BLUE BOTS Dating back to 1842, cyanotype is a rudimentary photographic process that produces white images on a Prussian blue backdrop. Crust 1½ cups all-purpose flour ½ cup icing sugar 1 tsp pure vanilla extract ½ cup cold unsalted butter, cubed 4 egg yolks Filling ¾ cup granulated sugar 1 tbsp finely grated lemon zest ¾ cup freshly squeezed lemon juice 4 large eggs ½ cup 35% cream Meringue 4 egg whites ⅓ cup granulated sugar 26 |

In a food processor, pulse the flour, icing sugar and vanilla until combined. Add the butter and pulse until the mixture resembles coarse meal. Add the egg yolks, one at a time, until just combined and the dough begins to come together. With your hands, work the dough into a ball, wrap in plastic wrap and refrigerate for at least 30 minutes. Cut a circle of parchment paper to fit the bottom of a 10" fluted tart pan with a removable bottom. On a lightly floured surface, roll the chilled dough into a ¼" thick circle approxi-

mately 12" in diameter. Fit the dough into the tart pan, trimming the excess from the edge with a knife. Using your fingers, work the pastry over the bottom and into the sides of the pan to form a fluted crust. Chill for 30 minutes. Preheat the oven to 375°F. Line the pastry with parchment paper and cover with pie weights. Place the tart pan on a baking sheet and blind bake for 15 minutes. Remove the pie weights and bake the shell for another 8 minutes. Reduce the heat to 350°F. To make the filling, whisk the sugar, lemon zest and juice, eggs and cream together in a medium bowl until the sugar

dissolves. Pour the filling into the baked tart shell. (The filling should reach the top of the shell.) Bake for 15 minutes; rotate the tart pan and bake for another 8 to 10 minutes (the filling should jiggle slightly in the centre of the tart). Cool for 1 hour. To make the meringue, beat the egg whites in a bowl with an electric hand mixer until soft peaks form, about 2 minutes. Gradually add the sugar, 1 to 2 tablespoons at a time, and continue beating until stiff peaks form, about 2 minutes. Pipe the meringue around the edge of the cooled tart and, if desired, brown the peaks with a kitchen torch; serve.

“Start with your child’s personality,” says Sophie Burke, who designed this artful and girly bedroom for nine-year-old Madeline Mast along with Madeline’s mom, Cindy. “Let the room reflect your child’s passions, talents and delights.”

Family heirlooms are delightful reminders of Madeline’s ancestry. The 1940s swivel chair once belonged to one of her greatgrandmas (Cindy had it reupholstered in a more youthful toile). A dated bathroom receives a modern makeover that pays homage to its 1920s beginnings.

hen Style at Home’s editorial director Erin McLaughlin decided to renovate her stepdaughter Emma Peckham’s 70-square-foot bathroom, it was only natural that Erin called on designer and Style at Home contributing design editor Stacy Begg for some help. Stacy’s mission? To bring the glam-style bathroom – last renovated in the 1980s – into the 21st century, while honouring the home’s 1920s character. She provided an update that included a soft muted palette, contrasting textures and a few modern elements. “All I remember about the original bathroom was it being overwhelmingly pink with lots of mirrors,” says the designer with a laugh. “I’ve tried to erase it from my memory!” Though the walls and flooring were bound for a total overhaul, the original enamelled cast iron bathtub stayed put. “The whole design was actually hinged on the tub,” says Stacy. It’s the only piece that tied the look back to the home’s 100-year history. With that in mind, the designer chose finishes that were contempor ary enough to give the room a cleanlined, subtly feminine aesthetic while respecting its traditional origin. Here’s how she completed her mission.

1. PEACEFUL PALETTE Renovated by the previous homeowner in the 1980s, the retro-glam bathroom was dated, to say the least. Designer Stacy Begg decided to tone down its flashy features with a subdued palette of greys and whites. STYLEATHOME.COM MAY 2018

4. AQUATIC INSPIRATION The shower curtain sports a large-scale yet muted koi print. The fish, symbolizing courage and strength, serve as daily encouragement.

Though the room’s colour scheme is neutral, it’s imbued with pattern from top to bottom: The floor tiles offer an ersatz mosaic, while the stylish stripes on the bath mat are large and playful. Combined with the flowing pattern on the shower curtain, the curvy lines of the wall tiles, the stunning brass fixtures and the sleek white vanity, these elements provide ample visual interest.

2. EXOTIC ELEMENTS This bathroom exudes the serenity of a traditional Turkish bath, thanks to some worldly accessories. ust as nature renews in the spring, so do our rooms. It’s the season of open windows and farmers’ market tulips, and it gives us plenty of reasons to refresh and celebrate. And for Danielle Hardy, the seasonal change also marks a shift in the creative direction of her wall decor company, UrbanWalls. Its Vancouver studio might be in the middle of the bustling Gastown ’hood, but on the inside, the 800-square-foot workspace nails that breezy greenhouse

vibe. The look is echoed on the walls, which Danielle spruced up with oversized decals of foliage and flowers. “Greenery has a way of livening up any room, and given Vancouver’s oft-grey forecast, we thought it would be wonderful to cover the walls in beautiful botanicals.” We couldn’t agree more. new designs and collections, and show off eyecatching and achievable decorating ideas and clever installation tricks for UrbanWalls customers and social media followers. “Before moving into this studio, I was working from my basement, so I wasn’t always motivated at home,” says Danielle. “This space just invites creativity. I love the opportunities it’s given me and my team to exhibit our products and inspire people.” On a spring afternoon, she called up Alice de Crom from Floralista Flower Studio in Fort Langley, B.C., to help showcase UrbanWalls’s production process – from conception to magnificent decal – for its Garden Flowers collection. Alice brought in gorgeous flowers, including ranunculuses, roses, poppies and peonies, for Danielle’s team to photograph and then turn into the graphic wall decals used in the space. The 1900s house had no character to speak of. To afect a fitting Victorian air, Christine added thoughtful touches, including an oil painting by Canadian artist Thomas Hilton Garside, vintage accessories and timeless white subway tile that goes all the way to the ceiling. esigner Christine Dovey loves drama. Just look at her Oakville, Ont., kitchen. Boasting her signature bold blend of Victorian-era opulence and modern-day rock and roll, the splashy cooking-dining space is a masterful push and pull of contrary characters: Classic white subway tiles on nearly everything in sight, including the range hood, play opposite up-to-date black cabinetry; oak cabinets are an organic foil to the super sleek brass-clad island base; a custom oak dining table serves as the streamlined antithesis of an antique chest and dining chairs. In short, the space is a showstopper. But this room – this whole house, in fact – saw much more drama than Christine had bargained for. The saga began in 2013, when the Doveys purchased a rundown two-bedroom 20th-century home a few doors down from their own. “We planned to tear it down and build our dream house,” says Christine, who’s quick to add, “Well, that was Plan A.” What she had dreamt up was a masterpiece modelled on a Chicago 19th-century brownstone, but the giant steel windows STYLEATHOME.COM MAY 2018

alone were quoted at $250,000. With a heavy heart, Christine nixed the newbuild plans indefinitely, leaving this property in limbo. Plan B became a fix and flip. Christine would give the house a neutral, widely appealing facelift – patch and paint the plaster walls white, replace the floors with wide-plank oak, put in new black mullioned windows – and sell (ideally for a profit to put in the forever-home fund). But asbestos, lead paint and other issues arose, and before Christine knew it, the would-be facelift became something more akin to facial reconstructive surgery. Costs ballooned, forcing the Doveys to sell their original home. Plan C was to move in. It was not an ideal fit – even with a 700square-foot addition, the house was two bedrooms short of what this family of six was used to. “It’s definitely a lesson learned,” says Christine, who took things in stride and focused on making the house feel like home. In the kitchen, that meant adding an abundance of mouldings, upgrading to fingerprint-proof black stainless steel appliances, splurging on a coveted designer faucet and finding standout antiques (like the huge fantastical iron gate). IN REAL ESTATE, AS IN LOVE, IT’S OFTEN WHEN YOU’RE NOT LOOKING FOR SOMETHING THAT YOU FIND IT. This was the case for Sabrina Narbonne. Searching online house listings for friends, she happened upon an inspiring older home in a great Montreal neighbourhood. “It was in rough shape, with an old oil furnace and small closed-off rooms that felt suffocating,” she recalls. “But still, there was something about it that clicked for me. And the backyard was a real hidden gem – very private.” It was the first house she looked at, and she ended up buying it for herself. Even though Sabrina hoped for a bright contemporary space, the 1,600-square-foot home (which she now shares with partner Caroline Paré) had original mouldings and traditional details that gave it a sense of history that appealed to her. When it came time for the inevitable reno, she turned to La Shed Architecture, whose work she admired for its modern aesthetic. “I wanted something out of the ordinary – something contemporary that respected the home’s traditional elements at

Black steel forms the backsplash above the stove, and the engineered stone countertops are seamless and virtually indestructible. “You can barely detect any of the functional parts of the kitchen,” says Sabrina, who wanted the space to appear as minimal as possible. FAUCET, Ceragres.

the same time,” she says. The team at La Shed came up with a design that was clean-lined and open, and included an extension off the back of the house with floor-to-ceiling windows that flood the previously dark home with lots of natural light. “The design plays up the contrast between black and white as well as old and new,” explains Renée Mailhot, one of the architects on the project. Many original features were left intact and juxtaposed with modern elements. For example, the staircase banister was kept in place, stripped and repainted white, while new black steel stair treads float within it. Doorway and window mouldings were also painstakingly restored and treated to a coat of crisp white paint (as were all walls). The black and white scheme carries into the kitchen, which was inspired by a photograph of an all-white kitchen Sabrina loved. “It was so minimal that it was probably ridiculously impractical,” she says with a laugh. “But the La Shed team took this idea and created a modern yet truly functional kitchen. The working parts are very hard to detect.” The fresh design successfully marries the old with the new, providing a sunlit serene and modern living space that fulfills all of Sabrina’s wishes.

W

hile this rustic weekend retreat in Upperville, Va., is all about relaxing and letting loose, the real horsing around takes place outdoors on its bucolic 500-acre property. The homeowner, an accomplished equestrian who keeps and breeds horses, had the 3,000-square-foot one-bedroom dwelling built in 2013 with stables beneath it, so her main loves – her horses – are always close when she’s there. Modelled on a historic bank barn (which is set into the side of a hill), the home feels private and protected yet boasts sprawling views of the lovely landscape. Completely open concept and teeming with light, the main rooms offer stunning glimpses of the outdoors from almost every corner. It’s an interior that truly honours its exterior, almost inviting it in as a design element. Woodsy details like hand-hewn reclaimed oak columns and beams as well as other natural materials continue the indooroutdoor appeal thanks to Canadian-born interior designer Marlene Dennis, who was thrilled to take on this project. “The setting reminds me of Ottawa, where I grew up riding,” says Marlene. “I love the rolling hills and blackboard fencing – and the floor-to-ceiling windows that look out to them,” she says. “My design approach was not to compete with the exterior but to draw inspiration from it.” Thus, the warm white envelope boasts accents of earthy browns (including espresso-stained hickory floors and antique furnishings) and splashes of organic green hues like sage, apple, chartreuse and emerald. “I also used materials that tie back to the land – wood, marble, iron – and large-scale solid furnishings that echo the country architecture. Nothing here is small or fussy.”

TOP The entryway announces the modern country style of the home with its stunning juxtaposition of hand-hewn reclaimed wood beams, an ornately carved antique chest, a casually leaned minimal mirror and tropical foliage. ABOVE This barn-like structure was built into the side of a hill with four stalls for horses beneath, which can be accessed from the home by an interior stairwell.

The homeowner’s lifestyle, and the fact that she frequently hosts guests, also played an important part in determining furniture selection, as well as overall layout. “We wanted to create different conversation areas where she could entertain any number of friends,” says Marlene, citing as examples the 14-foot dining table (perfect for a large formal dinner) and the reclaimed wood-topped kitchen island (where the homeowner enjoys smaller casual gatherings with guests perched on stools). There’s also plenty of seating in the living room (not shown). One sitting area is defined by three tailored leather sofas set around an oversized cocktail table, and the other features four club chairs around a metal drum table. The open plan is perfect for entertaining groups of all sizes, but as a bonus, barn doors can be used to close off the home’s more intimate spaces, such as the office, den and bedroom suite at one end of the second-floor catwalk balcony. It’s a house in which one can live both large and small. “This home was originally intended to be a guest house,” says Marlene, “but once it was complete, the owner couldn’t imagine staying anywhere else on the property.” She knew the refined rustic escape, close to her horses, was where she wanted to be.

How a 1950s bungalow evolved into a West Coast icon for a couple who wants their kids to grow up close to nature.


As a little girl,

Cindy Mast loved to run free, heading home only once the sun began to set. Childhood was similar for her husband, John, who spent a lot of his youth playing in the forest in his backyard. “The kind of outdoor joy and freedom we had as kids was something we really wanted to pass along to our own children,” says Cindy, who found the perfect spot to do just that in the Eagle Harbour community of West Vancouver in 2015. The only trouble? The home itself was far from perfect – dated, dark and too small for their young family of four. But, committed to the landscape, the couple took deep breaths and purchased the sad and dingy bungalow, planning to make it flawless with the help of designer Sophie Burke. From the start, Sophie understood the couple’s desire to raise their young family in a bright happy space that was, above all, welcoming. It was clear that the Masts value nature, simplicity and the company of friends and family. “For us, the question isn’t, ‘Who’s coming over?’ says Cindy. “The question is, ‘When?’”

RIGHT “Displays on these floating shelves can be changed with the seasons, so the kitchen always looks fresh,” says Sophie. She recommends open shelving as a supplement to kitchen cabinetry, not a replacement. “Doors conceal messes and clutter. And most of us have plenty of that.” The countertops are faux marble. “Everyone hangs out here,” says Cindy. “Maintaining real marble was more than I was up for.”

“I love these stools,” says Cindy, adding that when it comes to family-friendly seating, these top her list. The seats are plastic, so they easily wipe clean. Sophie worked in tandem with friends of Cindy and John’s – a contractor and a custom home designer who raised the roof, added dormers and conceived a spacious back extension. For the exterior, they went bold, opting for a striking combination of white and black to accentuate the home’s new architectural lines and many windows. What had once been a dreary little dwelling is now a crisplooking 4,000-square-foot modern farmhouse with coastal nuances. Sophie started with Cindy’s favourite colours: a spectrum of blues, from turquoise to navy. The fresh palette was underscored with a quiet nod to beachside living, from the white walls to the warm white oak floors. Natural elements are musthaves in a home committed to casual comfort and warmth, so wood, linen, cotton and wool make cameos in almost every room. “The spaces are open, clean and modern, but they’re welcoming, not slick, thanks to these organic elements,” says Sophie. The house feels comfy and approachable, with its wide-open spaces (that fit the whole family, plus their friends), durable materials (that easily wipe clean) and banks of builtins (that neatly stow toys, crafts and other messy markers of a full family life).


RIGHT “In warmer months, you’ll find us out here in the morning with our cofee press, watching neighbourhood kids trickle in to bounce on our trampoline,” says Cindy. “Or, in the evening, having chilled wine with friends before a game of bocce.”

The four-bedroom forever home has enough outdoor space for a yard, a patio, a bocce area, an edible garden and a trampoline. It’s a place that the Mast’s children, Jack, 11, and Madeline, 9, are proud to invite friends to play in until the sun goes down, and one that they’ll remember for the rest of their lives. Which was exactly Sophie’s intent. “I have three kids of my own,” she says. “And, like Cindy and John, I believe in spaces where kids can be kids.” After all, it’s their home, too – and it will be the foundation of so many of their memories. Once asparagus season starts, I can’t stop cooking it. And I really think my favourite way to cook it is to roast it in a very hot oven with some olive oil, Maldon sea salt and finely grated lemon zest for about 15 minutes. Then I squeeze the juice of the lemon over it the minute it comes out. And on the table, nothing says spring with more delicate beauty and, for me, poignancy than lily-of-thevalley (these were favourite flowers of my late sister Thomasina). I dot them, planted in small vintage terracotta pots, on the table or I cut them and arrange them in vintage mini milk bottles, also dotted about the table.

a garden, but it’s small, and although I often plan to grow vegetables, I have never applied myself consistently. But it is my herb cupboard: I grow thyme, lemon thyme, rosemary, oregano, mint and chives in pots, and I was given a bay tree as a moving-in present that I’m always using in my cooking. My garden is a leafy and green shady place, with a natural pergola created by three hornbeam trees, but in spring it is sprinkled with the colour of crocuses and grape hyacinths, and a beautiful wisteria that climbs up one of the walls.

WHAT ARE YOUR BEST MEMORIES OF SPRING DINING? These recipes just fill me with happiness – they conjure up my table on days and evenings that are filled with more light. And supper or a languorous weekend lunch can have a bit of that indoor-picnic feel, with everyone filling their plates, feeling that sense of excitement as the memory of an icy winter fades and the blue skies and blossoms on the trees herald a fresh start. Old friends and new beginnings: That’s what I want to be celebrating around my table.

WHAT’S THE NEWEST RECIPE IN AT MY TABLE, AND WHY IS IT SPECIAL TO YOU? It’s probably the Ginger & Walnut Carrot Cake but, though it may have been the last recipe to make its way into the book, I wouldn’t be surprised to find that I’d baked it more times now than some of the recipes that have been in my repertoire for years. And every time I’ve served it, someone’s asked for the recipe! So it’s special to me because I absolutely love it, but also because I first made it to celebrate the birthday of one of my oldest dearest friends – she’s mad about all things ginger – and I think of her with a smile every time I have it.

Place the quinoa in a heavybottomed saucepan with a tightfitting lid and pour the water over it. Bring to a boil over high heat; reduce the heat and simmer gently, uncovered, until the water is absorbed, about 15 minutes. Turn off the heat, cover the pan with a clean tea towel, clamp on the lid, and leave for a further 15 minutes to dry out, though it can be left for up to 40 minutes, if you like. Fluff the quinoa with a fork and turn it out into a wide shallow dish. Add the salt, lemon zest (reserve the juice for later) and olive oil, stir to mix through, and let cool.

QUINOA SALAD WITH WALNUTS, RADISHES & POMEGRANATE

When the quinoa has cooled, add the radishes, walnut pieces (breaking them up a little in your fingers as you do so), mint, lemon juice and most of the pomegranate seeds, cilantro and parsley. Toss lightly to mix, making sure everything is well combined, then taste to see if you want more salt before turning out into a serving bowl. Sprinkle with the remaining pomegranate seeds, cilantro and parsley before serving.

TOMATO & HORSERADISH SALAD SERVES 4 TO 6

¼ cup finely grated fresh horseradish 2 tbsp raw unfiltered apple cider vinegar 3 tbsp regular olive oil 1 tsp kosher or sea salt Pinch granulated sugar 1¼ lbs (3½ to 4 cups) cherry or grape tomatoes, halved across the equator 1 cup loosely packed roughly chopped Italian parsley Stir the horseradish and vinegar together in a small bowl; add the oil, salt and sugar, and whisk a


little bit with a fork, just until the ingredients are combined. Cover with plastic wrap and let stand for a while, if time permits. Tumble the halved tomatoes into a large mixing bowl, add the horseradish mixture and gently stir together until thoroughly combined. Cover the bowl with plastic wrap and leave for 30 to 60 minutes, by which time the tomatoes will have given out their fruity juices to mingle with the fierceness of the horseradish. Gently toss the mixture, then add the parsley and gently toss again. Decant to a smaller serving bowl or a large plate and serve.

RADICCHIO, CHESTNUT & BLUE CHEESE SALAD SERVES 4 TO 6

Dressing 2 tsp each: freshly squeezed lime and orange juice

tsp each: whole grain mustard and honey 1 tbsp olive oil Drop sesame oil Large pinch kosher or sea salt Salad 1 large or 2 small heads radicchio, torn into bite-sized pieces ¾ cup ready-cooked chestnuts, broken into small pieces 1 cup sharp (not creamy) cold blue cheese, crumbled Place all the dressing ingredients in a small glass jar and shake to mix, or whisk together in a small pitcher or bowl. Place the radicchio in a large bowl and pour the dressing overtop; toss patiently and well. Add the chestnuts and most of the blue cheese and toss again, gently but thoroughly, then tip into a serving bowl and sprinkle the remaining blue cheese on top; serve.

RADICCHIO, CHESTNUT & BLUE CHEESE SALAD BEEF & EGGPLANT FATTEH SERVES 4 TO 6

Base 4 pita breads, split open and cut into nacho-sized triangles 2 cups plain whole milk Greek yogurt 5 tbsp tahini, at room temperature 3 tbsp freshly squeezed lemon juice 2 cloves garlic, peeled and minced 2 to 4 tsp kosher or sea salt, or to taste, divided 3 tbsp olive oil ¾ cup finely chopped onion 3⅔ cups cubed eggplant 2 tsp each: cumin and coriander 1 tsp Aleppo pepper or paprika, plus more for sprinkling 1 lb extra-lean ground beef ¾ cup pomegranate seeds, for garnish

⅓ cup toasted pine nuts, for garnish 1 tbsp finely shredded mint leaves Preheat the oven to 400°F. Spread the pita triangles out onto a large baking sheet and toast until crisp, 10 to 15 minutes; set aside. Beat the yogurt, tahini, lemon juice, garlic and 1 teaspoon of the salt in a heatproof bowl that will later sit over a saucepan. Taste to see if you want to add any more salt; set aside. Warm the oil in a wide, shallow heavy-bottomed saucepan or Dutch oven and cook the onion over a medium-low heat, stirring occasionally, for 5 minutes; reduce the heat to low and cook, still stirring occasionally, until the onion is soft and a pale caramel colour, about 4 minutes. CHOPPED SALAD

Turn the heat up to medium, add the eggplant and stir well; cook, stirring frequently, for about 10 minutes. Stir in the cumin, coriander and 1 teaspoon each of the salt and Aleppo pepper. Increase the heat to high and add the beef. Cook until no longer pink. Reduce the heat to medium and cook, stirring occasionally, until the meat is cooked through, about 10 minutes. Taste and add more salt, if necessary; remove from the heat. Pour some just-boiled water into a fresh saucepan, enough to come about 1¼ inches up the sides, and place over low heat. Sit the bowl with the yogurttahini mixture on top, making sure the bowl does not touch the water. Beat the mixture well, until the yogurt is slightly above room temperature and has the consistency of lightly whipped cream. To assemble, arrange the pita triangles on a large round plate. Top with the eggplant-beef mixture, followed by the yogurttahini sauce. Lightly dust with more of the Aleppo pepper. Scatter the pomegranate seeds and pine nuts overtop, followed by the mint. Eat with your fingers, nacho style.
