What’s NEW in Bethel? One of the intriguing and endearing things about Bethel is the constant push to create new and interesting businesses to serve our visitors and deepen the life experiences of our residents. It seems as though we never run out of things to see and do in this small western Maine town, and this season brings us several new examples of our communal push to succeed. The Savage Brother’s Country Store Bethel Living got Rick Savage to sit for a moment and talk about the new Savage Brother’s Country Store in the former Black Diamond Steakhouse building on the Sunday River Road in Bethel. BL: Wow, Rick! It’s gorgeous in here! How did this all come about? RS: Well, we were going to build a store over at the Sunday River Brewpub, but then we realized we were competing with ourselves with the Black Diamond Steakhouse right next door. The crowds at the Brewpub gave us an opportunity to convert the Steakhouse into a fully functional country market that will serve the community by bringing exciting new products into the area. BL: It happened so fast! It was like magic! RS: We had about ten guys here every day for a few weeks to get ready for the skier traffic. Now we’re open and business is great! BL: And you’re going to be open year-round! Tell me about your inventory . . . RS: Our focus is primarily on Maine produce and products, secondly on New England foods and supplies and thirdly bringing in European delights such as chocolates and cheeses. We have grass-fed lamb from Iceland, Kobe beef from Japan and we’re dry-aging our own Porter House Angus steaks. Soon we’ll have rotissary chicken. BL: You’ve got duck bacon, elk, venison, rabbit, quail, boar sausage, venison salami and specialty

foods together with super fresh local produce. RS: Maine Shellfish is supplying everything fresh and in season — lobster and so, so much more. If someone wants an entire prime rib cooked to order we can do that. Any specialty food you might want — just ask and we’ll do our best to get whatever you need. We’ll be doing pizza and grocery delivery soon and we’ll have sandwiches and pasta in the cooler ready to go. The upstairs is going to be a country hard goods store with jackets, boots, frying pans, shovels, socks, kitchenware and miscellaneous items that just can’t be found around here. From 2008 until last September Brian & Jess Nichols owned and operated Brian’s Bistro at the Hotel Harris in Rumford. Fortunately for our area, Jess & Brian had their eye on Bethel as a potential location for their newest venture. When a perfect spot became available in the fall, they jumped at the chance and quickly made it their own, opening

The new decor is delightful and welcoming with a menu featuring less pub food than their former establishment. Upscale entrees include fresh steaks and seafood, pasta dishes, delicious appetizers and desserts all made on premise. selection of wines that you won’t find in other establishments around town. Brian’s seats 50 with space for an additional 10 at the bar. Come spring, Brian’s is expecting to be open for lunch service. Best sellers on the menu include “Haddock Mediterranean” which is prepared with olives, roasted red peppers, artichokes, spinach and feta served over rice pilaf, as well as “Scallops Romesco” — pan seared scallops served over risotto — there is also a delicious spinach-artichoke dip, and fresh PEI mussels in white wine and garlic

Farmer’s Market & Taps Over the past decade the importance of “knowing where your food comes from” has become increasingly significant and many chefs and restaurants have capitalized on this idea to create healthy, tasty cuisine. Now Bethel can boast a new eatery based on this appealing concept with the opening of Farmer’s Market & Taps on the Parkway Road. Felicia Dumont, who grew up in Bethel, returned to the area about a year ago with a likeminded partner — Quinton Stevens-Palmer — to establish not only a restaurant in town, but also a farm and wellness center located in East Bethel. These two young entrepreneurs believe Bethel has a large and growing demand for healthy organic foods and they want to support themselves as well as their dreams by building a farm to sustainably provision their cafe-style restaurant. The foods on their menu are very different than other places in town, with a 100% organic and paleo focus. There are vegan and gluten-free options, gourmet sandwiches, tempting

butter. Homemade desserts include cheesecakes, apple crostada (an individual tart-like pie) and flourless chocolate torte (gluten-free). soups, wholesome smoothies and fresh juices. All the food is prepared on-site and made from scratch. Prepared with mostly avocado oil and energizing ingredients, the meals are delicious and healthy. The beer and wine menu is varied and unique, but it is the fresh kombucha on tap that really makes the taps area special. A slightly alcoholic fermented tea, kombucha is a great way to introduce diverse enzymes, amino acids, polyphenols and various other organic acids into one’s diet. The comfortable decor is grounded in recycled wood, corrugated roofing and a front wall of glass filled with ivy and pillows on long benches. It’s a casual environment that stays open Wednesday thru Monday for breakfast, lunch and dinner. Friday and Saturday nights will feature higher end small plates with many different options to share, encouraging communal dining with friends and family.

At the Farmer’s Market & Taps, the draft beers are 100% Maine sourced, and as craft as you can get. Their selection consists of unique beers that are hard-to-find elsewhere on draft, including barrel aged beers, sours and wild ales, and limited releases. They even have permanent lines for both Maine Beer Company and the illusive Bissell Brothers. Their pairing events are really quite special; for every event, they choose a few of the best beers from the brewery chosen to be showcased, and perfectly pair those beers with an incredible selection of courses from their kitchen. Additionally, they bring in local musicians to help create what becomes a paring experience like no other. Paws Inn, Pun Intended There are many lovely hotels and inns in Bethel, but the Paws Inn is the only one that is designed for the comfort and entertainment of traveling dogs. And by happy chance there are beds for dog owners too. Paws Inn is set in an 1860’s farmhouse standing elegantly on a hill overlooking picturesque mountains to the south. A large building with a quaint attached barn, entry to the Inn is gained through a glassed-in porch filled with rocking chairs, books and games. Inside the front door a country kitchen stretches into the house with a wood stove, two refrigerators — one for guests’ use — and a sideboard always stocked with goodies. Breakfast is served and kitchen privileges are available at any time. Guests are welcome to prepare meals, then dine at a large table in the dining/living room area off the kitchen or take meals to their rooms. All rooms have private baths and comfortable beds with toasty bed pads under the countrystyle covers. Boot warmers are available for wet hiking or ski boots . . . so people actually fare pretty well at Paws Inn. But let’s talk about the dogs now. Ever walked by a car in the parking lot at Sunday River Ski Resort and felt a pang of sympathy for a dog left behind? Have you yourself ever resorted to leaving your canine buddy in a car because you thought there was no alternative? If you stay at Paws Inn, both you and your pet can have a great day. Dogs have the run of the downstairs at the Inn and are also welcome to stay in the rooms upstairs if they are used to being alone during the day. Crates are available and your dog will be checked on periodically. Social dogs can run and play with other dogs in the 2,000 square foot fenced-in yard behind the barn. Dog sitting services for day trippers, locals and people staying at other places in the area ensure that the daily dog pack has plenty to yelp about. Owner Carolyn Bailey and her loyal canine co-host Kip are busy all day keeping dogs happy at the Paws Inn. Getting Carolyn to sit down and talk is a difficult task. At least a half dozen hounds of various sizes vied for attention and

Carolyn frequently acts as referee to a rambunctious horde while letting dogs in and out from the outdoor play area. In loving, patient tones she takes time to talk to the pups and gives reassurance to the pets. Sanitation is no problem as she quickly cleans up any accidents. Owners must have proof of updated vaccinations and be sure their dogs are flea free. Kip, a gorgeous older Collie mix with a sweet face and soulful eyes is an easier interviewee. He is happy to warm a stranger’s feet on cold winter days, except for when he is needed to calm the canine crowd. Carolyn claims he is a big help. Carolyn grew up in Atlanta, but lived as an adult in many other places. She traveled to New England years ago when her sister was looking at college choices and fell in love with the region. Some years back she tired of working at a casino in Nevada and traveled east to stay with friends in New Hampshire. For about six months, her friends helped her look around for a destination area that was inviting to active travelers. She found the farm on Route 26 in Bethel and has been happily running Paws Inn for the past fourteen years. inter teas offer vital sources of nutrients while warming hands and hearts. Forage and enjoy these two lovely wild teas during winter months and you will be rewarded with medicinal benefits as well as a toasty glow!

Fresh twigs of either black birch (Betula lent) or yellow birch (Betula alleghaniensis) can be easily identified by scratching a section of bark and smelling to identify a wintergreen scent and flavor. Brewing this tea requires a large number of twigs for a long steeping time in simmering water. Do not boil the water so as to conserve the vapors that impart the characteristic aroma and flavor. Teas can be made all year long from the needles of our native White

Pine (Pinus strobes) after stripping the needles from their twigs, try to remove the papery sheath from the needle base. The piney flavor is strong, use only 1-2 teaspoons of chopped needles per pint of water. This water should be boiled and steeped for about three minutes before straining the needles away. It tastes much like a regular black tea and contains high levels of Vitamin A and even higher levels of Vitamin C. Euell Gibbons claimed to achieve a “feeling of great virtue� after consuming pine needle tea. Some folks claim it has immune system boosting qualities, is a cancer fighter and was an essential winter tonic for our early settlers. Recipe courtesy of Tyler Florence Total Time: 25 min Prep: 10 min Cook: 15 min Yield: 4 to 6 servings

INGREDIENTS • 1/2 pound imported Swiss cheese, shredded • 1/2 pound Gruyere cheese, shredded • 2 tablespoons cornstarch • 1 garlic clove, peeled • 1 cup dry white wine • 1 tablespoon lemon juice • 1 tablespoon cherry brandy, such as kirsch • 1/2 teaspoon dry mustard • Pinch nutmeg

DIRECTIONS In a small bowl, coat the cheeses with cornstarch and set aside. Rub the inside of the ceramic fondue pot with the garlic, then discard. Over medium heat, add the wine and lemon juice and bring to a gentle simmer. Gradually stir the cheese into the simmering liquid. Melting the cheese gradually encourages a smooth fondue. Once smooth, stir in cherry brandy, mustard and nutmeg. Arrange an assortment of bite-sized dipping foods on a lazy Susan around fondue pot. Serve with chunks of French and pumpernickel breads. Some other suggestions are Granny Smith apples and blanched vegetables such as broccoli, cauliflower, carrots and asparagus. Spear with fondue forks or wooden skewers, dip, swirl and enjoy!
