Chef Giuseppe Manco takes a hands-on approach to managing the Italian foodie destination’s back-of-house operations and three restaurants: Terra; La Pizza & La Pasta; and Capri. “I’m not the kind of executive chef who is closed up in the o ce making menus and strategizing. I'm in the kitchen every day,” says Manco, who hails from Naples. Working with locally grown produce and specialty ingredients imported from Italy, Manco says he feels “at home” creating authentic dishes like fiori di zucca (squash blossoms stu ed with ricotta and house-made mozzarella) and arrosticini (grilled lamb, beef, and chicken skewers).
