e could talk turkey, but November is also Pancreatic Cancer Awareness Month, and I’d like to celebrate the memory of my dad. I lost him to that awful disease, and My sister and I facing a fear helped me cope with gobbling up our last the heartache. A few days after Thanksgiving with Pop. Pop died, I took my kids to Liberty Science Center, slipped into a safety harness, climbed up to a steel I-beam 18 feet in the air, and walked across it—no small feat for someone really scared of heights. My palms pumped out sweat, my heart raced, and I could barely breathe. But after losing Pop, I was so numb and terrified of what life ahead would look like that I weirdly wanted to do something that terrified me in a different way. The science center was one of his favorite spots, so this seemed like the exact right thing. As I found out, facing fears head-on can help build resilience. Exposing yourself to a safer or more manageable stressor or fear can increase your sense of control and lower your anxiety in the face of other stressors and fears. Ideally you do a scary thing before a more traumatic experience, which is kind of what I did. I had known Pop was going to leave us, but his death wasn’t quite as traumatizing as having to learn to live without him and with this ache in my chest. The experience was thrilling, horrible, and wonderful, and it helped me feel alive, invigorated, and a little more able to handle all that came next, including the funeral, the eulogy, going back to work, and my kids’, my mom’s, and my own grief. It’s hard to remember that God’s got us when the worries of life pop up fast or in the middle of the night. Sometimes I lie awake and start thinking about my grown-up kids out in the world. Are they safe? Are they driving home late at night? Are they eating healthy and getting enough sleep? I try to stop the worries quickly by remembering that God loves them more than I could ever love them—a truth I believe but find hard to grasp. He does love each of us more than any person could, and that means we can completely trust Him. Is trusting God the key to battling those worries like a warrior? The answer is yes. God shows up for us all day, every day. Trust Him. He will certainly care for you.

The steel bridge’s wooden deck spans just 75 feet.
Meet what may be the smallest (and cutest!) suspension bridge in the U.S.— and possibly the world. Rumor has it that the name of this pedestrian bridge, built in the 1930s, came from members of a Girl Scout troop who walked across it and proclaimed that it wiggled. After a (very) short walk across the bridge, visitors should head to the Wiggly Bridge Distillery. Its souvenir-worthy bottles feature an intricately etched illustration of the tiny bridge by artist Steven Noble.
Thankfully, this London Bridge isn’t “falling dow n.”

Brooklyn Bridge officially opened in 1883.
When the city of London decided to remove and replace London Bridge (the version built in 1831), they sold it in 1968 to businessman Robert P. McCulloch, Sr., who hoped to attract visitors to his latest development, Lake Havasu City. Each block was numbered, and the bridge was relocated brickby-brick across the Atlantic.

When the bridge’s chief engineer, Washington Roebling, became too ill to work on-site in the 1870s, his wife, Emily Warren Roebling, stepped in to assist him in the bridge’s completion, making her a crucial part of its construction. Built circa 1697, this stone bridge, also known as the Frankfort Avenue Bridge, is the oldest roadway bridge in continuous use in the U.S. It’s been said that a messenger from Boston traversed it to alert Pennsylvanians of the Battle of Lexington, which signaled the start of the American Revolution.
Most bridges are built to get you to the other side. But this beauty, which sits 956 feet above the Arkansas River, was constructed in 1929 specifically to offer visitors a 360-degree view of Colorado’s breathtaking canyon.

y 73-year-old father was dying of multiple myeloma in a hospital in Cleveland, a couple of hours from where my parents lived, in 2014. My mother, then 72, couldn’t afford a hotel long term, so she was driving four hours round trip to see him daily—and with the stress, she wasn’t eating well or sleeping much. I knew I had to relieve some of the stress on my mother, or I could lose both parents. My friend Rob—well, my ex-boyfriend, really—lives in the Cleveland suburbs. Rob and I dated for eight months in high school. I bruised his teenage heart when I broke up with him, but somehow he didn’t hold a grudge. We’re both happily married to other people, but we touch base every few years, and when he
learned of the toll my dad’s situation was taking, he invited my mom and me to live in a beautiful condo his family owned on Lake Erie. It was such a calming place to be together while my father was sick. We’d wake up in the morning to the sun shining on the water. We slept better. We cooked healthy food. And because we were only 15 minutes from the hospital, my mother never missed another doctor’s rounds for the three weeks until my dad finally passed away. That condo saved our lives. Rob showed us so much trust in letting us use his place, no questions asked. I still can’t believe the generosity he showed us.

ow to cover college was a huge financial worry for my family. In high school I saved all my money from my job as a lifeguard, while my single mom bartended at three different places just to add a little to my college fund. In our tiny town of Neodesha, KS, most of my friends were in the same boat—poor and stressed about finances. Some had given up on the idea of college altogether. I’d been accepted at Wichita State University to study dental hygiene, but seeing the bills on paper was very scary. During the first semester of my senior year in high school in 2019, all the students were called into the auditorium for a big announcement. An alumnus named Ben Cutler was starting a program called Neodesha Promise. He pledged to pay college tuition and fees for every kid in town. As soon as we heard, my friends and I all started crying and hugging one another. It was such a weight off my shoulders. My mom was so happy too! I loved that she was finally able to buy some things for herself instead of always saving up for her kids. Last year, when she ran into Ben Cutler at the country club where she worked, she told him, “Thank you so much.” I’d like to thank him again here.

y husband, Howard, is 86, I’m 69, and chores have gotten more challenging for us as we’ve gotten older. But we have a gaggle of neighbors who make us feel young—like Sofia, 13, who bakes cupcakes for our neighborhood get-togethers, and her brother Matteo, 15, who helps set up picnic tables and chairs on the lawn. Luke, 10, and his brother Andrew, 8, help clean our lawn furniture, and they help bring drinks and dishes to the lakeside for gatherings, minimizing the steps my husband and I have to navigate. Our neighbors Len and Carol set up their extra gazebo to help us keep cool, and Tom is always there to assist with malfunctioning grills, faucets, and lights. Though we’ve known most of our neighbors for years, the pandemic made us realize how precious good ones are. With their generosity, we’re able to stay in our lake home and love being here.

ix months pregnant, I’d been running errands with my 3-year-old on a superhot summer day in 2007 to buy some last-minute things for the baby. Just as we hit the freeway exit ramp to head for home, I heard a loud pop: My tire had burst. I managed to make it to the nearest gas station, where I called my husband to try to figure out what to do. I was too big to change a tire myself, and we wouldn’t have money to pay for a new tire until payday, three days away. My husband couldn’t even get to us, because I was driving the only car we had. We were stuck. As I sat trying to figure out what to do, a van pulled up beside me. A man got out and said hello, then grabbed a tire and some tools from inside his van. My husband had sent someone to help me, I thought, but when I called him, he had no idea what I was talking about. In confusion, I asked the man how he’d found me. It turned out a friend of his had seen my tire pop and called this mechanic to find me and swap out my tire. The stranger had paid for the whole thing. I never met him, but I talked to him briefly on the phone. “I’m just doing it because God put it on my heart to do it,” he explained. I don’t even know this Good Samaritan’s name, but I vividly recall how amazing it felt to have a stranger do something so thoughtful and kind. It strengthened my resolve to look for the beauty in life and the good in others.

I
wasn’t too worried about my overnight transatlantic flight with my 8-month-old— until I ate a sandwich from an airport kiosk right before we got on the plane. Worst mistake ever. Just as my son and I were both falling asleep, I started feeling awful. I dashed to the back, baby in my arms, to throw up. From then on, every 20 minutes or so I was sick. My son did not like being woken up repeatedly, so he screamed every time. I already felt as if I was going to die from the food poisoning; now I had to worry that my baby’s howls were keeping the entire plane awake. While I waited near the toilets, a woman walked back and said, “You look like you could really use some help.” Her own child had fallen asleep on her husband’s lap, she said, and she offered to take mine. I wearily handed him off. For the remaining six hours of the flight, this stranger cuddled my son so I could take care of myself. When the plane landed in England, she returned him to me, well rested and happy. Her kindness changed how I travel. Now if I see a mom struggling, I’m like, “Hey, can I help you in any way? I have wipes, I have diapers, I can hold your baby if you need to use the bathroom,” because that woman was the best thing that could have happened to me. I really could not have survived that terrible trip without her.
O
n a trip to Cancun, Mexico, in 2001, two friends and I had just gotten off a city bus late one night after eating at our favorite local restaurant. While they stood on the curb at the bus stop and I paused in the street inset to talk to them, a bus pulling into the stop plowed into me. It was going 10 or 15 miles per hour, and my head hit the windshield so hard, it cracked the glass. I ended up under the carriage, barely conscious. While my girlfriends panicked, a total stranger—my friends later told me he was a young EMT from California—crawled under the bus to care for me. He stayed with me, refusing to let anyone pull me out until my neck was properly secured. He even offered to pay the fee so the ambulance would drive me to a hospital. I spent the next week in an induced coma as the swelling in my brain went down, so I never got to meet the man who helped me. In fact, I don’t remember anything else from that week until the moment I was in a wheelchair being pushed through the airport to go home. Luckily there were no long-term effects from the trauma other than a scar where I had to have plastic surgery on my ear. Sometimes I wonder what would have happened if that EMT from California hadn’t been there. It has meant so much to me that a total stranger would do such a thing for someone they didn’t know. I hope he knows what an impact he made.

espite the fact that Hanukkah is considered a “more minor” holiday in the Jewish faith, Ariel Stein, founder of lifestyle blog Ariel Loves, has always celebrated it in a major way. “Growing up, my family hosted a big Hanukkah party every year. We’d light hanukkiahs [Hanukkah menorahs], eat latkes, and do a sing-along,” she says. Hanukkah Challah 1 0.25-oz pkg. active dry yeast (2¼ tsp) ¼ cup plus 1 Tbsp sugar, divided 1 cup lukewarm water ¼ cup oil, plus more for bowl 2 large eggs, divided ½ tsp kosher salt 3½ to 4 cups all-purpose flour, divided
Make dough: 1 In large bowl, dissolve yeast and 1 Tbsp sugar in lukewarm water; let sit until frothy, 5 to 10 min. 2 Mix in oil, 1 egg, salt, remaining ¼ cup sugar, and half of flour until well combined. Gradually add remaining flour, 1/2 cup at a time, and knead until dough is elastic and not too sticky (you may not need all the flour). Transfer dough to lightly oiled bowl, cover with clean towel, and let rise 1 hr. Shape challah: 1 Remove dough from bowl and separate into 3 differently sized balls (large, medium, small). 2 Divide large ball into 4 differently sized pieces and roll into long strands. On 1 side of large baking sheet, arrange strands into “U” shape, fitting inside each other. Using knife, cut 1 in. dough across top of “U” and use pieces to create small “flames.” Place flames on top of strands. 3 Cut small ball in half and roll out evenly into 2 strands. Twist strands together. Push rolling pin into middle of “U” strands to make space for center “branch.” Place twisted strand down vertically over middle of “U” shape. 4 Divide medium ball evenly into 3 balls and roll into 3 even strands. Press tops of strands together, then braid into 3-strand braid. Attach

Your most common problems, solved It’s Thanksgiving morning, and the turkey is still frozen. Do a quick defrost: Submerge the bird in a sink of cold water, changing H2O every 30 min. (FYI, a somewhat frozen turkey will cook just fine.) How do I carve it? It’s too hot! If the meat is still steaming, let it rest longer. The chill-out time helps the cooked bird hold on to its moisture and gives you extra minutes to make the gravy.

The skin slides off when I slice it. Sharpen your knife before making any cuts. A properly honed blade creates perfect skin-on slices, while a dull blade shreds the meat and can slip dangerously. The breast meat is done, but the legs aren’t cooked through. This trick will prevent overcooking: Carve the bird to remove the legs, then cook them longer as you cut the breast meat and arrange it on a platter. The turkey is so dry. Breast meat is hard to keep juicy because it’s so lean. Place cooked slices on a platter and baste with gravy or hot broth or stock to add moisture and wow-worthy flavor.

HERE’S WHY: Belly fat may be visceral fat, a type that actually accumulates in your abdominal cavity, where it wraps around internal organs. And then it disrupts the balance of some hormones, “significantly increasing the risk of heart disease, type 2 diabetes, and certain cancers,” says Erin Palinski-Wade, R.D., the author of Belly Fat Diet for Dummies. One cause of belly fat: eating too much sugar and too many refined carbs, which messes with your body’s blood sugar regulation and insulin production, causing more fat to settle in this middle area. But there are good-for-you lifestyle moves that can help zap this fat and keep it gone.

Sweat it off. Exercise can help torch belly fat because it helps the body respond to insulin, and insulin signals your body to hang on to fat. Aim for 150 minutes of physical activity a week, and add weights to your routine to build lean muscle. To see an even bigger difference, do high-intensity interval training (HIIT), or short bursts of vigorous exercise that have been shown to be extra effective at reducing fat levels. Try it: After a 10-minute warm-up, spend 30 seconds doing as many reps as possible of moves like squats, push-ups, burpees, and even fast walking. Rest for 30 seconds, then do another fast 30 seconds of the same exercise or a different one. Continue for 10 rounds.
Snooze sound ly. Research shows that fat cells in sleep-deprived people don’t respond as well to insulin. This insulin resistance may lead to weight gain. Trouble conking out? Try diaphragmatic breathing. “Breathe in slowly and deeply through your nose; slowly exhale through your mouth. Focus on your breath to prevent mind-wandering—it’s so relaxing!” says Raj Dasgupta, M.D., a sleep expert and an associate professor of clinical medicine at USC Keck School of Medicine in California.

1 12- to 14-lb turkey (thawed, if frozen) 1 head garlic, halved horizontally 1 lemon, halved 4 small onions, quartered, divided 12 sprigs fresh thyme Kosher salt and pepper 3 Tbsp softened butter or olive oil 2 large carrots, cut into 2-in. pieces 2 stalks celery, cut into 2-in. pieces 2 sprigs fresh rosemary ¾ cup low-sodium chicken broth
1 Working on baking sheet, remove turkey neck and reserve; discard giblets. Using paper towels, pat turkey dry. Stuff garlic, lemon, half of onions, and 8 sprigs thyme into main cavity. 2 Strip leaves off remaining 4 sprigs thyme and
place in small bowl. Add 2 Tbsp salt and mix to combine. Rub salt mixture all over turkey. 2 14-oz cans chickpeas, rinsed 1½ lbs mixed-color carrots, halved lengthwise 2 Tbsp olive oil 2 Tbsp dukkah spice mix, plus more for sprinkling 2 cloves garlic, finely chopped, divided Kosher salt and pepper Finely grated zest and juice of 1 lemon, divided 2 Tbsp tahini 5 oz plain yogurt 8 ready-made falafel 5 oz baby spinach Small handful of fresh mint or cilantro leaves
1 Heat oven to 425°F. On large rimmed baking sheet, toss chickpeas and carrots with olive oil to coat. If dukkah is not ground, use mortar and pestle or bottom of heavy skillet to lightly crush it, then sprinkle over chickpeas and carrots along with three-quarters of garlic and ¼ tsp each salt and pepper and toss to combine. Roast until carrots are just tender and chickpeas are starting to crisp, about 30 min.

2 Tbsp fennel seeds, lightly crushed 8 cloves garlic, finely chopped 2 Tbsp fresh thyme, plus more for serving ¼ cup olive oil, divided 1 center-cut pork rib roast (8 ribs; about 8 lbs), chine bone removed Kosher salt and pepper 2 lbs baby yellow potatoes, halved 4 bunches radishes (1¾ lbs), trimmed and halved 1 bunch scallions, cut into 2-in. pieces
1 Heat oven to 400°F. In bowl, combine fennel, garlic, thyme, and 2 Tbsp oil. 2 Season pork with 1½ tsp salt and ¾ tsp coarsely ground pepper. Place in large rimmed baking sheet and rub with garlic mixture. Roast 1 hr. 20 min. 3 Meanwhile, toss potatoes and radishes with remaining 2 Tbsp oil and season with ½ tsp each salt and pepper. 4 Scatter half of vegetables around roast; arrange remaining evenly on second baking sheet. Continue roasting both sheets until internal temp of pork reaches 140°F, 10 to 15 min. 5 Transfer roast to cutting board and let rest at least 15 min. before slicing. Scatter scallions among vegetables and roast until golden brown and tender, 15 to 20 min. Serve with roast, garnished with thyme. Reduce heat to low and gently simmer until liquid has reduced to 3 Tbsp, 12 to 15 min. 3 In small bowl, whisk together mustard, vinegar, reduced cider, remaining Tbsp oil, and ¼ tsp each salt and pepper. 2 lbs parsnips, peeled, thin ends trimmed away, halved or quartered lengthwise (depending on thickness) 5 Tbsp extra virgin olive oil, divided Kosher salt 2 lbs sweet potatoes, peeled (OK if some peel is left on), ends trimmed, cut lengthwise into wedges 3 Tbsp fresh lemon juice ½ small shallot, finely chopped 1 small clove garlic, finely chopped ½ cup pitted black, green, or kalamata olives (or a combination), roughly chopped ½ cup loosely packed fresh mint leaves, roughly chopped ½ cup fresh cilantro leaves, roughly chopped
1 Heat oven to 375°F. 2 On large rimmed baking sheet, toss parsnips with 1 Tbsp oil and 1 tsp salt; arrange in single layer and roast 10 min. 3 Meanwhile, on second baking sheet, toss sweet potatoes with 1 Tbsp oil and 1 tsp salt; arrange in single layer. 4 Toss parsnips; return to oven along with potatoes and roast, stirring vegetables after 25 min., until golden brown and tender, 40 to 50 min. total. 5 While vegetables roast, make vinaigrette: In small bowl, combine lemon juice, shallot, garlic, and remaining 3 Tbsp olive oil. Stir in olives. When ready to serve, transfer vegetables to platter and spoon dressing on top. Sprinkle with mint and cilantro. Serve warm or at room temp. On large rimmed baking sheet, toss peppers, tomatoes, onion, and garlic with oil, oregano, ¼ tsp salt, and ½ tsp pepper, then toss with sausages. 2 Roast until sausages are cooked through and beginning to blister and vegetables are golden brown and tender, 15 to 20 min. 1 lb small cremini mushrooms, trimmed and halved 1 bunch Broccolini, trimmed and cut into 2-in. lengths 4 cloves garlic, finely chopped 2 Tbsp olive oil ¼ to ½ tsp red pepper flakes Kosher salt and pepper 2 1-in.-thick New York strip steaks (about 1½ lbs total), trimmed of excess fat 1 15-oz can low-sodium cannellini beans, rinsed
1 Heat oven to 450°F. On large rimmed baking sheet, toss mushrooms, Broccolini, garlic, oil, red pepper flakes, and ¼ tsp each salt and pepper. Roast 15 min. 2 Push mixture to edges of pan to make room for steaks. Season steaks with ¼ tsp each salt and pepper and place in center of pan. Roast steaks to desired doneness, 5 to 7 min. per side for mediumrare. Transfer steaks to cutting board and let rest 5 min. before slicing. 3 Add beans to baking sheet and toss to combine. Roast until heated through, about 3 min. Serve beans and vegetables with steak. PER SERVING 400 CAL, 13 G FAT (3 G SAT), 48 G PRO, 550 MG SODIUM, 23 G CARB, 5 G FIBER

1 14-oz pkg. extra-firm tofu 4 tsp reduced-sodium soy sauce 1 Tbsp chili-garlic sauce 1 clove garlic, pressed 1 tsp honey 6 tsp toasted sesame oil Vegetable oil, for baking sheet 8 small heads baby bok choy, trimmed and halved 4 sugar snap peas, thinly sliced ½ tsp black sesame seeds
1 Place tofu on rimmed baking sheet between paper towels. Top with second baking sheet and weigh down with heavy cans or skillet; let sit 30 min. 2 Meanwhile, in small bowl, combine soy sauce, chiligarlic sauce, garlic, honey, and 4 tsp sesame oil. 3 Heat oven to 400°F. Transfer tofu to cutting board. Wipe off baking sheet and lightly oil. Slice tofu into ½-in.-thick triangles and arrange on prepared sheet. Drizzle with 1 Tbsp sauce mixture and bake until top is golden, 12 to 15 min. 4 Turn tofu over, arrange on one side of baking sheet, and drizzle with 1 Tbsp sauce mixture. Arrange bok choy on other half of sheet and gently toss with remaining 2 tsp sesame oil. 5 Roast until tofu is golden brown and bok choy is tender, 8 to 12 min. more. Drizzle remaining sauce over tofu and sprinkle everything with snap peas and sesame seeds.
Halibut with Potatoes and Brussels Sprouts ACTIVE 20 MIN. ✦ TOTAL 35 MIN. SERVES 4
2 Tbsp olive oil 2 Tbsp chopped mixed fresh herbs (such as parsley, thyme, and rosemary) Kosher salt and pepper 1 lb fingerling potatoes (about 20), halved 1 lb Brussels sprouts (about 10), trimmed and quartered 1 large shallot, cut into wedges 1½ lbs halibut fillet
1 Heat oven to 425°F. In small bowl, whisk together oil, herbs, ¾ tsp salt, and ½ tsp pepper. 2 On large rimmed baking sheet, toss potatoes, Brussels sprouts, and shallot with half of oil mixture. Arrange potatoes cut sides down; roast 15 min. 3 Remove pan from oven and arrange fish on top of vegetables. Brush fish with remaining oil mixture and roast until potatoes are golden brown and tender and fish is opaque throughout, 12 to 15 min. more. 4 small chicken legs, split 1 cup prepared tikka masala sauce ½ medium cauliflower (about 1¼ lbs), cut into small florets 12 oz carrots, cut into ¾-in. chunks 1 cup canned chickpeas, rinsed 1 Tbsp olive oil 1 tsp garam masala Kosher salt and pepper ½ red onion ¼ cup plain low-fat yogurt ¼ cup fresh cilantro leaves, chopped Lemon wedges, for serving
1 Place chicken and tikka masala sauce in resealable plastic bag. Seal and toss to coat; let sit 30 min. or refrigerate overnight. 2 Heat oven to 425°F. On large rimmed baking sheet, toss cauliflower, carrots, and chickpeas with oil, garam masala, and ½ tsp each salt and pepper. 3 Remove chicken from bag, letting excess marinade drip off, and nestle among vegetables; discard marinade. Roast until chicken is cooked through, 30 to 35 min.
4 Meanwhile, thinly slice onion, transfer to small bowl, cover with cold water, and let soak 10 min.; drain well. Serve chicken topped with onion, yogurt, and cilantro. Serve with lemon wedges. PER SERVING 575 CAL, 27.5 G FAT (7 G SAT), 55 G PRO, 810 MG SODIUM, 27 G CARB, 7 G FIBER
