Ontario’s heritage, sport, tourism and culture industries. Prior to COVID-19 they represented a spectacular double bottom line – an economic impact of $75 billion accounting for hundreds of thousands of jobs while contributing to our social and cultural fabric reflecting the diversity and strengths of communities in every corner of the province.

T

he contribution of the sectors was larger than the GDP of Manitoba and greater than Ontario’s mining, forestry and agriculture sectors combined.

In March 2020 these sectors became the most fragile, the jobs within them more precarious than ever before and the social experiences that make us love where we live were cancelled, shuttered and closed until further notice. These sectors are now facing a combined $20-billion economic fallout and will be among the last to recover. If we took our community museums and libraries, arts and festival, sports and recreation for granted before, it is likely we won’t again because, as the Joni Mitchell song says, “You don’t know what you got ‘till it’s gone.” Whether watching our beloved live entertainment and sports events, visiting theme parks or having a nice meal out, the pandemic truly has reminded us that what we love about our hometowns are the exact same things that draw people to us to visit and support our local economy. For most of the past 18 months Ontarians weren’t able to enjoy a meal at their favourite restaurant, stay at a hotel while supporting their kids hockey team at an out of town tournament, drop their kids off a camp or savour a summer’s night concert at one of our incredible festivals. However, the time has come to rediscover our province. Each community in our province has so much to offer with world class experiences that rival so many other destinations around the world.

While many Ontarians save their pennies for a trip to Florida, Cuba or Mexico or have a bucket list of far off places to discover, it is imperative that we focus on rediscovering our amazing province. While many Ontarians save their pennies for a trip to Florida, Cuba or Mexico or have a bucket list of far off places to discover, it is imperative that we focus on rediscovering our amazing province. Over the last 18 months, I have seen time and time again the resiliency and pride of place from our local business owners. By showcasing local businesses and operations through our #RediscoverON Ambassadors, we are helping restore confidence in these critical sectors and encourage Ontarians to #RediscoverON. These sectors need our support and I urge all Ontarians to continue to promote locally your pride of place; from iconic landmarks, to cultural attractions, trails and parks and must-try eateries, there is no better time to experience and explore all our province has to offer; the world in one province. We still have much work to do to protect public health. We will also need to boost consumer sentiments and ensure confidence in our sectors. Without this, our sectors will continue to face the social crisis which we have been struggling with and will exacerbate our challenges amongst our high touch, high volume sectors. All that said, however, I am optimistic that with proper planning, increased funding secured in the 2021 budget and our authentic Ontario experience, our visitor economy – both leisure and business – will position us for economic and social success. I am also optimistic that we will come through this pandemic with the creativity and ingenuity in heritage, sports, tourism and culture that only these sectors could provide, after all, they are the creators of Ontario’s spectacular double bottom line and they’ve mastered this before.

any charities, like Diabetes Canada, depend on donated clothing, shoes and accessories to raise funds. Diabetes Canada has donation bins in neighbourhoods across Ontario and also offers convenient home pick up. Diabetes Canada relies on the clothing donations by generous people as a crucial source of revenue that supports diabetes research and sends kids with Type 1 diabetes to camp. Additionally, more than 100 million pounds of textiles are diverted from landfill annually. But, since the pandemic began, there has been an increase in people dumping their garbage in and around their donation bins. “We are grateful for everyone that takes the time to sort and donate their used clothing to us, but more and more we are seeing garbage and larger household items such as sofas and soiled mattresses dumped around our bins which are designed to collect textiles and clothing,” said Sean Shannon, President and CEO, National Diabetes Trust. Diabetes Canada is reminding the public that they do not accept

large household items or garbage and that anything being donated should fit through the chute of the donation bin. When individuals dump garbage or items not accepted outside of clothing donation bins the charities must use their own costly resources to clear the items.

MUSHROOMS MAKE MEALS BETTER 1

Salisbury Steak with Mushroom Gravy These Salisbury steak patties are made with a blend of 50% beef and 50% diced mushrooms, the perfect combination for a healthy weeknight dinner that tastes great! This dish is so versatile it can be served as a hot sandwich, over mashed potatoes or over egg noodles for a dish your whole family will love. PREP TIME: 20 minutes | COOK TIME: 21 minutes | SERVES: 4

INGREDIENTS Salisbury Steaks • 1 tsp (5 mL) oil • 1 small onion, diced • ½ lb (8 oz) diced crimini mushrooms • ½ tsp (2 mL) each salt and pepper • ½ lb (8 oz) extra lean ground beef • ⅓ cup (80 mL) breadcrumbs • 1 large egg, beaten • 1 tsp (5 mL) Italian seasoning

Gravy • 1 tbsp (15 mL) salted butter • ½ cup (125 mL) sliced onion • 1 cup (250 mL) sliced button mushrooms • Pinch each salt and pepper • 1 ½ cups (175 mL) beef broth • ½ cup (125 mL) frozen peas • 1 tbsp (15 mL) cornstarch • 2 tbsp (30 mL) cold water • ¼ cup (60 mL) sliced green onions

COOKING DIRECTIONS Salisbury Steaks 1 Heat oil in a medium sized skillet over medium-high heat. Cook onion for 1 minute. Mix in mushrooms, salt and pepper and cook for 5 minutes stirring. Take off heat and cool slightly. 2 In a large bowl, mix together beef, mushroom mixture, breadcrumbs, 1 egg and Italian seasoning until well combined. Form the meat mixture into 4 equal sized patties. Cook in a large skillet over medium heat for 5 minutes on each side or until cooked through. Take skillet off heat and set patties aside on a plate. Gravy 1 In the same skillet, melt butter over medium heat. Add onions, mushrooms, salt and pepper. Cook for 3 minutes or until vegetables have softened. Whisk in the beef broth and bring to a simmer. Stir in peas and cook for 1 minute. 2 In a small bowl mix cornstarch with cold water. Whisk the cornstarch mixture into the broth and continue until smooth. Cook for 1 minute or until sauce has just thickened. Add the meat back to the pan and spoon the gravy over the top. Sprinkle with green onions and serve.

Tonnino Gourmet Tuna Discover the new way of eating tuna!

Penne with Tuna, Mushrooms and Olives INGREDIENTS • 1 jar Tonnino tuna in olive oil • 500g (1 lb) penne pasta • 1 cup Pecorino Romano cheese, grated • ¼ cup extra-virgin olive oil • 2 cups mushrooms, sliced • 2 cloves garlic, finely chopped • Salt and freshly ground pepper • ¼ cup medium pitted green olives, halved • ¼ cup tomato paste • 2 tablespoons small capers, drained and rinsed • ¼ teaspoon crushed red pepper flakes • ½ cup chicken broth • ½ cup chopped fresh basil INSTRUCTIONS 1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Reserve 1 cup of the cooking water, then drain the pasta. Place the pasta back into the saucepan and add ½ cup cheese. Toss until coated. 2. Meanwhile, in a medium frying pan, heat the olive oil over medium-high heat. Add the mushrooms, garlic, salt and pepper to taste. Cook, stirring frequently, until the mushrooms begin to brown, making sure the garlic doesn’t burn. 3. Add the olives, tomato paste, capers, red pepper flakes, salt and pepper and the tuna. Using a wooden spoon, break up the tuna into 1-inch pieces. Add the chicken broth and bring the mixture to a boil. 4. Pour the tuna mixture over the pasta. Add the remaining ½ cup cheese and the basil, and toss until coated, using as much of the reserved cooking liquid to loosen the sauce. Serve immediately.
