Dirk MacKnight has been taking pictures for over 35 years and continues to find photography rewarding and exciting. Over the years he has taken on commercial assignments, in addition to exploring the natural world. Mountain peaks, waterfalls, canoes, wildlife, crisp snow, and colorful foliage dominate his subject matter, sometimes set against classic New England barns and homes steadfastly weathering the elements. His unusual hobby of flying a powered parachute allows him to capture stunning landscapes from above. More recently he is sharing his enthusiasm for photography in the classroom at Gould Academy.
BL: Where has your photography appeared? DM: Most of my photographs are taken on location locally and around the world and have appeared in newspapers, magazines, and textbooks around the world and are

currently exhibited in private collections throughout the U.S., as well as in local art galleries including Elements Art Gallery in Bethel. My commercial clients included large corporations, small businesses, and magazines such as National Geographic - Adventurer, National Wildlife Federation - Ranger Rick, Men’s Journal, Newsweek, Sierra Club, Maine Coast Heritage Trust, Boston Magazine, The New York Times, GEO and The Nature Conservancy, as well as textbooks for schools in New Zealand, Germany and England.
BL: How would you describe your photographic style? DM: As an environmental photographer, I try to convey my passion for the natural world through my photographs. As I travel, I photograph what strikes me, not trying to intellectualize the process. My images are created as a result of stopping and spending time exploring what

catches my attention for a style that is traditional and reflects an honest representation of what I see. I do not digitally manipulate the images by bringing in elements from another place or time. My hope is that through my photography others will also take pleasure in the beauty of nature and be compelled to stop and explore.
BL: How did you get started? DM: I started taking pictures in the seventh grade when I was cast as a photographer in my middle school play. I needed a camera for a prop and picked up my dad’s 35mm Voitlander camera. I began taking photographs and haven’t slowed down since. Throughout the years I have used small, medium, and large format cameras, both in a studio setting as well as in the field. In 2000, I began shooting with digital cameras and currently capture all of my images digitally. In the digital darkroom I am able to have greater control over creating prints that better reflect what I saw and felt at the time I took the photograph. Another reason I chose to get away from the use of film
and traditional processing is to reduce the impact on the environment. I can capture and edit my images without creating any film or paper waste. There is also a significant reduction in chemicals and paper used in the production of finished prints.
BL: Where can we see more of your photographs? DM: There will be an opening reception for an exhibit of my local images at the Owen Art Gallery, Gould Academy on Friday, July 1st from 7-9 pm. I will also be in the gallery on Saturday, July 2nd from 9am-4pm and hope people will stop by. Western Maine Guide Service with Bob Harkins and Laurin Parker
Ten years ago this May commerce in Berlin NH discontinued the practice of dumping waste into the river on a daily basis â&#x20AC;&#x201D; which significantly affected the avid fisherman of the Upper Androscoggin. Every spring since, unsullied snow melt has cascaded through the watershed bringing new life to the river and surrounding areas. Burgeoning interest in the renewed possibilities for first rate fishing in the Andro and its tributaries has enticed anglers from around the country, creating demand for reliable local guide services. As we all know, nature abhors a vacuum and some first-rate local outdoorsmen have 12

jumped at the chance to help visitors (and other locals) find the sweetest fishing spots. Bethel Living went to speak with Registered Maine Guides Bob Harkins and Laurin Parker to find out about their new business adventure: Western Maine Guide Service. Bob and Laurin began working together a year ago with several drift boats, a great deal of respect for nature and a tremendous passion for fly fishing. Parker is a serious student of every aspect of the sport, studying and reading as much as he can about fish behavior and feeding, the science of fishing and the ecology of the river. Parker shared a few insights into how temperature and barometric pressure effect where fish exist in the water column. Summer Passion in Bethel by Cheryl Gillespie
I have skied behind my husband since 1968 when we were high school sweethearts. Through school, work, babies and family skiing I tried to catch up with him on the slopes but never quite could. My husband is a passionate skier. He hits Sunday River when it opens on Halloween and closes it down with a heavy heart on the last day in the spring. Having an undergraduate degree in psychology, I good-naturedly allow him to keep his ski equipment around the back door of our house well into the summer, even though we get some odd comments from visitors. For the past six years we have enjoyed owning a condo in the Bethel area. I appreciate gentle skiing when the conditions and weather are good and love the snowy mountain scenery, but have discovered that summer is now my favorite season. There are numerous outdoor activities to pursue — from swimming to hiking to golf, but there is one activity I absolutely love — kayaking. Being a small person, I glide along in a kayak with ease. My husband, being what my family always affectionately refers to as an “able-bodied man,” has a higher center of mass, so he doesn’t glide along as fluidly as I do. When we are kayaking on a river or lake, he finally has to follow me. The greater Bethel area has a wealth of incredible kayaking venues, all featuring a different perspective from the austere winter vistas. The mountains we look down on from the slopes rise deliberately into view as we kayak through June, July, August and a good part of September. Shades of green and wild flowers replace the snow-tipped pines, a verdant version of beauty which promotes rejuvenation. One favorite paddle starts by taking the Bethel Outdoor Adventure shuttle over to West Bethel — the launch spot for a two hour trip down the Androscoggin River ending back at their campground. If you wish, they will shuttle you and your kayaks to Gilead where you can indulge in a four hour idyll. The river is lazy and scenic in midsummer. There are forks in the river where you can detour around an island searching for a sandbar to enjoy a picnic and a

At times the water becomes shallow or is filled with felled trees. If you are light in your kayak, you can float over these situations, then hang onto a branch and daydream while others have to portage a short distance. Another fantastic spot is North Pond on Route 26 in Locke Mills, a section of Greenwood. From the boat launch at Greenwood Shores, we travel past small islands through water covered with pond lilies and
brook lilies. As the kayak scoots through the white and pink blossoms you feel as if you are floating across a Monet painting. On one outing, we saw loons, ducks, Canadian geese and sun-basking turtles. Later we slipped beneath a branch ten feet below an eagle as he waited for his lunch to appear. Many places in and near Bethel provide day rentals of kayaks if you do not own your own. Sport Thoma, Bethel Outdoor Adventure and the Pleasant River Campground all have a good selection of kayaks and offer shuttle services. The Hub in Locke Mills rents as well. I am hooked on kayaking, and Greater Bethel is the perfect place for my new passion. Although I do not presently feel the need to keep a paddle at the back door of our house during the winter, I do count the days until summer arrives, when I can go gliding out on the smooth waters again.

Summer Recipes INGREDIENTS • 1/3 cup fresh cilantro leaves • 4 mini sweet bell peppers, thinly diagonally sliced • 1 large shallot, thinly sliced • 1 jalapeño pepper, thinly diagonally sliced • 12 ounces jumbo lump crabmeat, shell pieces removed • 2 1/2 tablespoons mayonnaise
Crab & Heirloom Tomato Salad
• 1 teaspoon grated lime rind • 1 tablespoon fresh lime juice • 2 pounds heirloom tomatoes, sliced • 1 1/2 tablespoons extravirgin olive oil • 1/4 teaspoon kosher salt • 1/4 teaspoon freshly ground black pepper • 1/4 cup small fresh basil leaves
DIRECTIONS • Combine the first 5 ingredients in a large bowl. Combine mayonnaise, rind, and juice in a small bowl, stirring with a whisk. Add mayonnaise mixture to crab mixture; toss gently to coat. Arrange tomatoes on a serving platter; drizzle with oil. Sprinkle tomatoes with salt and pepper. Mound crab mixture over tomatoes. Sprinkle with basil leaves.
Haricots Verts and Grape Greek Yogurt with Warm Tomato Salad with Crème Black and Blueberry Sauce Fraîche Dressing INGREDIENTS • 1 pound haricots verts, trimmed
INGREDIENTS • 2/3 cup frozen blueberries
• 1/4 cup finely chopped fresh basil
• 2/3 cup frozen blackberries
• 2 tablespoons minced shallots
• 1/2 cup water
• 2 tablespoons fresh lemon juice
• 1/4 cup sugar
• 2 tablespoons crème fraîche
• 2 tablespoons fresh lemon juice
• 1 tablespoon honey
• 1 tablespoon butter
• 1/2 teaspoon salt
• 2 cups plain 2% reduced-fat Greek yogurt
• 1 pint grape or cherry tomatoes, halved • 1 tablespoon pine nuts, toasted DIRECTIONS • Cook haricots verts in boiling water 2 minutes or until crisp-tender. Drain and rinse with cold water; drain. • Combine basil and next 5 ingredients (through salt) in a large bowl, stirring with a whisk. Add haricots verts and tomatoes; toss gently to coat. Divide mixture evenly among 6 plates; sprinkle with nuts.
DIRECTIONS • Combine first 5 ingredients in a small saucepan. Bring mixture to a boil. Reduce heat to medium-low; gently boil 10 minutes or until sauce thickens. Stir in butter. • Spoon 1/2 cup yogurt into each of 4 bowls; top each serving with about 1/4 cup sauce. Serve immediately.

the weekend of fun and games begins — with a campsite contest that awards prizes for themes like ’Most Original’ and ‘Most Primitive’. As the weekend progresses youngsters vie for honors and bragging rights in a scavenger hunt, a coin scramble, a coyote calling contest, an eel race and a fishing competition. They event even has its own auction. Of course, everyone gets their turn: one contest reserved for the elders bestows kudos for the longest, most unique, cleanest beard. A few years back folks from 26 different states and 2 provinces traveled to Olson’s jamboree to take stock of over 25 scheduled demonstrations, 30 exhibitors, an auction, story telling, a dance and a church service on Sunday. Food vendors provide a wide
variety of delicious treats throughout the weekend as visitors wander from chain saw carving exhibitions to dog training shows to arts & crafts and T-shirt printing booths; leashed dogs are welcome to attend. So take some time this August to join in one of the most eccentric summer gatherings in the state: the 40th Annual New England Trapper’s Weekend. When someone is planning an outdoor event in the Bethel area one of the first people to hear about it is usually Neil Olson. He is, after all, the man who brings the tables, chairs and dance floor — the guy that puts a big tent over everything — then strings up some lights. As the owner of Olson’s Tent Rental he has helped plan and bring off quite a few parties for other people in his time. But the most unique festivity held in Bethel every summer is the 24

one he has hosted for the past 39 years: the Annual New England Trapper’s Weekend. As Olson hovers over a plush beaver pelt, carefully cleaning and stretching it on a circular template, he muses about the trapper’s pursuit and how the vocation is passed down through families in a way that harks back to earlier times. Sure, he contends, the trappers weekend features two full days of short lectures on topics like “Post Set Variations” and “Coyote Trapping” — but the main thrust of the get-together is making sure families and their kids have a great time. Most everyone sets up in the camping area, which is where

Edible Bethel, Amanda Moran’s project to grow fruits, fresh greens and herbs in planters and small plots along Main Street for distribution through the Bethel Food Pantry and other outlets is gearing up for another busy growing season in 2016. Their mission is to get everyone and anyone to utilize the garden and planters and pick their own food at no cost. The group wants people to identify with where their food comes from, and how great it tastes when fresh from the ground. Overflow from the Nabos garden goes directly to the local food pantry. This undertaking has grown into a broad based community effort involving many organizations and individuals providing time and material donations to help fight food deprivation in the Bethel area. In addition to the abundant food harvested from planters and gardens in downtown Bethel last year, over $200 in cash donations were collected at Nabos — a very helpful increase to the Food Pantry’s bottom line. During the season, overflow was delivered to 60 Elm Street where the Rotary hosts a free produce exchange table, open 24 hours a day. Last fall, the planters up and down
Main Street were readied for winter with help from the folks at W.J. Wheeler and a hardy group of volunteers. Media coverage in The Bethel Citizen and Bethel Living drove a spike in traffic
on the Edible Bethel Facebook page, which was complimented by the creation of a new app showing users what was growing where. The student who created the app even won scholarship money as a reward! Meryl Kelly assisted Amanda at a presentation for the Senior College, then followed up by securing grants for over $1,000 in aid placed directly into Edible Bethel’s budget. Those grant dollars will go a long way toward maintaining the website, buying placards for plants, adding new planters and the purchase of soil, tools and seedlings. Volunteer time and donations, such as those from Northern Roots — which generously provides seedlings at no cost — are key to the success of Amanda’s vision. CPS 5th graders pitched in at the early season planting rally, as did Key Bank employees and many other supporters. Holidae House is clearing space, and The Congo Craftsmen donated five additional planters that will be placed outside The Gem, the Bethel Area Chamber of Commerce and the Congregational Church. True North Adventureware has cleared space for an in ground garden at their Rt. 26 location, adding another generous plot and increasing the potential for a truly bountiful harvest. Look around town this summer and you will see all the brightly colored watering cans and beautiful planters stenciled with the Edible Bethel logo. Each planter box will have one type of plant, i.e. basil, with different varietals as a complimentary crop. In ground gardens at Miss Miina, Nabos, and the Philbrook will continue to offer a larger assortment of produce. Gardeners in the area, as well as those concerned with the health of their neighbors, are all joining together this season for another push to provide healthy foodstuff in a way that beautifies Bethel and shows our summer visitors that this area cares.
