INGREDIENTS 2 baby eggplants (about ½ pound each) 3 plum tomatoes, quartered 2 garlic cloves 1 (15-oz.) can chickpeas, drained ¼ cup pine nuts 1 cup crumbled feta 1 tsp. dried oregano 1 tsp. lemon juice ½ tsp. salt Fresh chopped parsley and stir in all the remaining ingredients except the parsley. Spoon the mixture into the eggplant halves, pressing it in and mounding it high. 4. Arrange the eggplants in the prepared pan and bake for 40 minutes. Garnish with fresh parsley.

Creamy Tomato Cucumber Cups

1. Heat oven to 400°. Coat a 9-inch square cake pan with cooking spray. 2. Trim off and discard the stem end of each eggplant, then halve them lengthwise. Trim off a thin slice from the rounded side of each portion so that it sits fl at. Working over a bowl, hollow out the center of each eggplant, reserving the fl esh. 3. In a food processor, pulse the reserved eggplant, tomatoes, and garlic until fi nely chopped. Transfer the mixture to a bowl

CREAMY TOMATO CUCUMBER CUPS, p. 34

INGREDIENTS 1 large English cucumber, ends trimmed ½ cup plain Greek yogurt 2 tbsp. tahini 2 tsp. lemon juice ¼ tsp. ground cumin 1 garlic clove, minced Salt and pepper 2 plum tomatoes

ACTIVE TIME: 15 MIN . TOTAL TIME: 15 MIN. MAKES: 12 SERVINGS

1. Slice the cucumber crosswise into 12 1-inch-thick rounds. Scoop out the center of each to form a cup. 2. In a bowl, stir together the yogurt, tahini, lemon juice, cumin, and garlic. Season with salt and pepper to taste. 3. Halve each tomato and use your fi ngers to scoop out and discard the pulp and seeds. Dice the halves, reserve 2 tbsp., then stir the rest into the yogurt mixture. 4. Distribute the tomato fi lling evenly among the cups. Top each with a few pieces of the reserved tomato.

YOU WILL NEED 8-ounce bottle of Purell Hand Sanitizer (this brand works well because the plastic is thin enough to cut). Utility knife (adults only) Washi tape Removable adhesive strips

1. Remove the bottle’s labels and any remaining adhesive (for stubborn bits, use nail polish remover). Discard the pump. 2. With the utility knife, carefully cut away the bottle’s top as shown. 3. Turn the bottle upside down and cut away the base (cut just above, not through, the thickest plastic at the bottom of the bottle). Neaten the edges with small scissors. 4. To support the phone inside the pocket, make two straps by sticking 4-inch lengths of washi tape together back-to-back. Place the straps across the pocket’s bottom as shown, leaving the center open for the charging cord. Wrap more tape around the pocket to secure the straps. If you like, decorate it with paper cutouts, stickers, or name labels. 5. Hang up your phone pocket using the adhesive strips.
