SWITCHING IT UP A GREEN CHRISTMAS Your December 2017 issue provided so much Christmas cheer. I particularly enjoyed the use of fresh greenery throughout, draped on tabletops, plunked in ice buckets and accompanied by metal orbs in planters. I love the natural look and now realize it doesn’t always have to be pinecones or evergreens.
I loved the Alfajores recipe in the November 2017 issue’s Dessert of the Month column (page 24). I changed up the cookies by rolling them into little cigars, baking them, and once they cooled, I dipped the ends into melted chocolate. So good! JOAN S., VIA EMAIL

fruit and tea. This yummy sorbet is light, super easy to make and packs a delicate punch of sweet tangy flavour.

INGREDIENTS MAKES 4 TO 6 CUPS

mint tea bag cup boiling water cup granulated sugar cups pomegranate juice cup freshly squeezed tangerine juice ¼ cup pomegranate seeds, for garnish 8 to 12 fresh mint leaves, for garnish
DIRECTIONS Steep the tea bag in the boiling water for 15 minutes. Remove and discard the tea bag. Place the sugar and the tea in a small saucepan over medium heat and stir until the sugar is dissolved. Bring the mixture to a boil and cook for 1 minute. Remove the pan from the heat and let cool to room temperature. Stir in the pomegranate and tangerine juices until thoroughly blended. Chill the mixture in the refrigerator for 1 hour. Transfer the mixture to an ice cream maker and churn accord-
ing to the manufacturer’s directions. If you don’t have an ice cream maker, pour the mixture into a large freezer bag and freeze until solid, about 4 hours. Break the mixture into small pieces and transfer to a food processor. Pulse, stopping the machine occasionally and pressing the mixture toward the blades. Process until the sorbet spins smoothly and has a light fluffy texture. Freeze in a covered container for another couple of hours until firm. Serve topped with the pomegranate seeds and mint leaves.

The beef burger and homemade fries are customer favourites, but this vegetarian loved the beet salad topped with
warm goat cheese. Next, stroll to Place des Festivals (2) and channel your inner child at Impulse – an interactive art installation featuring LED-lit see-saws and more. Continue this style-meets-tech day at the Society for Arts and Technology and experience a 3-D art show, virtual reality games and light displays. As for dinner, that’s easy. Food-lab, located in the same building, offers delicious dishes from celebrated chefs who combine local produce with foodie trends.

DAY 3 Do like the locals and grab a bagel from St-Viateur Bagel (6). Then, mosey down to VdeV, a decor store teeming with midcentury-style furnishings, boho textiles and charming dishware. If your wallet still needs a workout, peruse equally covetable home goodies, as well as skin-care products, clothing and accessories, at Vestibule (1). When you’ve shopped up an appetite, head to Le Butterblume (5) and make sure you order the yogurt pancake with poached pear. Continue your spree, stopping at places like Atelier B, which offers chic locally designed and made clothing, and Les Chocolats de Chloé, a dream destination for anyone with a sweet tooth. For dinner, how about some classic Québécois cooking? Restaurant au Pied de Cochon is the place for a taste of classic poutine – a fitting ending to a fabulous trip.

In the airy and bright living room of this revamped Vancouver home, a new white built-in with a poured concrete top boasts a cool contemporary feel that’s balanced by the oak above it. From these shelves to the flooring to the stool bases in the adjacent kitchen, wood is a warming finish that establishes continuity throughout the clean-lined house. Given Vancouver’s redhot real estate market, even the most rundown houses don’t languish for long. But this townhouse in the über-popular Kitsilano neighbourhood sat on the market for a relative eternity: 30 whole days. Its 1980s features – namely the kitchen’s beige laminate cabinets and linoleum flooring – needed major updating, and it required huge imaginative leaps to see past the dated rooms. Luckily, interior designer Melanie Finkleman and her husband, Ben (the project manager of their business, Hazel + Brown Design Company), are visionaries who relish that

They saw the roughly 1,550-square-foot townhome’s merits and decided to renovate and resell it. “Its location is great – who wouldn’t want to live close to the beach and be surrounded by lots of mature trees?” says Melanie. “Plus, we actually liked the fact that it was original and untouched – we knew it would make for a striking before and after.” So the couple made the purchase and set to work transforming the dark and dated space into something bright and modern to turn their savvy investment into a sweet return.

DECORATING Up first was unifying the seemingly disparate spaces throughout the main floor with an envelope of crisp white paint and warm engineered white oak flooring. Next, the living room was nudged into this century with contemporary furnishings, built-in storage and fresh pink accents that can be easily traded out should the next owners want to steer clear of the shade. An awkward corner fireplace was straightened out to accommodate a more functional sitting area, and the cathedral ceiling was clad in whitewashed hemlock boards to add texture and interest. The original ’80s laminate kitchen was also completely overhauled. New custom cabinetry, marble subway wall tiles, professional-grade appliances and quartz countertops now offer improved functionality. That means more counter space, more seating room

The serene master bedroom received a new floor and an all-white treatment to bring it up to speed with the rest of the home. A pale grey upholstered headboard relates to the grey accents elsewhere in the house, while the play of pattern in the lumbar cushions adds interest. and more storage, and a light contemporary look that anyone can make their own with a few personalized accessories. Upstairs, the master bathroom received a similarly extensive overhaul. Most notably, Melanie and Ben rejigged the plumbing to amp up the size of the shower (not shown) and added a handheld shower head and body jets. Though the master bedroom’s update was largely cosmetic – save for the addition of a walk-in closet – it’s still a far cry from its drab former self. All in all, this huge project required patience, determination and innovation. But once complete and back on the market, the house was quickly snatched up by an eager new buyer.

PERSONALIZE THE PALETTE “I don’t want to be calm and serene when I’m designing. I want to be charged and excited, and these hues scream, ‘Let’s get happy!’” says designer Margie Doyle White, referring to one of her favourite colour combos in her most favourite fabric, which covers the desk chair (actually an old dining chair she had reupholstered). FOLLOW THE LIGHT Natural light has a way of making a room. This space suffered from small windows and was way too dark, so Margie replaced them with larger ones that allow her to appreciate the view. “Now, the sun pours in, and I look forward to starting my mornings here,” she says. PRACTICE SMART STORAGE Of course, the secret to a stylish office is ample storage. Whether you source them from big-box stores or find unique antiques, lots of shelves, folders, cabinets and cases are a must for avoiding a mess.
For corralling smaller supplies, the designer likes to get creative: “I repurpose pretty objects from around the house, such as small vases, coffee cups, bowls and juice jugs.” CONSIDER THE VIEW Overlooking the leafy backyard, the window brings a lot of green into the room, which is another reason Margie chose it as an accent colour. “If you have large windows, it’s important to consider what they look out on. Make sure your design looks good with your vista and that they flow naturally together.” MAKE YOURSELF SMILE Margie opted for minimal decor, keeping just a few beloved beauties in her line of vision while she works: artwork she adores (a collage by her daughter and a favourite print pulled from a Kate Spade New York coffee-table book) and photos of her daughter. There’s also one of Margie’s mother “back when she was trying to be a rebel,” says the designer. “I can always look up and see things that make me smile or giggle!”

This light and airy kitchen boasts surprising contrasting details. The smooth olive green cabinetry, shiny range and sleek marble countertop are offset by a wall-mounted cupboard with flaking paint and wide unfinished floorboards. OPPOSITE A collection of oddly shaped ceramic pots, vases and vessels sits comfortably with piles of well-read paperbacks. Whether by design or good luck, the ensemble works very well, creating a perfectly colour-matched assembly.
THE SIMPLE HOME is about keeping things plain and useful – it’s a chance to get back to basics, to consider ideals of good design and the forgotten traditions of craftsmanship, and then to think about how these tenets can be adapted to a more modern approach. This way of living feels refreshing at a time when things seem to have a tendency to get over-complicated.
That’s not to say the simple home has to be hard-edged or overly austere, with no cats, crumbs or kids allowed. Instead, it’s the key to comfortable relaxed living. The look allows for flexibility and endless options, giving you the chance to curate your home like a personal museum; reconsider your belongings and only surround yourself with things that you really love.

A collection of meaningful artwork complements the living room’s simple serene palette.
W
hen Robert and Lesley Cancelli moved into their 4,200-squarefoot uptown Toronto home, they loved its traditional centre-hall plan and classic architectural details. The previous homeowners had left it in good shape with some thought ful renovations, but the Cancelli family (with kids aged four, seven and 10) sought an even more updated, youthful vibe and hired designer Stephanie Lees to achieve it. “The house has good bones and didn’t need a lot of renovations,” Stephanie explains, “but it required some modernizing, including painting and redecorating.” To achieve a family-friendly yet elegant design, Stephanie introduced some custom pieces to suit the traditional space’s more formal dining and living rooms. While Robert and Lesley brought in the dark wood table from their previous home, new dining chairs and a sleek custom-made sideboard balance the old with the new. In the living room, a pair of pretty vintage chairs was refinished and reupholstered, and new armchairs and a sofa with simple clean lines were added to complete the room.

Stephanie is especially adept at helping her clients with art selection. “We chose pieces that work in the new spaces but also have significance for the family and their lives together,” she says. Lesley and Robert met while they were both living and working in New York City, so several pieces give a nod to that time in their lives. “We also love boating and cottage living,” Lesley says. “A lot of our artwork has a connection to that lifestyle, too.” Now the home is a sophisticated mix of vintage, new and custom pieces that are at once formal, casual and fun. It all adds up to a traditional house with a playful twist for this lively family.

“Before you decorate, know how you’ll use the space,” says designer Shirley Meisels. Since everyone enters through the front door, having a place to drop keys and remove shoes is crucial. I
n many ways, decorating is all about practice – trying things out, making mistakes, learning, perfecting and revising. And it all begins with simple observations: “Taking note of what a family really needs – and wants – in their home is so important,” says designer Shirley Meisels, owner of Toronto’s MHouse. This was the philosophy that guided her when a pair of professionals with kids contacted her to help design their 2,200square-foot 1940s home. The house had already been gutted and a small two-storey extension was added to the back. This created a beautiful blank canvas for Shirley to begin designing the clean, bright rooms the homeowners were after. “For the couple, modern, clutter-free spaces were really important,” says Shirley. “And for the kids, lots of room for the happy chaos of free play was what mattered.” The challenge was to bring these elements together and to do so in a way that would flatter the space. Shirley set out to select furniture durable enough to withstand plenty of kid action – easy-toclean fabrics and surfaces were must-haves. In addition, while the homeowners wanted the pieces to be cozy enough to curl up in, they were also after contemporary lines. In other words, no overstuffed sofas. “A wish list like this can seem impossible,” says Shirley. “But it’s not. Natural fibres, such as wool blends, clean beautifully.

And it’s a misconception that tight-backed sofas are uncomfortable; in fact, they can be incredibly soft and supportive.” Similarly, the idea that minimalist design isn’t kid-friendly is false. “As long as there’s lots of storage, your home can be as calm and modern as you like.” With that in mind, the designer included storage everywhere, employing tactics like stylish baskets in the living room and built-ins in the family room. “I call pieces like these catchalls,” says Shirley, “anything that can collect overflow, such as toys, throws and electronics. Two minutes to put them away and the room looks as good as new.” To maintain the bright and airy vibe, the palette is predominantly soft and ethereal. Shirley chose a quiet symphony of grey, white, navy, dark purple and black. Then, she added unexpected hues, such as muted pinks and hazy blues. “These touches of pink and blue provide some vibrancy, but they do so in a way that is experienced as neutral,” she says. Large-scale photographs from the couple’s travels hang on the walls. Personal items like this are deeply important to creating a home. Sure, they work as sophisticated design elements, but they also inspire beautiful memories and, in doing so, encourage family bonds that are certain to last a lifetime.

orning is in full swing: The kids, aged one, three and five, squeal with delight as they run around, their voices echoing from the kitchen’s eat-in area. Mom’s packing the kids’ backpacks, Dad’s cooking breakfast, and toys are scattered across the floor. It’s a rainy early morning, and for the children who live in this Vancouver Craftsman-style home, messy is just another word for happy. But everything that’s strewn about can easily be hidden away. Thanks to interior designer Jamie Deck, clever storage is everywhere in this 3,400square-foot open-concept house. “When I met with the homeowners, one of the first things they told me was they wanted to keep clutter at bay,” she says. Solution one: Convert the first-floor den into a minimalist mud roomslash-office. “It’s actually my favourite room in the house,” says one of the homeowners. “The closet has low racks so the kids can easily hang their coats and toss in their backpacks. It can get crazy inside that closet, but I just close the doors, and ahhh! The house feels instantly calm.”
THIS PAGE & OPPOSITE The all-white living room is long and narrow, so interior designer Jamie Deck set a cozy conversation space around the fireplace in the centre to keep the area intimate and inviting. The custom millwork is a classic Jamie move. “Built-ins maximize space and offer ample storage, while strategically placed mirrors visually expand the room,” she says. The quiet white and grey tones on the marble fire-

Surprisingly, the home’s white-on-white palette was chosen to impart serenity without getting in the way of their kids-will-be-kids lifestyle. Carefully chosen light yet stain-resistant fabrics on the bar stools, sofas, rugs and pouffes can be wiped clean in seconds. “Honestly, the tricky thing about going all white isn’t keeping it clean,” says Jamie. “It’s using white in ways that don’t appear too sterile. That’s where organic elements come in. Natural stones and fibres like marble and linen are soft and inviting.” Do you know what else is inviting? The home’s multiple plush sofas that offer spots to rest. In the family room, for example, a sofa and a custom sofasized bench form a cozy conversation area where there was previously an ill-suited fireplace. “When my friends drop by with their babies and kids, they nestle onto the couch to chat and let the kids play at their feet,” says the homeowner. “It’s great.” There are two more sofas in the living room. At first,

LEFT Silver-flecked wallpaper looks white in the daytime, but at night it shimmers and shines. “We kept furniture to a minimum and focused on straight lines to keep the room looking open,” says Jamie. “But for the lighting, we emphasized glitz.” The table has a solid wood top but faux wood legs. “It’s a way to save money that nobody will notice,” explains the designer.

the husband was wary of that set up. He’d initially wanted a sofa with two chairs because he insisted his friends would never sit side by side to chat and hang out. “Now, I walk in and there they all are, feet pulled up, looking as cozy as can be,” says his wife. And perhaps best of all, Jamie put a sofa in the bedroom. “Though I was initially reluctant to include it, I’ve since learned it’s the perfect place to enjoy a cup of coffee with my husband before the morning rush,” says the homeowner. And it’s a prime place to enjoy quiet time away from the kids. As active as life is on the main floor, upstairs there’s an escape: the master bedroom, which is modelled after a hotel room. “We love hotels,” says the homeowner. “We even sent pictures to Jamie of rooms we’d admired on vacations!” The designer ran with the idea. Spare, sophisticated and serene, the room is fitted with white bedding and contrasting toss cushions. Layers of elegant flowing drapery muffle sound. “It’s perfect,” says the homeowner. “All that’s missing is the room service.” Thanks to ample storage, calming shades and timeless touches, this buzzing family home now feels like a year-round retreat.

OPPOSITE “The homeowners plan to do a full kitchen reno in the future but opted for a facelift to conserve funds for now,” says Jamie. So this kitchen update was full of saves: The countertop and flooring stayed the same, while the cabinetry, which was about eight years old, was simply treated to a coat of white paint. This allowed Jamie to splurge on other items, such as the marble honeycomb backsplash and new hardware. A Roman shade adds a simple layer of softness. LEFT “We spend a ton of time here,” says one of the homeowners of the eat-in area, which is a hub of activity all day long, from busy breakfasts and quick snacks to happy crafting and friends dropping by for a drink on weekend afternoons. THIS PAGE Formerly a cozy den, this mud room-slash-office was a storage coup. The extra-long built-in bench, where the kids pull on their boots and get bundled up to go outside, is the pièce de résistance. “The kids sit here and watch out the window for friends and family to arrive,” says the homeowner. Under the bench, open storage offers spots for shoes while baskets keep mitts and hats out of sight. A small desk nestled at one end of the room provides a bright and sunny spot for the homeowners to catch up on emails and work – and thanks to all the storage, clutter is never a distraction. OPPOSITE The family’s golden retriever, Isobel, warms up by the living room fire. “The fireplace is one of the main reasons we love this cabin,” says one of the homeowners. “Every effort was made to keep it and its surrounding nooks exactly as we found them.” They refreshed the stucco and added a piece of steel to accommodate more firewood storage. SHEARLING UPHOLSTERY
“We
love everything Mid-Century Modern,” says one of the homeowners of this Swiss-inspired ski cabin in Collingwood, Ont. The couple loves it so much that when they first spied the 1955 beauty, it made an impression that remained on their radar. “It’s next to the place we’d been renting for three years, so we watched it closely,” says the homeowner. The parents to three ski-racing teenage boys finally made an offer in 2015. “We fell for its exterior architecture, original fireplace and large windows facing the slopes.” In ski terms, though, its amenities were more bunny hill than black diamond. “It had a tiny kitchen tucked behind a wall, a dirt floor in the basement, outdated electrical, you name it – but we felt we could make it our own.” A friend referred the family to local custom-home builder Blake Farrow, who introduced them to his wife, Marina, a designer at Farrow Arcaro Design, and architectural technologist Adam Vokes. Together they all set about transforming the 1,700-squarefoot space, beginning with a down-to-the-studs reno. When the rebuild was complete STYLEATHOME.COM JANUARY/FEBRUARY 2018

and the open-concept main level in situ, the decorating fun began. “My wife and I are incredibly decisive, and the Farrows could see our passion for design,” says the homeowner. “In fact, Marina was really excited about our vision, which wasn’t the typical ski chalet look.” Indeed, one of the jumping-off points was the dining room’s new vibrant retro-style wallpaper. “I wanted colour and pattern that looked like it was actually from the 1960s,” he says. “I sent Marina images of wallpapers I found online, and she went from there to source the perfect one.” The paper is complemented by the space’s high-end flooring. “It’s a beautiful rich walnut and a definite splurge, but the main level is relatively small, so we didn’t need that much of it.” For sourcing on a dime, the internet proved to be the couple’s best friend. “I spent six months scouring antiques stores and eBay for items, which is cost-effective since you only bid as high as your budget allows,” says the homeowner. They scored many finds (everything from all of the cabin’s original ’50s artwork to the front-door knocker) but point out that each piece was thoughtfully chosen,

“We really wanted a moose head but grappled with a taxidermy route, so we started looking for carved wood alternatives,” says the homeowner. They found this one, which is made up of pieces that fit together like a puzzle. “We love how it’s perfectly at home against the original beams in the living room.” The new sofa was covered with vintage-look fabric and accented with zings of yellow that are echoed throughout the first floor. which is in keeping with the personal provenance of the many furnishings here. “We wanted to incorporate pieces we’ve collected over the years, such as our Eames chair, which would be a staple in any mid-century lover’s home.” There’s another piece in the cabin that fits the bill: the old-school Bang & Olufsen record player. Its bright yellow hue punctuates the breezy open main floor, which invites entertaining. “My wife and I can accommodate a lifetime of family and friends here, enjoying time together on and off the slopes.” When they revealed it to their teenagers on Christmas Day in 2015, “They were amazed. OPPOSITE The entryway’s panelling, mouldings and mix of materials, such as the faux shagreen on the console and cerused oak of the bench, are a nod to the glamorous 1930s and offer a clean-lined complement to the modern architecture of the house.
IF EVER there was a house that dispelled the myth that modernity equals austere and cold, this one is it. Homeowners Brad and Judy Fedora, who have three young children, had outgrown their previous home and decided to try something new. “We lived in a traditional home for 10 years,” says Judy. “We wanted to explore something else, yet create a look that wasn’t too much of a departure from the classic style we love.” Their house hunt led them to the Calgary neighbourhood of Britannia, a mature picturesque area close to parks, schools and a convenient shopping plaza, as well as a quick drive from the downtown core. The area has been experiencing a metamorphosis of late, with many new residents and developers taking advantage of the relatively sizable lots – tearing down the older houses to build substantial luxury homes – and the Fedoras followed suit. “We found an original 1960s house on a large lot, so we ended up tearing it down to build new,” says Judy. Enlisting a dream team of architect Marvin DeJong, custom home builder Doug Rawlyk and interior designer Nam Dang-Mitchell, the homeowners built a 5,356-square-foot flat-roofed house with voluminous open-concept spaces and floor-to-ceiling windows. While its architecture is 21st-century modern, the house was given a decidedly rich warm look that’s consistent with the traditional bent the homeowners wanted. “The main intent was to prevent the interior from feeling cold and corporate, so the challenge was to bring in some warmth and luxury but keep it streamlined because it had to go with the architecture,” says

Nam. With this in mind, the designer took inspiration from the styles of the 1930s – notably Art Deco and Art Moderne – known for combining luxury and sleekness with modernity and drama. The foyer serves as a perfect example of this approach. Sculptural pieces like the console clad in faux shagreen, the Mongolian lambskin and cerused oak bench and the curvaceous sconces (based on a design by Emile-Jacques Ruhlmann, an Art Deco master) offer a hint of avant-garde ’30s glamour. “But everything goes with the architecture of the house,” says Nam, noting elements such as the contemporary staircase. The foyer’s architectural details like the reverse flat wall panelling, high baseboards and substantial crown mouldings, are kept simple, maintaining a clean-lined look while injecting traditional character.

With her passion for interior design, Judy values luxurious materials and fabrics, and this proved to be harmonious with Nam’s vision for adding layers and interest within the spaces. Materials popular in the ’30s, such as shagreen, parchment, alabaster and ebony, make appearances throughout the home. And there are plenty of standouts: the smoked glass Venini-style chandelier and hand-painted wallpaper in the dining room; the limestone-clad wall and fireplace in the living room; the ruched leather bench in the family room; and, of course, the stunning Statuario marble (sometimes bookmatched) throughout. “I like things to either be the showstopper or the support,” says Nam. This approach – as well as the muted, neutral palette pulled from the house’s limestone exterior – ensures the look remains relaxed and tasteful, as opposed to over the top. “The house is elegant understated luxury,” she says, “but not ostentatious or flashy in any way. It’s an appreciation for details and quality.”

STUFFED PEPPERS WITH CHILI MAKES 1 SERVING

tsp coconut or light olive oil small red onion, peeled and sliced clove garlic, peeled and sliced small rib celery, diced red chili pepper, diced oz sweet potatoes, peeled and diced into ½" to 1" pieces 1 tsp ground cumin 1 tsp ground coriander ½ tsp paprika Small bunch cilantro, stems finely chopped, leaves reserved 1 large red or yellow bell pepper 1 tsp light olive oil ½ 14-oz can black or kidney beans, drained and rinsed 1 tbsp tomato purée 1 tsp tamari or coconut aminos Sea salt and freshly ground black pepper to taste Preheat the oven to 400°F. Heat the coconut oil in a large saucepan and sauté the onion, garlic, celery, chili pepper and sweet potatoes for 5 minutes; add the cumin, coriander, paprika and cilantro stems, and stir until the mixture is well coated. Add ½ cup of water and cover the saucepan with a tight-fitting lid. Reduce the heat to its lowest setting and cook for 25 to 30 minutes, stirring occasionally to prevent the vegetables from sticking to the bottom of the pan. Meanwhile, cut the pepper in half horizontally and remove the seeds and pith. Pour ½ teaspoon of the olive oil into each pepper half and, using your hands, rub the oil over both sides of the pepper. Place the pepper halves, cut side up, on a baking sheet and bake until softened and slightly caramelized around the edges, 12 to 15 minutes; set aside. Add the beans, tomato purée and tamari to the sweet potato mixture (you may need to add another splash of water if it looks dry, although you are aiming for a thick chili). Increase the heat and allow the mixture to simmer for another 5 to 6 minutes to warm the beans through. Stir in half the cilantro leaves, then taste and add salt and pepper if necessary. Spoon the sweet potato chili into the

bottom half of the pepper, sprinkle with the remaining cilantro leaves and top with the remaining pepper half. Serve immediately.
ROAST CHICKEN & VEGETABLES MAKES 4 SERVINGS
Chicken 2 medium onions, peeled and halved 2 carrots, peeled and halved lengthwise 1 head garlic, cut in half horizontally 1 3-lb chicken 1 lemon, halved ½ bunch thyme or 1 sprig rosemary Sea salt and freshly ground black pepper to taste Vegetables ½ eggplant, cut into 1" chunks 1 red pepper, cut into 1" chunks ½ yellow or orange bell pepper, cut into 1" chunks 1 red onion, peeled and cut into 8 wedges Large handful cherry tomatoes 1 small leek, rinsed well and cut into 1" rounds 2 cloves garlic, peeled and sliced Light olive oil Sea salt and freshly ground black pepper to taste 1 tsp dried mixed herbs Preheat the oven to 400°F. Place three of the onion halves, the carrots and half the garlic bulb in the bottom of a roasting pan. Remove and discard the neck and jiblets of the chicken. Stuff the cavity of the chicken with the remaining garlic, onion half, half the lemon and the thyme. Place the chicken breast side down on top of the vegetables (this will help keep the meat moist during cooking) and season with salt and pepper. Pour water into the bottom of the pan to a depth of ½". Cook for 45 minutes. Meanwhile, place the eggplant, peppers, red onion, tomatoes, leek and garlic on a baking sheet, overlapping as little as possible. Drizzle generously with the olive oil and sprinkle with salt, pepper and the dried herbs. When the chicken has cooked for 45 minutes, reduce the heat to 325°F and place the vegetables in the oven with the chicken. Cook for 30 minutes. Remove the chicken from the oven when its juices run clear when the skin
is pierced with a fork and an instant-read thermometer inserted into the thigh registers 165°F. Transfer the chicken to a cutting board; cover with foil and allow to rest for 15 minutes. Remove the vegetables from the oven when tender and slightly brown at the edges. Divide the chicken and vegetables among four plates and serve immediately.
EGGPLANT & CHICKPEA CURRY MAKES 2 SERVINGS
2 tbsp coconut or light olive oil 1 onion, peeled and sliced crosswise 1 1" piece fresh ginger, peeled and grated 3 cloves garlic, minced 2 tsp ground coriander 1 tsp garam masala 1 tsp ground cumin ½ tsp turmeric ½ tsp chili powder ½ tsp salt 6 ripe tomatoes, chopped 2½ cups vegetable or chicken stock ½ eggplant, cubed ⅓ cup cashews 1 14-oz can chickpeas, drained and rinsed Bunch cilantro, finely chopped 2 handfuls spinach leaves Freshly ground black pepper to taste Juice of 1 lime In a heavy-bottomed saucepan, heat the oil over medium heat; add the onion and cook until softened, about 5 minutes. Reduce the heat to low and stir in the ginger and garlic; cook for 1 minute. Add the coriander, garam masala, cumin, turmeric, chili powder and salt, and cook, stirring, for another 30 seconds. Add the tomatoes and stock; cook for 10 minutes, uncovered, stirring regularly and breaking down the tomatoes with the back of the spoon. Once the mixture is saucy, add the eggplant, cashews and chickpeas. Stir well to coat, then cover the pan and continue to cook until soft, 10 to 12 minutes. You can add some water if the curry is too thick. Stir occasionally to stop the mixture sticking to the bottom of the pan. Add the cilantro and spinach leaves, and cook until wilted, another 1 to 2 minutes. Serve immediately.
