In a large bowl, add the cooled cauliflower, 1 cup of chopped and seeded tomatoes, ¼ cup of sliced onions, ¼ cup olives, 1 cup feta cheese, and 1/4 cup chopped fresh basil (or 4 teaspoons dry basil). In a separate bowl, mix together 1/4 cup lemon juice, zest from one lemon, 1/2 teaspoon salt, 1/2 teaspoon pepper, 2 cloves garlic cut finely (or ¼ teaspoon garlic powder), and 1/4 cup oil. Toss the dressing over the cauliflower salad, and mix well.
