Letter from the Editor's WINTER 2020

t is safe to say we are at our happiest when traveling the globe discovering new cultures, trying new foods and meeting incredible people along the way. Since traveling is in our blood, we spend quite a bit of time on the road and the past few months were no different. We finished off 2019 with a perfect blend of hot and cold to create the ideal end of year adventure. Starting in LA we made our way to Las Vegas to check out a few new foodie hotspots and after eating our way through Sin City we continued our flight path to spend time in New England for a true authentic white Christmas. Next on the list was a short flight to New York for a quick bite out of the Big Apple and finally we ended in Turks and Caicos for the ultimate New Year’s celebration on the beach. It truly is hard to beat the powdery white sand and turquoise waters of the islands and we couldn't think of a better place to be to ring in 2020. After finishing off what was an incredible 2019 doing what we love best we decided to kick off the year in Austin, Texas. We have always heard that Austin is a great city to visit and the rumors were true. Incredible BBQ, live music festivals, friendly locals, all set in an abstract culture of arts and entertainment, this city is a rare gem. The “Live Music Capital of the World” did not disappoint. This seasons’ cover features America’s favorite Bachelor, Colton Underwood. We had the best time capturing this heartthrob’s fun personality. As our first official male solo cover the shoot went flawlessly and our team really enjoyed getting to know him one on one. We look forward to seeing all of our Southern California fans at our upcoming events taking place in Los Angeles and Orange County this March. Make sure to follow us on all our social media channels to receive updated information on these exciting experiences, this will be a year like no other. Mixology Masters, Presented by Porsche Irvine On November 9th we hosted our first annual Mixology Masters event at Porsche in Irvine, a signature event created to celebrate SoCal's top mixologists. Guests were greeted with bubbly courtesy of Wilson Creek Winery served via champagne goddess style thanks to Aerial Butterflies as they entered the dealership. Once inside the crowd enjoyed passed decadent hors d'oeuvres from Alligator Pear Catering and small bites from local restaurants including Davio's Irvine and Urban Plates. An alcohol inspired donut station provided sweet treats thanks to Miss Mini Donuts while Knob Creek served up creative cocktails. During the extravaganza guests had the opportunity to try a sample of each specialty cocktail presented by the competing mixologists which showcased Tito's Handmade Vodka, Freeland Gin, Drake's Organic Rum and Dinastia Real Tequila while Essentia Water kept guests hydrated. Great gatsby themed music from DJ D-dub kept patrons entertained throughout the event while Lumina Event Lighting set the ambiance throughout the venue. Mikasa by Stephanie's Linens and Flowers by Evie Gray provided beautiful decor for guests to enjoy intimate seating areas. To end the event, guests were encouraged to nominate their top picks for the mixology competition. After tallying all the votes it was announced that Brandon Conrad from Mixology Flaired had won Best Mixologist and Casey Lyons from SOCIAL Kitchen + Craft Bar had taken the win for Most Creative Cocktail. NEW & NOTABLE DINING What's Cooking in SoCal Berkshire House, Los Angeles

Located on La Brea’s thriving restaurant row, Berkshire House – from the owners of Valley staples The Woodman and Jalapeño Pete’s is officially open. A versatile and expansive bi-level space, Berkshire House is the ultimate neighborhood hangout with wrap around flat screen TVs perfect for watching the big game. The food menu showcases a variety of American cuisine while the bar highlights over 70 variations of international whiskeys, specialty cocktails, wine, craft and specialty beers. With cleverly named specialty cocktails like the Painkiller, a concoction of Malibu Rum, Captain Morgan’s Spiced Rum, Pineapple Juice, OJ, Coconut Puree and a sprinkle of Nutmeg the buzz is already growing about this La Brea Ave. hot spot. The visionary minds at the bar are not afraid to blend ingredients that have never been combined before, and so far, their ideas are paying off. Featuring weekly specials from Wicked Wing Wednesday to Sunday Brunch this sporty-style eatery attracts crowds of all ages looking for a fun dining experience during any night of the week. Garage-style front doors raise to accommodate indoor-outdoor seating, a rarity for the neighborhood, the dining area’s communal tables and sleek bar softened by the lounge’s plush high-backed chairs and tufted couches in muted jewel tones. The second story lounge features a private bar and fits up to 80 people standing. Berkshire House’s menu ranges from pub staples like authentic Philly Cheesesteak and wings to more foodie-driven specials like Fried Avocado Tacos, Italian Street Corn Lollipops and Roasted Veggie Sopes. You can't go wrong with their Buffalo Cauliflower or New York-style pizza and the Mule in a Pear Tree Cocktail is a fruity refreshment perfect after a long day in the office.

Provenance, Newport Beach Isn't it true that so many hidden gems are often found in areas you would never guess? Provenance restaurant in Newport is just that, a hidden gem in the Orange County foodie scene. Nestled between a grocery store and a few small businesses in the Eastbluff area Provenance, has long been a neighborhood haven for a guaranteed top-notch dining experience. Chef/owner Cathy Pavlos brought her passion for architecture and culinary excellence when she opened Provenance and it truly shows with influences of both Napa and Sonoma Valley spread throughout the restaurant as well as in every savory bite! Chef Pavlos has mastered the art of bringing out the best of her ingredients, starting with the organic garden vegetables a mere few steps away from your table. There is nothing better than a chef that knows how to make vegetables as desirable as the pasta, meats and seafood on the menu and that is what you will find here. Don't get it wrong, every dish on the menu is delicious, chef Pavlos uses the finest, local, sustainable ingredients from all over Southern California ranging from the cuts of meat, wild caught seafood right off the docks, fresh baked breads, cheeses and more to bring the best right to your plate. The menu at Provenance takes you for a journey around the globe ranging from Pan Asian and Latin Flavors to French and Italian classics all made with the love that Pavlos has for creating flavorful dishes. There is something very special about sitting in Pavlo's 1300 square foot secret garden, the vegetables just taste that much better knowing that they were organically raised steps away from your table. Menu items such as the butternut, acorn squash and crispy artichoke platter or the heirloom tomato and golden beet platter are absolute must haves each bursting with natural flavors of goodness. Share small plates with friends or loved ones such as Nonna's meatballs, herb smoked artichoke or the burrata ravioli before choosing the main event. Main courses are categorized as Pasta dishes, Seafood and Market Meats and it’s safe to say any choice you make your taste buds are going to be very happy. Some crowd favorites include the Short Rib Stroganoff, the Penne di Nonna and the Kobe Beef Bolognese all which pair perfectly with the extensive wine list showcasing the best of France, Italy and of course right here in California.


DINING Descanso, Costa Mesa One of the newest additions to the Orange County dining scene Descanso has been making quite the mark in its short time since inception. Concept creator Rob Arellano came up with this never seen before idea of bringing the authenticity of a street side taco cart into a sit-down restaurant and the reviews have been stellar. Think Benihana meets authentic Mexican food and you have Descanso; from the moment you walk in the door the vibe is intoxicating. Live music, patrons enjoying hand crafted cocktails at the bar and plancha grills filled with hungry guests waiting to try the tantalizing menu before them. Chef Sergio Ortega born in Morelia, Michoacan brings his passion of traditional Mexican cuisine which he learned from his grandmother and aunts as a young boy. Earning his diploma in international cuisine he later moved to Southern California where he eventually pursued his degree at the Art Institute of Orange County. Chef Ortega has gained quite the resume over his career running kitchens in Orange County, Los Angeles, Austin and even as far as Australia. The menu at Descanso showcases his love for the freshest of ingredients from the mouthwatering tacos to the Mezcal glazed shrimp, you simply cannot go wrong with any choice you make.

Oliver's Osteria, Laguna Beach Laguna Beach has been long known for its colorful art scene and of course its fabulous array of world class restaurants. As you drive down Pacific Coast Highway you will be surrounded by an endless number of fine eateries that dot the streets every direction you turn. Just off the 133-highway next to the famous Sawdust festival you will find one of the most authentic Italian restaurants in all of Orange County, Oliver's Osteria. From the moment you walk in the door you feel as if you have been literally transported to Italy with the smells, sounds and atmosphere making you feel right at home. The staff is warm and welcoming, and within minutes you feel as if you are part of the family. Shortly after you are seated you can’t help but notice what others are eating around you. The smell of fresh garlic, baked bread and all the incredible pasta dishes fully awaken your taste buds so much that you may just want to order everything on the menu. Owner and Executive chef Erik De Marchi has brought his passion for traditional Italian classics using the finest of ingredients and delivering mouthwatering menu items day in and day out. Born and raised in Imola, Italy Chef De Marchi followed his passion in the culinary arts graduating with a degree from the IAL Culinary Academy of EmiliaRomagna. Inspired from this aforementioned region of Italy Erik left his home country in 2002 where he landed in Los Angeles to work with renowned chef, Gino Angelini at where else but Angelini Osteria. After years of experience between LA's award-winning restaurants Angelini Osteria and Via Veneto, Chef Erik decided it was time to create a restaurant of his own. October 2018 two major life events took place in the same day, Oliver's Osteria was opened on the exact day of his son's birth whose name was of course, well, Oliver. Chef Erik's menu is filled with flavor bursting dishes, from the salads to the pastas and risottos to the fresh seafood and meats to the classic Tiramisu you are in for a meal of a lifetime!


Farmhouse at Roger’s Gardens, Newport Beach Farmhouse at the infamous Roger's Gardens provides a peaceful reprise to escape from everyday life. An infamous landmark over the past several decades Roger's Gardens couldn't be a better place for a sustainable eco-friendly restaurant to claim their stake in the OC culinary scene. As you pull up to the incredible seven acre nursery that has been a mainstay in Newport Beach for as long as we can remember you are taken back by the sheer magnanimity of the property, exotic plants and flowers as far as the eye can see paired with decorative garden furnishings that seem to go on forever. This incredibly well-groomed botanical garden has now added something long overdue, a notable restaurant. Chef and owner Rich Mead’s “farm to fork” mentality started twenty years ago when he used to make weekly trips to the Santa Monica Farmer's Market to buy fresh ingredients. As you saunter through the grape arbor entrance you are quickly transported into a level of serenity that can only be found in a magical nursery setting. Chef Mead's menu may not be what you expect and maybe that is what makes it worth talking about. Upon being seated one could fully expect a menu that was primarily vegetarian, but that is not the case here. The culinary offerings are simply broken down from small to share, big and veggies, making it easy to choose from. Although the menu may be broken down to simple categories his food is far from simple at all. Start with the Small menu with items like the Shrimp and Vegetable Ribbons highlighting ingredients such as butternut squash, satsumaimo sweet potatoes and pomegranate seeds and then move to the Share to try the Prince Edward Island Mussels sautéed in garlic, white wine and butter. Finish off Big with the Herb Grilled Swordfish with Mashed Potatoes and throw in a side of the Roasted Cauliflower Steak to make for the perfect side dish or vegetarian entree. It is safe to say that Chef Mead's 35 years of culinary expertise has given him the long earned clout to understand what it takes to give his patrons exactly what they have been yearning for, a foodie experience that encompasses everything idyllic in a dining affair. Good food, awardwinning wine, great service, all taking place in a setting to an environment that will transport you to a peaceful setting where all your worries disappear.

CdM Restaurant, Corona Del Mar Aptly named after the area that is Corona Del Mar, CdM has quickly become the talk of the town and for very good reason. Business partners Joseph McGinty Nichol and Jordan Otterbein, the previous duo that transformed the infamous A Restaurant, have now settled into their latest creation at CdM. A new theme has been brought about to their current culinary project, this local hot spot is less about steaks and more about nouveaux cuisine and shared plates. Executive Chef Jonathan Blackford has brought new life to this OC location. With a complete facelift to the interior as well as an entirely different menu approach, the newest concept to enter Corona Del Mar is already making headlines. The building is separated into three different rooms, a 1200 square foot dining room is the main attraction designed with blue velvet banquettes allowing for a quiet romantic atmosphere along with a 600 square foot speakeasy downstairs and a 500 square foot room upstairs rightly named “The Apartment” which is used for special events. Chef Blackford has dubbed the menu as “Creative American” and we would have to strongly agree with the description. The menu while small is filled with passion and includes category titles broken down as Charcuterie, Some Veggies, Smaller, Flour and Water and Larger for the main event. Each category is bursting with creativity and incredible bold flavors and before you may find yourself wanting to try at least one item from each section. The Artisan Cheese Board, Heirloom Tomatoes + Beets and Butternut Squash Pierogis are items to put on the can’t leave without trying list. Similar to A Restaurant, CdM is quickly becoming the place to see and be seen thanks to their cocktail program headed by Bar Manager Ravin Buzzell. A mixology expert in his own right, Ravin spends his off time creating hand crafted cocktails to consistently bring something new and fresh to his already wide array of enticing beverage menu. The Corona Del MARgarita is sure to spice up your life with its unique ingredients that include Ancho Reyes Chili Liqueur while the La Ultima Fumar is smoked right before your eyes tableside with llegal Mezcal Blanco, green chartreuse, fresh lime and Luxardo cherry liqueur.

If you are an avid coffee or tea drinker and looking for something new, I have just the place for you. Morning Lavender boutique and café in Old Town Tustin is a place guaranteed to make you smile. What started out as an online boutique in San Francisco for the everyday woman, has now become one of the fastest growing businesses in California. In 2017, owner Kim Le and her husband decided to expand the brand and open a café, in addition to a new retail space in Old Town Tustin. Le wanted to combine her love for clothes with her love for coffee. The boutique in front offers feminine, fresh and affordable style clothing while the café in back is perfect for photo ops with its flower wall, private outdoor patio, crystal chandeliers and darling décor. Located in Old Town Tustin where every business is a mom and pop style shop, you truly feel like you have gone back in time. Morning Lavender Café specializes in lavender lattes, lavender macaroons and lavender teas to complement the store name. They

serve an assortment of delicious coffees, teas and specialty drinks. If you really need an extra jolt, try the “Dirty Chai.” It’s a traditional Chai Latte with two shots of espresso added. They also offer several yummy treats that include scones, muffins, cookies and macaroons. If you are ready for something fun and unique, stop by on a Saturday or Sunday for their afternoon tea. This is a modern take on traditional British afternoon tea service by reservation only and includes a two-hour time slot. Delicious sandwiches, scones and desserts compliment your tea and if you fancy something a bit stronger, you can opt for a glass of champagne or a mimosa. You definitely will not go hungry with this afternoon tea as the offerings are plentiful and everything arrives stylishly served on beautiful and feminine tea sets. This is a great experience for an adult or kid birthday party, bridal or baby shower or just simply a fun date! So, the next time you want more than just a simple cup of Joe, head over to Morning Lavender where you can sip and shop the day away! 25

2020 is the Year Travel Brands Own Their Role in Climate Change Sustainability-seeking travelers are demanding greater transparency from their tour providers. 2020 will be the year brands step up to the plate. Bannikin Travel & Tourism, experts in responsible and experiential travel, are forecasting 2020 as the year tour operators take more responsibility for their impact on the planet. Thanks to the likes of Greta Thunberg's activism, Oxford Dictionary's word of the year and the more than 11,000 scientists who declared a climate emergency with their November 2019 report, the question of how our planet is impacted by tourism is now a matter of mainstream conversation. Sustainable tourism, once considered a niche sector, is now an essential consideration for all as savvy travelers search for ways to lessen their impact on the planet. TourRadar, the largest online marketplace for multi-day tours, reports that 60% of travelers would choose a more environmentally friendly travel option, while 71% of travelers are more likely to choose a tour that does good to the local region and its people even if it costs more. A 2019 OnePoll study commissioned by leading adventure tour operator Exodus Travels found that more than 79% of American travelers want to become more ethically-conscious in their future adventures. These consumer demands have been heard ‘round the industry. Tour operators aren’t just turning to carbon offsetting and single-use plastic bans to make a net positive impact: recent reports conclude that community and cultural conservation efforts that identify tourism as a value-add for a destination’s economy can lead to more responsible land stewardship and can even jump-start local governments to make policy changes that protect surrounding land and communities. “Over the last few years, travelers have been getting serious about lowering their environmental impact, focusing on local experiences and supporting regional economies,” said Jillian Dickens, CEO of Bannikin. “As we enter this new decade, we’re seeing companies reacting to this shift in consumer behavior in more focused and innovative ways; embracing challenges like sourcing local food, leading the rewilding movement, even embarking on the world’s first zero-waste challenge. TRAIN TRAVEL: LESS EMISSION, MORE IMMERSION As reported by the BBC, domestic rail travel produces less than half the carbon emissions per passenger than driving a car. This is no surprise to Kyoto-based tour experts Oku Japan. The country leader in active and experiential travel prioritises public transport (such as the high speed rail) over private cars, tour buses or sprinter vans, even on their small group tours. They note this lessens environmental impact and provides a more immersive, local experience for the traveler. Nearly all of Oku’s self-guided tours include train rides or local buses from Osaka, Kyoto or Tokyo to their rural destination, which can be anywhere in the country.

OFFSETTING TRAVELERS’ ENTIRE LIVES Natural Habitat Adventures became the world’s first 100% carbon-neutral tour operator in 2007, and over the past 12 years has offset more than 17,000 tons of carbon dioxide. In 2019, the company decided this wasn’t enough. The nature travel provider and World Wildlife Fund conservation travel partner spearheaded the world’s first Zero Waste Adventure last July, which ultimately diverted 50.9 lbs of waste—most of it food—from the landfill. Also in 2019, Nat Hab began offsetting all its guests’ international air travel to and from its destinations. This year, it’s planning yet another industry-leading feat: offsetting a year’s worth of personal carbon emissions for anyone who joins one of the 2020 trips in the company’s new 35th anniversary series, Climate Change & the Wild World. In partnership with sustainability consultant South Pole, the ecotourism leader will offset the entire carbon output from select travelers’ household energy, transit and air travel for one year. The carbon credits will fund three community and conservation projects: the construction of wind farms in India, the distribution of fuel-efficient, electricity-generating cookstoves to households in Rwanda, and the development of a rainforest biodiversity corridor in Zimbabwe.

From fresh, local seafood to savory Italian dishes, Rhode Island's food scene is one of its greatest treasures. When most people think of The Ocean State, they think of the famous Newport mansions, the seemingly endless shoreline, or maybe even one silly TV show (Family Guy, anyone?) What most don't know is that Little Rhody offers some of the best, and most unique, fare in the country. It may be the smallest state in the USA, but its cuisine is monumental. If you have yet to visit RI, now's the time. And don't forget to bring your appetite. Stuffies Clams are pretty much a staple in every Rhode Islander's diet. And the stuffie is the state's signature clam dish. Stuffies, also known as stuffed quahogs, are minced clams mixed with bread crumbs, sausage, peppers, and a whole bunch of other delicious ingredients. Each restaurant makes their own special version of the stuffie but Aunt Carrie's in Narragansett seems to have really perfected it. Del's Lemonade Who knew a small lemonade stand could become one of the state's longest running, and most popular, businesses. For the past 70 years, Del's has been serving icy cold lemonade summer after summer. This frozen treat is a DeLucia family recipe all the way from Naples. It's simple, refreshing, and delicious. New York System Known as "hot wieners", "weenies", or more commonly "New York System", these hot dogs are one of the state's most iconic foods. The name can be misleading, however, as the recipe is not from New York, but Rhode Island. Back in the early 1900's, when hot dogs first hit the food scene, they were associated with Coney Island. The name "New York System" was used as a marketing term to show authenticity. Originating in Providence, New York System has been in business for over 100 years. So what is a New York System? It's a hot dog made from pork and veal, and topped with ground beef, yellow mustard, onions, and celery salt. Ordering them "all the way", which

Italian There is so much good Italian food in Rhode Island that it is nearly impossible to narrow it down to one specific dish. I will tell you, though, the best place to nosh Italian-style is Providence's Federal Hill neighborhood. From Cassarino's Saltimbocca and Siena's Tagliatelle All Bolognese to Andino's Lobster Ravioli and Old Canteen's Osso Bucco, the delectable dishes are endless. After dinner, don't forget to stop by Pastiche for a sweet dessert experience like no other. Clams Casino Another Rhode Island-born clam dish is clams casino. Found everywhere from Narragansett's seaside spots and Providence's fine dining restaurants to my personal favorite, Twin Oaks Restaurant, clams casino are the perfect combination of clams, stuffing, and bacon. And they're incredible! Lobster Roll Lobster rolls have become the New England summertime sandwich of choice but Rhode Islander's like to enjoy this seafood favorite year-round. Served on a toasted roll, either warm and drizzled with butter or cold and tossed in mayo, this mouth-watering sandwich is ridiculously good. A few fan favorites include Champlin's in Narragansett, Anthony's Seafood in Middletown, and Matunuck Oyster Bar in South Kingstown. Donuts For the past 50 years, Allie's has been serving up the tastiest donuts around. Their classic old-fashioned crawlers, jelly sticks, and legendary donut cakes helped this unassuming bakery to be named one of the "Best Donut Shops in America." Nearly every day there is a line out the door, but trust me, these donuts are worth the wait. Coffee Milk Ice cold coffee flavored milk sounds quite simple but for a Rhode Islander this beverage means more than a hefty dose of sweet Vitamin D. In fact, the state named coffee milk its official beverage in 1993 (narrowly edging out Del's Lemonade). Today, many

local restaurants have coffee milk on their menus, and the Rhode Island-based company, Autocrat, even began making coffee syrup for purchase. Don't confuse coffee milk with a coffee milkshake, though. Coffee milk is strictly coffee syrup and milk. A coffee milkshake, also known as a "cabinet" to Rhode Island folks, is made from coffee syrup, milk, and ice cream. Both are equally delightful. Pizza Strips Known as "pizza strips", "party pizza", "red strips", or "bakery pizza', this unique Rhode Island creation will certainly send your taste buds into overdrive. Made from a rectangular tray of baked dough and topped with a thick, almost paste-like, red sauce, party pizza is simple, yet, highly addictive. DePetrillo's is hands-down the best place to find party pizza in the state, and they may even begin shipping out of state soon. A major plus for natives, and fans, living elsewhere. There is no cheese on the pizza but that's okay. The incredible flavor of the red sauce and the chewiness of the dough are so good you won't even miss the cheese. Zeppole When March 19th rolls around, it can only mean one thing in Rhode Island - it's time to celebrate St. Joseph's Day with zeppoles. These cream-filled pastries are lightly fried, rolled in sugar, and topped with whipped cream and a cherry. They taste like little bites of heaven. The one downside is most bakeries only make them in the month of March. So if you happen to visit Rhode Island during the springtime, be sure to stop by LaSalle Bakery for some of the tastiest zeppoles in the state. Clam Cakes The Ocean State has had some impressive inventions over the years - diners, Mr Potato Head, sideburns - but one invention really takes the cake. The clam cake that is. Legend has it that these deep fried, doughy balls of clam perfection originated in Narragansett in the 1920's. Today clam cakes are one of the state's most popular foods. Paired with a cup of red, white, or RI's own signature clear chowder, clam cakes are all the craze during the summer months. And there's no better place to indulge than at Iggy's in Oakland Beach or Aunt Carrie's in Narragansett. 53


Eating Your Way by the Less than an hour flight (or 6-hour drive) from Los Angeles, you can catch a change of scenery and flee the city to NorCal for an extended getaway with a completely different Cali vibe. But don't be basic, mix up your geographic and cultural flavor by visiting three distinct locations for an unforgettable trip – Berkeley, Chinatown, and the Presidio. BERKELEY Fourteen percent of the periodic table may have been discovered in Berkeley (16 elements) but ‘California Cuisine’ put the area on the map thanks to the Chez Panisse Restaurant anchoring a neighborhood with high quality artisanal fresh local products in the 1970s. With the longstanding academia of University of California Berkeley having been present for more than 40 years before the city of Berkeley was established (1909), UC Berkeley is now considered one of the world’s top public universities. Thanks to this development a foodie town has grown up around it. Meandering the streets dubbed the “Gourmet Ghetto” in the 1970s, the term currently is causing controversy where local petitioners are fighting to change the name due to its insensitivity, so it’s now known as “North Berkeley.” But this neighborhood bloomed when Alice Waters opened Chez Panisse in 1971 across the street from Cheese Board Bakery and around the corner from the original Peet’s Coffee – where today visitors can learn about Peet’s history and check out the old coffee packaging and equipment from the 60s and 70s. Every few blocks, signs that promote inclusivity are visible on storefronts – one with a smiling Muslim woman with the words “Everyone is welcome Here” to bathroom signs celebrating all gender types. This subtle evidence is a gentle reminder that Berkeley is a progressive and welcoming small-town community with big-city ideas. Down by the Bay Lay your head at the newly renovated Doubletree by Hilton Berkeley Marina where soft sheets

and balcony views of the marina make for a peaceful slumber. A front walkway winds you around the sailboats with stunning views of the Golden Gate Bridge. Stay for a sunset dinner at the hotel’s new Berkeley Boathouse where waterfront dining features scrumptious dishes like Lobster Crab Shrimp Roll, Cast Iron Seared Scallops, Brussel Sprouts with Kung Pao Sauce, Housemade Ricotta Cavatelli with Mushrooms and Filet with Goat Cheese Mousse and Truffle Butter. Save room for their petite cone gelato flight from local Almare while you sit under a heat lamp outside enjoying a glass of Pinot Noir from nearby Sonoma County or their infamous Tamarind+Smoke cocktail. Soon the pet-friendly deck will come with a dog menu too. The Doubletree’s marina location is an easy Uber into town, although a complimentary hotel shuttle is available for your explorations anywhere in a 3-mile radius. Come for the Culture. Stay for the Food. Meander the restaurants, shops, bakeries, flower stands, and fine food purveyors around Shattuck Avenue and Vine Street. Grab a slice of pizza (only one option offered each day plus a glutenfree and vegan option upon request) over live music at Cheese Board’s Pizzeria where the line moves quick. Meat lovers can rejoice at Saul’s Delicatessen, a Jewish deli that has been around since the 1950s. Order a pastrami sandwich on rye with housemade celery soda and pickles. Power walk North Berkeley and pop in French take-out spot Gregoire for fried potato balls, then slide on over to sample vino at Vintage Berkeley Wine Shop, where most bottles are $20 or less

or less at this former Vine Street Pumping Plant which was established back in 1930. Feeling more food curious? Don’t miss the Epicurious Garden Food Hall that popped up three years after San Francisco’s popular Ferry Building. Gourmet takeaway options include sushi bites from Kirala Restaurant and Lush Gelato. Inside, The Soop serves comforting soup varieties like Thai Red Lentil, Chicken Noodle, Tom Kha, and Clam Chowder to name a few. If you have only a day or two to explore, book a walking food tour with Edible Excursions to learn the stories and secret nuances of the “Gourmet Ghetto”. For a memorable night, consider a dinner at famed Chez Panisse on a Monday when their 3-course set menu is priced lower at $75. At the Berkeley Art Museum and Pacific Film Archive spend a few hours admiring thought-provoking exhibits like Surrealism across many cultures and time periods and black and white photography from 1960s America. O

n Sunday mornings in Mérida, the buoyant voices of the San Ignacio Cathedral’s choir ring out an antique melody. Boosted by 16th century acoustics, the haunting sound pierces the murmur of the crowd brunching leisurely in the courtyard below, ricochets down colorful, narrow, side streets where vendors ply their wares, and can be heard across Plaza Grande above the anticipative buzz of crowds waiting between performances of local bands. Paseo Montejo is shut down to car traffic on those mornings and bicyclists take over, gliding down the broad thoroughfare of stately colonial mansions. The heart of Mexico’s Yucatan peninsula gracefully balances its history of strong Maya tradition, colonial expansion, and modern sensibility while warmly welcoming all who visit. Mérida is a city meant for strolling, and it is wise to follow the lead of locals who rise early each morning to enjoy the days’s offerings before the heat exerts its heavy influence. It is nearly impossible to get lost while exploring as the streets are laid out in an orderly evens and odds grid and being one of the safest cities in Mexico means that even if one does become disoriented, someone will point the way home with a smile. It is well worth going on foot for around each corner may be a charming cafe, colorfully photogenic house, art gallery, or the cool shade of Ibérica Cimi Cemus Park, a music conservatory set in peaceful grounds. Paseo Montejo is lined with pastel colored mansions built during the turn of the 20th century when plantations pumped wealth into the community. Now, many are abandoned and in disrepair, former beauty queens neglected in their old age. Others have been restored and repurposed as museums, schools, or hotels. One such hotel is Rosas Y Xocolate, which just celebrated its 10th anniversary and has been at the forefront of the city’s recent artistic and economic resurgence. Owner Carol Kolozs Fischer’s vision transformed it into a stunning wonder that honors its history while establishing the contemporary spirit of Mérida’s future. Made up of two neighboring mansions once long abandoned, romance is in the very walls of this cheerfully pink hotel. A strong relationship between inside and outside means that walking through the property, past water gardens, sculptures, and airy walkways, you’re never quite sure what the difference is. Oversized rope art installations are a modern nod to the henequen (sisal) fiber that created the wealth of the bygone era and bright paintings adorn the

walls. In the rooms, wood doors open to a terrarium and tall windows reveal a private outdoor soaking tub. Their restaurant exudes elegance and whimsy, and has proven to be a popular location among residents for picture perfect proposals. The pink, vine covered walls of the outdoor terrace are bordered by lily filled water gardens and plenty of plants which keep the area cool throughout the day. There is nothing quite like breakfasting here as geckos call and the fountain burbles. A spiral staircase leads up to Moon Lounge, a weekend only rooftop bar with live music.


The siesta reigns supreme mid-day in Mérida and while most shops remain open, the city seems to slumber under a blanket of heat. If out and about, this is the perfect time to visit one of the many beautiful museums dedicated to the region’s rich cultural history. For a luxurious siesta, take advantage of Rosa & Xocolate’s excellent spa where soothing hands and organic 100% cacao is used in ancient methods of ultimate relaxation. After a treatment, a collection of teas are offered along with traditional rich dark Maya chocolate poured over almonds. The entire spa can even be rented out for private dining and exclusive use of the rooftop jacuzzi, making for a truly romantic experience. As Mérida rests, there is plenty to do further afield. Just an hour and a half east, rising to heights above the jungle tree tops, the Maya temple complex of Chichen Itza will impress even jaded temple hoppers. Late afternoon is the best time to visit to see the setting sun bathe the millenia old limestone in golden light. To the north and west, the popular white sand beaches of Celestun and Progreso are home to large flocks of flamingos. In the south is the quieter but still imposing Maya ruin, Uxmal, and for more recent history is the grand Hacienda San Pedro Ochil, a well preserved example of the henequén plantations that made Mérida rich, now a cultural center and restaurant. A most pleasant lunch can be had here among the agave and palm trees before wandering to the cenote turned amphitheater where the likes of Phillip Glass have performed. It wouldn’t be a proper visit to the Yucatan without a stop at a cenote, of which there are over 6,000 in the whole peninsula. Essentially a sinkhole, they are small fresh water pools that go deep underground. Many have stalactites and bats, but the best are perfectly clear swimming holes with sun rays reflecting on turquoise water. One of the nearby favorites is actually a trio, called the Santa Barbaras. Or if visiting the delightful town of Valladolid, there are dozens of cenotes with vines that cascade from openings in the limestone creating a surreally fairytale feeling. Once sunset arrives, the city stirs back to life with renewed energy. The many parks are full of families and trendy couples taking in the air, and it cools down enough to hop from shop to shop in search of treasures. The best shopping can be found along and between Calles 60 and 64, just north of Plaza Grande. Chic boutiques like Yucatekisimo and Kukul offer designer clothing and accessories. If you are wondering how the local men are able to appear at ease in the heat of the day, the secret is their guayabera, finely woven dress shirts made that are well worth the investment. Women will appreciate the woven purses and soft linen and white cotton dresses. Though they are quick to say it is not a gift shop, Rosas Y Xocolate has a curated collection of luxury goods made by Yucatecan artisans. Higher end guayabera can be found here, along with gourmet chocolate and fine jewelry.

Art collectors must check out Artesanías Itzel, an old colonial building with courtyard now filled with hammocks, textiles, painted sculptures, and pottery. However, ask about the semi-public gallery on the second floor for truly special offerings including exquisite jewelry and certified Maya replicas. Manuel, an expert on Maya culture, happily explained the symbolic meaning behind the use of jade, obsidian, amber and turquoise and relayed the myths depicted in each piece. Evening in Mérida feels completely different than the day. The air feels looser, more free, and the buildings of Paseo Montejo are lit up dramatically. The image comes even easier walking up to the lemon yellow Tuscan style mansion now home to K’u’uk, a restaurant changing the scene of the peninsula’s fine dining expectations. The gastronomic experiments by Chef Pedro Evia in his laboratory has propelled K’u’uk to the highest of Yucatecan culinary experiences by taking old world ingredients and adapting them to the modern world with playful inventiveness. He and his business partner, Eduardo Rukos, reach deep into the past to craft a menu of delightful surprises such as freeze drying jalapenos or distilling clay pans to create sparkling water. Regardless of the outcome, they are committed to elevating not just your tastebuds, but their community as well. When dining at K’u’uk, the six course dégustation menu is the way to go and can be paired with wine or local juices. Everything reflects the region’s rich history, including the cultural contributions made by Korean, Dutch, Lebanese, French, and Cuban immigrants as seen in the opening course featuring ingredients of kimchi, keppe, and goat cheese. Each dish arrives in unique fashion; the pibinal corn esquite is in a wooden sculpture of cupped hands, the chilled avocado soup is poured at the table over the catch of the day, the sorbet refresher is in a persimmon. Even the cocktails are served with a special touch that elevates the moment. The satisfying flavors are something on the edge of memory, like visiting a new place and feeling at home. As night deepens, join the crowd yet again on their beloved walk down Paseo Montejo. Though the hour is late, the wide promenade is full of unhurried denizens walking off their dinners. Classical piano music twinkles from Rosa Y Xocolate’s dining room while indie pop bounces from Casa Chica bar as imbibers chatter on the patio. Cubaro is the perfect spot for people watching and late night drinks while carriages glide by to circle the brightly lit Monumento à la Patria. As some lights go out, others turn on to begin again the cycle of balance and ease in this genteel Yucatecan city of Mérida.

o one could have anticipated the success of the 2019 Mixology Masters, an evening of friendly competition presented by Porsche Irvine on November 9th. The sophisticated event brought together Southern California's best bartenders, food and beverage connoisseurs, and elite community members for an exciting collaboration to benefit Barks of Love Animal Rescue. The VIP gathering entertained guests with stunning live performances by Aerial Butterflies, delectable bites from Alligator Pear Catering, Davio’s Irvine & Urban Plates, signature cocktails prepared by SoCal's finest mixologists, and an electrifying car unveiling by Porsche that set the tone for an evening of luxury. Eager visitors quickly filled the intimate space upon entry as they were greeted with a personal Mixology Masters glass and a voting ballot that signified the challenge was about to begin. Guests enjoyed a plethora of refreshing libations from Knob Creek` Bourbon, Freeland Gin, Dinastia Real Tequila, Jim Beam Rye, Tito’s Handmade Vodka, Drake’s Organic Rum and Wilson Creek Winery. Essentia water kept guests’ thirsts quenched, and Miss Mini Donuts satisfied guests with indulging treats that was a sweet end to the ultimate tasting experience. With the energy at a high, the showdown was ready to get started as each mixologist began prepping. In total, ten mixologists competed for each guest's vote. Guests watched in anticipation as each mixology master shook, stirred, and muddled their way in hopes of winning first place. As the evening continued and the final votes were about to be submitted, the competition was fierce as each participant knew their time to impress was drawing to a close. Guests hurried to cast their pick and waited for the results while enjoying music from DJ D-Dub and live entertainment. Interactive installations and cozy lounge areas kept visitors socializing as they discussed their favorite drinks of the night! Once the tallies were in, it was officially time to announce the winner for Best Mixologist. The room cheered as local Orange County Mixologist, Brandon Conrad from Mixology Flaired took home the title. His creation “The Fall Harvest” was inspired by the ideal pairing to a winter's meal. Congratulations were also in order for Casey Lyons of Social Kitchen + Craft Bar as his unique creation and flavors won him the award for "Most Creative Cocktail." The evening extravaganza was a beautiful night of glamour, excitement, and luxury enjoyed by all, making the first annual Mixology Masters an event to remember. 75


MEET THE WINNER: Brandon Conrad As flair bartender for Mixology Flaired, Brandon Conrad juggles a lot more than just weighted tins and bottles when he's getting ready for an event. Whether it's overseeing the newest specialty menu for a new client or perfecting his flair tricks to add some extra magic to an evening, his biggest priority is always making sure his guests are having a great time! His meticulous attention to detail and love for the art of mixology have quickly made this Orange County local a favorite with SoCal elites. His passion for creating innovative libations made fresh with the best of SoCal's locally sourced ingredients sets his tasting menu a scale above the rest. He began his mixology training over 12 years ago under the leadership of mentor and personal friend Shea Lewis (Curator of Mixology Flaired), who recognized his natural skill behind the bar and charismatic personality. Conrad has since represented the premiere event company at a variety of prestigious celebrity parties and events, including Derby Day LA and Rihanna's own Fenty Release Party. We sat down with the 2019 Mixology Master's winner to discuss where his inspiration for mixology began, what continually inspires him to create, what his career goals are for the future, and where he enjoys visiting to unwind after a busy work week. LATM: Where did your love for mixology began? 76

BC: When I realized I wasn't happy with the mediocracy of the everyday restaurant chain drink. There was no authenticity or innovative creations. I realized I could learn to be good at this if I continually worked at it. At the time, my friend Shea was a couple of years into his business, and he always had me trying new cocktails he was so proud to perfect, it inspired me to see what I could create also. LATM: What have been your most memorable experiences since joining the team of Mixology Flaired? BC: The diversity of different people mixologists get to meet and the range of exclusive charity events we get to work is inspiring in itself. We are always put in the mix of a new crowd with a different mission, and it allows you to meet a lot of people in various industries. In the life of a mixologist, no day is the same, and that's what makes my job continuously eventful. LATM: What drives your inspiration for your signature seasonal libations, and when did you realize you had a gift for the craft? BC: I've always lived in Southern California, where I didn't have the luxury of physically experiencing all four seasons. My easiest way of celebrating fall and winter was researching the flavors and smells of the colder weather. It became a passion, especially during the

holidays. I loved creating Christmas drinks for my family, and it has always been my signature offering. LATM: Which travel destinations are you dying to travel to and try a cocktail? BC: I love fruity concoctions. I would love to try some tropical rum and fresh local juices in the Caribbean. I have never been, but I am dying to visit. LATM: Which SoCal restaurants do you visit for inspiration? BC: There are a lot of unique speakeasies from LA to San Diego that have always sparked my creativity. Now living in Orange County, I am exposed to some of the best oceanfront restaurants in SoCal, so any spot that has fresh seafood paired with craft libations is on my radar. LATM: What are your biggest career goals in 2020? BC: I would love to be able to create more of a home base in my career. I have been fortunate enough to be given the opportunity to work for many A-Lister clients, but I would love to set foundational roots here in the heart of OC. I'm excited to see what the year has ahead and to get started.


Casey hails from the Phoenix, AZ food and beverage world; but was most recently a part of the gold medal winning cocktail program of Costa Mesa’s SOCIAL. Casey’s love and passion is all beverage, all the time. From craft cocktails, brews and even that notorious word mixology, Casey has forged his way into the beverage world as one of the top bartenders in Southern California. Casey’s first food and beverage job was Nello’s Family Pizzeria, located in Phoenix, Arizona. Upon rolling his first pie, Casey knew he was in a career path that he loved. His passion began on the culinary side and quickly grew into the hospitality focused front of the house as he served guests their favorites, along with a few of his own recipes. From Nello’s Casey wandered throughout the Phoenix food and beverage scene, ultimately landing at Culinary Dropout – The Yard, located in downtown Phoenix. His passion for the industry, partnered with his love for the beverage world implanted Casey in the perfect scenario. Quickly being promoted from server to bartender, Casey never looked back. He helped lead Culinary Dropout – The Yard into Fox Restaurant Concept’s most successful opening at the

As director of bar operations and operating partner for Rock & Brews Tustin, Anthony Games specializes in the “brews” of Rock & Brews (as well as the wine and spirits) and is responsible for the bar training and bar operations for all Rock & Brews locations. He is a Certified Cicerone for his knowledge and tasting skills as a professional dedicated to beer. A homebrewer for many years, and armed with a passion for the craft beer movement, Anthony joined the brand in 2010 and was a part of the opening team for the flagship location in El Segundo, CA in 2012. He quickly moved up the ranks from server, to bar manager, to director of bar operations to now Operating Partner of Rock & Brews Tustin, continually honing his talents as a mixologist and increasing his knowledge to become the ultimate “beer” expert. He has been a part of the opening team for nearly every Rock & Brews location. Eager to share his passion for beer, Anthony developed a Rock & Brews “Beer School” to train each Rock & Brews’ team member about beer. The training ensures that each restaurant guest has access to an educated staff that is ready, willing and able to talk about craft and international brews of all kinds.

Born and raised in Mexico City from a family with deep roots in hospitality, Carlos was immersed in the world of fine dining from a young age. He rapidly worked his way up from dishwasher to server and bartender before enrolling in the Culinary Institute of Mexico. However, he soon found that he missed the pace and energy of service. Just shy of 18, Carlos packed his bags and set his sights on California, where he landed a front of house role at the San Reyes Hotel in Dana Point (now the St. Regis Monarch Beach). His passion for bartending led him to mixology school in LA, where the city’s innovative cocktail culture and dynamic restaurant scene provided a rich depth of experience both in and outside the classroom. Carlos opened notable restaurants like Red Medicine and consulted on bar programs for Partida, Xicaru and Whistle Pig. In 2014, four years after moving to LA, he headed back down the coast. He joined the team at The Ranch at Laguna Beach before its opening, helping to reshape and rebrand the property’s bar program with a focus on craft methods, fine spirits and farm-driven ingredients. Carlos remains a fixture at The Ranch at Laguna Beach, where he is beloved by guests and locals alike for his warm hospitality and creative cocktails, which showcase unique influences from his Mexican culture and his experience developing some of Southern California’s best mixology programs.

The kitchen table is where problems are solved. This is something that Anthony Laborin, head of Cocktail R&D at Farmhouse learned at an early age as he helped his mother and aunts in the kitchen. Since those early days, Anthony has loved the social aspect of the culinary experience. Inherently friendly and genuinely interested in people, he values the interaction with guests that tending bar gives him. Special moments come from listening to guests, learning what kind of drinks and flavor profiles they enjoy and then using that information to introduce them to a specially made, handcrafted cocktail that they never would have thought to order. “When I can convince a guest to try something new and they like it, it brightens my day,” shares Laborin. Originally from Spokane, Washington, Anthony moved to Orange County to attend and play football for Chapman University. After earning a degree in Organizational Leadership and tending bar at the Ritz Restaurant in Newport Beach and Arc in Costa Mesa, Laborin was brought on to join the Farmhouse team when doors opened in September of 2016. An interest turned obsession, creating innovative, well-balanced cocktails is something Anthony is always striving to achieve. To keep the Farmhouse cocktail menu filled with the most inventive craft cocktails around, Anthony stays inspired by staying at the forefront of the latest industry techniques and developing new ways to utilize the fresh, local ingredients gathered from the Santa Monica Farmer’s Market on weekly visits with Farmhouse owner and executive chef Rich Mead.

Ravin Buzzell is no stranger to the vibrant environment of a lively bar. For several years, he’s presented his effortless art of cocktails with the bar as his stage. Born in Singapore but raised in Orlando, Florida, Buzzell is a man of many talents. He holds a second-degree black belt in Taekwondo, has a knack for stand-up comedy and carries extensive experience in the culinary and hospitality industry. As a young man, he knew that he wanted to pursue a career specifically in the bar and nightclub industry and relentlessly chased that dream. At age 19, Ravin worked as a doorman at a dueling piano bar called Howl at the Moon Orlando before moving to barback. When he turned 21, he took his chance to bartend and never looked back. Ravin originally planned to bartend his way through college while pursuing a degree in Interior Design so he could design bars and clubs; however, five years into bartending, Buzzell became enthralled

As a partner of the Marriott Brand, Ravin has opened numerous restaurants and bars for the hotel chain including the Tahoe Ritz Carlton and Kapalua. In 2006, Ravin trained every bartender at the MGM Grand in Las Vegas and re-tooled all of their bars for enhanced efficiency and aesthetics. The bartender genius is most notably known in Orange County for helping launch a new concept in the Irvine Marriott Hotel known as “YNK,” or “You Never Know.” The imaginative YNK concept paired a classic cocktail with travel and innovation, bringing a distinct international beverage experience. Ravin’s expertise in execution ultimately birthed a unique cocktail culture in a place where it once did not exist. He brings this same passion to CdM and has cultivated a cocktail culture that is authentic to the charming, vintage atmosphere provided by CdM’s speakeasy-style room, Under CdM. While many people rush to the bar to order a decent drink, Buzzell strives to first serve an extraordinary experience. At CdM, expertly crafted cocktails paired with Ravin’s ability to bring people together and love for meeting new individuals makes for a cocktail experience that is second to none. After bartending for several years, Ravin can attest that cocktails are the perfect icebreaker.


Hailing from Seattle, Tristan has been in the Cocktail industry for over a decade making cocktails for such illustrious bars such as Linda’s Tavern, Bait Shop, Tommy Gun, Bottleneck Lounge, Cocktail Academy, Church Key and for the last 4 years has been the Bar Manager and Beverage Director at Resident DTLA in the heart of the Los Angeles Arts District. His cocktail style is firmly rooted in the classics; predominantly a blend of PreProhibition, New Orleans Style and Tiki with a modern twist. A self professed history nerd he researches the origins of drinking styles and habits throughout history to bring old styles back to the forefront of the industry with renewed life. He is also the National Brand Ambassador for Compass Box Scotch Whiskymakers.

Ellan has worked in the hospitality industry for over five years and has been part of the mixology team at trendy Bar Manager & Beverage lifestyle Hotel Irvine’s Red Bar and Lounge Director since 2016. Red Bar and Lounge, a hip Resident DTLA upscale lounge and hub of the hotel, is the focal point of its lobby – serving handcrafted classic cocktails, beers, wine and eclectic American bites. Red Bar is known for its good day-meets-night vibe, its daily Happy Hour, alfresco patio and as a great place to meet friends for sports watching on the ninepanel, multi-screen TV, for live DJ and dancing on Fridays and Saturdays and other happening events. The popularity of Red Bar is thanks to the quality of its cocktails and congeniality of its bartenders.

Guajardo and his fellow cocktail specialists please patrons with a variety of creative cocktails like Loose Hound concocted with vodka, pamplemousse liqueur and seltzer and the Scorched Hipster made with white rum from the neighborhood, grilled pineapple, chili, lime and mint. Guajardo bartended at Sayaka Japanese Restaurant in Riverside and did a bartending stint at Sterling Affair Catering & Events in New York City.

Miguel has proudly worked in the service industry for close to 15 years. Originating from The Bronx, NY; he “cut his teeth” all over NYC by working in a wide variety of types of restaurants, nightclubs, and bars. He studied everything art and design from a young age and uses his creativity in almost every aspect of his life. As he developed his skills as a bartender, he was able to study and pursue his other passions: theatre and film. Upon landing in Los Angeles, it’s only natural that he had his sights on landing a job at the world-famous Hollywood Roosevelt Hotel. What better place to share his talents than THE place that started it all? He conceived the lion’s share of the cocktail menu at both The Tropicana Bar and the former Public Kitchen and Bar, which each have menus to match their unique settings, diverse clientele, and most importantly, ever-changing seasonal fare. From a Hickory Smoked Strawberry Old Fashioned to a Prickly Pear Pina Colada, his creations were always costumed designed to fit any setting. Lopez was a regional finalist in the Bombay Sapphire’s Most Imaginative Bartender 2017 Cocktail Competition and also represented a bespoke cocktail from The Hollywood Roosevelt on the national broadcast of “Good Morning America’s” 2018 cocktail segment for The Academy Awards. More recently, he has been workshopping various recipes for housemade cordials, syrups, liqueurs, and bitters, which can be found in 80

When I was planning a trip to Malta, never in a million years did I think I would end the trip having dinner while suspended 130 plus feet in the air. Yet there I was, someone afraid of heights and loving every minute. With stunning views of Malta, the 22-seated platform whisked guests up in the air just in time for a fireworks display, although we may have just gotten lucky and we are pretty sure fireworks are not guaranteed. As guests sat in wonder waiting to see just what was going to happen next, the staff cranked up the music and changed everyones mood from fearful to carefree. From dancing in your seat, buckled safely of course to reclining your seat all the way back if you dared, the level of excitement was at an all time high. I thought to myself, this really is a once in a lifetime experience and watched as accompanying couples celebrated anniversaries and birthdays all around me. What an amazing gift to book someone for a special occasion as dining in the sky is an event to remember. Having been in operation for over 10 years and currently active in over 50 countries worldwide you can rest assured that you won't be at risk when booking this exhilerating dining phenomenon. For the dining portion, the attraction teams up with top-notch local restaurants in order to showcase a variety of high level chefs throughout the year. One would think that the main focus here would be the thrill of dangling high above, but that would be incorrect. The food itself is a strong draw as each dish is meticulously presentated and each bite is

decadent and full of flavor. To start we savored a not so standard guacamole, a saladette tartare carving with mango spirals, green apple cubes, beetroot dressing and wakame seaweed. Next came the Strawberries and Mint Gazpacho with Dusted Parma Ham and Chive Rings. For the main course guests were able to choose from Sea Bass, Duck Leg Confit, Black Angus Short Beef Ribs or Aubergine Gratin and for dessert the Orange Almond Delight with Perugina Nero Fondene Extra 70% Cocoa Sand, Rasperry Gel and Mint Leaves was a sweet ending. Each dish out did the former and everyone looked around in amazement as the chef whipped every course up as if he was in a standard restaurant. As our servers topped up our wine glasses the music changed and the staff started to get a bit hyped. As a final toast to the evening the team presented a Nitro Surprise Digestive and it was certainly the icing on the cake. At the end we were safely returned to solid ground and invited to a gathering area for one last cocktail before departure. A place most congregated to cheersing to what an incredible evening it had been. Dinner in the Sky Malta beat any expectation I had before taking flight and I honestly don't think there is a better place to give it a whirl as Malta encompasses the heart of the Mediteranean and provides spectacular weather and surroundings to create a culinary journey you won't soon forget. LATM: Between your professional football career and time on The Bachelor you have travelled to many different places. Where is your favorite place you've been thus far and what made it so memorable? CU: I loved my trip to the Cayman Islands when I was in high school. My entire family joined and we went scuba diving, snorkeling and took walks on the beach. The views were amazing. LATM: We know you love dogs and even have an Instagram dedicated to sharing inspiring stories of four legged friends around the world. Where do you take @bachelorsniper for a doggy day out? CU: Sniper loves going for car rides so he probably enjoys the journey as much as the destination itself - he’s made the long drive from Denver to Los Angeles twice now. He travels super easy and has even flown with me twice. My favorite place to take him in the area is the Huntington Beach dog park. LATM: Between your nonprofit organization and life in the spotlight since ”The Bachelor” you seem to keep pretty busy. What activities help you unwind and where do you go to relax? CU: I’m actually a closeted nerd. I love Xbox and playing video games, even phone games keep me distracted and help me wind down. I’m a huge Clash of Clans guy on the iPhone. LATM: There are so many great date spots in LA, where do you take Cassie for a day trip or night on the town? CU: I love taking a day trip to Malibu or going for a hike to Runyon, I’m a sucker for a good sunset and the sound of waves crashing.

LATM: What are your goals for the new year? CU: I’m so excited for 2020, I think it will be the best year yet. CU: I really want to go to Bora Bora, Hawaii, Fiji, and Iceland. Colton's new book titled ”The First Time,” is set to debut on March 31st. The publisher is calling the book “unpredictable, humorous, and inspiring” as Underwood reflects on “growing up in Indiana, struggling with self-image and bullying, two time all American and three years in the NFL, and of course, his journey to find love.” In a statement issued recently by Gallery, Underwood said, “I’m excited to share my life in this book and hope it will give people more of an understanding of where I have come from and who I am today.”

Sand between your toes A great stretch of white sand stretches, like a string of Coco Chanel pearls, along the shoreline of Seven Mile Beach where the mesmerizing rhythm of the sea mingles effortlessly with the ageless songs of the sea breezes that flutter over the always restless seafoam. The sky, edged with layers of drifting clouds, glows in splintered shades of turquoise and blue, while 300 yards offshore the lights of a two-decked chartered yacht illuminate the dusk above the white-capped sea. Surely hor d’ouvres and bubbly are being served on deck. Though not quite seven miles long, this historic, soft, coral sand beach ranks among the Caribbean’s best. Beyond the sand, more than 150 superb classified diving and snorkeling sites extend into the deep. 100

Best explored with a Cayman guide most of whom were swimming straight out of the crib, these sites encompass vibrant reefs, aged shadowy wrecks, deep canyons, and sheer walls where the under-water world dramatically unfolds. With sails stretching to catch an erratic breeze, Red Sails Sports carry visitors to Stingray City, a shallow barrier reef that is home to some 25 Southern Atlantic Stingrays on the north side of the island, via their 65-foot catamaran. Divers and snorkelers slip into the water and swim with Scarface, a favorite, or Big Mama who always recognizes the catamaran. The color and clarity of the Caribbean is an artist’s dream and being up-close to these magnificent and supremely independent creatures is certainly a memorable and educational experience.



Grand Cayman, a speck on the map just 22 miles long and eight miles wide at its widest point, is the jewel of the Caribbean. Alone in the wide sea, its nearest neighbor is Cuba, some 227 miles to the north. Traffic can be heavy at times despite having only six traffic lights on the entire island. Left lane driving and tricky roundabouts mean drivers can end up in the incorrect lane and then discover the residents are generally forgiving and polite. They also tend to stop for pedestrians and carefully obey traffic laws which are strictly enforced. For those who don’t feel up to international driving, a van-style public transportation system operated by drivers who greet frequent passengers by name is exceedingly efficient. The British Overseas Territory is among the safest in the Caribbean with a high standard of living and economic stability supported by more than 500 offshore banking establishments and a gaggle of public walk-in banks in George Town, the small non-pretentious island capital. he named them “Las Tortugas” after the large number of sea turtles seen moving about in the sea, and unfortunately over the years they have been an easy target for the cooking pot. Thankfully, the Cayman Turtle Center was established in 1968 and today is one of the world’s preeminent turtle research and conservation centers. Joseph Betty, Resident Artist, explained that the Center has released 32,000 turtles, being careful to align them with the stars given their GPS system is the best in the world. With more than 9,000 Green Sea Turtles of all ages in resident, the Center offers a marvelous opportunity to enjoy them up close. While prices have risen over the four years we’ve been recommending it (most notably for real estate in certain regions), the cost of living in Portugal is on average 30% lower than in any other country in Western Europe. Portugal checks all the boxes and qualifies as a top choice for anyone considering making a move overseas in 2020. Its Algarve coast is certainly your best option on the continent.

Over the past four decades, Americans have voted Mexico the world’s #1 place to live or retire in the way that really counts: they’ve packed up and moved there. This country is home to more American expats and retirees than any other, at least 1 million and as many as 2 million, depending on the survey. This shouldn’t surprise anyone. It’s easier for an American to get to Mexico than to any other country other than Canada. Why do Americans choose to go south of the Rio Grande rather than to the Great White North? The weather! When looking to start a new life in a new country primarily seek three things: warm weather, beautiful beaches, and a low cost of living. Mexico competes handily in all three categories. While the living is not as cheap as it was in the 1970s when Americans began migrating here in volume, it’s a global bargain and more of a budgeter’s delight right now than it’s been in a long time thanks to the U.S. dollar’s strength against the Mexican peso. The country is familiar, from its administrative set-up (the Mexican government is a stable democracy, with executive, legislative, and judicial branches functioning in a similar way to those in the United States) to its big-footprint shopping. If you’re itching for an adventure in a foreign land that’s not too foreign, Mexico could be the experience you seek. It’s easy to go back and forth, making it a top choice for part-time living. Drive down as often as you like without worrying about plane fare. Automatic six-month tourist stays and easy and fast immigration make it possible to come and go and spend as much time in the country as you’d like. You can maintain a second home here (and rent it out when you’re not using it yourself ) without having to bother with the expense of obtaining formal resident status. Among this country’s many attractive lifestyle options, Mazatlán stands out. Real city, beautiful beaches, and walkable colonial center and authentic Mexican resort town that manages to feel homey makes Mazatlán a destination that has it all. Located about midway along Mexico’s Pacific coast, Mazatlán has been out of favor among tourists and expats for decades but is making a comeback. The renaissance has been focused on the city’s historic center, which has undergone an impressive facelift and now rivals Mazatlán’s 20 miles of beach for attracting attention. From December through March, daytime temperatures in Mazatlán hover in the high 70s, lows are in the low 60s, and there’s little to no rain. Between July and October, on the other hand, temperatures are regularly 90 degrees and warmer, and humidity levels are higher. Moving to Mexico is as hassle-free as any international move can get.
