Publisher’s Note Thank you for picking up the Spring Issue of Bethel Living Magazine! This is the time of year for rejuvenation -- when winter gives way to melting snow and fresh spring growth. In that spirit we present a couple of articles featuring Bethel as a place of healing. First, we take you out to the White Mountain National Forest where folks gather at the Telemark Inn for retreats and recovery in the lush abundance of nature. We also visit with artist Arla Patch at her lovely studio/home overlooking the Western Mountains of Maine. Arla has developed methods for personal healing and spiritual growth by connecting to the divine through art. Visitors can participate in horse carriage driving and husky training to become immersed in the essence of the animals -- learning how they perceive and interact with the world. Two programs created at the farm, New England Dogsledding and New England Horseback Riding and Carriage Driving, have been offering unique animal outdoor therapy programs to a variety of special needs groups for the past twenty years, including: Kid’s Peace, Perkin’s School for the Blind, The Spurwink School, Boys and Girls Scouts -- as well as the Wounded Warrior program with Veterans without Boundaries. The programs are exceptional in their approach to working with the animals in a very intimate way. Although many of the horses are rescue animals that now call the farm home, most of the animals are born on-site and remain at the facility their entire lives. Caring for 80 sled dogs, and ten horses, the staff believes in the genuine beauty of their charges and the importance of developing a respecting and trustful relationship with them. A clean healthy living place, quality feed and a lot of petting, grooming, training and conditioning ensure that the animals are all sweet, incredibly friendly and trusting. The dog sled team is a well mannered, well trained squadron of highly athletic and friendly canines. Visitors spend quality time with the friendly, socialized huskies learning about the care and handling of sled dogs, harnessing, lead dog training, dog carting, swim conditioning and much more. Springtime Funtimes! in the Bethel area
Bethel is the perfect place for snow-lovers, but spring is always welcome. Perhaps it’s the longer days, or perhaps it’s a collective need to shake off cabin fever, but springtime events can tend to be a little wacky. March and April bring some of the most anticipated events of the year at Sunday River, Mt. Abram, and the surrounding area. The only thing better than skiing or riding is doing it for a good cause. Maine Adaptive Sports & Recreation hosts its 29th Annual Ski-A-Thon on March 29, 2014, at Sunday River. The organization helps individuals with physical disabilities get out on the slopes in the winter and offers biking, golf, paddling, and lots more in the summer. The Ski-A-Thon helps Maine Adaptive raise nearly two-thirds of its budget in a single day. Start a team or donate to an existing one at maineadap10

tive.org. At Mt. Abram, WinterKids’ Downhill 24 (winterkids. org) on March 8-9 will raise money for programming to encourage kids to get outside in the winter. Teams of up to 12 will take runs for 24 hours straight! Both events will offer prizes for top fundraisers and make for a great party atmosphere. Mt. Abram will host a World Adult Kickball Association WAKA Tournament On Snow March 1-2. Sunday River’s lineup of spring events provides lots of ways to soak up the spring weather. The 24th Annual Eat the Heat Chili Cook-off & Firefighters’ Race on March 24 features teams of five firefighters racing a slalom course in full turnout gear while carrying a fire hose as they race down the mountain. Following the race, area restaurants compete to see who’s got the best chili.
By April, it’s goggle-tan season. Sunday River transforms into a virtual tropical paradise for its annual Parrothead Festival, when the White Cap base area becomes a tiki village on April 4-6. Spring skiing is complemented by nonstop Jimmy Buffett cover bands, a margarita mix-off, and competitions including pond-skimming and a key-lime pie-eating contest. On April 12, the first Pond Skim-A-Palooza will challenge contestants to an obstacle course while navigating across a pond on skis. (Details on Sunday River events can be found at sundayriver.com.) People who just can’t help but look forward to spring and
summer can get a taste of it at the Western Maine Fly Fishing Expo at The Bethel Inn Resort’s Conference Center on March 22 (bethelinn.com). The Upper Androscoggin and its tributaries are known for excellent trout fishing, and just downstream from Bethel is incredible bass-fishing territory. Gear vendors and guides will be there to help you plan your future expeditions. The restaurants and bars in the area add to the relaxed springtime vibe by hosting live music from après-ski hours into the late night. Donna Gillis: Texture of Life Quilts by N. S. White Donna Gillis is a local restaurateur. One might also call her a healer, an artist, an historian, and a chaplain. Donna, whose email address is “seams undone,” creates quilts out of the clothing of the deceased, given to her by grieving family members. These are not just tee shirts sewn onto a backing, there is something bigger going on here. Donna explains, “My passion for fabric has brought me into a field of creation from my heart, to heal the broken heart. So, I believe every closet holds a story. It holds our personality. My goal is to give a piece of ancestral history to follow the generations into the future. My purpose is to mend the hearts that knew the soul, one stitch at a time...threads of life stitched in time.” Donna uses fabric, buttons, pockets, badges and the stories from the life of deceased individuals to make her quilts. She also uses her own fabric if it helps tell the story. Often her quilt panels are symbolic of stories the living family member has told her about the deceased. Sometimes the designs are more abstract, but there will be meaning in the pattern and in the fabrics, textures and colors used. Each quilt is completed with a pocket sewn onto the back in which Donna writes the story of each quilt as she understood it, giving each quilt a name. Often, each panel of her quilt tells a part of the story that she has heard about the person. The panels are constructed with pieces of the clothing used in unlikely ways. Buttons become the eyes of an animal, a section of yellow slicker is transformed into an ear of corn. Donna says she “just goes with it” and will undo 14

“what doesn’t feel right.” Most of her quilts are 3 dimensional. Donna feels that she has found her true work, what she is meant to do. Asked if this work has changed her, Donna looks thoughtful and says “No, I think this place changed me.” She was referring to moving to Bethel and to the home she built with her husband, John, located on a sunny mountainside in West Bethel. It is a serene home, surrounded by hardwoods and with mountain views. In her hometown of Lawrence, Massachusetts says Donna, “no one stayed in their houses. They were out shopping and “’doing” all the time, it was hectic.” Donna believes that it is the quiet nature and light-filled place, her home in West Bethel, that allowed this creative gift to come through to her. For those who have lost a loved one and found Donna, she offers a bit of healing in the grieving process. The loved one may be gone, but the memories and emotions are still present, and so is the clothing. Donna’s gift unites the memories with the clothing, and transforms both into something timeless that captures glimpses of the one lost for the family left behind. The Art of Healing, Honoring MollyOckett and Bethel’s past connections to the Wabanaki
The search underlying our irrepressible desire to connect with the physical beauty and genuine abundance of nature -- the reason we spend so much time and energy fishing, skiing, hiking, paddling, golfing and biking is rarely acknowledged; buried deep. We dash out the door into our favorite pastimes to promote a healthy body and mind, gain strength and stamina, lose weight and shed stress. The common thread tying these activities and goals together is the innate quest to feel better, to lick our wounds and allow time to do its work -- in a word: to heal. But there are more avenues for the restoration of the soul than the outdoors. Bethel Living caught wind of Arla Patch, a local artist and activist who, for more than forty years, has worked as a teacher, writer and workshop leader using art as a tool for healing. Although Arla’s creations with stones, beads, shells, and other pieces of nature have delighted many, her most valuable gift is leading others into a more peaceful life. BL sat with Arla, admiring the inspirational view of the White Mountains from her Woodstock studio and talking about her work. 18

BL: Could you tell us how you became interested in the connection between art and healing? Arla: In the early 1970’s I began teaching art in a public school. I always knew that art had the potential to transform how we see and understand ourselves. It wasn’t until I began working on my own trauma history that I discovered this in a deeper way. Over the years my experience of bringing art into many different settings – therapeutic boarding schools, colleges, hospitals and prisons – validated this. I also saw the powerful connection between body and nature. BL: Is all your teaching about art and healing? Arla: Well, perhaps indirectly. In 1990, after the Creative and Talented Program I was teaching was removed from the local school budget, I founded the “Explorations Art Program.” Even though these are classes in visual arts, they are offered in a safe and nurturing environment (my studio) that fosters accessing creativity and cultivates self-esteem. This spring I’m starting my 24th season. I

offer classes in visual arts for students grades 1 -12 and for adults as well. Class sizes are small, with a spring, summer and fall program. Additionally, I have offered solo retreats, group workshops and retreats highlighting silence, fall foliage, rights of passage, mending a grievance, marking a life transition, or simply to explore painting. BL: You mentioned ‘silence’ -- how does that help with creating art? Arla: As a practicing Quaker I honor silence. It makes space for change and new ways of seeing things. The ‘Stillness Retreats’ -- following the Quaker tradition -- include an overnight and initial dinner conversation with silence upheld throughout the rest of the evening and for the next day. Walking, worship, reading and writing, meditation and more are encouraged for workshop participants. Silence can make space for a deeper connection with oneself, moving one beyond the inner critic and static of daily life. BL: You have done some writing yourself. What part of your work have you written about? Arla: My first book is a collection of images called “A Body Story” created with a photographic process I developed. I wanted to show, in visual terms, how we are all sacred; how a “fusion” with Nature can induce a recognition of the body as a vehicle for communication from a divine source. My second book, “Finding Ground: Girls and Women in Recovery” takes this nature/body process and shares it with girls in recovery and incarcerated women. The “Nature Fusion Process” takes images of nature and projects them onto the person’s body, fusing the two in a way that depicts the divinity of both. If one can see the beauty and sacredness of Nature, and then see their self fused with it, they are compelled to see the divinity in themselves.

BL: What are you working on now? Arla: A couple of years ago I spent time on the Navajo Reservation and was deeply moved by the experience. I searched the Internet to see if there was anything going on in Maine regarding native peoples. I found that the Maine Wabanaki-State Child Welfare Truth & Reconciliation Commission had been created to recognize the injustices of what happened to many native Maine children through the child welfare system. The abnormally high numbers of native children taken into foster care and adoption follow decades of taking Wabanaki children to boarding schools where they were stripped of their language, their names, their traditions and were often punished and abused. Last year I initiated an essay challenge for local youth as a replacement to a tradition of “Miss MollyOckett”. MollyOckett was a local native woman (Pigwuaket) who lived in the 18th c., was a midwife, herbalist and healer. Starting in 2012, the summer festival MollyOckett Day has included Wabanaki music, dance, and craftsmen. MollyOckett was known for her strong values, her healing, was widely respected and was an extremely feisty woman! MollyOckett explored different kinds of spirituality and fought very hard for her own human rights. This year’s essay topic is: “Why is it important that we still celebrate MollyOckett? While walking out of BOCA, Brett said to Melissa (or maybe Melissa said to Brett, details are foggy), “Why doesn’t Sunday River have something great like this?” With their extensive backgrounds in hospitality and the wine business -- Brett did after all own two wine shoppes on Cape Cod -- these two are the perfect pair to establish this unique dining experience at The Sunday River Inn. “The Inn’s owners, Steve & Peggy Wight, embraced our vision immediately and have been incredibly supportive of our idea”, says Brett. So stop in for the comfortable apres ski vibe, or make a reservation for the ‘Wine Dinner Series’, a prix fixe treat featuring select wines paired with a multiple course meal of scandalously good tapas. And after you do, think of Brian and send your thanks for the best new menu this side of the Mississippi.

Celebrate Spring with a Delicious Dinner for family & friends! Zucchini-and-Watercress Soup
Caesar Salad & Dressing:
This super quick and tasty recipe will please your crew and get you to the table quickly!
Ingredients: 1 tablespoon extra-virgin coconut or olive oil 1 small onion, finely chopped 1 small pinch of saffron threads (about 10), crumbled 1 pound zucchini, coarsely chopped 3 cups organic chicken stock 8 ounces watercress, chopped 1 tablespoon heavy cream Salt and freshly ground pepper
Directions:
Ingredients: In a large saucepan, heat the oil. Add the chopped onion and saffron threads and cook over moderate heat, stirring occasionally, until the onion is softened, 7 minutes. Add the zucchini and chicken stock and bring to a simmer. Cook over low heat until the zucchini is tender, 10 minutes. Add the watercress and cook for 5 minutes longer.
Using a slotted spoon, transfer the onion, zucchini and watercress to a blender. Add the cream and 1/2 cup of the stock and puree until smooth. Return the puree to the saucepan and season with salt and pepper. Gently re-warm the soup and ladle into bowls. 24

1 1/3 cup olive oil 1 egg yolk from pastured hens ½ tsp. Worcestershire sauce 3 tbsp. lemon juice 1 tbsp. minced garlic ¼ tsp. red pepper flakes ½ tbsp. mustard 2 anchovy fillets, mashed salt & pepper to taste lettuces of your choice, often Romain is preferred
Directions: In base of large wooden salad bowl, whisk oil, egg and Worcestershire until combined. Add all other ingredients and mix well, then add torn lettuces of your choice and mix with tongs. Serve with optional croutons and enjoy.
Oven-Roasted Asparagus Ingredients:
Easy Leg of Lamb Roast This recipe calls for a roast that’s about 2 1/2 pounds (including the bone), which is plenty to feed a family of four and will probably give you a little leftover. We suggest a simple mint sauce shown below, which is traditional in the UK. • Serves 4
Ingredients: 2.5 pound bone-in section of leg of lamb (your butcher should be able to cut this for you) 6 cloves of garlic 3-4 sprigs fresh thyme 2 tablespoons salt 2 tablespoons olive oil fresh ground pepper to taste
Directions: Preheat oven to 450°F. Trim any excess fat from lamb, and set the fat aside. Rub the lamb with salt, pepper, and the leaves of three sprigs of thyme. Rub the lamb with minced fresh garlic and oil, salt and pepper. Place the trimmed lamb fat, and the lamb into a roasting pan or baking dish. Bake the lamb, checking it after 20-25 minutes, and again after another 20 minutes and check the temperature. When it is almost to the temperature you are going for, pull it. Lamb is rare at 130 degrees (125 if you’re French), medium rare at 135, medium at 140. It will cook another 5-10 degrees while you rest it. Rest for ten minutes, carve, and serve.
1 bunch thin asparagus spears, trimmed 3 tablespoons olive oil or grass-fed butter 1 -1/2 tablespoons freshly grated Parmesan cheese 1 clove garlic, minced 1 teaspoon sea salt 1/2 teaspoon ground black pepper 1 tablespoon lemon juice
Directions: Preheat an oven to 425°F Place the asparagus into a mixing bowl, and drizzle with the olive oil or melted butter. Toss to coat the spears, then sprinkle with Parmesan cheese, garlic, salt, and pepper. Arrange the asparagus onto a baking sheet in a single layer. Bake in the preheated oven until just tender, 12 to 15 minutes or less depending on thickness. Sprinkle with lemon juice just before serving.
Rhubarb Crumble Pie Topping: 3/4 cup all-purpose flour 1/3 cup packed brown sugar 1/3 cup butter
Pie: 1 1/4 cups granulated sugar 3 tablespoons all-purpose flour 1 pinch salt 1 egg, lightly beaten 4 cups chopped rhubarb 1 (9 inch) unbaked pastry shells 2 tablespoons butter
Simple English Mint Sauce (adapted from The All New Joy of Cooking) 2 tablespoons boiling water 1 tablespoon turbinado sugar (or light brown sugar) 3 tablespoons fresh mint leaves, minced 4 tablespoons rice wine vinegar In a small, heat-proof bowl combine the boiling water and sugar. When the sugar has dissolved, add the mint and vinegar. Cover the mixture, and allow it to cure in for several hours, or overnight in the refrigerator.
Directions: Topping: Combine flour and sugar in a bowl; using a pastry blender or 2 knives, cut in butter until mixture is in fine crumbs, set aside. For the Pie: combine sugar, flour and salt in a bowl; whisk in egg until smooth. Add rhubarb and toss to coat. Scrape into pie shell and dot with butter. Sprinkle topping evenly over filling. Bake in the bottom third of a preheated 425°F oven for 10 minutes. Reduce heat to 350°F and continue baking until topping is golden and filling is bubbly, about 40 minutes.
