As part of Salem College’s new Student Center, LAMBERT designed this lively 1,650 SF café. Within the café is a quick-service grill, “grab and go” prepared foods, convenience store items and a full-service coffee bar. The café opens to a south-facing patio for use in nice weather which can be converted to a coffeehouse / entertainment venue in the evenings.

SMITH WAREHOUSE FOOD SERVICES Duke University | Durham, NC

As part of a 90,000 SF renovation of an historic tobacco warehouse, LAMBERT completed two food service environments with separate looks and functions.

The second food service component is a fullservice catering kitchen located in Bay 6 on the second floor. This common-use kitchen allows for potlucks and catered events.

The first was the placement of a food service facility for both student and employee usage at the main entrance, Bay 6. This cafe allowed for the service of both hot and cold selections, and offered bistro-style seating within the cafe itself, as well as at an adjoining business center next door, complete with a bar and bar seating.

This top educational institution looked to LAMBERT to renovate the buffet service at this graduate academic facility. The client’s goal was to create a dynamic and inviting, yet sophisticated environment. The project included reconfiguration of the Kitchen-toDining access and of the dessert line within the dining area. To expedite project completion during Duke’s winter break, LAMBERT assembled a design and construction team including Engineers, General Contractor, Food Service Consultant and Food Equipment Vendor.

All finishes were carefully selected with consideration given to long-term durability and maintainability. The glass wall tile is durable and can withstand frequent wiping, yet its varied hues and slight iridescence give an ever-changing interest to the appearance.

STUDENT DINING (IN CONSTRUCTION) Lenoir Rhyne University | Hickory, NC Phased renovation of an existing Student Center Extensive renovation of Dining facility Extensive renovation of restrooms

The renovation of the Cromer Student Center at Lenoir Rhyne University is the first substantial update of this key campus building since its original construction the early 1960s. The 1960 construction encapsulated the original 1920s campus dining hall and made that the building lobby. Phase 1 included a renovation of the lobby, meeting rooms and security office with new flooring, finishes and furniture. New lighting was installed to highlight the massive lobby trusses and give new life to this space with no exterior windows. Phase 1 was completed over Summer of 2015. Phase 2 is a more extensive renovation of the main dining facility within the center. The focal point of this renovation is a new Servery. A scramble format was selected and stations with

on-demand preparation from fresh ingredients are featured. Dining rooms will receive all new finishes and lighting. The larger South room is used is being expanded and will be able to be subdivided into a large banquet room while maintaining a large open seating area adjacent. A new exterior terrace is being created off this room. The North room adjacent to the new bake shop will have a bistro feel with a mix of high and low tables. A row of booths along one wall will give another seating option in both rooms and new finishes and lighting are being employed throughout. A small existing terrace off this room will be rejuvenated with a mix of table and lounge seating around a new firepit as a focal point.

Hot foods and daily specialty selections are displayed and served by staff from retail-type glass front cases. A deli-grill combination provides made-to-order sandwiches and anchors the inside corner in a prominent location. Side items such as chips are displayed in proximity to the deli/ grill to entice patrons. Beverage stations are self-service and are located on both sides of the service pa erns for ease of access. A central island holds self-service items such

as salads and soups and contains a “grab & go” case with prepared sandwiches, yogurt and other items. Clear entry and exit points were defined. A deli-grill combination provides made-toorder sandwiches and anchors the inside corner in a prominent location.

The design of this full-service cafeteria, in an 85,000SF renovation accommodates dine-in or take-away service and includes hot foods, deli serving lines, salad bar, and a complete beverage station. The dining areas of this facility offer a lot of options. In addition to the standard “4-top,” banque e seating is provided along one wall, a “cyberbar” complete with electrical and data hookups abut a dynamic curved glass block wall.

The latest news and information from Wall Street is broadcast on well placed TV monitors to keep this top 10 financial institution in-touch during breaks. The interior and exterior were radically transformed with the introduction of large windows and doors leading to a new exterior dining terrace and landscaping that replaced a former parking lot.

The Navy Federal Credit Union’s 104,000SF call center expansion called for a new food service area for the building’s occupants. 4,500 SF was added to the basic box for employees to enjoy as a go-to/respite space and seats 60 people comfortably during lunch breaks. The dining hall also doubles as a large meeting area for company events and presentations, accommodating up to

100 people total. Adjacent to the dining hall are two outdoor patio areas, as well as a convenient vending area. A higher level of design and finish materials was utilized to heighten the overall oasis effect, placing the highest cost of the project where it would be most appreciated by the building occupants.

A significant expansion was required for this independent living dining facility within a major continuing care retirement community. In order to remain competitive in the market, the style of service and range of offerings needed to expand. The design accomplishes this by two means: Expansion includes a new dining room with more formal seating style. The addition also includes a new pub-style club room for casual socializing outside of mealtime.

The existing areas are renovated for an expanded servery and café-style dining. The new server offerings include a coffee/ smoothie station, a daily feature station with brick oven for made-to-order pizzas, grill, comfort food, deli, salad bar and desserts. Additional provisions are made for wait stations and a weekly specialty buffet setup.

This lifecare retirement community wanted to completely rethink the way they deliver services to their most infirm residents. Substantial strides have been made in keeping senior residents independent longer, and even entry-level assisted living replicates the independent living experience to a high degree. Therefore, most residents of skilled nursing care are truly infirmed and a high level of care is required. To continue to promote health and wellness at this level, LAMBERT worked with the management and caregivers to reimagine the skilled care experience. Resident rooms are being revamped along more of a “hospitality” model and the common areas are being similarly renovated. The institutional

model is gone and is being replaced by an environment that a empts to replicate the outdoors indoors with natural light and plantings, water and fountains. The dining experience is a big part of this and keeping these frail residents nourished is paramount. Food is no longer delivered on a tray that has been kept in a warming box. Food is displayed fresh so residents can see and select what they would like prior to plating. They are also able to select from a limited “short order” menu for fresh made-to-order selections. Meals can once more be a highlight of what would otherwise be long uneventful days for this group.

ADAPTIVE REUSE - DOWNTOWN RESTAURANT Bib’s Downtown | Winston-Salem, NC

Built as an automotive service center for Firestone, this structure typified the “mid-century” modern style of the 1950s and 60s. It’s dramatic folded plate roof has long anchored the corner of 5th and Spring Streets in Winston-Salem and hovered above a glass fronted lobby and retail store. A ached beyond were the auto service bays with glass-fronted roll-up doors. Terminating the building on the North end was a two-story windowless storage building. Sam Ogburn, Jr., of Ogburn Properties recognized the architectural significance of the property and worked with LAMBERT Architecture + Interiors to renovate the building as a retail center. Ogburn and LAMBERT worked to revive and freshen the building and site while respecting the significant architecture. Preliminary designs a racted the interest of Bib’s, a new restaurant venture, and the corner anchor position was designed to accommodate their layout. All building systems were replaced and a new roof was installed. New ductwork was threaded through the minimal space between the folded plate ceiling and roof structure in order to preserve it’s visual integrity. A code-required automatic sprinkler system was installed. The Owner and designers worked with the planning 22

department to meet code requirements for the site and parking. Recent changes to the requirements for the “Pedestrian Business” zone meant that the increased amount of parking required did not preclude the use as a restaurant. New landscaping areas were introduced onto the site and a sidewalk patio was developed in the setback area on the South along Fi h Street. Deteriorated wood roll-up doors and single-glazed storefront glass systems were replaced with new highly energy efficient double glazing. Care was taken to select a system that maintained the aesthetics of the previous system and high degree of visibility to the interior while maximizing energy efficiency on the predominantly West facing facade. Windows and doors were added to the two-story storage space to allow the occupancy of both levels by retail or office tenants. Bib’s Downtown opened in December of 2008 to rousing success despite the slowed economy. It has been so successful that operating hours were extended and an expansion is planned into the former garage bays. As many of the locations occupy existing space in storefronts, malls or urban locations, the initial concentration was on the interior customer-focused spaces. The most important interior focus is the product display/service counter. Careful a ention was given to the positioning and lighting of the product. Surrounding elements were designed to complement required elements (such as the menu board) and reinforce the brand’s image. As these concepts were to be implemented in locations as varied as Asia, Europe and the Middle East, careful consideration was given to colors, materials, textures, and overall

design elements such that the appeal would be universal. Graphics and branding were integrated into the overall design. A series of 3-dimensional photo realistic renderings were developed to convey the overall look of each design element, and material finish boards were developed to give a basis for material selection that may vary by geographic locale. Durability of finishes was emphasized as the environments vary (hot, humid, sandy, snowy, etc.). Based on the success of the interiors portion of this project, LAMBERT was engaged to expand this exercise to the exterior image.
