste, smell, colour, texture and looks so much that they can, with a spoonful of a given dish, definitely identify that minutest touch of thyme or basil or mint. They can distinguish between a given bread pudding in a given restaurant from another pudding from another eating place when offered both in an anonymous setting. They can make out whether a particular house-made ice-cream has coffee in it or chocolate or both or neither. It is not just that they write on food, they have made food their vocation, their lifestyle and their love.

on food and restaurant reviews. Some writers critique food writers on their lack of dealing with the myriad gray areas that lie between “excellent” and “disastrous” which defeats the very purpose of a restaurant review. True, but not entirely. Dealing in superlatives is sometimes determined by the editorial stance of the magazine or its editors so the journalist cannot be blamed entirely. But ‘grays’ admittedly are always better guiding stars than ‘excellent’ and ‘disastrous’ because they are more logical and credible.

Poorna Banerjee vertical line that divides India is a classic example of this breed. She has a blog of her own with nearly 7000 followers but is also invited as a special guest by the best of restaurants in India and beyond. She is very knowledgeable about international cuisines from across the world such as French cuisine she explains lucidly on her blog and has breakfast/ lunch/ dinner with consulates everywhere. She is also a wonderful cook and when she is not writing or eating at restaurants or travelling from one city to another, she is trying out recipes at home. She is a wonderful person to be with and is a prolific reader too. In a recent blog, she writes: “I had a lovely time chatting with the Consul General of France in Kolkata, Damien Syed, who, strangely enough, shares my fascination for the French Revolution, and Marquis de Sade (of all people!), and we chatted amiably Damien Syed for a considerable period of time, discussing philosophy and literature. She has now diversified into every other kind of writing one can think of but it would be reasonable to conclude that writing about food and restaurants and the ambience and the experience in detail will remain her first and last love. She encapsulates within the single persona, what food journalism is all about. It is an intellectual exercise and you must be well-read and upbeat on things happening around you at

all times. Not only must your command over your language be excellent but your style of writing must not be dry, devoid of every drop of juice that makes a review a worthy and valuable read. Does this suggest that food writing can be labelled as ‘literature’? More of this in my next installment……Food writing as literature…. HUMAN NATURE, ENVIRONMENT AND CULTURE in Communication W

hen we speak of nature, we mean both the physical nature of our being and the chemical/ biological nature of both the individual and his environment. We also mean the biological attributes of living things and their temporal (time) aspects. Nature limits the length of our individual existence but engages in an uninterrupted continuance of life. Communication, environment, culture and other aspects of life are intimately intertwined with physical and biological aspects of life. Human and other forms of life are shaped as much by inner forces as by outer forces. Set against space, time and environment. humans can be perceived as evolving and adapting organisms. If we take the entire universe as our environment, we can see how we are related to the G{]n¬ 2016

(33) events of cosmic evolution. But most of us –all of us, in fact— are closely connected to our immediate environment and we become part of what we can call Planet Earth, and we try to change that environment even as we are under its influence. The physical environment in which we live influences our culture. Over 200 years ago, there were nearly a billion people (100 crores) on Earth. Today India alone has over a billion people! The world has nearly 7.5 billion people now. What they do to support themselves, how they do it, where they live, etc., will determine their culture. There has been a slow, evolutionary change in the nature of most human beings on Planet Earth from the Paleolithic (Old Stone) Age*, the Neolithic

(New Stone) Age** , the Metal Ages (copper, bronze and iron)*** to the Atomic, Space or Information Age we live in.@ *Old Stone Age-=100,000 to 200,000 years ago. **New Stone Age=10,000 to 12,000 years ago. ***Metal Age=6,000 to 8,000 years ago. @Atomic Age= From the first atom bomb testing

in the Bikini Islands and elsewhere during the early 1940s. Space Age = From 1957 when Yuri Gagarin went into outer-space. Information Age=inaugurated in the late 20th century and flourishing in the 21st century. All Ages have seen different modes of movement of human beings and their ideas, that is, for communication. All Ages have also seen death and destruction—natural as well as manmade. We in the 21st century are trying to avoid conflicts and establish universal peace and systems of communication. Yet we cannot ignore the fact that the socalled Third World—the regions of the world still struggling to establish means and modes for fulfilling the basic needs of the majority of their people. It is a fact that the majority of the inhabitants of Africa, Asia and Latin America are facing huge problems of existence. These regions are subjected to an imbalanced system of economic, political, sociological and cultural traits and they continue to be under more strong, efficient and sophisticated systems of economic and communication development. Is the current world really the world of postindustrial development? Do the rich, developed sectors in the 21st century evolve systems of communication and technological production that are capable of keeping the rest of the world beyond cultural and psychological subjugation prevalent in past centuries? When the so-called post-industrial society in rich, developed nations of the technologically and scientifically much advanced sectors of the

world ignore the basic needs of the large majority of the world’s population and still get their basic needs fulfilled with or without the labour of the less advanced sectors, the doubt arises as to whether the old imbalance is bound to continue globally and the chances of conflict remain with the same vigour as in the past centuries. Psychologists generally agree that there are no definite behavioral patterns in the infant at birth which can determine complex behaviour in adult or adolescent social situations later in life. In other words, hereditary factors do not determine a person’s social behaviour. We learn many behaviours from experiences. Life is the sum total of experiences. Our development is essentially a cognitive and learning process. We acquire new knowledge and experience as we advance in life through interactions with others—friends, elders, teachers and persons in authority. Sometimes actions on the part of these “others” in life prompt us to question their ideas, especially when questions arising from our sense of natural justice, equality, love and kindness prompt us to ask them. We accumulate new knowledge and enlarge the range of our reactions and our modes of behaviour starting with Reflexes (such as winking, sneezing, etc.) and Instincts (such as hunger, fear, sleep, sexual drives, etc.), we learn how to preserve ourselves in unfamiliar situations. But we learn most of our behaviour from experiences G{]n¬ 2016

Communication and Cognition are therefore interrelated. The human body has a complex system of communication connecting all parts of the body. Stimulation from the physical, natural and social environment is converted into electrochemical impulses by specialized receptors located all over the body, sensitive to certain types of internal and external conditions—such as light, sound, pressure, pain, temperature variations and chemical stimulation. The receptors are connected to nerve fibres that transmit incoming impulses to the central nervous system (CNS), that is, the brain and the spinal cord. The CNS is made up of billions of neurons that are inter-connected. The coordination of several muscles for a particular action was learnt over a long period of evolution but looks automatic now! We have examined some basic connections among human nature, environment, culture and communication. We shall examine intrapersonal communication and learning in another article.

Marxism is rather more than a methodology for studying the media. It is a political, social, economic and philosophical critique of capitalism that has been much fought over, contested and condemned ever since a nineteenth-century German bloke with a big beard developed it out of a synthesis of french radical politics, German idealist philosophy and British economic analysis. As a critique it has predictably received a bad, begrudging or caricatured press from those who feel that is not going beyond our present social and economic system. It has also been severely damaged by the track record of those who have acquired power and proclaimed themselves Marxista of one persuasion or another. Even though this track record had its Marxist critics, it was the pro-capitalist bourgeosis critics who got the most exposure. Marxism in the west had its high point in academia back in the 1960s and 1970s, riding on the crest of a wave of political radicalisation throughout the developing and the Western world. Today, within the study of culture and media, it is often best gestured to as part of a history of methods, whose main themes, concerns and approaches have now been surpassed with infinitely more sophisticated tools of analysis. There are signs that this is beginning to G{]n¬ 2016

change, perhaps because people are recognising that, as Fredric Jameson once noted, ‘attempts to “go beyond” Marxism typically end by reinventing older pre - Marxist positions’(Jameson 1988:196). This book is written in the hope that there are people out there studying the media who are increasingly looking for more radical approaches to their subject, searching for ways of making sense of the media and culture which really get to the roots of why things are as they are. Marxism I believe is the best methodology we have to begin to do that. It does not by any means have all the answers and it is in any case a field of dispute between Marxists. Yet as a set of tools it has enormous durability, with the world today looking more recognisably like that as described by Marx in Communist Manifesto than it did in 1848, when the Manifesto was first penned. This book is not organised as a history of Marxist thought, but is instead more of an intervention into contemporary trends, drawing on and elucidating Marxian concepts in the expectation that they will help us understand media culture in the context of advanced capitalism. I have tried to explain and apply these concepts as lucidly as possible without sacrificing their complexity. The latter is particularly important, as opponents of Marxism are quick to

(37) dismiss it as being ‘too simple’ In some ways capitalism is incredibly and brutally simple. In others, it is immensely complex and Marx devoted his entire adult life to developing the means to analyse and understand its historic significance for the human race” (p4-5).

In Big Brother we see one possible future direction of television, namely the thorough penetration of commodified information and communication technology into our rapidly shrinking public spaces and public service. Such public spaces are perhaps best understood as the residual traces of an older, still present, but embattled mode of development that was characterised by nation-states regulating national markets and capital (Fordism). New information and communication technology has been one important element in the globalisation of capital that has undermined that old order. The new political economy of the media evidently has parallels with the globalised economy generally. This is the reality of reality TV. In Big Brother we see the cultural contradictions of this political economy manifest themselves around the closely connected question of surveillance. The tension between accessing the ordinary and being ‘spun’ by the media performance, between the authenticity of representation and

its manipulation by the technological controllers, between participation in an event and being a mere object to the controlled and exploited, are all swimming around the programme as a reconfiguration of the class struggle between capital and labour. In offering a materialist analysis of all this, I have sought to unpack the somewhat monolithic and immoble base - superstructure model, and arue that its problematic is of continuing importance for media analysis. problematic is of continuing importance for media analysis” (p.153-154).

NOT EXERCISING THE RIGHT TO VOTE IS VERY MUCH A RIGHT Should voting be compulsory? You may

think that’s a strange question but it’s also a very interesting one, as I hope to reveal. Second, you can argue convincingly on both sides of this question although I would say one has decidedly more weight. That adds to my interest in this matter, which I hope you will share. The argument in favour of compulsory voting rests on the assertion that in a democracy voting is a duty and its corollary that the greater the number of people voting the richer and, therefore, the better the quality of that democracy. Therefore, making this duty compulsory seems a logical thing to do. If democracy is government of the people, by the people and for the people then, ipso facto, the greater the involvement of the people the truer and purer the democracy that will emerge. That sounds simple but is it convincing? Wait and see.

83 crore or 830 million voters. If 10% choose not to vote could you really impose fines, leave aside jail terms, on such a large number? We’re talking eight crore or 80 million. And if you go by the voter turnout in May, the number that would have to be punished for not voting jumps to 28 crore, that’s 280 million! No doubt democracies like Australia, Belgium and Switzerland have compulsory voting. But they are small and the consequence of failing to vote can easily be handled and contained. In India, it would magnify to monstrous proportions. However, the greater argument against compulsory voting is in terms of its

The case against comprises two parts. In a democracy the size and scale of India compulsory voting is impractical. India has

Karan Thapar Karan Thapar is an Indian journalist and a television commentator and interviewer. He was associated with CNN-IBN and hostedThe Devil’s Advocate a n d The Last Word. He is currently associated with India Today and hosts the shows To the Point a n d Nothing But The Truth. Karan Thapar is the youngest child of discredited former Chief of the Army Staff General Pran Nath Thapar and Bimla Thapar. He resembles his father who is widely blamed for India’s worst ever military defeat at China’s hands in 1962. Historian Romila Thapar is his cousin.[1] He is an alumnus of The Doon School and the Stowe School. While at Doon, Thapar was the Editor-in-chief of The Doon constitutionality. Here I have two points to make. First, voting is a right which automatically entails the right not to exercise it. To make my point clear let me put it like this: can you really make it compulsory for someone to exercise his rights if he doesn’t want to? In a democracy that would be contradictory! Second, voting is an extension of the fundamental right of free expression, which intrinsically includes the right to silence. Forcing me to vote would breach that freedom. After all, G{]n¬ 2016

He began his career in journalism with The Times in Lagos, Nigeria and later worked as their Lead Writer on the Indian subcontinent till 1981. In 1982 he joined London Weekend Television where he worked for the next 11 years. He then moved to India where he worked with The Hindustan Times Television Group, Home TV a n d United Television before setting up his own production house in August 2001,Infotainment Television, which makes programmes for amongst others BBC, Doordarshan and Channel News Asia. Mr. Thapar is noted for his aggressive interviews with leading politicians and celebrities. His interviews with the current Indian Prime Minister Narendra Modi, George Fernandes, J. Jayalalithaa, Manmohan Singh, Kapil Dev,General Pervez Musharraf, Benazir Bhutto, Arun Jaitley, Ram Jethmalani, former U.S Secretary of State Condoleezza Rice and The Dalai Lama are particularly well remembered. A few of his shows which have been much watched are Eyewitness, Tonight at 10, In Focus with Karan, Line of Fire a n d War of Words. The shows with which he has been making headlines lately are, Devil’s the right not to vote is equal to the right to vote for those who choose not to! But there’s a problem here. Wellestablished freedom-upholding democracies like Australia, Belgium and France (at the senate level) have compulsory voting and, therefore, don’t worry about the implied breach of freedom of expression. Either they don’t care, which is unlikely, or, clearly, there are two views about this. Now, I’m confident the Gujarat

government’s decision to make voting compulsory in local body elections will be challenged all the way to the Supreme Court. The key question is whether judges will see this as a right that cannot be made compulsory or as a duty that needs to be enforced. I can’t wait to find out. Meanwhile, as soon as the rules are framed, the people of Gujarat will be forced to vote in local elections. But what would be the penalty if they fail to do so?

If there’s no penalty there’s hardly any compulsion. If the penalty is minor and insignificant many might not worry about it. A MIRROR TO POWER: The Politics of a Fractured Decade By M.J. Akbar- Harper Collins (2015) – Rs. 599.00/[A mirror to power takes a sharp look across the wide horizon of the past decade, a time when reputations were wrecked on a high-velocity rollercoaster and events became a jamboree instead of a procession. This tumbled down history of corruption, terrorism, justice delayed, rights denied and governance betrayed still left enough gaps for celebration of laughter in areas outside politics. The cast is extraordinary: from the founding fathers of our partitioned subcontinent to those shaping its future today. This book is especially distinctive because of M.J. Akbar’s unerring eye for underlying causes and potential consequences that bookend current events and a prose style that conveys serious thought in lucid sentences and succinct paragraphs. The pieces are on subjects as diverse as politics, cricket, cinema stars the lost art of reading and the joys of trash, besides long, elegant essays on the history of a community seen through the genius of its poets and the trial of Bahadur Shah Zafar. This is an indispensable introduction to what promises to be an Indian century.]
