It used to be that when I walked through my neighbourhood at this time of year, I would see houses for sale on every block, the lawns dotted with Realtor signs to beckon potential buyers. Now, however, instead of For Sale signs staked in the ground, I’m seeing more and more placards promoting architects, contractors and designers. Somehow I’m not surprised. As the real estate market across Canada gets hotter, many homeowners are making the decision to renovate instead of sell. And I’m not just talking highend refurbishments – behind the doors of many of these homes, budget makeovers and updates are also happening. From painting the living room a new colour to replacing the kitchen backsplash and cabinet hardware, we all know that simple inexpensive changes can make a positive impact on your decor. For those with larger budgets, I cannot stress enough that you will be happier if you hire a pro to help. At Style at Home, we’re proud to say that we collaborate with, support and showcase the work of some of the top designers, architects and builders in the country. I’m lucky that I’ve been able to benefit from the advice of all the people I work with. When I’m on a shoot, I tend to distract everyone there by peppering homeowners and designers with question after question about the fabulous house we’re photographing. I’m like a kid in a candy shop – nothing is more exciting to me than getting outside-the-box insight and ideas when it comes to decor (and budgets!) and then incorporating them into my space. I’m sure you all know the feeling. That’s partly why I love what the homeowners in this issue have accomplished – believe me, I’ve taken note of many of their makeover tips. I may, for example, sign up for a big-box-store seminar on how to install tiles so I can DIY my backsplash like homeowner Jordana Garbati (“White Design 101,” page 48). Or I could add wood slats to my living room wall as an easy update like Jenna and Steve Holland did in their Fredericton mid-century abode (“Eye of the Storm,” page 84). I might even go so far as to install a landscape mural that covers an entire wall, à la designer Jordy Fagan (“Happy Campers,” page 40). The point is, inspiration is everywhere, and we should embrace it. In that spirit, this issue is dedicated to those of us, whether renters or homeowners, who are looking to make changes – large or small – that will make their digs bigger, brighter and better.

1¼ cups granulated sugar, divided ½ cup unsalted butter, softened 2 eggs 1½ cups all-purpose flour 1¼ tsp baking powder ¼ tsp baking soda Pinch salt ¾ cup 2% milk Pink paste food colouring

cups mascarpone cheese (about 500 g) cup icing sugar cup 35% whipping cream tsp pure vanilla extract cups fresh raspberries + more for garnish tbsp freshly squeezed lemon juice tbsp freshly squeezed orange juice store-bought 4" meringues
DIRECTIONS Preheat the oven to 350°F and line a large 12-cup muffin tin with paper muffin cups. To make the pink cake layers, beat together 1 cup of the sugar and the butter in a large bowl until light and fluffy. Beat in the eggs, one at a time, until blended. In a separate bowl, whisk together the flour, baking powder, baking soda and salt until well blended. Stir the flour mixture into the butter mixture in three additions, alternating with the milk, beginning and ending with the flour mixture. Stir in a little food colouring to tint the batter a light pink. Spoon the batter into the muffin cups and bake until a toothpick inserted into the centre of a cupcake comes out clean, 16 to 18 minutes. Let cool completely. Meanwhile, beat together the mascarpone, icing sugar, whipping cream and vanilla in a medium bowl until the mixture is smooth and blended; set aside. Combine the raspberries, the remaining ¼ cup sugar and lemon and orange juices in a medium bowl. Using a fork, slightly smash the raspberries to release their juices; set aside. Break six of the cupcakes into bite-sized pieces; reserve the remaining cupcakes for another use. Break each of the meringues into bite-sized pieces. In each of six 2-cup glasses, place some cupcake pieces; layer with about 1 3 cup each of the mascarpone mixture and raspberry mixture, plus a few pieces of meringue. Repeat until the glasses are full. Top each glass with a few fresh raspberries; serve.
It’s not an obvious combination, but the different characteristics of cheese and chocolate – mild, creamy, intense – make for unique yet perfectly balanced pairings. Want a room with dimension and personality? Don’t decorate alone.
Natural light poured in through large windows, heritage millwork flattered its doorways and spacious dimensions allowed more furniture than just a dresser and a bed. So why in the world was it so difficult to decorate? Baffled, the homeowner stood in the doorway and stared. After two years of decorating effort, the room still looked generic. “That’s when it occurred to me,” she says. “If I wanted a room with personality, I needed to make it about people – not objects.” Enter a group of five cool design professionals. Long admired by the homeowner, each was invited to contribute his or her expertise – be it decorating, upholstery or artwork – to the room and had free rein to create something that would most enhance the space. The outcome was extraordinary, just as the trusting homeowner knew it would be. Staci Edwards, the owner of design, upholstery and sewing shop Switch Studio in Mississauga, Ont., delivered a striking voluminous tufted headboard that earned centre stage in the room. Upholstery genius Jodie Merson of J&J Made in Toronto upcycled a faux-bamboo-framed bench that had a tattered woven seat using a sultry print that suggests world travel. Not to be outshone, Endeavour Neon’s

Andrew Hibbs of Surrey, B.C., hand-bent a cool wall sign that reads “Bisou” (“kiss”) in pretty loopy script. Part art, part light source, it gives off a subtle urban vibe. For Lindsay Woods of Q. Design Perfect Drapery and Shades in Mississauga, Ont., it was the room’s sharp angles that required attention. So she softened the space with tailored

“Rome wasn’t built in a day,” says Mariam Naficy, Minted’s founder. “And the same is true of a gallery wall.” Collecting takes time, especially if you have an eye for expensive art. In the meantime, build on the works you already own by using inexpensive prints as fillers.
Variety lends interest, so be sure to include pieces large and small, tall and short. And don’t overlook orientation – a mix of horizontal and vertical options keeps the eye engaged, advises the expert.
In addition to displaying meaningful artwork – such as something picked up on holiday – incorporate family photographs in your gallery wall. But avoid the standard pose with everyone simply smiling at the camera and instead select pictures that are candid and artistic.
Have a colour scheme in mind. Choose a piece with a strong signature colour and then find others that feature the same hue in a more subtle way. It’s also important to balance the light and the dark, even if you’re drawn to one over the other.

She’s hurrying to Wilfrid Laurier University, where she has a class to teach, papers to mark and coursework to study. All day long, her mind is at work, so it’s with a happy sigh that she drops her laptop, kicks off her shoes and steps into the wide open space of her 1,500-square-foot twobedroom townhouse in Waterloo, Ont. “I have a very busy mind, so I need a very calm home,” she says. And to her, nothing says calm like the colour white. (In fact, she loves white so much that she’s devoted her blog, White Cabana, to how to decorate with it.) “I’ve had a thing for white since high school,” she says. “I painted the walls of my bedroom white, and every apartment I had after that was white, too.” The look she

around the world. The desk, a former dining table, is a roadside find, and Jordana found the rug in her parents’ basement. created was always crisp and eclectic, but that wasn’t the only reason she was drawn to white. It fit with her student budget, too. “I had no money for furniture, so I’d get things at thrift stores and garage sales and paint them,” she explains. Jordana no longer rents a student apartment, but a lot of those white-painted items are still in her home. She splurges every now and then, but she still loves a bargain. “I’ll wait a long time to get something I want at a good price,” she says. For example, it took nearly three years of searching to source a French provincial bed frame with a curved footboard that was within her budget. When she finally found one on an online auction, she pounced. “It wasn’t perfect – the caning was frayed and broken – so I had to do some repairs,” she says. “But I guess watching all those DIY shows paid off, because it looks great now!” So do the living room armchairs bought from a thrift store, one of which she re-covered using big-box-store drapery. “The fabric was so sturdy and such a lovely warm shade of white,” she says, “and not to mention inexpensive – what did I have to lose?”

For all its upcycled decor, the house has an airy uncluttered ambience. The rooms are open and spacious, the furnishings pared back. Asked how she keeps it so organized, Jordana explains: “I use each room for its intended purpose and nothing more. I do my marking and blogging in the office. I eat in the kitchen’s breakfast nook if I’m alone, or in the dining room if I have people over.” This way, she says, everything stays where it belongs. Of course, in the living room she reclines and relaxes after long days. Jordana loves the welcoming plush sofa in front of the large window. “It was my first ‘real’ couch after a parade of hand-me-downs,” she says of the English roll-arm piece. Before splurging on it, she comparison shopped and saved up. Needless to say, the sofa has special meaning – as do any pieces that represent a shift in her lifestyle. “I confess I am very protective of it,” says Jordana. “No chocolate cake on the couch!”

hen it came time to update her kitchen, designer and author Tiffany Pratt, who’s celebrated for her fearless use of cheerful colour, sought to strike a tone that would not only reflect her maturing personality, but also inspire the rejuvenation of the rest of her home. Before the redesign, Tiffany’s 1,200-square-foot apartment – which is on the top floor of a 1920s house in Toronto’s Beaches neighbourhood – was filled with lots of youthful bright hues. But when choosing the new shades for her kitchen, she settled on a self-described “muted pink” palette: white cabinetry with dusty pink walls, a soft blush ceiling and geometric black, white and grey flooring. “I’m never going to change my love of colour and quirkiness, and I’m certainly never going to stop layering styles and patterns,” she says. “But this kitchen is a more

grown-up version of my old aesthetic. It’s less playful, and more interesting and artistic.” Being a tenant, Tiffany was limited to the existing long and narrow floor plan. She didn’t want to compromise the house’s nearly century-old original architecture, anyway. “I feel like this home has such a beautiful soul,” she says. So she overhauled the space with a coat of paint, new flooring and a quartz backsplash and countertops. She also added ample cabinetry to two previously bare walls: Shaker-style lowers grace both, but glass-fronted uppers on one side provide an opportunity for dishware display, while forgoing uppers altogether on the other leaves room for a decorative vignette. In the end, the designer nearly tripled her kitchen storage yet preserved its quirky character. “Oh my gosh, I have counter space! I have storage!” says Tiffany of the results, which are now not only functional but also aesthetically in tune with her vibrant and cheerful demeanour. “I have a happy spirit, and this kitchen is a true reflection of the way I feel inside.” And that’s how she knows it’s the perfect room to inspire the transformation of the rest of her home.

Tiffany recommends organizing according to scale. “I put small items at the bottom, medium in the middle shelves and large at the top,” she says. Here, she chose a champagne bronze faucet, which looks good with the antique brass lamp, dark bronze compote vase and chrome and crystal cabinetry hardware. AS A GIRL, JORDY BEALE SPENT SUMMERS AT CAMP WALDEN near Bancroft, Ont. So did a boy named Ben Fagan. Little did they know they’d one day become permanent bunk mates. Now the happily married Fagans share an 1,800-square-foot bungalow in Toronto’s HumewoodCedarvale neighbourhood that pays tribute to the place where they first met. Jordy calls the style “modern cabin,” and it epitomizes her down-to-earth design philosophy in every way. “A home should be cozy, durable and affordable,” she says. “When guests drop by, I want them to feel 100 percent at home.” A happy advocate of slow design, Jordy accessorizes over time, changing and upgrading things as the occasion and money permit. “Why rush?” she says. “Just have fun when decorating and take the pressure off. When you can, grab new curtains or buy a new rug.” Like most philosophies, Jordy’s was born of personal experience: “Ben and I were just out of university when we bought this place, so we were totally house-poor.” For two years, the young couple lived with old college furniture, an unfinished basement, a troubled bathroom, a closed-off dining room and a dysfunctional kitchen that frustrated Ben, who’s a great cook. Eventually, though, they managed to save enough money to make their dream changes. A wall between the dining room and kitchen was removed, resulting in a chef-worthy space for Ben, and the basement was transformed to include a spacious home office for Jordy. They also reconfigured

DECORATING the bathroom, flipping the position of the toilet and tub, which made it possible to move around easily without being hip-checked. The great thing about this urban cabin is that it doesn’t scream “woodsy” – it whispers it. A wall mural depicts fog and forests, an allusion to the couple’s years of canoe trips and hikes in Algonquin Provincial Park. The textures include raw wood surfaces and woven baskets. And the colours are quiet – whites, blacks, light oak and naturals, along with green, a hue Jordy considers a neutral. The look couldn’t be more fitting for a couple who loves to feel cozy and at one with nature, and have an affinity for the camp that’s still a big part of their lives. Though the couple has made big changes, Jordy notes that no house is ever done – and hers is no exception. She’s forever tweaking the details. Fortunately, her slow design attitude is a perfect match for Ben’s easygoing personality. “It’s an ongoing joke in our house that Ben is constantly coming home to something new or different,” says Jordy. “But weeks or even months can pass before he notices!”

THIS CALGARY COUPLE had three main requests when they asked designer Alykhan Velji to decorate the living room in their new home: Make it family-friendly, make it warm and inviting, and make it perfect for entertaining. But a wall of stunning 19-foot-high windows presented one major challenge. Though they filled the room with light, they also made it feel vast and empty – the exact opposite of the warm and intimate ambience the owners were looking for. Window coverings went a long way toward fixing the problem. “A lot of people think drapery has to extend all the way to the ceiling – especially if they have windows that stretch two storeys tall – but that’s not the case,” says Alykhan. “We ended the drapes at the first storey to help delineate the space and prevent it from feeling so vast.”
To create a collection that looks as though it has been curated over time, instead of thrown together in a few weeks, Calgary designer Alykhan Velji suggests choosing pieces with different design styles. Rather than using only modern furniture, which
is what the couple had originally requested, he bounced between traditional (the millwork and ottoman) to suit the style of the home, modern (the angular chairs with chrome frames) to appease the clients and rustic (a wooden side table) to add interest.

If you have a beautiful view and privacy isn’t an issue (as was the case in this home, which backs onto a ravine) save money by skipping working drapery in favour of simple fabric panels. Alykhan used white linen that was approximately 36 inches wide to soften the hard lines of the window. When asked what he considers the most important splurge in any living room, Alykhan answers easily: “A custom sofa.” In this space, it ensured a perfect fit – it’s not too short for the long wall and low-profile enough not to take away from the view – as well as comfort and quality.
By contrast, notes Alykhan, the feature wallpaper above the wainscotting extends all the way to the ceiling to ensure continuity – the designer didn’t want the vertical space to feel totally broken up, and the different height lines keep the eye engaged. To maintain focus on the gorgeous view, Alykhan adopted a muted palette of whites, greys and blues, and brightened the black fireplace with a gleaming marble surround to reflect light. He also chose only furniture with a low profile to maintain open sightlines.

DECORATING Mixing texture and prints was initially out of the wife’s comfort zone, but Alykhan coaxed her toward graphic wallpaper in a quiet colourway, a casual leaned gallery wall and a patterned rug, throws and toss cushions – easy pieces to remove should the homeowners desire – to create a sense of inviting warmth. To increase the cozy factor even more, he chose varied textures, such as velvet, linen and leather, to create a subtle yet dynamic tension. Seating was another top priority since this couple frequently hosts their large extended family, so Alykhan incorporated plenty of it: A sectional, two stools, two sidechairs and a plush coffee table-ottoman that also serves as a place to sit allows at least nine people to chat here without feeling crowded. It’s a fine balance – the perfect place to entertain, where expansive windows don’t detract from the sense of welcome, and the subtle yet compelling design doesn’t draw attention away from the stunning ravine view. “I THOUGHT I COULD HANDLE THE MAKEOVER ON MY OWN.” Famous last words when spoken by homeowners with little or no reno experience, not to mention full-time jobs. Wanting a forever home where they could raise a family, this young couple sold their condo and purchased a 3,000-square-foot four-bedroom house – a 1920s fixer-upper that needed a serious overhaul – in Toronto’s Humewood neighbourhood. “I planned to consult with a designer but oversee it all myself and then call in a professional to help with just the

finishing touches,” says one of the homeowners. But that professional – designer Jordy Fagan of Cabin Co. Design – got the call sooner than planned. “The owners quickly realized how much is involved in renovating and furnishing an entire home,” says Jordy, “and that’s when I stepped in.” Before she could deliver the cozy and youthful – but not too trendy – aesthetic the couple sought, however, the whole house required a reboot. It hadn’t been renovated since the ’70s and harboured the usual suspects: closed-off rooms, cheap fixtures and odd paint colours.

Yet it was not without its charms. “It had great bones, original stained glass windows and an amazing staircase,” says Jordy. “But I knew the couple planned to have kids one day, and with all its small rooms, this home just wasn’t conducive to how young families live today. I wanted an open concept plan that still felt warm and cozy.” To achieve that openness, Jordy had the first floor gutted and knocked down almost all the walls to create one great room with a living room, dining room and kitchen. A palette of deep warm greys and blues in a white envelope unifies the plan, while traditional details like Shaker-style cabinetry, open shelving, and plush and tufted furnishings keep it homey. Muted patterns and textures – in such pieces as the dining chair seat cushions, kitchen stools and porcelain backsplash – add interest, and geometric light fixtures and brass accents infuse a youthfulness befitting the young couple.

That aesthetic continues upstairs, where the owners were happy to lose one of their four bedrooms to create a master suite. The one caveat? They would have to remove a fireplace to accommodate the new floor plan – something most homeowners are reluctant to do. But these ones were game. After all, they got to keep the original stained glass windows that flanked it, and a custom king headboard fit perfectly in-between. The other two bedrooms? Well, those stayed intact for future family members. For now, these homeowners are happy hosting friends or enjoying some one-onone time. But one day, the chitter-chatter of their wicked dinner parties may give way to the pitter-patter of little feet. And when that day comes, they can rest assured that at least their home is ready. In the heat of summer, we look back at how a snowstorm led a couple to their dream home.

While many people think blizzards are absolutely apocalyptic, Fredericton homeowners Jenna and Steve Holland see them as a positive omen. Jenna, a kindergarten teacher with an eye for interior design, and Steve, a contractor who runs Holland Home Renovations, have purchased, updated and flipped several houses – “and we always seem to buy homes on stormy days,” says Steve. This one, which they ended up keeping for themselves, was no exception. The couple weren’t necessarily looking to move when they stumbled across the 2,100-square-foot four-bedroom abode two years ago. “We were newlyweds sharing a three-unit house – living upstairs while renting out the two basement apartments – when one day we got a call from a real estate agent friend about a place that had just come on the market,” says Jenna. (Yes, it was snowing outside.) Feeling bored and hemmed in by the weather, they went to check out the house as a potential flipping project.

But when they saw the property, they were enthralled by the house’s Mid-Century Modern vibe. Intriguing architectural features included vaulted ceilings with exposed beams, two wood-burning fireplaces, hardwood floors and large windows. “It had good structural lines and great potential,” says Steve. It was an exceptional find in this city, which boasts a pedigree of turn-of-the-century Victorian and Craftsmanstyle homes. “There’s not much like this in Fredericton,” says Steve. “You don’t see a whole lot of mid-centurystyle architecture here.” The lot was also a big draw. Located in a familyoriented neighbourhood, the yard backs onto a farm, offering a bucolic setting that’s conveniently close to the downtown core. Recognizing they could make the house great but that it required too much work for a flip, the couple decided, on the spot, to keep it for themselves. They put in an offer and purchased the house within a few days. The pair later discovered the house had an intriguing history: Built in 1965, it was a West Coast design that had been adapted for the East. “The original owner, who was an engineer, was going to have it built out West,” says Jenna. “But then he got a job at the university here and decided to stay, so he had to modify the drawings to suit our colder winters.”

The white-painted brick fireplace, with its original granite hearth, references midcentury style, and the built-in wood storage is both practical and decorative. To complete the look, homeowners Jenna and Steve Holland covered up a window and built a wood-slat wall to mount the TV on. “[Designer] Mallory [Lennon] was quite adamant that we didn’t hang the TV

Their respect for the history of the house never waned throughout the renovation, which began on the main floor as soon as they took possession. Collaborating with interior designer Mallory Lennon of Reimagine Designs, the couple created a modern open-concept space while retaining and updating key original elements to preserve the mid-century personality they love. The brick fireplace, for instance, was a head-scratcher. They discussed resurfacing the whole thing, but to save money and preserve the history, the couple ended up painting it white and flanking it with firewood storage and an intriguing woodslat wall for the TV. In fact, wood is incorporated throughout the predominantly white envelope to keep the space from feeling too stark and to complement the Douglas fir beams. The kitchen’s high-gloss white cabinetry was paired with an island made of grey faux walnut, the entryway was panelled with pine, and the white oak floors were stained a rich dark walnut to add contrast and a grounding warmth. For these consummate renovators, the house has served as a labour of love and a place they can settle into. “We see ourselves growing as a family here,” says Jenna. “Until, of course, the next snowy day!” We can’t wait to see what beauty the next storm brings.

Pretty as a picture, this dresser takes pride of place in the living room. Yet its real purpose is to provide ample storage and keep baby-changing supplies within reach. “I don’t like clutter. I’m one of those ‘a place for everything and everything in its place’ people,” says homeowner Jillian Harris, who also tucks toys in stylish baskets on the floor. Anyone who travels nearly 800 kilometres every week deserves a comfy crash pad. And for TV personality Jillian Harris, former Bachelorette and current host of
HGTV Canada’s Love It or List It Vancouver, comfort means saying “no” to hotels and apartment buildings.
When she makes the weekly commute from her Kelowna, B.C., home to film in Vancouver, she wants somewhere that feels like a second home. “After a long trip, all I want is solitude and my own front door,” she explains. Three years ago, she found that front door in a lovely laneway in the city’s South Granville neighbourhood. It opened into a tiny yet perfect 1,000-square-foot two-storey gem. Not only was it in great condition, requiring nary a paint job, but it also had two bedrooms – one to share with fiancé Justin Pasutto when he comes along, and one for her truly enormous television wardrobe. Then came Baby Leo (now 10 months old), and things had to be rethought. “So much for the wardrobe room! I dumped my clothes, shoes and handbags in the garage,” says Jillian. “If that isn’t love, what is?!” But that was just the beginning. “All of a sudden, every single thing in the house looked utterly useless or alarmingly dangerous,” she says. So, together with a designer on the show, Ally Spino, she devised a new plan: Out went the living room end tables (no storage), the demilune table (way too tipsy) and the glass coffee table (“smashable, with sharp corners – are we kidding?”). come for end tables with drawers to store items that shouldn’t be lying around, a dresser that could be jam-packed with diapers and toys, and a plush storage-savvy ottoman. “Which Leo sucks on most of the time,” says Jillian with a laugh. “But I guess that’s the lesser of two evils!” Another thing that changed was the home’s palette. “I’m known for using very little colour, but somehow having a baby made me want to try it here,” says the designer, who used hits of pink throughout the house. “Justin said he didn’t want pink,” she says. “So I call it ‘magenta.’” Big splashes of pigment also appear in Leo’s nursery, a sunny yellow and white room with broad-striped drapes. “I wanted it to be cheerful, but not too juvenile,” she explains. “So I used lots of white and then added the sunshine tones.” Looking back, Jillian says she’s still amazed it all came together. “Pregnancy and designing a home did not mix well for me,” she says. “I was so stressed out! The baby became this deadline in my head. Every day, my brain was saying, ‘The baby! The baby!’ And the more I rushed, the less things seemed to work out. I hated the drapery I initially ordered. Shipments were late. And I was constantly buying things and returning them. In the end, it took me nearly a year to get things right, and I was working on it even after Leo arrived.” But even under normal circumstances, designing on a deadline isn’t how Jillian works. “Honestly, I don’t think the pressure of a time limit is ever good for a decorating project,” she says, quashing the idea that a room can be whipped up and made perfect in a short period.

So what’s her advice to anyone who wants to make over a space? Never try to redecorate a room full of stuff. “Take your furniture out to the garage, and spread all your accessories on tables out there, where you can see them,” she says. “Then, walk back inside and decide on the wall colour. After you’ve painted, bring in one piece of furniture at a time. Then, layer in toss cushions and drapery. But don’t rush. One day, you’ll walk into the room and spontaneously let out a big sigh. That’s how you’ll know you’re done.” At least until another life-changing event happens.

HEIRLOOM TOMATO PANZANELLA PREP & COOK TIME 20 MINUTES I SERVES 8 TO 10
½ loaf rosemary focaccia 2 tsp + 6 tbsp extra-virgin olive oil, divided 4 tsp white wine vinegar
1 tbsp Dijon mustard 1 tsp liquid honey ¼ tsp each: salt and freshly ground black pepper
6 heirloom tomatoes, cored and cut into wedges 5 cups lightly packed arugula ⅓ cup thinly sliced red onion
Brush the focaccia with 2 teaspoons of the olive oil. Place on a greased grill over medium-high heat and toast, turning occasionally, until the focaccia is crisp and golden, about 5 minutes. Allow to cool; cut into 1" cubes. (The croutons can be stored in an airtight container for up to 2 days.) While the focaccia is grilling, whisk together the remaining olive oil, the vinegar, mustard, honey, salt and pepper in a large bowl. (The dressing can be refrigerated in an airtight container for up to 5 days.) Toss together the dressing, croutons, tomatoes, arugula and red onion in a large salad bowl; serve.

BABY KALE CAESAR SALAD WITH FOCACCIA CROUTONS & CRISPY PROSCIUTTO PREP & COOK TIME 1 HOUR I SERVES 4 TO 6
Caesar Dressing ¼ cup mayonnaise 2 tbsp extra-virgin olive oil 2 tbsp plain Greek yogurt 1 tbsp freshly squeezed lemon juice 1 tbsp Dijon mustard 3 anchovy fillets, mashed 2 cloves garlic, minced ½ tsp sea salt ½ tsp freshly ground black pepper
Croutons ½ loaf rosemary focaccia, cut into 2" x ½" pieces ¼ cup unsalted butter 2 cloves garlic, minced 2 tsp chopped fresh thyme ½ tsp sea salt ½ tsp freshly ground black pepper Caesar Salad 4 slices prosciutto 6 cups baby kale ½ cup freshly grated Parmesan
BABY KALE CAESAR SALAD with focaccia croutons & crispy prosciutto
Preheat the oven to 375°F. To make the dressing, whisk together the mayonnaise, olive oil, yogurt, lemon juice, Dijon, anchovies, garlic, salt and pepper in a small bowl. Refrigerate until ready to serve. To make the croutons, place the focaccia pieces in a large bowl. Melt the butter in a small skillet over medium heat. Add the garlic and thyme; sauté until fragrant but not browned, about 1 minute. Pour the butter mixture over the focaccia pieces and toss to coat evenly. Spread the focaccia pieces on a baking sheet and sprinkle with the salt and pepper. Bake the croutons until golden, 12 to 15 minutes. Let cool on the baking sheet. Meanwhile, cut the prosciutto slices in half horizontally. Lay out on a parchment paper-lined baking sheet and cook for 10 to 12 minutes, until crispy and brown. Place the baby kale in a large bowl and drizzle with the dressing, tossing to coat. Place the salad on a large serving platter and top with the crispy prosciutto, a generous scattering of the toasted croutons and Parmesan; add a grinding of fresh black pepper and serve.
ISRAELI COUSCOUS & ARTICHOKE SALAD with roasted tomatoes, tuna & basil
ISRAELI COUSCOUS & ARTICHOKE SALAD WITH ROASTED TOMATOES, TUNA & BASIL PREP & COOK TIME 1 HOUR I SERVES 4 TO 6
Lemon Chive Dressing ¼ cup extra-virgin olive oil 2 tbsp freshly squeezed lemon juice 2 tbsp finely chopped shallots 2 tbsp finely chopped chives 2 tsp lemon zest 1 tsp Dijon mustard ½ tsp sea salt ½ tsp freshly ground black pepper Salad 1 pint multicoloured cherry tomatoes 3 tbsp extra-virgin olive oil, divided 2 cloves garlic, minced 1½ cups uncooked Israeli couscous 1 5-oz jar chunk Italian tuna in olive oil 1 18-oz jar large butter beans, rinsed and drained 1 cup quartered marinated fire-roasted artichoke hearts ¼ cup chopped fresh basil 1 tbsp capers, rinsed 9 oz halloumi, cut into 6 pieces Preheat the oven to 350°F. To make the dressing, whisk together the olive oil, lemon juice, shallots, chives, lemon zest,
Dijon, salt and pepper in a bowl; set aside. Cut the tomatoes in half and lay them, cut sides up, on a parchment paper-lined baking sheet. Drizzle with 1 tablespoon of the olive oil and season lightly with salt and pepper. Roast for 35 to 40 minutes, until the tomatoes are a little wrinkly but still moist. Let cool slightly on the baking sheet. Heat the remaining 2 tablespoons olive oil in a pot over medium heat; add the garlic and cook until just sizzling. Add the Israeli couscous and stir to coat in the garlic oil. Cook, stirring, for 3 or 4 minutes until
lightly toasted; add 2 cups cold water. Bring the mixture to a boil, reduce the heat to low and simmer for 8 to 10 minutes, until the water is absorbed and the couscous is tender. Remove from the heat, stirring to fluff. Pour the dressing over the couscous and stir to combine. Add the roasted tomatoes, tuna, butter beans, artichoke hearts, basil and capers. Stir gently to combine. Heat a grill pan over medium heat. Grill the halloumi for 1 to 2 minutes per side, until golden. Serve the Israeli couscous salad warm, topped with the grilled halloumi. GRILLED POTATO SALAD WITH CURRIED YOGURT DRESSING PREP & COOK TIME 1 HOUR I SERVES 4 TO 6
Curried Yogurt Dressing 2 tbsp Greek yogurt 2 tbsp mayonnaise 1 tbsp freshly squeezed lemon juice 1 tsp curry paste Grilled Potato Salad 2 lbs Yukon Gold potatoes 2 tbsp extra-virgin olive oil 2 tbsp freshly squeezed lemon juice 1 tsp sea salt 1 tsp turmeric ½ tsp freshly ground black pepper ½ tsp cumin ¼ cup chopped fresh cilantro 2 green onions, thinly sliced 1 tbsp Indian lime pickle or chopped capers 1 tsp black sesame seeds 2 tbsp fried onions In a small bowl, whisk together the yogurt, mayonnaise, lemon juice and curry paste; refrigerate until ready to serve. Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for 18 to 20 minutes, or until just tender and easily pierced with a fork. Drain, let cool slightly and cut into ¼"-thick slices. Place the slices on a baking sheet. Mix together the olive oil, lemon juice, salt, turmeric, pepper and cumin; toss gently with the potatoes to coat evenly. Let the potatoes stand to absorb the marinade for at least 15 minutes. Heat the barbecue to mediumhigh. Place the potato slices directly onto the grill and cook until golden and lightly charred, 3 to 4 minutes per side. To serve, spread a little of the Curried Yogurt Dressing on a salad plate. Top with the warm grilled potato slices and sprinkle with the cilantro, green onions, lime pickle and black sesame seeds. Drizzle with the remaining dressing and top with the fried onions. Serve immediately.
