15 TERRANEALIFE

Whether you’re visiting for an extended family retreat or a last-minute romantic getaway, here is your guide to getting the most out of your time at Terranea.

H OW TO T E R R A N E A

The Daycation Many of Terranea’s activities are available for day-trippers, so when you wake up in Southern California and feel like a Pacific costal excursion and a full day of relaxation, dining, and wellness pursuits, look no further than these coastal bluffs.

WHAT TO DO…

Park your plug-in vehicle at the charging

section to revive your ride while you’re enjoying the resort’s amenities. Take a nature walk. Get your bearings

and learn about the resort’s history with an hour-long meander around the grounds. A resort adventure leader can be your guide to the property’s flora and fauna, from the Sea Salt Conservatory and coral trees to rabbits and red-tailed hawks. Have lunch at Nelson’s near the shore,

the backdrop to numerous TV shows and movies, like Pirates of the Caribbean and This Is Us. Baja fish tacos have been on the menu since day one and are always a tasty bet. Ring the bell! Hanging near the picnic

tables at Nelson’s, a large metal bell is

ready to be rung when anyone spots whales or dolphins. Book in advance one of Terranea’s many

adventure offerings. Try your hand at archery. Located at the Beach Cove with a trained instructor, you can experience this 5,000-year-old sport that requires concentration and skill with a bow and arrow. Get in the water with a kayak. Here you

can not only paddle out past the sea kelp and into the horizon, but you can also spot whales and schools of dolphins while working on your core and upperbody strength. Indulge in some retail therapy. Shop the

latest in designer clothing and accessories at luxury boutique marea, as well as unique, locally inspired souvenirs for the whole family at pointe discovery. Take away a treat. To remember your

day trip fondly, pick up a whale- or butterfly-shaped cookie from sea beans on the front drive on your way out. House olive oil and salt infusions are also available for your home kitchen.

A Romantic Weekend

Take a cove hike. Pelican Cove is accessi-

Family Getaway Book one of the ocean-view, residential-style casitas to spread out with the

whole family. You can drive your car right up to the door of these accommodations, which are complete with full kitchens, living rooms, and plenty of outdoor space.

WHAT TO DO…

Check out the Tide Pool Kids Club. Your

little ones can thrive while parents have a little downtime. Daily arts and crafts classes are included with drawing and finger painting or a scavenger hunt around the property. Ride along the bluffs. The whole family can

enjoy an electric-bike ride through Palos Verdes, but if you want something a little more rugged, try a group horseback ride along the local trails with a guide. Explore the tide pools. Low-tide

excursions are led by resort naturalists. Take a close-up look at the sea life at local beaches—and be sure to get a family selfie. Take a cake decorating class. Perfect for

a special occasion and a great bonding experience, up to four people can learn how to ice and adorn confections with flowers, leaves, personal messages, and even a mermaid. Learn about falconry. Guests of our

Southern California resort are introduced, up close and personal, to the beauty and natural history of our working birds of prey including falcons, Harris’s hawks, and Eurasian eagle owls. Our falconer will show you how to identify these birds in the wild and discuss the important roles they play, not only at Terranea, but in the wider environment as well. Visit a historic site. While you can see

the 87-foot tower of the Point Vicente Lighthouse from the main lawn, it’s actually off property and makes a great goal for a family hike with incredible views out to Catalina Island. Take a day trip to Catalina Island. You’ve

seen it from afar, now head to San Pedro Harbor, less than nine miles away, to board a one-hour boat ride to the island. Pro tip: The backside of the island features ziplining.

WORTH A SHOT INSTAGRAM-WORTHY PHOTOGRAPHS TO TAKE AROUND #TERRANEA AND TIPS FOR GETTING THE PERFECT SHOT.

Y

O U D O N ’ T H AV E to be a professional to take

professional-looking photographs. Throughout the property, stunning vistas and dynamic settings

provide ideal backdrops for capturing memories. Whether sun-filled or romantic and dewy, the scenery here is surely something to “like.”

TIP 1: Know your filters. Professionals are well versed at following the light to capture the right location at the right time. When you can’t plan for specific light or time of day, make up for it by utilizing your camera’s filters on your mobile device. The icon of three overlapping circles in the photo app is the simplest way to edit lighting. Choose “vivid warm,” as we did on these pages, to showcase the warmer tones and add vibrancy to sky and sea.

21 TERRANEALIFE

WO R T H A S H OT

TIP 2: Know the rule of thirds. For great composition, mentally run two lines horizontally and two lines vertically through your screen. Where the lines intersect is where the focal points of each shot should be.

22 TERRANEALIFE

TIP 3: Know what’s in your shot. The view might be great and the landscape compelling, but wait for that family with a stroller or the gardener tending to plants to pass by before you get the pic. Outlines of people in the distance can add life to a shot, but don’t get photobombed by a stranger in the foreground.

WO R T H A S H OT

TIP 4: Know where your phone is. Don't miss a great photo opp by not being able to actually capture it. You never know when you’ll catch a stellar view or a great vantage point for capturing a flock of birds landing on the ocean.

24 TERRANEALIFE

25 TERRANEALIFE

WO R T H A S H OT

TIP 5: Know your phone’s features. Shooting when it’s bright out or on the fly often doesn’t yield the perfect photo, but little tweaks after the fact can make a huge difference. Horizon line not completely level? Use your phone’s straighten mode within the crop feature on the camera app to correct any tilts.

TIP 6: Know how to make your subjects smile. With digital photography, it’s easy to take round after round of images, but if your subjects don’t know when you’re snapping, you might not get their brightest expression. Make sure you give them a countdown to every shot to let them know when to say “cheese.”

27 TERRANEALIFE

WO R T H A S H OT

TIP 7: Know how to use portrait mode. Don’t let the name fool you—this camera setting is designed to highlight close-up shots of all kinds, not just “portraits” of people. Instead, use this setting to capture your food images, and it will highlight anything from the tiniest seeds on a berry to the flakes of a croissant.

28 TERRANEALIFE

TIP 8: Know that it doesn’t have to be perfect. Capturing the moment is as much about reality as it is about having a good time. Don’t forget to live in the moment!

A BEHIND-THE-SCENES LOOK AT THE PROPERTY—FROM THE DÉCOR TO THE HISTORY. 30 TERRANEALIFE

PARADISE PRESERVED I S T H I S T H E G O O D L I F E as the founding family of Palos Verdes, the Vanderlips, once dreamed? A timeless estate on the hill, as resplendent and fresh as the finest villa outposts of Positano, Amalfi, Capri? The hidden gem that is the Palos Verdes Peninsula—Palos Verdes Estates, Rancho Palos Verdes, Rolling Hills, and Rolling Hills Estates—is Los Angeles County’s jewel to be discovered again and again. It is serenity, easily found 30 minutes from LAX and Long Beach airports. Nestled into a historic promontory of breezekissed ocean hillside, Terranea occupies a mere quarter of its 102-acre site, allowing guests to explore a truly unspoiled California landscape. In this ecologically nourished place, El Segundo blue butterflies flutter about native plantings; dolphins dive freely in the pure waters; coastal sage perfumes the air and revives the soul. As you descend off Palos Verdes Drive toward the entrance, punctuated by a circular fountain, and pass the carefully saved coral trees—restored from the former Marineland oceanarium—take in the mix of California Mission style, from soaring ceilings with cerused oak beams overhead to encaustic tiles that evoke warmth underfoot. Beyond the scalloped partition, the eye can’t help but drift back again and again toward the wraparound sapphire views, ever the muse for your Terranea stay. From here, it’s choose your own adventure: a spacious resort terraced into the rolling hillside; 20 two-bedroom bungalows clustered near The Spa; 50 three-bedroom casitas lining the hillside; and 32 residential luxury villas that provide families and groups with an intimate, sequestered setting. Spread out and explore with nine dining options and in-room dining experiences; four pools kept at a delicious temperature of 82–84 degrees; 18 private cabanas ready for you to flit away long days; a 50,000-square-foot spa and wellness escape; a ninehole golf course; and every imaginable land, sea, air, and art activity to disconnect and reconnect. Wander two miles of panoramic trails hugging the coastal bluffs, the beach cove, the tide pools. And every so often, when the echo of the bell at Nelson’s chimes, remember the ancient majesty of the deep: A whale has been spotted from this impossibly pristine point. Welcome to timeless luxury.

ROOMS WITH A VIEW I N T H E L O B B Y B U I L D I N G , from 900-square-foot, one-bedroom suites to the 2,100-square-foot Vanderlip Suite, these sophisticated spaces brim with coastal-modern refinery, natural materials, and sumptuous textures and comforts. The premier oceanfront Shearwater Suite, at 1,800 square feet, is one of four gems situated at the tip of the peninsula. Entertain up to eight guests around the dinner table. On the terrace, enjoy cocktails in the evening or breakfast al fresco and watch through your own telescope as dolphins frolic in the sea. The ocean inspires the relaxing decor, from shell-encrusted sconces to tile accents designed to mimic tumbled beach glass. Slip into an ergonomically designed bathtub, where handpicked amenities effervesce with a lasting sea-glass hue. Mirrors are strategically placed to reflect the view. Who could blame you for lingering on your ocean-view balcony? Given the property’s unique 270-degree vantage point over the Pacific, you’ll see a colorful ombre of hues twice daily. Nearly every 450-square-foot guest room has an ocean view—your own special outlook for every Terranea visit. In-room modern artworks are a colorful punctuation to the resort’s collection of plein air paintings from the renowned Portuguese Bend Art Colony. In each alcove,

stop and admire pencil drawings that speak to the charm and history of various historic locations around the peninsula. With warm woods and a soft palette of coastal hues to frame the deep-blue view, the residential feel of the design touches on refined Santa Barbara style: Spanish-Colonial influences, nailhead trim, natural linens and basketry, and nautical accents throughout. From loose-woven textiles to ombre-blue carpeting underfoot, natural materials impart a sense of ocean movement. For work and dining alike, sophisticated, round marble tables replace the traditional hotel desk. Beyond 65-inch flat-screens, technology is paramount, from Bluetooth-compatible, in-room phones to bedside USB ports. Clustered adjacent to The Spa, adultsonly wellness is placed front of mind at 20 two-bedroom bungalows. Find top-ofthe-line gourmet kitchens, al fresco dining terraces, fire pits, Murchison-Hume bath amenities, and fitness features throughout, like baskets of yoga mats and weights in the living rooms. Book a private training session to jump-start your stay. For added privacy, 50 three-bedroom, ocean-view casitas are ready for longer stays. TERRANEA’S STUNNING SETTING IS THE PRODUCT OF HISTORY, CONSERVATION, AND A UNIQUE CLIMATE. HERE ARE 10 THINGS TO KNOW THAT DEFINE THE NATURAL ENVIRONMENT.

44 TERRANEALIFE

1

Although in close proximity to city attractions, Terranea is actually located between three different nature preserves: the Abalone Cove State Marine Conservation Area, the Point Vicente Preserve, and the Palos Verdes Nature Preserve.

2

Less than 2% of the world’s oceans are protected, and of the four marine-protected areas in Los Angeles County, two are in Palos Verdes—right off of Terranea’s coast. Because of the limited fishing allowed here, sea life is given the opportunity to mature and reproduce, making the area a haven for a variety of fish and aquatic species.

3

The Point Vicente Lighthouse, just northwest of the resort, is not only a charming beacon, the surrounding area is used by the American Citation Society, who count the number of gray whales that pass through the water from December 1 to May 31, for research purposes. The peninsula has a deep-water drop-off, which attracts the whales and allows them to come closer to the shores during migration.

4

Rare birds are also attracted to Terranea’s coastal sage habitat. With 14 acres of native plants, the resort organically attracts animals drawn to the region, such as the California gnatcatcher.

5

Among the endangered species that can be found throughout the property is the thumbnail-sized El Segundo blue butterfly. Look for them year-round and particularly during the months of May and June.

6

In the 1970s, pelicans were considered an endangered species because of the use of DDT that poisoned their food supply, but they’ve since been off the endangered list, and guests at Terranea rarely go a day without seeing one.

7

A picturesque two-mile coastal walk wraps about the hotel, but a longer five-mile walk along the coast is also conveniently accessible.

8

Notice that the cliffs around the Palos Verdes Peninsula look like layer cake? Millions of years ago, this area was likely an island that rose up out of the water. Each slice is a marine layer that then merged to become part of the land.

9

While most of the northern Los Angeles County coastline tends to be flat, the rugged landscape around the Palos Verdes Peninsula includes jagged cliffs and cave formations—inviting for safe and guided exploration near the resort.

10

Can’t decide between a sunrise and sunset? At Terranea, you can typically see both overlooking the ocean, due to the peninsula’s unique location and 270degree panoramic views.

Rosalinda Carillo de Ruiz ROOM ATTENDANT, SINCE JUNE 2011 What brought you to Terranea? I knew that I could grow here, and I wanted to work at a place that would provide me many opportunities. A good friend of mine had worked here and always said how great Terranea treated its associates. Plus, I knew it was one of the best resorts in California and had a great reputation with its guests. What do you like about the setting? What’s not to like about the setting? As soon as you step on the property, you’re in paradise. I also love interacting with all of my guests and making them feel at home. What are some of the special moments

you’ve had working here? I have a regular guest who always asks for me specifically to tend to his room and pets. It feels so good to know that my work is appreciated, and the guest is so nice to the point where I feel like family. That same guest was even kind enough to mail me a Christmas card! I was truly touched. What’s the best part of your job? What really stands out to me are the people I work with. Everyone is willing to work as a team, and it makes the workday that much better. I also love working by the beach and feeling the fresh air and ocean breeze. The property is so beautiful!

Martin Lepe LEAD PAINTER, SINCE AUGUST 2018 What made you want to work at Terranea? I was looking for an opportunity where I could grow, and I was drawn to Terranea for its size and, of course, beautiful ocean view. What’s the best part of your day? My favorite part of the day is when I get together with my team to coordinate our goals. The kindness and positivity of everyone on property throughout the workday is always special too. What are some of your favorite wildlife to spot? I love seeing all of the rabbits hopping around at 6 a.m. and the dolphins in the ocean. I also love the views at our Beach Cove and Pelican Point. How would you spend your time at Terranea if you were a guest? I would go to The Spa, and then have breakfast at catalina kitchen and enjoy a nature walk.

Mary Ambrust MASSAGE THERAPIST, SINCE NOVEMBER 2012 What brought you to Terranea? I wanted to start working right after college. It was supposed to be “just a job,” but the growth I’ve experienced here is what has made me stay. I grew up in the area and knew about Terranea and always heard how it was a great place to work. What do you love most about the setting? The view is unmatched. While we are “behind the scenes” most of the day in offices, I can’t think of any other place where you can simply walk outside to see either an amazing sunset or dolphins and whales swimming by. What’s your favorite part of your workday? The best part is bonding and creating 58 TERRANEALIFE

relationships with the team, not just in my department but across all of Terranea. It’s an incredibly fulfilling experience when so many outlets are able to coordinate together to provide that amazing guest experience. Every associate embodies the exemplary qualities of an outstanding associate: passion, integrity, and a drive to succeed. We all love creating positive experiences for our guests. What’s your favorite spot to take in the views? My favorite spot for an amazing sunset is either at The Spa or Nelson’s. Since the entire resort is on a peninsula, those are the best places during the evening. However, the view during a Sunday brunch at mar’sel is stunning as well.

Jeffrey Breedlove SERVER, MAR’SEL, SINCE SEPTEMBER 2010 What brought you to Terranea? I was visiting a friend in Redondo Beach and took the scenic route. I remember passing this amazing 102-acre property and thinking to myself, “Wow, what’s down there?” So, I drove to see what this place was, and it was a beautiful, brand-new resort. I thought to myself, I must work here. The next day I decided to drive back and have lunch by myself. I had lunch at catalina kitchen and asked how to go about getting a serving position. The associate gave me a business card, and that night I went home and filled out the application online. I set up that interview right away because I knew I wanted this position so badly. What’s the best part of your workday? When I’m setting up right before anyone gets to mar’sel, and I look to the ocean and see dolphins, sea lions, whales, and pelicans playing. I just take it all in and say to myself, “Wow, this is my office.”

What are some of your favorite moments you’ve spent with guests? My favorite was helping a frequent guest surprise her mom and dad with the news of her and her husband becoming parents. She emailed me earlier in the week to see what we could come up with. I met with our pastry chef and came up with the idea of putting “Congratulations! You’re about to be grandparents!” on their dessert plate. I filmed the reaction of her parents when the dessert was dropped. It was amazing —her mom and dad burst into tears of happiness. It’s moments like those that I really cherish with my guests. What is your favorite part of the property? I love the hike up to the hill that overlooks the lighthouse. Go there during the sunset— you won’t regret it. My favorite spot at Terranea is on the lawn at mar’sel, where the pictures turn out beautifully with the backdrop of the cliffs and the ocean.

Natural Haven R O L L I N G H I L L S I D E S of coastal native plants. A crisp view of Catalina Island in the distance. Breaching gray whales. However vibrant the grand estates dotting the hillsides, however perfect the vistas that rival any Italian riviera, this land is still, seemingly impossibly, unspoiled by humans. But that’s not by chance; it’s by design. By air, by sea, by land, Terranea’s untouched setting in the Southern California sun captures the hearts of its visitors, thanks to the chance of history and the stewardship of its owners to craft an eco-friendly home for all of its visitors. Once a part of the Channel Islands, the Palos Verdes Peninsula shifted over millions of years to join the California coast. While the indigenous GabrielinoTongva Tribe had long fared well as seafarers, traders, and fishermen, the area’s Spanish name, Cañada de Palos Verdes (“canyon of green trees”) hints at the verdant treasure that explorer Juan Cabrillo set foot on in 1542. The Rancho de los Palos Verdes Mexican land grant of 1846 to Jose Loreto and Juan Capistrano Sepulveda ushered in the era of horse and buggy. In the early 1900s, Japanese farming communities harvested the agricultural bounty of the hillsides, from olives to prickly pears. Inspired by the rivieras of the Mediterranean, the

founding father of the Palos Verdes Peninsula, Frank A. Vanderlip, and a consortium of New York investors, purchased 16,000 acres of beauty, sight unseen, in 1913. Their vision? A year-round colony for the well-to-do. The postcard-perfect landscape attracted California’s first major theme park, Marineland of the Pacific, which opened in 1954, a year before Disneyland. When Marineland of the Pacific shuttered in 1986—acquired by competitor SeaWorld—years of planning elapsed before Lowe Enterprises took on an ecologically sensitive development, in 1998. Nothing was thrown away of the seaside park and sanctuary; even 45 of Marineland’s original coral trees were salvaged and replanted around the grounds. From the oil paintings from the

63 TERRANEALIFE

Portuguese Bend Art Colony to the minty coastal sage perfuming the air, the result is a finely crafted homage to the peninsula that also honors classic Mediterranean and Mission architecture. Today, Terranea harmonizes with its surroundings, as a seemingly timeless grand estate on the hill. The coastal bluff trails are a wildlife wonderland, teeming with the peninsula’s three species of hummingbirds, playing among the colorful birds of paradise. The ocean is cleaner than ever, thanks to complex filtration systems and dedicated Green Team kayak cleanups. The shimmering, undulating expanse of cobalt—which is also a marine-protected area—is often punctuated by leaping dolphins and gray whales. It’s the California you were meant to experience.

Treading Lightly TERRANEA SUSTAINABILITY LEADER LAUREN BERGLOFF DISCUSSES HOW CONNECTING TO THE LAND IS THE FIRST WAY TO PRACTICE SUSTAINABILITY. Q. What does it mean that Terranea is the only “non-preserve” area in the surroundings? A. From the shores to three miles out to sea is a marine-protected, “no-take” area. On the other side, it’s Palos Verdes Nature Preserve, and you can hike from the lighthouse all the way through to the edge of it, where the golf course is. We’re surrounded by nature. Seventy-five percent of the property is now green space, and there’s 14 acres of restored habitat. But, when it was Marineland, it was basically all concrete and asphalt. So, when it rained, everything just rushed into the ocean

A. Can you imagine building this place from the ground up? It’s a vast swath of land, 102 acres. It was all covered in concrete. Instead of throwing away or hauling off all the concrete, they broke it up and used it underneath the roadways. Marineland was pretty flat; now, Terranea is terraced with spectacular views. All the plants were seedlings from the peninsula itself, so you get to see what happens when you allow those native plants to grow full.

from the hills. Now, it’s able to go into the groundwater, seep into it, and if there’s anything else, it’s filtered through seven different vaults. We’re this little pocket that was developed in a way that is better for when it rains. Q. What do you mean by vaults? A. They’re called contact storm drain systems. It’s basically a huge room below us. They add the filters so that any oils and other runoff collects and gets filtered out. Twice a year it is vacuumed out with huge trucks.

Q. How would you describe the relationship between the flora and fauna here? A. Mutualistic symbiotic is when they both benefit; we

have a lot of that here. Some guests from Manhattan Beach, which is close by, were on my Guided Coastal Walk recently. They said, “Why do you have so many birds?” I said, “Because they have the space to live! They have their habitat.” I studied environmental science in school, and I feel it was a lot of doom and gloom. That’s why I love this story. I would have never thought a development could be good for the environment, but it is if it’s done right. Here we

have the coastal buckwheat plant. And here’s a little butterfly, as big as my thumb: the El Segundo blue butterfly. They were endangered. They need that plant to survive. So the places that we’ve seen them come back are here and El Segundo. Chevron did a plant restoration project right by LAX. So the fact that we developed, the fact that animals are coming back and making Terranea their home, it’s so special. The rabbits you see around the property—they weren’t placed here; they came back. These butterflies, all of the birds, hummingbirds, red-tailed hawks, ospreys, egrets. You know that saying, if you build it, they will come? It’s true! Q. reducing waste? A. I encourage guests to carve some time for one of the resort’s self-guided nature walks. By walking around with a mindful eye, guests can really see how much went into the development here. Todd Majcher, senior vice president of resort development and design for Lowe, talks about sincere development rather than sustainable development, which

I think is such an interesting way to put it. He thinks that sustainability is kind of a buzzword. If you’re being sincere and thinking about the land that you’re on and giving it respect, you’re going to be sustainable. Our ocean water is now cleaner than it was before, because of the measures put in place during development. Q. The choices you make as

For the most of-the-moment cocktails, head to mar’sel, where bartenders use modern techniques to mix unique drinks. ● The Rosemary Fire, for instance, mixes Peerless rye whiskey, garden-grown-rosemary simple syrup, orange bitters, and Angostura bitters before the drink is smoked in a cloche to add another level of complexity. mar’sel also offers a selection of zero-proof cocktails, a growing trend across the country for drinkers and nondrinkers alike. The Fleur de Sureau is a refreshing mix of grapefruit juice, elderflower, lime juice, and Q club soda.

BARREL OF FUN ● The

Lobby Bar & Terrace is the perfect place to kick back and enjoy an aperitif or after-dinner drink. While you’re there, try the Terranea Fashioned, made with Jack Daniel’s Single-Barrel Select Tennessee Whiskey created specifically for the resort from Jack Daniel’s most coveted collection (only 1 of every 100 barrels receives the distinction). The Terranea team collaborated with Jack Daniel’s Distiller Jeff Arnett to choose the bold-flavored, barrel-aged spirit with notes of toasted oak and vanilla. The Terranea Fashioned is finished off with Fernet-Branca, chocolate bitters, and a Coca-Cola reduction—but you can add vanilla, cherry, or orange if you’re feeling fancy.

TO A TEA ● If

you’re digging into Salt and Pepper Shrimp or Chashu Pork and Lobster Rice at bashi and would like something boozefree to drink with your meal, look past the restaurant’s list of Asian beers and 17 varieties of sake to its vast selection of Rishi teas. Available in loose-leaf and sachet format, Rishi’s teas (offered throughout the resort) are organic and responsibly sourced. Sip a steaming cup of bao zhong (pouchong) oolong, or jasmine green tea as a soothing accompaniment to your meal.

TIPS FROM FOOD AND BEVERAGE DIRECTOR

VINCENT BRUNETTI ● Hospitality

veteran Vincent Brunetti selects all of the wine and spirits for Terranea. We asked for his top three tips for pairing food and beverages at the resort. “The perfect pairing is always what you enjoy eating and drinking. Never let anyone tell you otherwise,” he says. Here are his top recommendations.

1

A classic pairing would be a fine sherry and Wild Fennel Soup at mar’sel. The sherry’s tanginess is complemented by the soup’s texture and dried-nut garnish, but if you don’t love sherry, the experience would be lost. If you love white wine, we can guide you to a dry, crisp selection such as the biodynamic Pinot Grigio by Alois Lageder.

2

Always consider a drink’s components for cocktail pairings. Clear spirits incorporating fruit go well with a salad or light seafood fare. Darker spirits tend to pair well with heartier dishes, as they most often have been aged in oak casks. This aging will add beautiful, ambient spice flavors and nuance to a dish.

3

Don’t be afraid to ask for recommendations. We hold biweekly team meetings, focusing on different regions and spirits of the world. Our staff is excited when you enlist their assistance. The world of beverages is expanding every day. Let us take you on a journey.

ELEMENTS OF TASTE A BEHIND-THE-SCENES LOOK AT SOURCES FOR THE RESORT’S FINE INGREDIENTS.

T

erranea is a resort that is decidedly of a place—the stunning Palos Verdes Peninsula—and its cuisine reflects its bounty. The resort’s culinary team looks to the area’s rich soil, warm sunshine, and Pacific Ocean to grow many of their own ingredients. Both land and sea are weaved into Terranea’s nine eateries to give guests a taste of the region. Here are just some of the hyper-local ingredients that make dining at Terranea a one-of-a-kind experience.

GONE FISHING ● Terranea’s

culinary team enjoys regular early morning visits to the nearby waterfront town of San Pedro, famous for its fresh fish. There, they work directly with fishmongers to select the best seasonal catches for Terranea, including rockfish, ono, local squid, and much more.

Catalina View Gardens is a four-acre organic farm from which the chefs source a variety of seasonal vegetables. If you spot tomatoes, avocados, artichokes, chili peppers, fennel, or squash on a menu, chances are they’re from right down the road.

another effort to enjoy the ocean’s bounty, Terranea also harvests nutrient-rich kelp from the shores of the Pacific, hanging it to dry in the Sea Salt Conservatory. Every restaurant at the resort has a dish featuring kelp as an ingredient, and you’ll even spot it infused into the resort’s famous sea salt and handmade soaps.

GET SALTY ● On

Earth Day 2015, Terranea unveiled the custom-built Sea Salt Conservatory, a greenhouse right on the resort grounds. Water from the shores of the Pacific Ocean is collected by hand before it’s pooled in the conservatory's three beds, where it evaporates into salt crystals in the Southern California sun. Some of the 350 pounds of salt produced yearly are cold-smoked and infused with flavors like Meyer lemon and fresh herbs grown at the resort. Terranea’s sea salt is used in the restaurant kitchens—and it’s for sale at sea beans so you can take a taste of Terranea home.

BEE MINE ● Catalina

View Gardens is home to 120,000 bees, which not only produce honey, but also help to pollinate the various fruit and vegetable plants at the farm and resort. The honey makes its way into candies, salad dressings, and cheese platters in the restaurants.

A GARDEN GROWS AT MAR’SEL ● Walk

down the winding path to mar’sel and you’ll notice three raised garden beds. There, the culinary team grow a variety of fresh herbs and greens that show up on the restaurant’s inventive, Californiainspired menus.

76 TERRANEALIFE

OLIVE JUICE ● While

exploring the grounds, you may spot more than a couple of olive trees dotting the landscape. While they do produce some of the olives on the resort’s menus, the culinary team also works with Catalina View Gardens to supplement the supply. Every autumn, they press and blend the Greek, Spanish, and Italian olives into a bright-green, mineral-packed, extra-virgin olive oil.

THE SHAKING BEEF AT BASHI ● Celebrating

the varied culture of the region, bashi features wok-style dishes with Chinese, Japanese, and Southeast Asian influences. One of the signature dishes, Shaking Beef, featuring fried potatoes, watercress salad, and salt-and-pepper lime dipping sauce, draws inspiration from the peninsula’s roots, when, in the early 1900s, the land was used for a mix of cattle grazing and farming by Japanese farmers, including the Ishibashi family. Here, the recipe for the dish allows you to recreate this memorable meal at home.

SHAKING BEEF

Ingredients 8 oz. beef tenderloin, diced into large chunks 1 oz. white onion, cut into long, thin strips 12 oz. russet potatoes, peeled and diced into ¼-inch slices 1 qt. vegetable oil Sweet ginger soy sauce ¼ cup low-sodium soy sauce 2 Tbsp. brown sugar 2 Tbsp. minced ginger 1 Tbsp. oyster sauce 1 Tbsp. sesame oil To garnish 3 limes, juiced 1 red onion, cut into long, thin strips 1 bunch watercress 10 cherry tomatoes, halved black pepper

Directions: To make the sweet ginger soy sauce, combine the ingredients and heat to a simmer. Turn off the heat and let it infuse for 30 minutes. Pass the mixture through a fine sieve and reserve. Make pickled onions by combining the juice of two limes and red onion strips in a small bowl. Set aside. Fry sliced potatoes in a small saucepan with vegetable oil until golden brown in color. In a wok or a large sauté pan, with 3 tablespoons oil, sear the beef tenderloin on high heat on all sides until well colored. Add onions and cook for 1 minute. Add potatoes and sweet ginger soy sauce and coat thoroughly. Place Shaking Beef on a platter. Garnish with pickled red onions, watercress, and cherry tomatoes. Serve immediately, with fresh lime juice and black pepper for dipping.
