How to Cut a Mango: Make sure the stem is facing up. Then, cut vertically ¼ inch away from the middle of the mango. You’ll be cutting around a large seed. Make the same cut on the other side. Cut the orange flesh in a grid-like pattern without going through the skin. Use a large spoon to detach the flesh from the skin and scoop out the cubes.

Mango Salsa: In a large bowl, mix 2 ripe mangoes, peeled, pitted, and chopped (about 3 cups); 1 small, chopped onion; 1-2 jalapenos, seeded and chopped; ½ cup cilantro; and 1 tablespoon of juice; and salt and pepper to taste. Serve or refrigerate in a sealed container for up to 2 days.
