Our first feature article recounts a lovely visit with Ms. Bonnie Pooley, a Bethel fixture who provides inspiration to us all as we sink our hands deep into the soil, anticipating a productive and rewarding growing season. Local music legend Denny Breau shares an intimate interview with Cheryl Gillespie, and Dr. Jennifer Tooley of Bethel Physical Therapy Services showcases this superb local establishment for reclaiming physical health. Stephen Stone, who went from ice-carving chef to wood-carving artist shares his oneof-a-kind furniture creations and sweet welcoming bear carvings. mportant lessons get passed down. When Bonnie Pooley’s grandfather died back in the 1950s, her grandmother, needing a way to support herself, turned to the earth. A lover of flowering plants, especially irises and daylilies, she enlisted young Bonnie’s help to turn an enthusiasm for perennials into a small business that eventually supplied inventory to nurseries all over the country. As soon as the root clumps doubled in size, they were divided, with half the plants shipped out for profit while the rest were returned to the soil to start another cycle. Fascinated by the process of managing the soil to encourage maximum rhizome growth, and spending most days elbow deep in soil, Bonnie learned about the difficult yet deeply satisfying art of cultivation and, on a human level, the hard to attain yet deeply satisfying feeling of self reliance. Knowledge she realized she wanted to pass on when she grew older. Bonnie’s long teaching career started in the populous schools of Wilmington, DE, and after a while she began casting about for a position in a smaller setting where she could make more of an impact. In 1973 her friend Mac Davis told her of an open teaching position at Gould Academy, way up in the hills of Western Maine. After a vacation trip to the area with the specific goal of checking out Gould, she told Mac as she drove away that she “couldn’t wait to return and fulfill her destiny!” Bonnie soon arrived back in Maine with family in tow. During her tenure as an English teacher at Gould she lived in and out of the dorms, mentored students, coached field hockey, softball, cross country running and skiing — and, most importantly for the boarding students missing their family life, she mothered. It seemed as if her days were marked by an ever changing assortment of outfits — from teaching clothes to coaching clothes to formal dinner clothes and back; it was a very, very busy time. Thirty five years later — her destiny thoroughly entwined with Gould’s — she retired and now has time to enjoy her 900+

Facebook friends, most of whom are former students that continue to stay in touch with this kindhearted, earth-loving, dynamic powerhouse! Of course, even as Bonnie was teaching, she never stopped learning. During her time at Gould she became deeply inspired by the writings and philosophies of Scott Nearing, who, with his wife Helen, is revered as a pioneer in the “Back to the Land” and “Simple Living” movements. Shunning New York City at the start of the depression, Scott and Helen moved to Vermont to begin a life of self-sufficiency and rural activism. Their experiences of rebuilding the soil, constructing solid stone homestead buildings, growing their own food and living sustainably off the land led to the publication of the landmark book Living the Good Life soon after their move to the Maine coast in 1952. In 1974 Bonnie created a course called Utopias and Dystopias, challenging her students to read Scott Nearing’s treatise for extra credit. When several students expressed an

interest in knowing more about self-sufficiency and its interrelation to social justice, Bonnie arranged a trip to the “Forest Farm” homestead in Harborside, Maine. One of the students, who was deeply moved by their multiday working visit, became Valedictorian of her class and invited Scott to speak at her graduation, causing something of a stir when the self described pacifist/socialist/vegetarian shared his radical world view from the Gould commencement stage. Just four years ago, Bonnie and her sister bought a log home with a big barn that was built in 2003 on land torn out of the forest. Following the Nearings’ blueprint they are establishing a farm by fortifying the soil and homesteading. After completing Barbara Murphy’s Master Gardener course, Bonnie has the confidence and resources to institute a plan for growing vegetables year round once their greenhouse is built. Pollinator plants are a very important part of their food production plan — calendula, Mexican sunflowers

(which the monarchs adore!), bee balms, daffodils, echinacea and daylilies will offer a smorgasbord for bees and pollinators of all sorts. Bonnie starts many plants indoors as the snow melts; last year she enjoyed cucumbers before any of her friends. This year she has raspberries and asparagus started and plans on rotating planting times to continually provide lettuces and salad makings all season long. The sisters and Mac Davis share a larger garden where they grow all the onions, garlic, green beans, peas, leeks, squashes and zucchinis for both families. They grow many, many pounds of tomatoes ending up with such a massive surplus last fall that the preserved fruits lasted all winter. Working with plants, the land and the soil brings Bonnie great joy. In her words, “we need to pay back the earth and regenerate much of what we have taken away. We need to do it fast, and without fossil fuels.” She is doing her part to grow locally, eat locally and help other people to do the same. Important lessons get passed down. d

The Understated Master Musician

and no cover charge. Top-notch entertainment for free, what a treat! The next question usually follows quickly, “Where is that guy from?”

On Thursday evenings around eight o’clock at The Suds Pub in the basement of the Sudbury Inn, a gentleman casually starts setting up equipment and shooting the bull with people around the small stage area. He pulls out a guitar or two and jokes with the other musicians as they set up a drum kit and place amplifiers around the stage. The crowd at the bar and around the dining area pays scant attention. Most nights, random people show up carrying instruments and approach him. He welcomes them. By nine o’clock, the musicians have tuned up and begin to play something, often bluesy in nature. Heads start turning toward the stage. The second musical piece may involve a guest musician, and the music blossoms into fuller sound. About the time a third song launches across the room, people new to the area usually comment on the lead guitarist’s unusually fine skills. That is when local folk inform the uninitiated that they are in the presence of Denny Breau, one of Maine’s best musicians, songwriters and teachers. Of course he turns heads, his resume is incredible. Even more unbelievable is that this talented musician hosts Hoot Night, a Suds Pub tradition featuring great performances

For starters, it comes as no surprise that Denny’s family brims with accomplished musicians; melody is in his blood. An Acadian Frenchman born in Winnipeg, Canada, Denny moved to New Auburn with his mother and younger brother after their parents — “Hal Lone Pine” Breau and Betty Cody — divorced. They were renowned musicians who performed across Canada and down through the US all the way to Nashville. At the age of eight, Denny was introduced to the guitar by the family he stayed with while his mother worked in the local shoe factories. Back in the day Lewiston/ Auburn was known for making fine footwear and even better music.

teen. In the sixties and seventies when rock and roll exploded on the scene bands needed musicians who could deliver the new sound. Fortuitously, on one of Lenny’s occasional visits to Maine he taught Denny three cord rock and roll which “put him light years ahead of the other local guitarists.” To this day he cites Lenny as his biggest influence. Among other musicians who influenced him, Denny mentions Dick Demers, a drummer, musician, singer/songwriter and recording artist who lives in Lewiston. Exposure to Roger Reynolds, whose canon is famously known for blending traditional musical sounds with new technologies, encouraged Denny to graft diverse musical forms onto the branches of his own experience.

His brother Lenny, eleven years senior, stayed in Canada with their father and went on to become a famous jazz guitarist. At one point he recorded in Westbrook, Maine with Al Hawkes at Hawkes Plaza, site of the famed “Walking Man” sign on Route 302 where the current bar and restaurant — Lenny’s — is named after him. Denny sometimes performs there in memory of his beloved older sibling who was mysteriously murdered in Los Angeles at the young age of 43.

Music and performing are Denny’s life; tellingly, during his three year stint in the service he was selected to play in the army band. He talks fondly of friendships with Clarence Clemons and Max Weinberg, twin pillars of Bruce Springsteen’s E Street band who he played with in the 1970s. Denny has opened for many nationally known bands. A favorite was Chet Atkins because of his country music roots. An inductee of the Maine Country Music Hall of Fame, Denny says, “I consider myself a guitar player who loves blues, country, jazz and classical music.”

and during the winter season he hires a drummer and bass player. Other than that, nothing is planned. The open mic format encourages anyone to perform anything — including poetry reading — but mostly the allure is a notable array of really good music. Denny’s presence helps draw many prominent musicians, but as he admits, “Sometimes nobody shows up, and sometimes I get more people than I can use.” When Marcia Ball, a blues singer and pianist from Louisiana, showed up one night much to Denny’s delight, he simple said, “If you don’t know about her, you should!” Blues singer

Bebe Buell has dropped in many times — an incredible performer who sang backup for Aerosmith and has her own band, she is probably best known as the actress Liv Tyler’s mother. Maryann Price of Dan Hicks & His Hot Licks, The Kinks, and Asleep at the Wheel fame has popped in from Texas. The contemporary folk musician John Gorka visited Hoot Night as well. One of Denny’s favorite visiting musical groups arrived right after 9/11/2001. The New York City Fire Department Bagpipers were treated to free skiing by Sunday River after which they stopped in to play their rendition of “Amazing Grace”, at the end of which

Hoot Night regulars Robert “Pepper” Joyce on drums, bassist Kevin O’Reilly, and guitarists Krister Rollins and Steve Caswell are often joined by keyboardist Merrill Rollins, while Denny commands the stage of impromptu musicians with comfortable ease. Dance music, when requested from the audience, always inspires tunes that fill the floor. Music is all Denny has ever done, and he does it extremely well. STEPHEN STONE of Stone’s Wood Creations

The arc of artist and woodworker Stephen Stone’s career is a compelling example of Marshall McLuhan’s famous precept that “The medium is the message”. Stephen’s route to Bethel began in the Culinary Arts apprenticeship program at the Balsams in New Hampshire back in the late 1980s. Working and training at the Balsams during the busy summer and winter seasons gave Stephen the opportunity to travel and learn in the spring and fall when the hotel kitchen was closed. The chance to see other properties, other kitchens and other methods during externships in Colorado Springs and many resorts across Florida sparked an interest in working as a Garde Manger. The opposite of working in the sizzling atmosphere of the kitchen line, a Garde Manger spends time in a cold room creating elaborate salads, caviar dishes and platter layouts featuring exotic ice carving and ice displays. Stephen excelled, joining the AFC Culinary Team to compete in Germany, Canada and beyond. In 1992, The Bethel Inn hired Stephen away from the Balsams,

with his soon-to-be wife Kelly following along shortly thereafter. As Executive Chef, Stephen oversaw a change in dining styles, expanded the Millbrook Tavern and galvanized special events at the Inn. Lobster bakes at the Lake House, weddings on the Common and the rush of Saturday nights resulted in 100+ hour work weeks. Through it all Stephan continued to produce amazing carvings from 300 pound ice blocks, adding an extraordinary centerpiece to special occasions that few other facilities could match. As Stephen and Kelly began to raise a family his schedule at work meant missing out on many important home-life milestones. Stephen and Kelly soon realized that although their years spent bringing up children would extend well into the future, time was in fact fleeting. The round of meals, chores, school days and family vacations that seemed perpetual in the moment were actually ephemeral — resembling an ice sculpture as it melts slowly away — beautiful in the instant yet changing in the blink of an eye. They decided that time spent together

produced the most durable of possessions: memories. Stephen left the kitchen to establish Stone’s Wood Creations, allowing him to sculpt with his chainsaw in a new, more durable medium — wood — leaving behind the fleeting nature of ice to produce a more lasting product. The change in medium expressed a change in message regarding the importance of family. Carving bears led to the production

of other wood related products like welcome signs, exterior benches and rustic home furnishings. He’s got a sawmill of his own and a beautiful shop filled with a fine assortment of tools and radiant heat in the floor. In his cheerful, sunny work space the designing, milling, carving, staining and finishing are on-going as this deeply satisfying work has presented many different creative opportunities. His custom-made tables, chairs, desks,

hutches, night stands and book shelves, fashioned from wide pine and displaying beautiful live-edge detail decorate many area homes. Stephen gets carving logs from Hancock Lumber, from people’s land as they drop large trees or he can carve a large bear into a fresh tree stump right in place. Bethel Physical Therapy Services with Jennifer Tooley, DPT (Doctor of Physical Therapy) Not too long ago the only way for folks in the Bethel area who needed access to physical therapy services was a round trip to Rumford or Norway. Thankfully, for the last 4 years those recovering from an injury, fending off the affects of aging or convalescing from a medical procedure have been able to obtain excellent PT services right here in town from Bethel Physical Therapy Services, a division of Central Maine Clinical Associates. An average day for Doctor Jennifer Tooley DPT, who joined the office a year and a half ago, and her associate Kim Swazey, who has been at Bethel PT since the start, consists of treating 2 to 3 knee replacements, addressing bone bruises, worn out hips, ACL and Achilles tendon tears, rotator cuff repairs, post concussion syndrome or Parkinson’s disease and many of the other physical problems that plague us all. Kim and Jennifer each have their own specialties and cover all the rehab bases between them. Referrals for surgical recovery therapy come from Orthopaedic Associates, Central Maine Orthopaedics, Rumford Hospital, Maine Health and Stephens Memorial Hospital in Norway. Not surprisingly, given the active outdoor lifestyle of many Bethel residents, Jen guesses that approximately 70% of her patients are recovering from skiing or other sports related injuries, with injuries from motor vehicle accidents and worker’s comp cases adding a fair share of the balance. Student athletes from Gould Academy, Sunday River Ambassadors, and folks from the 55+ Ski Club which has over 200 members, have all made their way back to the slopes as quickly as possible after rehabbing at Bethel PT.

Jennifer received her Bachelor’s Degree in Exercise and Sports Science from ColbySawyer College, while learning first hand about physical therapy as she healed from injuries of her own during her undergraduate years. She went on to receive a Masters Degree from Husson College, completing her Doctorate

in 2009. She worked at Coastal Orthopedics in Brunswick, then spent 5 years as a travel therapist, spending seven months on Molokai, Hawaii, and subsequently moving on to stints in Arizona, Colorado, Idaho and New Mexico.

After six years coordinating three restaurants and a great many weddings and special events at The Jordan Hotel, Coop, who hails from Kansas City, welcomes the opportunity to highlight his hard earned culinary expertise at Bistro 151 on the main level of the Inn. Years ago, when Coop arrived in the Bethel area, he found work on local farms growing vegetables, butchering turkeys, pigs and beef critters, and trading some of his time for excellent local provisions to nourish his own body and soul. Today, Coop knows exactly where to find the local treasures and treats from local producers like Intervale Farms, Blake Farms and Moondance Farms that he uses to showcase his vision of transforming fresh food into a fine dining experience. Now in his 44th year, Coop lives to prepare deep flavorful foods such as Pot Roast from his grandmother’s family recipe, a heavenly Baconwrapped Hand-Cut Beef Fillet and a Blueberry-Brie Chicken dish wrapped in a puff pastry that oozes love as soon as you slice into it. If seafood makes your mouth water, try the Scallops Sangria, seared with a citrus sangria reduction or the Seafood Fra Diavolo featuring fresh sautéed mussels, baby clams

and shrimp all bathed in a spicy white wine tomato sauce over linguini. The Wild Mushroom Latke, a Bistro favorite introduced by Chef Pete, is a grilled potato pancake filled with a special mushroom combo, topped with a cherry-cream sauce and served with pea shoots and a balsamic glaze. The Grilled Pork Chop with sweet onion and apple chutney joins a rotating selection of daily specials like Coconut Curried Shrimp, and the in-house Flatbread with roasted tomato bacon jam, goat cheese cream and a rosemary balsamic glaze.

Androscoggin Watershed’s Source to the Sea 2019 The 2019 Androscoggin River Source to the Sea begins in the Umbagog National Wildlife Refuge north of Errol, New Hampshire and ends in Merrymeeting Bay in Brunswick, ME where the Androscoggin meets the Kennebec River and empties into the Atlantic Ocean. The event is organized as a series of day trips along the river. Highlights include evening paddles, healthy foods, family days, music, hiking, standup paddle-board, as well as educational sessions on native plant species, fish habitat, ornithology, weather, aquatic insects, healthy nutrition and river ecology.

Spring Rolls These Fresh Spring Rolls are even better than you’d find at a restaurant, and they’re incredibly easy and healthy! Served with a delicious homemade peanut sauce, these rolls are perfect for a fresh and light lunch, dinner or appetizer. INGREDIENTS

• 1 package spring roll rice wrappers • 1 package vermicelli rice noodles • 2 mangos , peeled and sliced into thin strips • 1 large carrot , peeled and shredded or sliced into thin strips • 1 large English cucumber , peeled and sliced into thin strips • 1 pound small, cooked shrimp , deveined, tails removed (optional) • 1 bunch fresh mint leaves • 1 bunch fresh basil leaves • 1 bunch fresh cilantro

For the peanut sauce:

• 3/4 cup sweet chili sauce • 1/3 cup peanut butter , smooth or crunchy • 1/2 teaspoon low-sodium soy sauce • 1/2 teaspoon hoisin sauce

INSTRUCTIONS 1. Cook vermicelli noodles in boiling water, for just a few minutes, according to package instructions. Drain and rinse with cold water. 2. Gather all topping ingredients together, including chopped veggies, herbs, cooked shrimp. 3. Add about 1 inch of water to a large, deep dish, or pie pan. Place one rice wrapper into the water and let soak for just 10-15 seconds. It should still feel pretty firm as you remove it and lay it on your counter or plate. 4. (It will soften up as you add the filling ingredients, but If you let it soak for too long it will get too soft and will tear when you roll it up.) 5. Layer 1-2 slices of each veggie, a few shrimp, a few leaves of each herb and a pinch of noodles on the 1/3 of the spring roll that is closest to you. 6. Fold the sides of the spring roll in over the ingredients. Then pull the side closest to you up and over the ingredients, sealing everything together tightly, and rolling it up like a burrito. For the peanut sauce: Add all ingredients to a food processor or blender and pulse until smooth. To store: The rolls taste best the day they are made, but they can be stored for 2-3 days. Wrap each roll individually in plastic wrap to keep them fresh and to keep them from sticking together. Store in an air-tight container in the fridge.
