Rainbow Veggie Sandwich

Rainbow Veggie Sandwich: Slice 1/2 (each) Ontario greenhouse red, green and yellow peppers into thin strips. Heat 1 tbsp (15 mL) olive oil in a skillet over medium-high heat. Cook peppers, stirring, until crisp tender. Cool completely. Peel and finely chop 1/2 English cucumber. Mix in a small bowl with 1/2 cup (125 mL) mayonnaise. Set aside. Lay out 4 slices of rustic bread. Generously smear with cucumber mayo. Slice 1 Ontario greenhouse beefsteak tomato and divide among bread. Season with salt and pepper. Top with peppers and 4 slices of bread. Serves 4. Cucumber No-Buzz Spritzer: Cut 1 large Ontario greenhouse cucumber into chunks. Place in a blender with 1/2 cup (125 mL) fresh lime juice, 1/4 cup (60 mL) agave syrup and 1 cup (250 mL) mint leaves. Blend until well juiced. Pass liquid through a sieve placed over a bowl, pressing on solids. Reserve liquid and discard solids. For each drink, pour 1/4 cup (60 mL) cucumber liquid into a highball glass filled with ice. Top with chilled sparkling water and lightly stir. Garnish with a mint leaf. Serves 6. Greenhouse Gazpacho: Roughly chop 3 lbs (1.36 kg) ripe Ontario greenhouse tomatoes, 1 small Ontario greenhouse cucumber, 1 small Ontario greenhouse red pepper and 1/2 small white onion. Place in blender with 1/4 cup (60 mL) extra virgin olive oil and 1 tsp (5 mL) sherry vinegar. Blend until smooth. Season with salt and pepper. Transfer to airtight container. Refrigerate at least 2 hours. Serve garnished with quartered Ontario greenhouse cherry tomatoes. Serves 4 to 6.

Four delicious summer recipes that are perfect for an outdoor picnic or backyard patio

Italian Village Salad 1 lb (455 g) mixed ripe Ontario greenhouse tomatoes 4 Ontario greenhouse mini cucumbers (or 2/3 Ontario greenhouse English cucumber) 1 Ontario greenhouse pepper 1/3 cup (80 mL) thinly sliced red onion 1 tbsp (15 mL) chopped basil 8 oz (225 g) mini bocconcini 8 slices Genoa salami, quartered 8 pickled hot peppers (peperoncini) 3 tbsp (45 mL) extra virgin olive oil 2 tbsp (30 mL) red wine vinegar Whole basil leaves to garnish Cut tomatoes into wedges. Cut cherry and grape tomatoes in half. Slice cucumbers on bias. (If using English cucumber, halve lengthwise first.) Cut pepper into bite-size pieces. Place vegetables in large mixing bowl with onion and chopped basil. Drizzle with oil and vinegar. Stir in bocconcini, salami and hot peppers. Season with salt and pepper to taste. Transfer to serving dish. Garnish with basil leaves. Serves 4-6.

NEW BRUNSWICK’S COVERED BRIDGE RELEASING CHICKPEA-BASED CHIP ALTERNATIVE Covered Bridge Potato Chips are pleased to announce the release of their latest product, Lela’s Chickpea Chips, due to land on Canadian shelves in early September.

SUMMER STAYCATION Summer is in full swing, and it is time to give those vacation days a workout! When my family heads out to explore a new hike or visit someone, I always do a little look around to see if there are any new breweries that we can visit along the way. This can sometimes lead us on completely new adventures discovering orchards we didn’t know about, an obscure roadside attraction or through towns so cute you wish you could pinch their cheeks. Full disclosure, I grew up in Lucan (a small town) so I am biased. These side adventures almost always stick with us and always provide some great beer. But you don’t need to be heading somewhere to discover a new brewery, discovering a new brewery can be the main reason for your adventure. There are a ton of new (or new to you) breweries scattered all over this fair country and many within a very short driving distance from wherever you are. Take a look at some of my new favourites below. Collective Arts Toronto Brewery One of Ontario’s favourite breweries now has a home in Toronto! Located on Dundas near Bathurst they are pouring all your favs plus a raft of small batch beers brewed on location and some guest taps. The range of beers available is very impressive and includes their ciders, hard teas and cocktails. Their patio is not huge so I would recommend booking a table in advance. Even if you can’t get a seat, they have an amazing bottle shop so you could always take a great selection to go. Slake Brewing, Picton Housed on a small farm at the top of a hill overlooking PEC, Slake opened it’s doors in October 2020. Their focus right now is on lagers/pilsners, pale ales and table beers (low alc

and crushable) but they do have a barrel cellar with some mixed fermentation creations aging away. They have a limited food menu prepared by Bloomfield Public House Market that you can buy and enjoy outdoors at one of their picnic tables while sipping on samples and enjoying the view. Flux Brewing, Scotland Flux opened its doors during the summer of 2020 in Brant County. They have a sizable brewery surrounded by farmland and a patio that overlooks a large spring-fed pond compete with a food truck that specializes in tacos and ice cream named Tacos Vs. Ice Cream. The beer selection has a little something for everyone ranging from cream ales and helles lagers to hoppier pale ales and IPAs and a couple of sour beers for good measure. Seating is first-come-first-served so if you are heading that way and the sun is shining you might want to make Flux one of your first stops. Katalyst Brewing, Bracebridge Originally founded in 2016, Katalyst moved into the old Muskoka Brewery location in Bracebridge late 2019. There was no equipment left in the building, so they were starting from scratch and put in a 10HL system with 6 fermenters which gives them a ton of flexibility. The last time I visited they had 12 different beers to choose from — all fresh — in stock! Want to plan your own trip? Take to your favourite search engine and look up the city or town you are heading to and the words “craft brewery”. With nearly 300 craft breweries in Ontario now, there is bound to be one where you are going or along the way.

TRIUMPH OVER ADVERSITY Canadian Helen Keller Centre opened its doors in July 2001 to provide deafblind Canadians with training opportunities and services, and to raise public awareness about the needs of people who are deafblind.

These seemingly minor bits of information, which most of us take for granted, could present many barriers for a person who is deafblind. Many people are familiar with the story of Helen Keller, but unaware that her experience with deafblindness is all too real for over 466,420 Canadians who are deafblind, including many who live in Toronto. For almost 30 years, Canadian Helen Keller Centre (CHKC) has provided affordable housing, as well as intervenor services to Canadians who are deafblind. With the assistance of intervenors, who act as the eyes and ears of people who are deafblind, Canadians who are deafblind can live more independent lives, accessing their communities in more fulfilling ways.

any of us receive information through our eyes and ears, whether from our televisions, conversations with neighbours, headlines on a mobile device, or weather reports on an app.

The disability of deafblindness, which includes all types and degrees of dual hearing and vision loss, can be isolating and restrictive. Our goal at CHKC is to spread awareness of dual sensory losses, and how CHKC and partner agencies across the country are helping meet the needs of these individuals.

Blood Services Urges Blood Donation in Canadians’ Summer Plans As COVID-19 restrictions fluctuate into further ease in many regions across the country and Canadians rush to make bookings for trips, attractions and dining experiences, the teams at Canadian Blood Services ask citizens to consider tapping blood donation appointments into their summer itineraries. ith hospitals now performing their large backlogs of surgeries, in addition to everyday health practices and emergencies that require blood, blood donor clinics are sitting at low supply, in part due to a decrease in donorship from missed and unfilled appointments.

While walk-ins are not currently accepted, same-day appointments, and re-opened appointments, are available in most communities daily, with booking being as easy as a phone call to 1-888-2-DONATE, a visit to blood.ca or a few taps on the GiveBlood app, now available in Google Play and the App Store.

CBS also notes that regular summer activity comes with a reoccurring increase in road accidents, many of which often require blood transfusions, making for further need and use of already limited blood donations.

Currently, the most required blood is type O-negative, but this request should not deter other blood types from feeling their blood is desired or necessary. O-negative blood is the universal blood type, compatible with nearly any patient, but it’s harder to find. “When seconds count, someone’s life is on the line, and there’s no time to check blood type, hospital patients in an emergency can all receive O-negative blood.” Similar to the push for life-saving vaccine bookings, health officials are urging Canadians to not only make blood donorship appointments to help their communities but also to fulfill them. “As we move into the summer months, we are urging eligible blood donors to book and keep their appointments to support lifesaving care for patients. Missed or cancelled appointments are difficult for us to fill. If you make an appointment, try to keep it. If you are unable to make it to your appointment, please cancel it so we can find someone else to take your place or consider re-booking in the coming months.” As it stands, over 100,000 new donors are currently needed to help Canada’s healthcare systems keep up with the backlogged and rising current demand for blood, stem cells and plasma. This includes clinics’ needs to fill 5 to 8-day supplies of O-negative, as many inventories currently average at 3. For the safety and security of staff and donors, COVID-19 protocols and enhanced wellness measures will remain in place in all facilities until further notice.
