This do-it-yourselfer decided an IKEA table oughta be upgraded into an ottoman. She brought out its elegant side with paint, fabric, and a handful of buttons. Krys Melo searched for an ottoman/coffee table that would add color and shine to her Los Angeles home with its modern furniture and gallery wall of 1950s Saturday Evening Post prints. When she couldn’t fi nd the perfect piece, she ended up making it. Krys bought a set of metal tables, tucked one away for a future project, and painted the other one gold. She swapped the glass top for the particleboard shelf and upholstered the shelf in velvet. Now she’s got a soft spot that serves as a table, a footrest, and even a seat for a party. (She held her breath when her dad fi rst sat on it, then heaved a sigh of relief. No harm done.) For her instructions, see page 48.

Cut 2-inch-thick upholstery foam the size of the tabletop using a sharp knife or box cutter.

Use the table’s particleboard shelf as the base for the upholstered top. Plan tufting on one side of the shelf, using a ruler and chalk. Start

Make holes in the shelf using a drill or the multipurpose drill bit on a rotary tool. Cover the foam and shelf with a layer of batting and upholstery fabric, pulling the fabric tight on all sides and stapling it. Trim any batting that shows.

At each corner, clip the fabric and pull it taut around
the leg, then staple. Tuck in raw edges.

Cover buttons with upholstery fabric, following instructions provided with button covers. (For thick fabrics, you might need to skip the button back. Instead, cover the button with fabric, gather it, and tie it on the back.) Thread a large upholstery needle with polyester cord and bring it up from the bottom through a hole in the shelf. Pull
one end of the cord through the fabric and through either the fabric on the back of the button or the shank on the button back. Bring the needle back through the hole, pulling the end of the cord through. Pull the cord ends tight and secure to the shelf with staples . Q

In our new monthly column, we take a closer look at a historic, homey sauce that’s the ultimate winter comfort food. BOLOGNESE (pronounced boh-luhn-yeyz to be absolutely
correct) is more than just meat sauce. It’s one of the most versatile sauces in the kitchen. A lazy Sunday afternoon simmer develops the layered flavors into something more than its humble ingredients. Though there’s debate over what the traditional version is (even in the Northern Italian city of Bologna where it originated), most start with a few basics: meat, vegetables, and wine. Some include tomato, and others use milk or cream for more complexity. We gave our Bolognese a spin that will make it worth making again and again.

MEAT Ground beef (we like 85 percent lean ground chuck) is the primary ingredient, but pork provides a bit of sweetness, and pancetta a smoky flavor. There will be a fair amount of fat. Remember: Fat is flavor! Any excess can always be skimmed at the end. VEGETABLES The most traditional recipes call for onion, carrot, and celery. We traded celery for fennel stems, which are similarly shaped but deliver a mellow anise flavor. We like our sauce to have texture, so don’t worry about precise chopping—rough will do. WINE Use any good dry wine that you’d be happy to serve with dinner. White wine melds right into the sauce, but you can also use red, which tends to give a slightly more assertive flavor.

MILK Milk, which cooks away before the tomatoes are added, gives a layer of unexpected richness. But don't worry, this isn't a cream sauce. TOMATOES Some recipes call for tomato paste, but we prefer whole canned San Marzano tomatoes (Italian plum tomatoes that have a sweet flavor and low acidity). Cut into pieces, they fleck the sauce without overpowering it.

1. In a 4-quart Dutch oven heat butter and olive oil over medium-high heat. Add pancetta. Cook and stir until just starting to brown, about 8 minutes. Reduce heat to medium. Add onion. Cook and stir until translucent, about 5 minutes. Add carrots and fennel. Cook 2 minutes more. 2. Add beef and pork to Dutch oven. Season with ¹⁄2 tsp. kosher salt and ¹⁄2 tsp. black pepper. Using a fork, break up meat (you want to retain some larger pieces for texture). Cook until browned. Add wine. Using a wooden spoon, scrape up browned bits from bottom of pan. Simmer, uncovered, until wine has evaporated. 3. Add milk and nutmeg to Dutch oven. Simmer, uncovered, until milk has evaporated, stirring frequently. Add tomatoes; stir to combine. When tomatoes just start to bubble, reduce heat to low; add Parmesan rind. Simmer, uncovered, 2¹⁄2 to 3 hours, stirring occasionally. As sauce cooks, liquid will evaporate and the sauce will start to look dry. Add ¹⁄2 cup water at a time (2 to 3 cups total), continuing to simmer as liquid evaporates. Makes 12 servings. CHILLED BEET TART Add 2 lb. beets and 2 Tbsp. water to a 3-quart baking dish. Drizzle beets with olive oil and season with salt and pepper. Cover; bake at 350°F 1 hour. Peel and slice beets; set aside. Stir together 16 oz. cream cheese; 1 Tbsp. tahini; 1 halved, seeded, chopped jalapeño pepper; and ¼ tsp. kosher salt. Line a
9-inch springform pan with plastic wrap. Layer one-third of beets in pan. Spread onethird of cream cheese mixture over beets. When Gretchen REPLACE A Bond and her WORN FLOOR husband, Chris, bought their 1912 BREAK IT Philadelphia JUST home, they knew PAINT IT! it could turn into a money pit if they remodeled everything that was outdated or ugly. Paint was her design salvation. The sunroom’s dingy brick floor became a showstopper with a coat of high-gloss navy paint. The basket-weave pattern gives texture to the sheen.

The original kitchen of this big old house became “the bar room,” this photo, after a remodel carved a new kitchen out of another space. Gretchen replaced old appliances with a beverage cooler and icemaker and removed an island in favor of a secondhand table and flea market chairs. Verdant wallpaper balances the red countertop and floor, which Gretchen painted here and in several adjoining rooms to hide a mishmash of wood finishes. She swears by oil-base enamel floor paint. When it shows wear, she just repaints.
TRADE SECRETS With a background in textile design, Gretchen is no stranger to the creative process. A favorite way to indulge it is to design her own fabrics and wallpapers and have them custom printed at spoonflower.com.
There’s nothing stuffy about MATCH A TABLE Gretchen’s dining room, below. The table is an & CHAIRS oversize souvenir from the BREAK IT CONTRAST & years her family lived in COMPLEMENT Bermuda, an experience that informs and inspires Gretchen’s fearless color choices. The table didn’t have matching chairs, and that was fine by her. “I don’t like seeing the backs of chairs at a table because they block the view of the room,” she says. Instead, she opted for fuchsia ottomans from Target. Their gold bases add a little bit of glam and relate visually to the openwork vintage pendant over the table.

BREAK IT “I loved the scale, GO BIG WITH COLOR the color, the relief & PATTERN of the white,” Gretchen says. The bathroom vanity, though dated, was in fine working shape, so she painted the whole thing a high-gloss orange. It keeps a red and blue room from looking patriotic and also references the orange rain boot wallpaper (which Gretchen designed) just outside. Round yellow knobs add a pop of unexpected fun. “This room is a mix of my favorite colors,” she says.

It gives THEM FUN! the space personality without overwhelming the eye—a bonus when you’re dealing with an extra-colorful wardrobe like Gretchen’s. She tried peel-and-stick paper (from Devine Color, sold at target.com) to see if it would be easier to install. Happily, it was. “Wallpaper is an exacting skill that requires patience and good measurements, and I’m bad at measuring,” she says. Her trick: Wetting the paper first gives you more time to reposition it before it sticks.

She started this room, left, with a splurge: a large-scale indigo wallpaper that takes the room halfway to the finish line. Then she reupholstered inexpensive furniture from consignment stores and junk shops with graphic fabrics featuring the same blue. “I like to mix as many patterns on one piece of furniture as possible,” she says. “You just need the courage to do it!” She prefers wood frame furniture because it takes less fabric. PS: Gretchen doesn’t worry about mixing several wood finishes in a room.

The sconces in this powder room, opposite, were wired too close together to fit a standard-size mirror between, and Gretchen knew moving them would be a spendy proposition. Her solution? Leave the infrastructure and shop for cosmetic upgrades that work within it. She found the extra-skinny mirror at a consignment shop, and the narrow wall-mount lights are by Jonathan Adler. Their geometric pattern is the perfect counterpoint to the animated butterfly wallcovering, another trick that keeps the eye moving around a tight space. She also painted the vanity cabinet, the adjacent radiator cover, and all woodwork in the room a uniform Kelly green to unify the space. Q

and social media, but now I love it as a creative outlet. I only use natural light and shoot with both my iPhone and my Canon 5D Mark III. Luckily my images have seemed to resonate with people. I especially love the
community of young flower arrangers I’ve met via social media. 10 @ . N. I go back to the studio to start making pots. By this hour, I’m definitely heading for bed so that I’m ready to start all over again. The color of baked bread can be deceiving— gorgeous and golden doesn’t always mean perfectly baked. The best way to check doneness is temperature. Fully baked bread is about 200°F in the center.

ack in 1928, the editors of BHG opened the state-of-the-art Better Homes and Gardens Testing-Tasting Kitchen to create and evaluate recipes to be published. It was the first “in-house” test kitchen of its kind, located steps from the editorial offices in downtown Des Moines. “It was a modern workshop as near as possible in size and equipment to what you would find in a real home,” BHG editors wrote in a 1929 feature. It’s been 88 years since our first home economist tied on an apron. Today, we’re called the BHG Test Kitchen, and 60,000-plus recipes have passed our standards to be printed in our magazines and cookbooks, including our famed Red Plaid Cookbook now in its 16th edition. Our kitchen has been remodeled and updated many times, but one thing remains: We fail so you don’t. We anticipate any difficult spots home cooks might encounter so we can make our recipes foolproof. We’re not just another chef show with fancy super cool equipment—we still make every effort to use the same everyday tools and appliances that you use at home. Bottom line: We do everything we can in our kitchen to make sure every recipe is delicious, practical, and reliable in your kitchen.

Preheat oven to 450ºF, placing 2 shallow baking pans in the oven as it preheats. Drizzle one of the pans with 1 Tbsp. of the oil. Carefully arrange vegetables and garlic in one layer in the oiled pan. (do not crowd the pan). Drizzle with remaining olive oil. Sprinkle with thyme, 1⁄2 tsp. kosher salt, and 1⁄2 tsp.

1. In a large mixing bowl stir together the 3⁄4 cup water and yeast. Let stand 5 minutes. Meanwhile, in a small saucepan heat and stir milk, honey, butter, and salt just until warm (120°F to 130°F) and butter almost melts. Stir milk mixture into yeast mixture. Stir in flour (dough will be sticky). Lightly coat a medium bowl with nonstick cooking spray; transfer dough to bowl. Lightly coat a sheet of plastic wrap with cooking spray; cover bowl with greased plastic wrap, coated side down. Chill at least 4 hours or up to 24 hours.

2. Using a dough scraper or spatula, carefully loosen dough; turn out onto a floured surface. Cover with greased plastic wrap. Let stand 30 minutes. 3. Grease a baking sheet; sprinkle with cornmeal. Shape dough into an 8- to 9-inch oval loaf, lightly flouring dough. Transfer loaf to prepared sheet, using dough scraper if necessary. Cover with a clean kitchen towel; place on the middle rack of your unheated oven. Place a bowl of warm water on lower rack. Let rise until nearly double in size (about 1 hour). 4. Remove loaf from oven. Uncover; set aside. Preheat oven to 400°F. In a small bowl whisk together egg white and the 2 tsp. water; brush over loaf. Arrange herbs on loaf. Brush herbs with egg mixture. Bake 23 to 25 minutes or until an instant-read thermometer inserted in center registers about 200°F. Most breads are done throughout between 195°F and 200°F. Remove from baking sheet; cool on a wire rack. Makes 12 to 16 servings.

One study of cardiac patients found that young women’s blood flow to the heart dropped about twice as much as men’s when they felt tense. The key to easing the impact: Build in strategies to manage stress so you’ll guard against the negative effects of whatever comes your way.

We’re so used to being stressed that we often don’t recognize the warning signs (headaches, tight neck and shoulders, grinding your teeth) that stress is taking a toll. Stop and check in with yourself at least once a day. How’s your breathing? Are your muscles tight? Take a few deep breaths to let go of the tension. Simply being more aware of your reaction to stress, and taking a few minutes to breathe, can help tame your body’s reaction. You can also try these simple breathing exercises: Count very slowly from 10 down to one, saying the number on each out-breath. For example: Breathe in, and as you exhale, say “10.” Inhale, then as you exhale, say “nine,” slowly working your way to

zero. Another option is square breathing: Visualize a square. As you breathe in, visualize a vertical line and then a horizontal line. on edge all the time, always imagining the worst: Work on “restructuring” your thoughts so that you don’t catastrophize. For example: You’re running late to a meeting, and you’re panicking, thinking you’re going to miss important information or even get fired. Step back and ask yourself, How likely is it? How could I handle it if it did happen? Giving yourself a reality check and thinking through what you would do if the worst did happen can help you calm down. It’s also important to be part of a supportive group outside your family, like a book or garden club. Connecting even once a month helps relieve stress by giving you something to look forward to and making you feel like you’re part of a larger community.
Exercising is key to conditioning your heart to protect it against the negative effects of stress. Walking is great, but I like to think of it as a gateway exercise. Start there, but if you really want to strengthen your heart and lungs, you need to do aerobic exercise that breaks a sweat. The one way to know if you’re getting where you need to be is to wear a heart rate monitor. Use the traditional formula: Subtract your age from 220, and your heart rate during exercise should be 80 percent of that. So if you’re 35, your target heart rate is 80 percent of 185 (220 minus 35), or 148. Also mix in some bursts of high-intensity exercise. Your heart gets a better workout when it’s climbing than when it’s steady, even if it’s holding at a rapid pace. The other thing you’ll find is that once you’re really exercising, you’ll just naturally eat better. Twenty years ago, I weighed well over 200 pounds. Then I joined a soccer team and found that even on diet cheat days, I no longer wanted french fries. And today? I weigh 120 pounds.
WOMEN AT WORK On-the-job pressure is the riskiest, with research showing that women whose work is very stressful (demanding and with little control) have a 40 percent higher risk of heart disease. “While you don’t have control of everything,” says Mary Alvord, Ph.D., “you do have control of many things.” For starters:

the health nut Our intrepid health director, Amy Brightfield, sweats her way through the latest wellness trends. This month, she’s into ballet-inspired workouts.
m
y love of dancing has been apparent ever since I was 3 and, as family legend has it, positioned myself in front of the band and danced the night away at my aunt’s wedding. Eager to channel my enthusiasm, my mom signed me up for ballet a few years later. Even at 5, I sized up my fellow ballerinas and quickly realized that pirouettes weren’t in my future; tap was more my style. Tap led to step aerobics, then jogging and spinning and yoga. When barre classes became all the buzz, part of me wondered if I’d given up on ballet too quickly. And because I’ve done years of balance and strength-training work, my muscles are in much different shape now than when I was 5! So I decided to book myself a session at the Ballet Beautiful studio in NYC, fantasizing about turning into the ballerina I never was—rocking a black leotard, pink tights, and leg warmers. (Aren’t they back in?) Ballerina Mary Helen Bowers (BB’s founder, who squeezed me in between training models for a Victoria’s Secret fashion show), appeared in all her flowy gracefulness—even at 7 months’ pregnant—and took me through a few basic moves on the mat. We started with simple leg lifts, which I survived, but the next move involved holding my leg up and moving it in little circles. Can I just say “Holy hurt”? After about eight reps, my leg started to shake. Was all that spinning for nothing? “Ballet is about the extension of your body through space,” Mary Helen says. “Ballet Beautiful mimics this with exercises that strengthen and tone the muscles while elongating the lines. Most fitness is built around movements that contract and shorten

the muscles.” Well, at 5-foot-1, I certainly can’t afford to shorten anything. My moment of redemption came as we stood in first position, doing arm and leg lifts simultaneously, and Mary Helen said “beautiful form.” All the pain was worth it! My second stop two days later: Pure Barre. As I entered the carpeted studio with techno music blasting, I thought, OK, I’ve got this. Everyone had a spot with a mat, ball, light weights, and tubing. We started with small and controlled exercises on the mat, but this felt distinctly more like the body conditioning classes I’d taken at the gym. Then we headed to the barre. And that’s when it happened: As I did lifts with my right leg, my left leg shook so badly I thought it was going to give out. “Shaking is good!” the teacher said in a way-too-excited voice. “That means you’ve worked the muscle so much you’ve exhausted it.” I woke up the next morning sore, but not the worst I’ve ever felt. And I have to say I think I was the slightest bit longer and leaner. Barre workout classes (and maybe 5-foot-1½?), here I come. Q
