Kid cooks shine at local Le Chat Gourmet Mary Jo White mjwhite@lsj.com
T
he young chefs at Le Chat Gourmet’s Summer Cooking Camp in Eaton Rapids aren’t big on frozen pizza or mac and cheese from a box. Instead, they’re into creating their own recipes using fresh, simple ingredients, then cooking from scratch. On Aug. 5 three teams of young cooks were engaged in an Iron Chef competition on their last day of camp, with three judges ready to rate them on taste, originality, presentation and the cleanliness of their work area. Jessica Mohlman and Katie Hoffman of Mason teamed up with Amelia Arnold of East Lansing to create a cheesy chicken biscuit pizza flavored with tarragon and rosemary. All
three girls, whose biscuits were made from scratch, are nine years old. Lansing resident Jonathan Riley, 13, Jackson Vukovic, 8, and 10-year-old Colton Flynn created a stuffed green pepper recipe featuring seasoned rice and smoked sausage.Riley goes to East Lansing’s McDonald Middle School amd Vukovic to St. Thomas Aquinas. Flynn was visiting from Warren. The third team, 11-yearold Connor McCornack from East Lansing, Alexis Hereza, 10, from Williamston and 13-year-old Michele Nussdorfer from Eaton Rapids, made a macaroni and cheese pie with a bacon strip crust woven like a lattice. Everyone made sure to use the child-pleasing “mystery ingredient” of the week: Colby-Jack cheese.
Denene Vincent of Le Chat Gourmet (in black) takes her students to the herb garden for fresh basil and peppers during the last day of their cooking camp.
Before the plates were presented to the judges, the young cooks headed for Le Chat Gourmet’s herb gardens for fresh basil, tarragon and rosemary to use as garnishes. Nussdorfer is a veteran of last year’s camp and sometimes uses her recipes to cook at home, according to her mom, Sheri, who was waiting to taste the attractive dishes. “She’s been interested in cooking and learning how to put different flavors together,” Sheri said, adding that Michelle also likes to noodle around in the kitchen with her older brother, Ethan, 20, who spent a summer cooking at a resort in Colorado. Michelle says her favorite recipe, which she learned last year, is calzones.
The chief cook and bottle washer at camp is Denene Vincent, affectionately known as “the Chef,” owner of Le Chat Gourmet. On Iron Chef day Vincent moved from team to team doing what all good teachers do: making suggestions and enouraging her young charges.. “Any of these dishes could be served in a restaurant,” Vincent said, adding that she especially enjoys watching thekids put together everything they’ve learned during their week of camp. The stuffed pepper team, for instance, added cayenne peppers to their dish for the presentation as well as the taste. Some of the parents waiting for lunch have attended Vincent’s adult classes and workshops.
Teammates Connor McCornack, 11, and Michelle Nussdorfer, 13, work on their original recipe dish during Le Chat Gourmet’s Kids’ Summer Cooking Camp August 5.
One mom, Lori Hoffman, has taken several, including an herb workshop, and describes them as “addictive.” Hoffman is even planning to travel to France on one of Vincent’s culinary trips. So who won the Iron
Chef? It was the stuffed pepper team, but only by one point. With three delicious dishes, everyone was a winner. For more information on Le Chat Gourmet, call Vincent at 517-663-7322 or log on to lechatgourmet.com.

EATON RAPIDS — After a presentation by Bernie Porn of survey research firm EPIC-MRA, the Eaton Rapids Board of Education agreed Aug. 10 to hire
the company to conduct a survey that would capture demographic data and gauge support for a new school bond proposal. Two school bond proposals have been defeated recently, the second by 68 votes last February.
ROOFING & SIDING INC.
EPIC-MRA has a long history of working with public school districts, including those in Charlotte, Lansing and Pinckney. A comprehensive survey that would contact 300 sample households for a 10-minute interview would
cost $12,000. EPIC-MRA would work with the board to create the survey questions that could include how the public perceives the district and how they feel it compares to surrounding districts, how they feel about specific
improvements that could be included in a bond proposal and whether or not they’re likely to vote in a primary or general election. “It’s a collaborative process,” Porn said, adding that the company would construct the survey based
upon what the board is looking for. “Defining the issues we want to test will be huge,” said board member Jeff Allison. The board’s marketing committee will begin work with EPIC-MRA in September.

Public schools offer much more than just academics W
hen adults are asked to tell you their favorite memories from school, it is rare when they mention classroom learning or an “academic moment.” Invariably, they mention an event like prom or an activity like Earth Day. Sometimes, people share fond memories about friends and extracurricular activities. As our Eaton Rapids Public Schools Board members and I go through really agonizing decisions about what to trim or eliminate based upon current budget constraints, we try to remember that a student’s experience in school is far broader than getting competent in math, English, social studies, science, and proficiency on state tests. While I know it is hard not to lament those things lost or eliminated, we have worked really

I admit to having a bias toward giving kids opportunities to develop through extracurricular activities. I drove home chuckling to myself about how much fun I had watching and being part of the event, and being proud that Eaton Rapids is turning out such great students and alumni. It is no wonder that I continue my belief that they are many benefits to a broader school experience. Bill DeFrance is the superintendent of Eaton Rapids Public Schools.

CHARLOTTE — Gov. Rick Snyder recently signed into law a bill introduced by state Rep. This new law is an important step to give schools the ability to deal with our current economic realities. It will also allow school employees to make more informed decisions regarding their health care.” House Bill 4700 requires local school districts to be

healthy. Studies suggest that breastfeeding burns extra calories, which may help a breastfeeding woman return to her pre-pregnancy weight more quickly. Breastfeeding may also reduce the risk of breast cancer. Employers can enjoy the reduced amount of time off breastfeeding moms require to care for their sick baby. Heather Sanders, breastfeeding coordinator for the Barry-Eaton District Health Department, recommends that breastfeeding be started in the first hour of life. Solid foods should be introduced at six months while continuing to breastfeed through the first year of life. Research shows that exclusive breastfeeding for six months, the “gold standard,” also decreases an infant’s risk of several chronic diseases later in life including obesity, diabetes and asthma. The Barry-Eaton District Health Department is committed to increasing public support and acceptance of breastfeeding as the infant feeding norm. Encourage all pregnant women to learn about the benefits of breastfeeding. Ensure each mother is able to make an informed decision. The Barry-Eaton District Health Department now offers the Breastfeeding Peer Counseling Program for WIC participants. For more information on breastfeeding, WIC or the Peer Counseling Program, contact the Barry-Eaton District Health Department at (269) 945-9516 for the Hastings office and (517) 541-2630 for the Charlotte office. — From the Barry-Eaton District Health Department

GRAND LEDGE — Sale of tickets continues for the Friends of Eaton County Parks dinner cruise aboard the Michigan Princess on Sunday, Sept. 11, at 6 p.m. to raise funds for the Eaton County Parks system. Tickets for the two-hour cruise and dinner are $40 per person. Businesses, individuals and charitable organizations sponsoring a table of eight people will have the name of the group displayed on the table. Another way to get tickets to the dinner cruise is to join the Lincoln Brick 100 Club. Those members, for a $100 tax-deductible donation, receive one dinner cruise ticket, a 2011 annual pass to all Eaton County Parks and a subscription to the Eaton County Parks newsletter. Lincoln Brick 100 Club members may purchase one additional dinner ticket for a reduced price of $20. The proceeds from 100 Club memberships go exclusively to benefit of Lincoln Brick Park in Grand Ledge, while the individual dinner cruise proceeds will benefit the county-wide park system. Alvin Whitfield, president of the Friends organization, says the Parks Commission and the Friends group are looking for a big response this year. The boat and crew have been donated for the benefit of Eaton County Parks by J&K Steamboat for 20 years, first on the Princess Laura, docking in Grand Ledge, and moving to the larger Michigan Princess, docking at Grand River Park, as support for the
to educate the communities of both Barry and Eaton counties on the importance of breastfeeding and to help mothers make the best choice for their newborn. Pediatricians, health professionals, childcare providers and employers can help mothers by supporting their decision to breastfeed. Mothers should be encouraged to think positively; many women who breastfeed enjoy remarkable success. Many of these women are working mothers and mothers with multiple children. Breast milk contains the perfect balance of nutrients and it is easy for baby to digest. Breast milk is the most complete food an infant will ever eat. Breast milk is high in protein, vitamins and minerals. Breast milk contains protective antibodies that help babies fight off common childhood diseases and recover from illnesses more quickly. It also helps reduce the incidence of ear infections, allergies and diarrhea. Breastfeeding promotes well being and may increase a child’s IQ. Breast milk actually changes to keep up with the baby. That is the miracle of breast milk. As a baby begins feeding, he or she gets the milk rich in proteins necessary for growth. The milk that follows has more of the fat he or she needs for energy and weight gain. Breastfeeding creates an intimate mother-child bond. A baby gets close contact while consuming nature’s perfect food. The American Academy of Pediatricians recommends Breastfeeding as the optimal method of feeding an infant. Project FRESH offered throughout county EATON COUNTY — The Eaton County United Way (ECUW) has entered into an agreement with the Michigan Department of Community Health (MDCH) to serve as an Eaton County Market Master for the Project FRESH program. Project FRESH is a Michigan farmers’ market nutrition program jointly administered by the
MDCH-WIC Division, the USDA Food and Nutrition Service, and Michigan State University Extension. The program enables authorized farmers’ markets and roadside stands to provide WIC clients with locally grown produce. Specifically printed coupons are provided on an annual basis to eligible recipients who receive
booklets of ten coupons worth $2 each. Coupons are distributed by Michigan State University Extension at designated WIC clinic sites. Extension staff will provide nutrition education on selecting, storing, and preparing fresh produce. Coupons can then be used to purchase locally grown, fresh, unprepared fruits and vegetables at
authorized farmers’ markets and roadside stands. ECUW will voluntarily support the program by redeeming coupons and establish vendor participation for the program in Eaton County. Coupons are valid until Oct. 31. “This is a fantastic way to provide food items to those in our community that need it most, and provide good education on
wholesome food choices,” said Suzanne Hayes who will serve as Market Master for ECUW. “It also supports economic activity for local growers.” The Eaton County United Way is a nonprofit 501(c)(3) organization located in Charlotte focused on the building blocks for a good life -a quality education for children and
adults, good health, and a sustainable income for local citizens. The organization is led by a diverse group of volunteers from business, labor, government, human services, education and the community. For more information on Project FRESH, visit www.ecuw.org, connect on Facebook, or call Suzanne Hayes at (517) 543-5402.

Dam Festival and dedication of the Jean Kline Block
Saturday, August 27th, 2011 9am-5pm at the Historic Miller Property 635 State St., Eaton Rapids, Michigan Sponsored by the Eaton Rapids Area Historical Society
The Dam Festival will be August 27, 2011, with activities happening between 9 a.m. to 5 p.m. at the Miller Farm Complex. On tap are guided tours of the dams around Eaton Rapids, a large car show, kids’ games and hands-on activities, a craft show, live music, and much more. Most events are free. In conjunction with the festival will be the dedication of our newest building, the Jean Kline Block. Dedicated to the memory of Jean Kline, who passed away in 2010, and funded by her husband, Cernyw, the building was Jean’s dream for the ERAHS. Inside the building is an undertaker’s office, a print shop, a general store, and a photo studio. All the historic buildings in the village will be open, including the one-room schoolhouse, ice cream parlor, church, house, the Jean Kline Block and blacksmith shop. You can have a scoop or a sundae at the ice cream parlor just like your grandparents did, back in “the day”. The Dam Festival was developed as a way to inform people about the rich history of Eaton Rapids, and also as a fund raiser to preserve that history. With so many dams in the area, the ERAHS thought it was important to share that history, and have some fun at the same time! If you are interested in being a part of the Dam Festival, contact us at damfest@att.net or call 9517)663-3288. * this ad was sponsored by:

NOTICE OF RIGHT TO REFERENDUM ON BECOMING A CHARTER TOWNSHIP Official certification has been received from the Michigan Secretary of State that the Township of Aurelius has a population of 2000 or more according to the most recent United States census and is therefore eligible to be incorporated as a charter township under the provi sions of section 3a of the Charter Township Act, 1974 PA 359 (MCL 42.3a). The township board has the right to exercise one of the three options concerning status as a charter township, as follows: 1. Adopt by majority vote a resolution opposed to incorporation as a charter township; 2. Adopt by majority vote a resolution of intent to approve incorporation as a charter township; 3. Adopt by majority vote a resolution to place before the electorate at the next regular or special township election the question of incorporation as a charter township. In the event option 2 is adopted by the Township Board, the citizens of the township have the right to file a "Right to Referendum Petition". This petition must be filed within the 60 days which must lapse between passage of a resolution of the intent to incorporate and final passage of the resolution to incorporate as a charter township. The petition shall follow, in general form, the nominating petition f rm as prescribed in the Michigan Election Law, and in the heading o will indicate "Disagreement of Intent to Incorporate as a Charter Township". The petition must be signed by not less than 10% of the registered voters of the township based on the vote cast for all candidates for supervisor at the last election at which a supervisor was elected. If the petition is successful, the question of incorporation will be placed on the ballot at the next general or special township election. The Aurelius Township Board unanimously adopted a resolution at their regular board meeting on Tuesday August 9, 2011, to oppose incorporation as a charter township.
