RISE UP! We’re all aware that the pandemic hasn’t done us many (any?) favours. But the status of gender equality for women all over the world has been hit particularly hard. The statistics are easily accessible at the click of a mouse: More women have fallen out of the workforce, there’s been an increase in gender-based violence, women have been forced to revert to tradiWLRQDO UROHV ZKHQ D̆RUGDEOH FKLOG FDUH RSWLRQV DUH QR longer available.… The list goes on. According to the results of the World Economic Forum’s 2021 Global Gender Gap Report, Canada ranks 24th out of 156 countries. While we have virtually closed the gender gap in the Educational Attainment and Health and Survival categories, our poorer scores in Political Empowerment and Economic Participation and Opportunity have brought our overall ranking down. At the current rate of growth it will take more than 100 years to reach gender parity, so it’s important that we do better. Our daughters can’t wait that long. Which brings us to International Women’s Day, celebrated on March 8. The theme is Break the Bias.
That means becoming aware of gender inequality in and out of the workplace, and where our own biases may be holding us, and others, back; it means calling out inequality and having uncomfortable conversations; it means using our social media powers for good by showing support for women; it means celebrating the achievements of women and advocating for more (turn to our “Inventing the Future” story on page 38 to learn about one of the inspiring Canadian OHDGHUV LQ 67(0 ¿HOGV ZKR DUH PDNLQJ D GL̆HUHQFH <RX FDQ ¿QG LQIRUPDWLRQ DQG LGHDV IRU MRLQLQJ LQ at internationalwomensday.com. FUN FACT: IT’S A SPRING THING Ever wonder where the phrase about March coming “in like a lion, out like a lamb,” comes from? Well, it dates back to a 17th-century British proverb that was likely inherited from weather folklore in the Northern Hemisphere. As we know all too well, March is a fickle month that torments with the last blasts of winter while teasing with the first signs of spring. The phrase isn’t always accurate, but the general wisdom is that if March starts with a lion’s roar of cold weather, it should end with the gentle nuzzle of a spring lamb. But did you know there’s an astronomical connection, too? It’s also thought to reference the position of constellations in the night sky. At the beginning of the month, Leo (the lion) is visible on the eastern horizon, and by the end of the month Aries (the ram) can be seen on the western horizon. Whatever the source, we’re looking forward to milder days ahead!

MAKES 4 TO 6 SERVINGS HANDS-ON TIME 20 MINUTES TOTAL TIME 1 HOUR 20 MINUTES

bone-in skin-on chicken thighs (about 1.5 kg total) salt and pepper 1 tbsp olive oil 1 175 g pkg pearl onions, peeled 8 small carrots (with stems), tops trimmed 2 cloves garlic, finely chopped 2 tbsp all-purpose flour 1 341 ml bottle amber beer 2 tbsp cider vinegar 1/2 cup sodium-reduced chicken broth 2 tbsp maple syrup 1 tbsp tomato paste 1 tbsp grainy mustard 1 tsp dried thyme 2 cups snow peas (about 180 g) 1 cup fresh or frozen peas 1/2 cup watercress Season chicken with salt and pepper. In large ovenproof skillet or Dutch oven, heat oil over medium-high heat. Add half the chicken, skin side down; cook until golden brown, about 6 minutes. 12 | CANADIAN LIVING MARCH 2022
Turn chicken and continue cooking for 2 minutes. Transfer to plate; set aside. Repeat with remaining chicken. Drain all but 1 tbsp fat from pan. Add onions, carrots and garlic. Cook over medium heat, stirring occasionally, until vegetables are golden, about 5 minutes. $GG ÀRXU FRRN VWLUULQJ DERXW PLQXWH Preheat oven to 350°F. Pour beer and vinegar over vegetables, scraping up browned bits from bottom of pan with wooden spoon. Cook for 1 minute. Add broth, maple syrup, tomato paste, mustard and thyme. Season with salt and pepper. Stir to combine; bring to boil. Add reserved chicken to pan; nestle among vegetables. Cover, transfer to oven and bake about 30 minutes. Add snow peas and peas to pan; stir gently to combine. Continue baking, uncovered, until juices run clear when chicken is pierced with fork, about 15 minutes. (Make-ahead: Can be stored in airtight container and refrigerated for up to 2 days and frozen for up to 2 months.) Sprinkle with watercress. ermo-aesthetics—that is, nonsurgical cosmetic treatments—have advanced considerably in recent years. Each technology on the market offers up advantages, but sometimes limitations, too. How can you find the treatment that works for you? “A good doctor will offer support on a case by case basis, with a personalized treatment plan for each patient,” says Dr. Nathalie Laflamme, whose medico-aesthetic clinic is located in Montreal. Depth is determined very precisely depending on the area and concern being treated—shallower around the eye area and down to 4 mm on the cheeks with some treatments. To effectively stimulate collagen production, these microperforation treatments are ideally combined with a radiofrequency, as is the case with the treatments like Endymed, Morpheus8, Fractora or Infini, among others. After cleaning and disinfecting the skin, an anesthetic gel is applied approximately 45 minutes before the treatment. The procedure itself takes 30 to 90 minutes.

What is gel polish? Unlike traditional nail polish that air dries, gel polish is cured using an LED or UV lamp. The main advantage is that it can last two or three weeks, depending on the condition of your nails and what you do with your hands. Gel’s a popular choice at the salon, and now there are even more products available to do one of these manicures at home.
1 Preparation Begin by filing your nails to the desired shape. A 180-grit file works for most nails; however, if you have softer nails prone to breakage, opt for 240 grit, which is the least corrosive. Soften your cuticles in lukewarm water or with cuticle oil, then push them back gently using an orangewood stick. Remove all oil residue from your nails by washing them thoroughly and using a swipe of rubbing alcohol on a cotton ball. Lastly, buff the nail surface
to promote the adhesion of the polish. Clean up any remaining residue with the rubbing alcohol.
2 Application The easiest product is a 3-in-1 UV gel polish, which is a formula that contains base, colour and topcoat. Apply a thin layer of polish to the nail, but be careful not to touch the cuticles because it can make the polish peel off. Cure your nails under an LED or UV lamp as per the lamp’s instructions or until dry, usually 30 seconds to two minutes.
No wait time is needed between coats, so apply your second coat once the first is cured. Again, avoid your cuticles: If any polish touches the cuticle, simply remove it using an orangewood stick. Cure your nails under the lamp again, and repeat the process until you’ve reached the desired level of opacity.
3 Finish Complete your athome mani with a few drops of cuticle oil to hydrate your nails and cuticles.

First, file the tops of your nails to remove the shiny layer of polish. Coat the skin surrounding your nails with cuticle oil to protect from the drying effects of the remover. Soak some cotton balls in 100 percent acetone (or other specialized product) and apply one to each of your nails; wrap in foil and allow acetone to sit for 10 to 15 minutes. (Nail clips can make this step much easier.) Once the acetone has broken down the gel, and it looks like it is lifting off the nail, you can physically remove the polish using an orangewood stick or file. Avoid scratching the polish off, which can harm your nails. If possible, going to the salon to remove your gel manicure is still the safest option to avoid damaging the nail beds. Finish by washing your hands and using cuticle oil to restore hydration.

Inventing the Future In honour of Engineering Month in Canada and International Women’s Day, we spoke to award-winning scientist Molly Shoichet. She is a Professor of Chemical Engineering at the University of Toronto, where she also leads The Shoichet Lab, which studies regenerative medicine, tissue engineering and drug delivery. A champion of women in STEM (science, technology, engineering and math), Dr. Shoichet has received a variety of accolades, including the L’Oréal-UNESCO For Women in 6FLHQFH ,QWHUQDWLRQDO $ZDUG 2̇FHU RI WKH 2UGHU RI &DQDGD DQG WKH NSERC Gerhard Herzberg Canada Gold Medal for Science and Engineering. CANADIAN LIVING (CL): TELL US A LITTLE BIT ABOUT THE WORK YOU DO AT YOUR LAB. Molly Shoichet (MS): We’re trying to solve problems in medicine and answer questions in biology using the tools of engineering and chemistry. We’re inventing the future of medicine. One half of my lab is focused on trying to regenerate tissues in the central nervous system—the brain, the spinal cord and the retina—after disease or injury. For example, for a retinal disease like age-related macular degeneration, we’re working to ¿JXUH RXW KRZ ZH FDQ UHJHQHUDWH WKRVH FHOOV WKDW DUH dying and leading to blindness in the back of the eye. We’re inventing new materials in which to deliver cells and therapeutics and new ways of delivering those cells and therapeutics so that they survive and integrate into the neurocircuitry. The other half of what we do is in cancer research, where we’re trying to kill cancerous cells, and so we’re kind of at two extremes. But there’s a lot of overlap in the tools we’ll use or develop. I sometimes think of our lab as the FedEx of drug and cell delivery because we think about the packaging of the materials that get those cells and drug therapies where they need to be, when they need to be there. That’s why I say we’re inventing the future for medicine, because these things don’t exist. Our goal is to advance knowledge and with that knowledge try to commercialize those new ideas through start-ups or in collaboration with existing companies. CL: WHY IS REPRESENTATION, ESPECIALLY REPRESENTATION OF WOMEN, SUCH AN IMPORTANT ISSUE IN STEM? MS: If you look at the leading labs around the world, we’re all trying to solve problems that no one has ever solved before. Representation is important in STEM EHFDXVH LW¶V ZKHUH ZH ¿QG WKH ELJ FKDOOHQJHV ZH IDFH² it’s the future of our world. IS THE ISSUE OF REPRESENTATION MORE PRESSING IN ENGINEERING THAN IN OTHER STEM FIELDS? MS: 7KH 67(0 ¿HOGV WKDW WHQG WR DWWUDFW PRUH ZRPHQ are in the health sciences, biology and medicine. In electrical engineering, computer science and physics, that’s where we have an imbalance; there’s an imbalance HYHU\ZKHUH EXW LW¶V HYHQ ELJJHU LQ WKRVH ¿HOGV , WKLQN LW¶V fantastic that Engineers Canada has taken on that bold initiative. Over the past couple of decades, the number of girls and women interested in STEM has increased; there are more women in engineering as undergraduate and graduate students than there ever have been. CL: WHO INSPIRES YOU, AND WHAT HAVE YOU LEARNED FROM THEM? MS: My mom was an inspirational trailblazer for women in business; even though she wasn’t a scientist, she was a huge role model for me. I’ve had so many great mentors and so many great advocates. I think the most important lesson is to believe in yourself—and if you do, RWKHU SHRSOH ZLOO EHOLHYH LQ \RX DQG WKDW VHOI FRQ¿GHQFH is one of the things you need to be successful. CL: WHAT PROMPTED YOU TO BECOME A CHAMPION FOR WOMEN IN STEM? WHAT FUELS YOUR ADVOCACY WORK FOR WOMEN IN STEM? MS: From a young age I grew up with this idea of “girl power.” I feel very privileged to be Canadian and to have grown up in a family where women and men were treated equally. I liked science and I was encouraged to pursue it. I would like to give that same opportunity to others. Another idea I learned from my mother is to go for it and don’t hold back. We want to make the world a better place, as idealistic as that sounds, and we recognize that we need women to be part of the solution. I see these brilliant women scientists in my lab and want them to reach their full potential. I want them to carry on that race; it’s kind of like a relay race, giving them the baton to take forward. When I see brilliant people, men and women, I want them to achieve as much as they can, and creating an environment in which they can be successful is highly rewardLQJ ,I , FDQ JLYH SHRSOH RSSRUWXQLWLHV , EHQH¿W MXVW DV much as they do. When I won the L’Oréal-UNESCO For Women in Science International Award, I took some of the money and established an award in my mother’s name for women faculty in science—it’s very rewarding and exciting. CL: AS A WOMAN AND A LEADER, IN WHAT WAYS DO YOU RUN YOUR LAB DIFFERENTLY? MS: There are a few things that we’ve done since day one, which are very intentional. I’ve kept equal representation of men and women; it may not be exactly 50-50 but it’s about 50-50. I think it’s really important WR KDYH GL̆HUHQW YRLFHV QRW MXVW GL̆HUHQW JHQGHUV EXW let’s start there. The other thing I’ve been very intentional about is inclusivity; we have a very inclusive environment. In terms of ideas, you never know who’s going to have good ideas, and it’s also not necessarily me. I have the strategic vision for the lab, but that doesn’t mean that others won’t be able to contribute to that vision and impact it. Giving voice to everybody, encouraging them to ask questions, to propose new ideas in the lab and in the context of the science that we’re trying to advance is important to me. CL: WHAT’S SOMETHING THAT PEOPLE MAY NOT KNOW ABOUT WORKING IN STEM? MS: One thing is communication. We write papers, ZH SXEOLVK WKHP LQ MRXUQDOV DQG ZH WUDQVIHU NQRZOHGJH through seminars and lectures. Communication of sciHQFH LV FULWLFDO EHFDXVH LW¶V QRW MXVW DERXW KRZ WKH PHVsage is delivered; it’s also about how it’s received. Even when we write a grant proposal to fund our research, that’s communication. We have to convince our peers that we have good ideas, and that we have the capacity to put them into action. Another thing people may not NQRZ LV MXVW KRZ PXFK VWUDWHJ\ WKHUH LV WR VFLHQFH²OLNH how do we pay for the research we do? I’m grateful to all the taxpayers because a lot of our research funding comes from federally funded programs, and that’s important. There’s a huge amount of strategic thinking before we do one experiment in the lab. We will have done a lot of research to make sure that that it’s worth doing and we’re going to do the experiment right. CL: YOU’VE ALSO CO-FOUNDED AN ONLINE PLATFORM, RESEARCH2REALITY, THAT HIGHLIGHTS THE WORK OF SCIENTISTS ACROSS CANADA. WHAT INSPIRED YOU TO START THIS PROJECT AND WHY IS SHOWCASING RESEARCH IN CANADA IMPORTANT? MS: I remember being so inspired by the Toronto International Film Festival and how it brought the world into our backyard. I saw all this amazing science, innovation and invention and thought it would be great if the world could know more about the research being done in Canada. I had this very nascent idea of taking advantage of the power of ¿OP WR WHOO VFLHQFH VWRULHV VR , WHDPHG XS ZLWK 0LNH 0DF0LOODQ D IHDWXUH ¿OP SURGXFHU DQG WRJHWKHU ZH
co-founded Research2Reality. We took that idea and expanded and developed it. Given that most of our research is funded by the public, how can they think that it’s a priority for their tax dollars if they don’t know it exists? There’s so much research going on in all sectors of society, not just STEM, that impacts the way we think and our policies. I thought, Wouldn’t it be fantastic if we could EULQJ WKH SXEOLF LQWR RXU ZRUOG DQG XVH ¿OP as a way to engage them? It’s been super fun, much harder than I thought it would be. I’ve learned so much and been so inspired by people across Canada. CL: WHAT EXCITES YOU ABOUT YOUR RESEARCH? MS: One thing I’m really excited about is the translation of research. I’m excited about translating science
and starting companies, or working collaboratively with other companies, to take our inventions out of the laboratory and into the public sector. CL: WHAT IS SOMETHING THAT CANADIANS CAN DO TO EMPOWER GIRLS AND WOMEN TO PURSUE EDUCATION AND CAREERS IN STEM? MS: 3DUHQWV KDYH VXFK D KXJH LQÀXHQFH RQ their children. We need to empower our children to make that change. Our sons need to value our daughters and our daughters need to value themselves in their careers. I don’t think any career is easy, but if you work hard and you enjoy what you do, you’re going to enjoy your life. You’ll KDYH D YHU\ IXO¿OOLQJ OLIH LI \RX SXUVXH D FKDOlenging career. And in STEM, you’ll have the opportunity to invent the future. To me, that is so exciting!

THE BENEFITS COLON CARE The preliminary research on grapeseed extract (GSE) has demonstrated activity against a number of different cancers, including skin, breast, colon, lung, prostate, stomach and leukemia. In laboratory studies GSE has been shown to be effective in killing cancer cells without compromising healthy cells. O-MY! If your sex life leaves, well, something to be desired, you’re not alone. But it doesn’t have to be that way.
“
There’s just such a disparity when it comes to enjoyable sex in heterosexual couples,” says Jordin Wiggins, a sexologist and naturopathic doctor at Health Over All Clinic in Niagara, Ont. And LW¶V D̆HFWLQJ VR PDQ\ DUHDV of women’s lives outside of the bedroom, too, including their relationships and mental health. “I could cry talking to women about this,” says Wiggins. “They think they’re broken, but there’s nothing wrong with them—there is something wrong with what we’re taught about sex, though.” 48 | CANADIAN LIVING MARCH 2022
Mind the gap Depending on the research you read, approximately 75 to 85 percent of men always orgasm during sex, compared to only 30 to 35 percent of women. “I work with women of all ages and many of them tell me that they’ve never orgasmed with their partner—ever— or they have difficulty orgasming,” says Wiggins. “They’re almost resigned to it as part of being in a relationship, that pleasurable sex is just for men.” That imbalance only seems to exist between
straight women and men— women who are having sex with other women report experiencing significantly more pleasure. And women even note that they have more orgasms when alone than when they’re with a male partner. (In one study, 39 percent of women said they always orgasm during masturbation while a mere 6 percent said they do with a husband or boyfriend.) This all tells us one very positive thing: More enjoyable sex is possible, even if it seems unattainable. With so many women having so much disappoint-
ing sex, it’s no wonder that there’s such an abundance of low libido and sexual disfunction, says Wiggins. “The term ‘sex drive’ is a misnomer,” says Wiggins. That’s because sexual pleasure is not actually a drive like hunger or thirst. Instead, people experience sexual desire based on a rewards system, where the more good sex they have, the more good sex they want. “If women consistently have sex that doesn’t meet their needs, then it’s not a reward, and as a result they’re not hardwired to want to do it again,” she says.

SEX selfcare Sexual wellness Understanding the orgasm gap and addressing it is essential to help women achieve more satisfying sex lives. That’s very important, yes, but our sex life isn’t just about sex. “Research shows that having a satisfying sex life is related to overall life satisfaction,” says Dr. Laurie Mintz, a licensed psychologist sex therapist and author of Becoming Cliterate. Good sex is tied to many facets of physical health, from higher immune function to stress reduction. It’s also linked to better self-esteem, better sleep habits and better relationships. “And this is not just for young, cisgender women,” says Dr. Mintz. It’s true for people of all ages and preferences. “I’ve had many people tell me that by becoming more empowered in the bedroom, they became more empowered in other areas of their life as well.”
We could all use some sex ed Experts say a main source of our pleasure problem is miseducation. To begin with, we don’t know nearly enough about our own bodies. According to a 2019 survey conducted in the United Kingdom by YouGov, an international analytics and research data group, both genders are
guilty of misnaming female anatomy. In fact, half of those studied could not correctly identify the urethra, labia or vagina on a diagram—never mind their respective functions. It’s actually a pretty big deal that most women call their entire genital area a vagina, says Dr. Mintz. It’s biologically inaccurate (the vagina is only the passageway to the uterus), but it also does us a great disservice between the sheets. “We call our entire genitals by the name of the area used for male penetration and male sexual pleasure, linguistically erasing our pleasure centre,” she says. “We should stop and think about that.” “About 80 percent of women don’t orgasm from penetrative sex alone,” says Éva Goicochea, the founder of the new-toCanada modern sexual wellness brand Maude. The vast majority of women require clitoral stimulation. (And here’s a fun fact: The clitoris is special in that it’s the only organ of the human body, male or female, that’s sole purpose is pleasure.) “Women have really been ignored when it comes to our sexual health and pleasure, so that has been our goal [with Maude]: to open the conversation and have products you can bring into the partnership without it feeling uncomfortable,” says Goicochea.
There’s no quick fix for less-thanoptimal sex, but these five tips from Jordin Wiggins, a sexologist and naturopathic doctor at Health Over All Clinic in Niagara, Ont., are a great place to start to get tangled in your sheets more often.

Take off the time pressure. It can take women upwards of 30 minutes to reach orgasm, while most men only need eight. If quickies aren’t doing it for you, having lots of uninterrupted time with your partner could be key.

Embrace “outercourse.” Foreplay, like cuddling, kissing and touching are essential for many women to reach orgasm. “Think of it this way: Women are like a pot that needs to come to a boil; men are like a light switch,” she says.

It’s time to rewrite the sex script For the past few years there have been rumblings of a pleasure revolution. Instead, we should be including things that bring us erotic pleasure, from snuggling and sexting to flirting and foreplay. Women need to let go of shame and inhibitions, embrace their bodies for what they are and prioritize their needs, however that looks. “We all deserve pleasurable sex,” says Wiggins.

Edged with chartreuse or redviolet, endive is grown just beneath the surface of the soil in complete darkness to maintain its pale colour and delicate flavour. Like other members of the Cichorium genus, including radicchio and escarole, endive's leaves are slightly bitter, which isn’t to everyone’s taste. Soften the flavour by removing the heart or by combining the leaves with an acid, like vinegar or lemon juice, or a sweetener, such as maple syrup, honey or brown sugar. With the electric/multi-use pressure cooker, this stew is ready in a fraction of the time of traditional oven-braising. Soul-satisfying stew made with Canadian beef, served with toasty Furlani® garlic bread. It’s the ultimate cold weather comfort food. 1. Preheat electric pressure cooker on the Sauté function. Season beef all over with salt and pepper. Heat 1 tbsp oil in pressure cooker pot. Brown beef in 2 batches, turning and adding remaining oil as needed, until browned on all sides. Transfer to a plate. 2. Add onion, garlic, and seasoning to pot. Cook, stirring for 4 to 5 minutes or until starting to soften. Add broth, ketchup, Worcestershire sauce, and bay leaf, stirring up any browned bits from bottom of the pan. Return beef to the pot with any accumulated juices. Stir in carrots and potatoes.
OPTION Traditional Oven-Braised Beef Stew Instead of the pressure cooker, prepare this stew in a large pot/Dutch oven on stovetop and, once carrots and potatoes are added, bring to a boil. Cover with a tight-fitting lid, transfer to a 350°F oven and cook for 1¼ hours or until beef is fork tender. Set pot over mediumhigh heat; gradually stir some of the cornstarch mixture into stew. Cook for 1 to 2 minutes or until thickened as desired.
3. Seal the electric pressure cooker lid and make sure the vent is closed. Set the pressure to HIGH and set time for 35 minutes. When the timer beeps, let pressure release naturally for 10 minutes. Quick release any remaining pressure. Meanwhile, prepare Furlani® garlic bread according to heating instructions and keep warm.
