uch an equation came to light when we at Cream were recently invited to drive Ferrari’s very latest 599 GTB Fiorano – we were hardly going to turn it down, yet an awful lot must go into a car which, as this one, costs a cool £218,000. Admittedly, it would look wonderful in the driveway of the great properties we have for sale in this issue, but we think one of the world’s greatest supercars commands more of a challenge; so how about 1,000 miles then? Yes, definitely.

In fact, it was a timely offer from Ferrari for two reasons. One, it’s June, and June in the calendar of every racing anorak means the world famous 24 hr Le Mans. This legendary 24hr GT race, now in its 77th year, commands an audience of circa 234,000 people, and is a must for all committed motor sports buffs. It took only another 30 seconds to decide, that with camera car in trail, we could easily add another 300 miles to the journey to hit the 1,000 mile mark - the perfect excuse to divert and explore.

Deal done then? Not quite. For although we might arrive in great style in our ‘grigio ferro’ metallic coloured Ferrari 599 GTB Fiorano, those of you who have any experience of Le Mans will know that unless you book accommodation well ahead, and spend a good penny or two for the privilege, you may well have to ‘slum it’ in a tent. To the committed, ‘camping’ as they call it, is doing Le Mans in the full spirit of the event, but somehow that didn’t feel quite right in our Ferrari. High Wycombe based racers Team Modena, took pity and invited us along as their guests. Team Modena is the brainchild of CEO and Team Principal Graham Schultz, and is one of Britain’s top GT racing teams. Now the adrenalin was kicking in big time – not least because Team Modena were competing in their new Ferrari 430 GT race car with no less than Leo Mansell, son of ex Formula 1 World Champion Nigel Mansell, behind the wheel. With father as mentor to son it will be a weekend with the Mansell’s then. Cool. But not even the young Leo Mansell has enough

stamina to drive for a whole 24 hrs, so he was partnered by the young Russian driver Roman Rusinov and ‘gentleman driver’ Pierre Ehret, owner of Ehret wines. GREEN FLAG So the fun started with the 599, and the adventure began from the luxurious location of the motorway services car park in Maidstone, Kent, just off the A20. Envy envy, for our ‘camera car’ was the drop dead gorgeous Ferrari 430 Scuderia – not bad eh? It takes only two brief actions in the 599 to lose yourself in the world of travel by supercar; one -

a turn of the 599’s ignition key, and two the pressing of that large, red, steering mounted starter button. Those two ‘keys’ to life in a Ferrari 599 result in a razor sharp bark – deep and long – courtesy of that big V12 and 611 brake horse power. Click the paddle shift to the right hand side of the steering column for first gear, and wow….. so this is what it feels like when pedal hits the metal in a 200 mph supercar – an endless spine chilling push in the back that’ll keep your head pinned to the headrest throughout – yet we’re only two thirds the way down the throttle. Meanwhile, my passenger and co driver was busy mumbling about needing to adjust his dash mounted tom-tom to get us onto the right route, yet he seemed to be sitting there bolt upright without reaching forward to follow through his intentions. As I clicked the ‘paddle’ again, (second gear now) I enquired of my brave friend as to why he seemed to be sitting motionless. He promptly replied “I can’t lean forward until you stop accelerating!” Now there’s G-force for you! Despite his plea for mercy ignored, curiosity prompted the following question ‘what if ’ I pushed the throttle another 25% and hit

maximum acceleration! Gaol probably... but tempting. No. I’ll go back to being Dr. Jekyll and save Mr Hyde for later, so 70 mph cruising it was... yawn... whilst remaining content on admiring just how amazingly refined this 599 is; 70 mph felt like 20 mph – the car almost insulted by my slovenly pace – to think that this car was capable of nearly three times our speed was rather daunting... and tempting I’m afraid. The diversion took us via XYZ – proving a great opportunity to explore both the handling and overtaking ability of this ‘big Ferrari’. Suffice to say, you live in a different motoring world to everyone else when behind the wheel of a 599 for its pace is remarkable – its ability to catch

determination to show solidarity by staying awake with the team I dropped in a heap by 3.00 am, whilst they were buzzing like flies. Amazing. But no more so than when Leo Mansell crossed the line in a very credible seventh place pictured right in the middle of the winning LMP1 Peugeots, to much excitement and glee in the team Modena pits. So Schultz achieved his goal. CELEBRATIONS A great time was to be had by us all in the Team Modena hospitality tent. Graham Schultz’ predictions had come to light. He even got a shake of the hand from Mr. Luca de Montezemolo – yes, the President of Ferrari. Nigel Mansell ushered in Prince Michael of Kent to congratulate the team – Champagne and a great sense of achievement overwhelming us all.

Leo Mansell looked pensive – it was his first ever Le Mans drive. Nigel Mansell was pensive too, but focused, gained only from

many years of successful top level racing. Dad knows what he’s doing. And so do Team Modena, witnessed by the genuinely gruelling dedication of its team under the direction of team manager and guru Hans Muelhbauer. Despite my

He admits to an unhealthy obsession for buildings since childhood; he studied the history of them at Cambridge, has lit them, designed everything in and around them and written about them. Grand Designs Great British Refurb campaign – www.greatbritishrefurb.co.uk – is a huge, not-for-profit, joint effort to persuade the Government to help finance the refurbishment and retrofitting of our existing homes through all kinds of clever schemes, tax breaks and incentive schemes. There are more than 26 million homes already in existence in Britain, most of which are intensely inefficient, leak heat and cost a fortune to run. The Great British Refurb is also

a rallying cry to the construction industry to adopt innovative insulation and construction techniques, and to architects and surveyors to get involved and work with communities to design tailor-made neighbourhood refurbishments. The challenge is scarily big. To reach the 2050 target, we believe that by the end of 2010, Britain needs to have retrofitted 50,000 homes to low-carbon standards. By the end of 2011, another 100,000. By 2020 we need to be refurbishing 1.6 million homes a year. That should keep the construction industry busy. But it’s going to need a phenomenal change in attitude, financing and building culture. Which starts here. With Grand Designs Live. WHY DID YOU GET INVOLVED IN THIS PROJECT? I often film homes like this for Channel 4, where the owners invest in a building that’s airtight and heated by passive solar radiation, a heat recovery unit and solar panels. There’s no boiler, no size 16 carbon footprint and an energy bill small enough to get lost in the shag pile tufts of the eco-carpet

in the hallway. These are houses that lead the way in energy efficiency and low-carbon life. All very green and all very Grand Designs. Which is all very heart-warming but, frankly, a TV series of six more-or-less-sustainable buildings is not going to save the planet. Not when there are more than 26 million homes already in existence in Britain, most of which are intensely inefficient, leak heat and cost a fortune to run. What’s even more sobering is that the vast majority of these will still be in existence in 2050, the magical date by which the Government wants to have reduced our countries carbon output by 80 per cent. Given that housing accounts for around 27 per cent of Britain’s man-made carbon dioxide, I’d say that target is currently hopelessly unrealistic. Unless, that is, we can find a way of transforming those 26 million homes into super-eco-performing dwellings.

SO HOW CAN WE ACHIEVE GREENER LIVING? Greening your home is primarily about reducing its energy consumption. It’s so easy to do nothing. Just how many of you have meant to change your lightbulbs to energy-efficient bulbs, but just haven’t got round to it? Small changes really do make a difference – if everyone changed their remaining traditional lightbulbs to energy-efficient ones this would provide enough electricity to power every house in London for 11 months. Plus, we’d all have more cash in our back pockets – saving energy means saving money on bills, too. It’s a no-brainer.

WHERE CAN WE START? Well, the initial steps are easy and will really make a difference to your energy use and your wallet: • Insulate, insulate, insulate – nearly 50 per cent of a home’s heat is lost through its roof and walls. • Double glazing – If you currently have single glazing in your home, 20 per cent of your heat goes straight out of your windows. Installing double glazing will save up to £140 on energy bills. • Replace your old boiler – swapping an inefficient gas guzzler for a condensing model could save you a third on your heating bills. • When you replace your old appliances, go for A-rated products (A+ or A++ for fridges and freezers). They use far less energy and are therefore cheaper to run. • Turn off your standby – we all waste around 8 per cent of our electricity bill because we haven’t turned off at the wall.

WHAT FEATURES SHOULD YOU INSTALL THAT WILL GUARANTEE A GOOD RETURN ON INVESTMENT IF EVER YOU WERE TO SELL? You need to think about investing in the economy of the building. People often make the mistake of building complicated homes; meaning when they sell it people can’t look after it. You should really be thinking about the flexibility of the building, forging a connection with the environment. Ultimately, you should be investing in features to reduce your energy consumption so you have a building that is cheap to run and easy to look after. SO WHAT ARE THE NEXT STEPS? Plenty of us are interested in getting free hot water and electricity from the sun, for example, but cost is often a barrier – a typical photovoltaic system can cost £14,000. Once installed, though, your energy bills will be greatly reduced – as will your carbon footprint. And that’s the issue.

t’s manic to say the least!” exclaims Louis Mariette, when I catch up with him at his Sloane Gardens studio. This, of course, is not a complaint but the way he likes it, in fact he positively thrives on the pressure. Milliner to the stars, TV show judge, artist and tireless charity worker, Louis has a clearly defined philosophy: the combination of passion with hard work is his core value in life both professionally and personally.

‘I

“At the moment business is as successful as it’s ever been,” he tells me, “despite the current climate of recession. It’s partly because of a huge new client: Net-a-Porter has bought our whole ‘Bejewelled’ collection.” Before we get onto discussion of this fascinating revelation, though, he goes on to add: “and, darling, I’m just doing a little bespoke hat for Joan Collins.” The “darling” in this doesn’t indicate to me that Louis is a fluffy fashionista: I know him better than that. We’ve interviewed before and as a result, not unusually for him, evolved a friendship that allows me to see deeper under the surface “darlings” and exclamations (frequent) of “how faaabulous!” The thing about Louis is, he means it. He quite simply loves what he does and, equally, those for whom he does it. He doesn’t drop names but simply states the facts: he’s designed for many of the celebrities of the day but those of whom no-one hears in the press are just as precious to him. “I just adore ladies. I put them on a plinth – I always did, ever since I was the little boy playing with a Barbie doll! I think the world of women.”

To look back at this surprising early influence means taking a look at a wider picture; one in which Louis emerges from within an exotic Mauritian background and a childhood in Botswana and Swaziland, surrounded by colour and flowers, the natural world a constant source of inspiration and wonder to him. Even now, much of what he creates in the fashion world owes its origins to a colourful horticulture, an influence that is evident everywhere within his fantastic “Bejewelled” collection of headpieces and accessories. “I’m always evolving creatively though,” he points out, “and I think the collection reflects that sometimes less is more. There are more elegant, discreet pieces than you might have seen in some of my more flamboyant hats.” It was this gorgeous collection that caught the eye of the giant Net-a-Porter brand and which has caused the current “manic” element to add itself to a professional life already giddily successful. In his exotic studio just off Sloane Square Louis has been creating wonderful and unique hats for many years, always with a very clear philosophy and an unerringly creative instinct combined with a true craftsman’s talent. “These days, accessories are huge,” continues Louis, “and in this climate they have to have a multi-functional aspect. People need really to look at themselves in the mirror and find what works for them.” He advises clients to have someone with them who they trust, to advise and make objective judgements. “I don’t want someone to walk out of

my studio feeling either over- or underdressed, and sometimes it’s good to have a critical or gentle view from another person. Honesty is very important. “Ask yourself, what type of look do I want to take on? When you get this right it helps with self-esteem, confidence and we all need that sometimes.” The beauty of the “Bejewelled” collection is that it transcends all ages and fashions. “I want it to be timeless and enduring and for ladies to be able to wear the pieces at any stage of their lives.” He finds there’s an interesting new market for the collection in that many men are visiting to choose a piece as a gift: “So much more thoughtful and original than a bunch of flowers or box of chocolates.” Within Louis’ bespoke service lies far more than simply a surface aesthetic: his concern for who the client really is is completely genuine and there’s a high degree of psychology in what he offers. “I create for the personality of my clients. No one looks good if they don’t feel good.” To this end he will go to any lengths, including working with top make-up artists and with hair stylists at their salon, to see whether a particular piece will work with a hair style for an important event.” But though indefatigable in the pursuit of perfection, Louis never sees what he does as work but as “passion, the enjoyment and energy that I put into my projects.”

Little wonder then that recent assignments include working on a prestigious project with the Royal Opera House, and he’s excited to have been asked to design the new identity for the 2010 Chelsea Flower Show. The theme will be based on one of his favourite flowers, the clematis, probably in a piece using his favourite Swarovski crystals. “The piece will be worn on the press day by either a top model or a ballerina,” says Louis, “and I’m especially thrilled as the Chelsea Flower Show is something I love and is of course just round the corner from where I work.” This year, as many devoted fans will know, Louis acted as one of the three judges on “Britain’s Next Top Model”, and characteristically had a ball doing the show, into which he threw himself with customary enthusiasm. Alongside model and “Strictly Come Dancing” star Lisa Snowdon and the renowned Icelandic fashion photographer Huggy Ragnarsson, Louis steered the twenty girls who had already survived the weeding out process from the thousands who originally applied, through a number of daunting tasks, assignments and challenges. These included the recreation of one of Louis’ iconic fashion images, his Princess Neptune Hat shot underwater, as well as an ambitious shoot in Huggy’s native Iceland featuring many of Louis’ hats. “I was never going to look simply for a two dimensional figure who photographs

well,” says Louis of the competition. “I would apply all the same principles to a career as a model as the ones I do to my own. While it was heartbreaking to send people home, they’d already done so well to get to the last twenty and the TV show itself. Anyway, I would always give the same advice. It’s down to them to take their career to the next level. “You will always get there if you want it enough. I’d advise them to have an over-active imagination, dream hard and that every moment is worth it. Rejection is par for the course but is no more than just a way to dust yourself down and go again. Set goals: say to yourself that in x months I will have done this or that, met x number of people. Also do your research and know your products, your brands, so that when you go to a casting you can speak knowledgeably and with integrity. I don’t see models as a bimbo stereotype but modelling as a serious career and a job into which to throw yourself wholeheartedly. Put people, role models in as your incentives – learn from them and why they were so successful. I look for intelligence, for someone who could contribute, possibly as an ambassador for charity.” Winner Mecia, he says, showed these qualities with abundance: “She took an interest in every aspect of the show; stylists, clothes, photographers and all with huge enthusiasm. Those are the qualities which differentiate in such a competitive world.” I’m already aware of how much he contrives to contribute to charitable work himself, and our interview draws to a close with my enquiry about what this comprises currently and it’s then he tells me of his appointment as Vice President of The Children’s Trust. Modest about his contribution, Louis nevertheless views his work as the opportunity to draw attention to the huge need in this instance for the spotlight to focus on the horrific accidents and birth injuries with which children and their families have to contend, often as unsung heroes in desperate need of help. “This,” he says, “puts so much about the fashion industry into perspective and it’s for this reason that I perceive it as an opportunity to highlight these issues and make a difference.” Perhaps only Louis could do so with quite such aplomb, indomitable enthusiasm and infectious joie de vivre.

ntalya is perfectly positioned on the southern seaboard of Turkey and was once a major Mediterranean port. The Romans built the harbour and, according to the Bible, the apostle Paul took ship here in the course of his grand missionary tour of Asia Minor. The emperor Hadrian also visited the town, and the great arch that was built in honour of the occasion is still the pedestrian gateway to the old heart of the city. This part of Antalya is known as

A

Kaleici, which means “within the walls”. It was founded in the 2nd Century B.C. by Attalus, a king of Pergamom who named it after himself, and why not? Before it went under Ottoman rule it was occupied by the Romans, Byzantines and Seljuks. Antalya’s dramatic history has left quite a legacy and so visitors who know nothing of fighting for ideals may find themselves in awe of the Turks love for their city. This is apparent by their passion for music, food, football and their overwhelming charm and

friendliness. Antalya has risen hugely in popularity over the last 10-20 years and so the “Turkish Riviera” has seen an explosion of property developing and golf course creating to cope with the demand from sun worshipers, golf lovers and culture vultures. This is a very good choice for enjoying a long, hot summer with sandy beaches where you can play, swim and watch the loggerhead turtles. panoramic view from my balcony of these giants and on that cool day in early March, the weak afternoon sun bestowed a little of it’s magic by highlighting their snowy caps. The hotel offers meeting rooms, bars, lounges, 10 restaurants, spas, sporting facilities, children’s rooms and entertainment. Have I left anything out? Probably, there is so much. To get maximum enjoyment from your resort it

may help to be crazy about golf and set yourself free on the 18 hole national competition standard golf course. Calista organised the 3rd annual Calista PRO-AM Gold Tournament bringing together many famous names in the golf world. In fact there are 12 golf courses in the surrounding areas, some of which are of national competition standard. I heard on the whisper that the world championships in 2012 may be held here. This is a

golfer’s paradise, but when you’ve had enough of paradise you can exchange your clubs and plus fours for your bathers and dive into the absolutely divine swimming pools or just enjoy the other wonderful things on offer. Not being of a golfy nature I opted for the Hamam Turkish bath instead of tearing off a round, so good with great jugs of very hot water, foamy soapy suds and stretching out on the warm marble tables. Then there was the massage. Well if only I had stuck to the golf I probably wouldn’t have been put on the slab, had my pants rolled down and my shy buttocks pummelled into reluctant submission.

Or maybe this happens with all the activities. Apart from the embarrassment factor and alarming amount of nudity it was sort of nice, once I’d given in, stopped muttering under my breath and placed my thoughts elsewhere. Oh, get over it. Actually, the Callos Spa, “Sanita per Aqua”, is really lovely. The lighting is low, the music is soft and dreamy and all the areas are pristine and glowing

without feeling over sanitised. The staff are kind, helpful and just there if you want them without being too obvious. The Spa is renowned for it’s skills in all types of body care massage techniques and uses the “highest technology and up-to-date world brand equipment”. The swimming pool down there is absolutely gorgeous, in fact “swimming pool” isn’t really a good enough word for it.

The Turkish word is “Hazav”, maybe that’s better. The pool is full figured and deep. There are under water lights sending out rays of pink, green and blue and wallowing in it was a privilege. The main holiday season here starts around April with the Russians usually being the first on the scene. The thoughtful rooms and villas are extravagantly

furnished with plush textiles and decorated with tasteful wall coverings and very good art. Over 10 kilos of gold have been used and it winks warmly from the walls and accessories. Areas surrounding the villas and private pools have been attractively and fragrantly planted with lavender, rosemary, citrus trees and many other lovely shrubs. The villas come as “standards”, and then there are 18 Corner Suites, two Presidential Suites and one Royal Suite. Visit “Calista Luxury Resort Hotel Belek. Antalya. Turkiye” to have a really good look. These villas would make excellent second homes for professionals,

people with retirement in mind families in search of a retreat or a change in lifestyle. They are a good investment thanks to local pricing and the sterling holding up well with the Turkish lira. The current exchange rate is around £1 to 2.27 lira. There is also the potential for a stable rental income. At some point you are going to have to eat. With so many restaurants to choose from you might need help deciding what to have. So here’s a taster of what to expect: Sakura is Japanese with exotic delicacies from the Far East. Timo is Italian with a typical selection of pastas etc. Turca has old Ottoman specialities, More is where to go for a taste of the sea.

La Carne is for spice loving foodies. There are also beach snacks of salads, fast foods and pastries and Cafe Calista is bursting with Austrian cakes and aromatic coffees and teas. To wash all this down you might like to visit one or more of the 8 bars. There is so much choice, from the piano bar, disco, swimming pool bar, cocktail bar, Amphi bar for live music, Bowl is where you can play billiards and bowl while you imbibe or there’s the jazz bar and finally you might fancy sitting out with the sea and elements in Brezza where you may have hot or cold drinks brought to you to quench your thirst. The thing is, the only way to really get the very best out of all this

luxury is by being with the right people. This trip to Antalya and Calista Luxury Resort was put together by Seda Aslan (of Seda Consulting, www.sedaconsulting.co.uk). She is the first Turkish woman I have met, and it was about time too. She was completely caring, helpful, funny and just a real pleasure to be with and I consider myself very lucky to have been a part of it.

arcus Wareing is happy. That, he confesses, is a new thing. A year or so ago and he would have been bitter, angry. Reports of the time certainly suggested as much. His one-time friend, best man and boss, Gordon Ramsay, was the subject of some considerable invective. Wareing said he couldn’t care less if he and Ramsay never spoke again. Wareing had broken away from Gordon Ramsay Holdings and the resulting legal action saw London’s Berkeley Hotel cancel its arrangement with Ramsay for its in-house restaurant Petrus and, autumn 2008, hand the premises over to Wareing. ‘Marcus Wareing at The Berkeley’ was born. And with it, it seems, Wareing was re-born.

With his brother setting up a catering company, the move towards some job in hospitality may have seemed inevitable. “I didn’t know how to get anywhere else. I didn’t know what opportunities there were. I never got career advice. My dad’s was the old-fashioned philosophy of getting out of bed at six in the morning and going to work for the day,” says Wareing. “But my dad and my brother were my mentors. And for me to achieve what I want to achieve I have to mentor young people around me too. If you have a driving ambition to get to the top then you can’t do it alone, so you have to mentor people.”

“Yes, I’m happier than I’ve ever been – because I’ve split,” as Wareing, soon to turn 39, puts it with a twinkle. “Going it alone was always a goal and always something I was going to do, regardless of what people think, I just followed it through. I’m happy now because I wanted it for my family, to move onto the next chapter. And now I don’t have to answer to anyone. I don’t have to be dragged into someone’s office to explain anything anymore. I’m no longer a puppet. Employees are not puppets. It’s like customers who treat staff like servants. We supply a service – we’re not your servants. That’s one message I do make quite clear to customers who do behave that way.

That ambition, or perhaps a kind of contamination from past acquaintances, has left Wareing with plenty of fighting talk and the occasional liberal use of the f-word himself. People may be out to knock him, be they critics or customers, but he takes it on the chin. “I don’t believe that any critic isn’t influenced by their opinion of the

and, no matter how hard you try, you can’t please them. My message to them is that they shouldn’t put themselves through the agony of sitting here eating food they don’t like. Just go. Some people just don’t want to be happy. But don’t blame me for your bad mood.” It is more likely to be chefs in bad moods these days. Wareing concedes that times are tough for any restaurateur, with the market changing rapidly. He reckons that there will be no climbing out of the recession – that the industry (and everyone else) needs to adapt to the current situation as the new norm and focus on giving maximum value – “ignore the situation and move forward. You need to find the inspiration to be positive, to take inspiration from people like President Obama who gives a fantastic

speech.” He sees the celebrity chef culture as necessary to give the industry “cool, a touch of rock and roll”, while not being much of a fan of it himself – “the more you’re on TV, the less time you’re in the kitchen”. While he notes that any established foodie survey, the likes of Michelin or Zagat, are important guides, the internet’s blogosphere is increasingly influential, turning any diner into a potential critic. And restaurants, he says, are in danger of losing sight of their core purpose: to provide great food. “There is more to restaurants than food now: there’s a level of expectation of the address, the designer, the table space, the music. I wish it were just about the food. It’s gone beyond hospitality,” says Wareing. “It extends from places abroad that have had millions thrown at them

and you always have to compete with the next big thing. But I do think that comes at a price for hospitality and the real reason why chefs are here is to cook, not to work in a beautiful place.” Wareing’s five years at the Grill Room at the Savoy Hotel – currently undergoing refurbishment – has already assured him a footnote in restaurant history, with the establishment more than a century old, likely to be around in another century and Wareing winning it its first Michelin star. “I’ve been a link in a very long chain there,” he says. But there is a sense that he wants so much more. He speaks of wanting The Berkeley and his role there to be remembered by future generations of chefs, simply “as someone who never turned his back on the fact that food and being in the kitchen is what brought me to the job”. He speaks, not quite grandiloquently, of being in the hands of destiny – and that it is destiny that will decide whether he wins his third Michelin star, a plaudit past interviews have presented Wareing as being zealous to achieve, if only to match Ramsay, but which he claims is no deal-breaker for him. “If I get it, then great. If I don’t then I just have to move on. Would I be bitterly disappointed? No,” he says. “There are many chefs in this country worthy of three stars who don’t have them. Many. And to give out three stars to a restaurant from day one is, I think, a strange thing to do. Are you saying Raymond Blanc can’t cook three stars? I say he can. Have you got to be a super-chef, a global power, to win that third star? Are you saying that a chef with three stars at several restaurants around the world can hit that level at all of those restaurants, as good as one man with one house? I’m not so sure about that. The concept of the guide has maybe changed. But you can’t get het up about it. You’ve got to enjoy your work. If you’re destined for it, it will happen.” All of which may do nothing more than suggest a man who is certainly driven, but who also spent time straightening out his priorities. But there is some kind of tussle at play ➛

here. He speaks with self-knowledge: of, for example, his having few friends, less out of self-sufficiency as having found all the friendship he needs in his wife (currently also his office manager) and three children – they, alongside cooking, offer him completion. But then he lurches into speaking in the third person, as though he was detached from himself, as if there was some split between the man focused on the fundamentals of food and family and the man needing a spot on a plinth. “People say that Marcus Wareing is ambitious,” says Marcus Wareing. “Marcus Wareing has ambition, a wish-list of things he would like to achieve in his life, of which a third Michelin star is just one ...” Wareing is a complex, contradictory character, and all the more rounded an individual for it. But, despite more than two decades in the industry, there is a sense that he is only just getting started. He claims to be most content cooking, but it is hard to imagine kitchens containing him. Perhaps inevitably, the fast-fading shadow of recent times returns to conversation. “Gordon was always destined to be bigger and better than everybody else,” says Wareing. “When some people walk into a room, you know they’re there. He has that. Marco Pierre White has that. They’re larger than life. When I cooked for the Queen this little 80-year-old woman came into the room and, still, you knew she was there. I don’t have that. But I do actually like getting up in the morning and enjoy coming to work and cooking. It’s where I feel I’m at my best, where I’m at home. I cook and run restaurants. And that’s what I’m good at.” THE QUESTIONNAIRE How would you describe your style of cooking? “I’ve generally worked in French restaurants but the rest of it is just me and how I see and enjoy food. It’s very personal. Classically-based with today’s way of doing things”.

What’s been your worst kitchen disaster? “That has to be when I was at St. James’ and we kept losing power, which it would do regularly throughout summer. No air con and just gas and candles. You put candles on the tables for the customers and they love it – it’s intimate. But we were really suffering downstairs. We would call the office and hope that they’d tell us to close, but no – they’d tell us to carry on.” Best moment of your career to date? “Winning the first Michelin star was one of them because it never entered my head to even try for it. I was bowled over – a very emotional feeling. But signing this deal here [at The Berkeley] and getting into the driving seat was very special. It had been a long, long dream and one that doesn’t always come true. Your shackles are off. It’s the biggest challenge and the most stressful – but I love it. I’d recommend it to anyone.”

Favourite ingredient? “Salt – because it enhances food. I couldn’t live without it. I prefer Maldon. It’s the most delicate, the flakes melt in the mouth, it’s great for finishing meat or fish and has the perfect crunch to it.” Favourite restaurant? “Any place that serves a meal with TLC. They all just have what I want at that particular moment.” What do you do to relax? “Spend time with my children and that’s not really relaxing by any means. I haven’t had a holiday for a long time and that’s something I’m really looking forward to. We haven’t booked it yet but we’ve planned it. For the last 18 months I’ve barely left this building. I’ve never wanted someone to step into my shoes, even for a week or two. But I’ve won the fight. I can do their job but they’ll never be able to do mine. My food is my creation so I can’t be replaced.”

What have been your influences? “There has always been a figurehead for me, whether it’s a chef, a lecturer, a restaurant manager, always someone catering-related. And then there’s the odd-one-out, which is my wife, the person I lean on and who has a different handle on things. Without her I would never have got through the last few years. People have mentors, they just sometimes don’t realise they do.” Favourite recipe? “I don’t have a favourite but I’ve had most success with the egg custard tart with Garibaldi biscuits I made for the Queen. That’s the one I’m trying to shake off but can’t. Why? Well I don’t want to be remembered for an egg custard tart, do I? That’s my biggest fear in life.”

LIME PARFAIT WITH LIME MERINGUE AND MARINATED PINEAPPLE By Marcus Wareing SERVES 4 INGREDIENTS: Parfait: 70g egg whites 120g sugar syrup 80g egg yolks 60g whole eggs 4 limes, juice and zest 250g semi whipped double cream Meringue: 60g egg whites 60g caster sugar 60g icing sugar, sifted Zest of one lime

Marinated pineapple: 1 pineapple, peeled and sliced 250ml pineapple juice 50g demerara sugar Juice of 1 lime 4 star anise 1 vanilla pod, seeds scraped and added with pod METHOD: Parfait: 1. Whisk the lime juice and zest into the cream. 2. Using the whites and syrup make an Italian meringue then fold into the cream. Make a sabayon with the eggs and syrup then fold into the mix. Fill 24 half sphere moulds to the top and freeze until firm.

Meringue: 1. Whisk the whites until stiff. 2. Whisk the caster sugar in until smooth and glossy then fold in the icing sugar. 3. Spread thinly onto a silicon mat then zest the lime over the top. 4. Bake at 80°C for 20 minutes until crispy. Marinated pineapple: 1. Bring all ingredients, except the pineapple, to the boil for 6 minutes. 2. Strain over the pineapple slices and allow to cool. To assemble: Lay the pineapple into circles in the centre of a plate, glaze with a little of the marinating syrup. Demould the parfait and cover with pieces of the meringue. Freeze until hard then place on top of the pineapple and serve.

Steinway's revolutionary designs and superior workmanship began receiving national recognition almost immediately. In 1855, Steinway pianos received gold medals at several US and European exhibitions. The company gained international recognition in 1867 at the Paris Exhibition, when it was awarded the prestigious "Grand Gold Medal of Honour" for excellence in manufacturing and engineering. Steinway pianos quickly became the piano of choice for many members of royalty and won the respect and admiration of the world's great pianists, which continues to this day.

Unlike manufacturers driven by cost and mass-production, Steinway & Sons builds its pianos to a standard, not a price. It takes a full year of painstaking, labour-intensive craftsmanship to build the piano renowned for its incomparable sound and chosen by 99 per cent of the world’s concert pianists. HISTORY Steinway & Sons was founded in 1853 by German immigrant Henry Engelhard Steinway in a Manhattan loft. Henry, a master cabinet maker, built his first piano in the kitchen of his Germany home. By the time he established Steinway & Sons, Henry had built 482 pianos. The first piano produced by the company, number 483, was sold to a New York family for $500. It is now displayed at New York City's Metropolitan Museum of Art.

CREATION When a player's finger strikes a key, it sets the key action (a series of levers connected to a felt hammer) in motion. The hammer strikes one or a combination of metal strings, which causes them to vibrate. The vibrations are transmitted from the strings to the soundboard through bass and treble bridges. The soundboard converts the vibrations into what is known as piano tone, and amplifies the notes so that they can be heard. There are over 12,000 specific parts in the

typical piano, all of which must function with ease and accuracy. Steinway has used the same unique method to make its pianos for over a century. In a method patented by Theodore Steinway in 1878, the inner and outer rims of the piano are bent into shape as a single continuous piece. 18 hard-rock maple layers, each twenty-two feet long, are used to construct the rim of a concert grand piano. The layers are coated with glue and stacked and then glued into a single form of wood in a giant piano-shaped vice. The soundboard is a large wooden diaphragm with a wooden bridge centred on its top side. The piano strings pass over the bridge, and the bridge transfers the string energy into the soundboard. The soundboard is pressed into the shape of a dome, allowing it to withstand the combined downward force of 1,000lbs from over 200 strings. Before a soundboard can be placed into a piano case, the bridge must be notched for the strings that will pass over it. First, heavy black graphite is applied to the top of the bridge. A three-pronged tool is then used to mark the points where the bridge will be pinned and notched. It takes years of training for the craftsman to know exactly

The piano rim is transformed into the piano case. A wooden brace assembly is custom fit within the rim structure. The braces fan out within the rim structure for stability and are secured into the rim by using a combination of fine joinery and maple dowels. A 340lb-cast iron plate is fitted into the piano case, which provides the rigid and stable foundation needed to hold approximately 40,000lbs of string tension. Once the soundboard and cast iron plate are in the piano case, the piano is ready for its strings.

adjustments to the hammer, which are critical to the piano's sound. A master voicer makes adjustments to the hammer's resiliency by sticking the hammer's felt with a small row of needles, reducing its stiffness and thereby mellowing its tone. If the voicer wants to increase the brilliance of the key, he will harden the felt by applying a small amount of lacquer. A tone regulator listens intently to the piano's pitch and turns the tuning pins with a tuning hammer to adjust string tension. Once the piano has been regulated, it is ready for its final inspection.

The action's felt hammers are made from a single strip of felt that is pressed into shape. Each key in the keyboard is calibrated to have a consistent feel; weights are placed on the key and lead is inserted into the body of the key until the pressure needed to push the key down is the same for each key.
