The weather is getting warmer, the days longer, and spring has quickly turned to summer. As you get ready to locate and dust off your favorite bathing suits and fuel up the barbecue, we have rounded up some of the best recipes and stories to get you in the summer spirit. Our cover story on the Gray family will undoubtedly give you summer inspiration for grilling. Complete the grilling with summer drink recipes from the Chasteen Sisters— divine! Get out the binoculars to find and enjoy the love of birding. These are just the beginning of many exciting and viable stories contained in the summer issue. As I am retiring, this will be my last issue of publishing Family Magazine, and it has been one of the highlights of my career. Appreciation to everyone who has given me support. Now, let me introduce my replacement, Noah Walker as the new Publisher. Having lived in our area his entire life, his extensive knowledge and love of the region will give him a deep well of information upon which to draw. Is there anything better than a refreshing, summery cocktail on a warm Florida night? We don’t think so! With summer festivities happening all around, we invite the Chasteen sisters to share some of their favorite summer cocktails with our readers. Abbie and Mary Anne are master entertainers, so check out these beautiful cocktails that are on their shindig menu all summer long! Lake City natives Abbie Chasteen and Mary Anne Pearson are the daughters of Robert and Emmie Chasteen, locally loved restaurateurs and operators of Chasteen’s Still Truckin’. The ladies’ roots are in the restaurant business, so it should come as no surprise that they enjoy all things entertaining, from creating delicious recipes in the kitchen to crafting beautiful homemade cocktails for their loved ones to enjoy.

Mary Anne has been deemed the cocktail queen as she loves to create fun drinks that are seasonally based and locally sourced. “Our parents owned and operated a local small business for many years and I always try to support the locals when possible,” Mary Anne shares. “So many times people shy away from recipes because of the ingredients and the process involved. The ingredient list doesn’t have to be complex, but the flavors really have to complement each other well.”

Our Simple Syrup Recipe Need something to sweeten up your cocktail? A bit of simple syrup will do the trick! This is an easy mixture that can be made at home and stored in the refrigerator for up to one month. It’s great for sweetening cocktails, tea, coffee and much more! It is also easily flavored. You can steep fresh herbs in the hot mixture for a unique taste, or pop in your favorite extract for an easy athome flavored syrup.

Begin by boiling ½ cup of water on the stovetop. Once it is boiling, add in a ½ cup sugar and stir until combined and the sugar is completely dissolved. Pour the liquid into a glass jar and seal well. Store in the refrigerator and add to your favorite drinks as desired.

Abbie’s Favorite Frozen Blueberry Margaritas Serves 4 Ingredients: • 2 cups fresh frozen blueberries • 1 cup Patron Silver tequila • ½ cup St-Germain Elderflower Liqueur • 1 cup grapefruit juice (fresh or bottled) • ½ cup simple syrup • 2 tablespoons of local honey Instructions: In a blender, combine all ingredients and fill ¾ of the way full with ice. Blend until smooth. Pour into glasses and garnish with fresh mint and a fresh blueberry skewer. Sugar or salt rim optional! To get the most out of your fresh mint, you need to activate it! Simply place the sprig in one hand and give it a slight pop with the other. By doing this, you will activate the herb and it will give off amazing aromatics!

Mary Anne’s Fresh Summer Peach Mule Ingredients: For the Fresh Peach Puree: 2 medium-size fresh peaches (washed, peeled and cut into chunks) ¼ cup Peach Schnapps 1 ½ teaspoons fresh pureed ginger 2 tablespoons of simple syrup Juice of 1 fresh lime For the Fresh Summer Peach Mule: ¼ cup of peach puree 1 ½ ounce of vodka of choice Handful of ice cubes

Instructions: For the fresh peach puree, begin by combining all ingredients in a blender and blend until the mixture is pureed and smooth. This makes a great base for the rest of your cocktail. Next, combine ¼ cup of puree, 1 ½ ounces of vodka and a handful of ice cubes in a shaker. Shake well to combine. Pour the mixture into a copper mug filled with ice. Top with ginger beer (our favorite is Refreshingly Light by Fever Tree) and garnish with fresh mint and a fresh peach slice. Enjoy! ■

Traveling with kids can be less than fun; in fact, it can even be more work than just staying home and in routine, right? Let’s talk about helpful ways to keep traveling with kids simple and fun.

GET THE FAMILY PUMPED UP While every kid has their own personality, most kids are up for something new and exciting. Start by simply talking about your upcoming trip—getting them excited can be a helpful tool all by itself. Of course, the younger the child, the more excitement in your voice, the more helpful this tip will be. Depending on the type of trip you’re planning, and the age of your children, try some of these tips to help get the kids pumped up:

Have fun sharing the news. Let them help with the itinerary. Create a countdown. Try a taste of the local cuisine. Show them where they’re going. Make a vision board. Let kids know what to expect.


BOAT RIDES • Snacks, snacks and snacks. If you feed the children, they sit still longer. • Water toys • Life vest (check the requirements for life vests in your area.)

TRAINS/PUBLIC TRANSPORTATION

• For toddlers and babies, putting them in a stroller is amazing because you don’t have to get them off and on all of the time. It also helps when boarding and un-boarding the vehicle.

KEEP THEM ENTERTAINED Before setting off on a trip, take a quick trip to a dollar store to grab a few age-appropriate toys, activity books and snacks (things that aren’t too messy, like pretzels). Buy individually packaged snacks or buy a big bag and divide the snacks up yourself. This step will help ration the snacks out. The new toys and snacks will be very helpful for keeping kids entertained. They don’t have to be expensive to work. Children are kept entertained longer by new stuff, even if it’s not fancy.

• Snacks are helpful for keeping children quiet, entertained and sitting still. • Bring along age-appropriate books (Audio books are great for children who don’t read yet but enjoy a good story.) • Movies—simply download them to a device while still on wifi or go old-school and use a DVD! • Wipe-clean activity books are amazing because they are reusable and can be shared if you have more than one child.

GIVE YOURSELF MORE TIME When traveling with kids, allow more time than you think required, adding more time the younger the kids are. For example, when taking a road trip, double the drive time to make up for the stops. So if your GPS says 6 hours, just plan on 12. This makes the trip more enjoyable and you won’t feel rushed or behind.

MASK SPRAY WITH ESSENTIAL OILS: Supplies: • Lavender essential oil • 2-ounce spray bottle (a glass bottle is preferred but optional) • 20 drops of lavender essential oil • ½ ounce of witch hazel • 1 ½ ounce of water Combine into the spray bottle. Shake before use. Spray on the inside of the mask before wearing.

Play games that involve the entire car such as: - The Alphabet Game: Look on the billboards for a word starting with A to Z. For example, a-animal then b-billboard, c-city. Continue until Z and repeat. You can even have a race to see who can find the next letter the fastest. - Name That Capital: Look for license plates—one person calls out the license plate and the other responds with the state capital. For example, Florida—Tallahassee. - I Spy

Have everyone use the restroom at the same time—this helps bladders be synchronized and makes for less stops.

If traveling with a potty-training child, take their training potty along and place it with-in easy access.

For little kids and babies, plan car trips during naptimes when possible.

Pack snacks for yourself and make sure to drink lightly while they sleep since stopping normally wakes them.

WHEN FLYING Whether you’re flying with a toddler prone to sprinting away or a grade schooler who turns into kidzilla when she’s bored, here’s how you can tackle the most common challenges of flying with kids. • Book direct flights and minimize stopovers. • Check your stroller (or car seat if you have an infant) at the gate. This way you have something to put the child in as well as help carry 16 |

luggage around in the airport. (Double check with the airline for specific guidelines.) • Have a new toy for each flight—something simple. • Have their jaws moving when ascending and descending.

The couple has been married over 23 years, living and working in Lake City for most of their married life. A Live Oak native, Kevin first met Heather when the two of them were working for Wells Fargo in Jacksonville. The pair quickly hit it off and fell in love, deciding to tie the knot and relocate to Lake City to raise a family together. Heather settled into a career in banking, currently serving as a senior vice president private banker for Drummond Community Bank. She enjoys working with a great team and loves that she is able to serve Columbia County in this capacity. While the couple met during their careers in banking, Kevin decided to leave the banking industry after 20 years of service to pursue a new venture. Kevin invested in a portable building company by the request of his best friend who was looking to diversify and take on a partner in the business. Kevin took him up on the opportunity to invest, and after seeing the substantial growth in the business, decided to dive into full time entrepreneurship. The site of this special summer shoot was a recent development of Kevin and Brad’s, a gorgeous lakefront home that has a stunning view of Kingsley Lake. This lakefront home was built with families in mind, featuring an open-concept layout with lots of room to entertain, relax and enjoy all that lake life has to offer. The split floor plan features large bedrooms on each side of the home, making it a great place for bigger families to gather together to spend quality time with one another. This home also provides the opportunity for investors to utilize it as a vacation rental as it can house more than one family at a time. The kitchen provides plenty of space to prep and serve, all while enjoying the view of Kingsley Lake. Large windows and sleek sliding glass doors bring the outdoors in, showcasing the paradise that awaits you on the lake.

And what’s summer without a little fun on the water? The Gray and Womble families share that they enjoy any and all water sports, from wake surfing and wakeboarding to tubing and boating. There’s no shortage of water activities here, but the families also enjoy entertaining and enjoying the space during the warmer months. “We love to entertain,” Heather shares. “When we are here and we can stop and just relax on the weekends, we love nothing more than to get together with our family and friends to celebrate and enjoy the beautiful view here on the water.” This summer, you can likely find Kevin and Heather soaking in lots of family time on the lake with their son, Mason, who is now a graduate of Columbia High School. Mason will be attending Flagler College this fall to play baseball and study

BACON WRAPPED GREEN BEANS Ingredients: 4 cans of cut green beans (or freshly snapped green beans) Applewood smoked bacon 1 tablespoon garlic powder 1 cup brown sugar Package of squeeze butter Salt and pepper to taste

Instructions: This recipe is simple and delicious! Start by cutting your bacon strips in half and laying them on a baking sheet. Wrap 7-8 green beans in the bacon strips, repeating the process until all ingredients are gone. Next, sprinkle your rollups with garlic powder and add salt and freshly cracked pepper to taste. Finish off by crumbling the brown sugar across your rollups and squeezing butter over the pan. Bake at 350 degrees for 35-40 minutes, or until the bacon is completely cooked through. These would make a great appetizer or side dish for your summer barbecue!

HONEY HERB BUTTERED CORN Ingredients: 4 ears corn 2 tablespoons olive oil salt, to taste 2 tablespoons butter, melted 2 tablespoons honey 2 tablespoons fresh parsley, minced 2 tablespoons fresh thyme, minced

Instructions: Begin by preheating a grill to medium heat. Drizzle your corn with olive oil and sprinkle it with salt and pepper, turning to ensure all the ears are evenly coated. Place the corn on the grill and close the lid to keep the temperature high, then let the corn cook for about 15 minutes per side, or until slightly charred on all sides. Remove the corn from the heat and set aside. Start by brushing melted butter on the corn, then drizzle the corn with the honey of your choice. Your favorite local honey works well with this, but a hot honey really takes the flavor to the next level. Finish off your corn with a healthy sprinkling of the herbs and serve. This is the perfect summer side dish to serve with your favorite grilled meat and veggies. ■ 24 |

From main courses to condiments and garnishes on cocktails, there are infinite ways to incorporate fresh herbs into your dishes this season. The best part? You do not need a green thumb to enjoy these aromatic herbs all summer long! Read on to learn some of the best practices for caring for your herbs, along with some practical uses and simple recipes for each herb.


Mint

Looking to spice up your summer beverages and add a fresh herb to your salads this season? If so, then mint may be the perfect herb to add to your garden. Mint can grow well both indoors and outdoors, making it a wonderful option for aspiring and expert growers alike. This herb is known to grow quite quickly, so to avoid a garden takeover, experts suggest potting your mint plant separately from other herbs. To best care for your mint and set up your plant for success, invest in high-quality soil and opt for a pot with drainage. Keep the soil consistently moist and water the plant when the top inch of soil is dry. Once your plant begins to grow, harvest it often and take advantage of your beautiful, fresh mint all summer long! Need some mint inspiration? We have you covered! Basil

Ready to level up in the kitchen? Look no further than fresh basil. This herb pairs well with so many summer vegetables and family-favorite meals, making it a great option for your summer garden. Grow basil in a raised garden bed or in-ground, or opt to grow it in a container indoors; but ensure that your soil is high quality. Basil plants need around 6-8 hours of sun each day, and it’s important to keep their soil watered regularly, especially when they are receiving lots of sun. Once your plant grows to 6 to 8 inches tall, harvest the leaves by pinching them off and adding them to your favorite summer dishes. Ready to harvest? Here’s some great dishes that pair well with basil. Create a refreshing caprese salad with juicy tomatoes,

fresh mozzarella cheese and a drizzle of balsamic vinegar. Top with basil and enjoy! Did you know that basil pairs well with strawberries? The unmistakable rosemary aroma, coupled with the distinct flavor, can elevate any meat or pack a punch on a veggie dish. Take the flavor to the next level by growing your own! Looking for rosemary recipe inspiration? Rosemary enhances the flavor of chicken, pork, lamb and veal, and is commonly used to infuse flavor into steak. Roast potatoes with butter and rosemary to add freshness to your side dish, or consider adding a sprig of rosemary to your favorite summer beverage as a garnish. Did you know that freshly chopped cilantro is an excellent source of potassium? It’s true. It’s also low in calories and is good for the digestive system. No wonder this herb is a favorite among many restaurants and chains worldwide. If you want to try your hand at growing cilantro, read on to learn some of the best practices for growing. Cilantro grows well in full sun, but it will need plenty of drainage, so ensure that your soil is equipped to drain easily. If you want to grow cilantro indoors, you may consider a hydroponic system in which the plants grow directly in water and are given light and nutrients from a light source. This is a great option for many herbs if you do not have much outdoor space for a garden, or if you prefer to grow your herbs indoors for easier access each day during meal preparation.

DIY HERB GARDEN

CENTERPIECE Fresh herbs can transform the flavor of favorite recipes and add a fresh spark to one’s palate when added to recipes or used as a garnish. People who may not have the space or the inclination to create an outdoor garden should know that many herbs can be grown successfully indoors. Small in size compared to outdoor gardens, indoor herb gardens can be grown on a windowsill. They can also be housed in decorative containers, serving double-duty as living centerpieces on kitchen or dining room tables. Start by finding a container that fits your decor. Punch holes in the bottom, if necessary, to allow for proper drainage. Line the bottom of the container with gravel or perlite to help with drainage, then top with potting soil. Position small herb plants and fill in with extra potting soil. Sage, thyme, dill, and rosemary are good starters, but any herbs will do. Add a top-dressing of peat moss to assist with water retention and help the plants thrive. Place the container in your desired location and enjoy the welcoming aromas and fresh herbs at your fingertips.

You can customize these fruit popsicles to use whatever type of fruit you like, or what you have on hand; fresh or frozen fruit will work. These colorful and flavorful Pineapple Paletas (also referred to as pineapple popsicles) are a healthy frozen snack that your entire family will love!

Ingredients: • 3/4 cup sugar • 4 cups (about 1 1/2 pounds) finely diced fresh pineapple, divided • 1 tablespoon fresh lime juice Preparation: Bring sugar and 1 cup water to a boil in a small saucepan over high heat, stirring until sugar dissolves. Chill syrup until cold, about 1 hour. Purée syrup and 2 cups pineapple in a food processor until smooth. Set a fine-mesh strainer over a medium pitcher; strain, pressing on solids to extract purée. Stir in lime juice and remaining 2 cups pineapple. Divide among molds. Cover; insert ice-pop sticks. Freeze until firm. Dip bottoms of molds into hot water for 20-30 seconds to loosen pops. Remove pops and serve. MAKES 8 TO 10 SERVINGS

Ingredients: • 10 ounces diced kiwi • ¾ cup prosecco or other sparkling white wine • ¼ cup sugar • Pinch of kosher salt • 16 ounces diced seedless watermelon • 2 cups prosecco or other sparkling white wine • ½ cup sugar • Pinch of kosher salt Preparation - Kiwi Layer: Purée kiwi, prosecco, sugar, and salt in a blender until very smooth. Pour 1 tablespoon kiwi purée into each ice-pop mold. (It won’t be very deep; only about ½–¾”. You may not use all of it.) Freeze while you make the watermelon purée. Watermelon Layer: Purée watermelon, prosecco, sugar, and salt in a blender until very smooth. Pour watermelon mixture over frozen kiwi mixture to fill molds. Cover and insert sticks. Freeze until firm, at least 4 hours. Dip molds briefly in hot water to release pops. MAKES 24 TO 30 SERVINGS

As the days grow longer, the temperatures become warmer; the flowers, now in full bloom, showcase a kaleidoscope of colors; and a walk outdoors provides a visual sense of peace and a seasonal symphony from nature. Mohawk-tufted Northern Cardinals chirp and whistle while building a nest for their soon-to-arrive eggs. A pair of Carolina Wrens perch on branches to sing a powerful duet while Blue Jays fly from tree to tree with a chorus of squeaks and calls. It’s a breathtaking moment of sights and sounds and one you don’t have to travel to a state park or preserve to witness. In fact, with a little forethought, you can have a front-row seat to an avian orchestra in your own backyard. John Middleton was always interested in nature. Though he was content just watching bees, butterflies, frogs and other critters from afar, he decided to pair his lifelong love of nature with his passion for photography to create awe-inspiring stills of wildlife ranging in subject from the small, always-in-motion hummingbird to the large, stealthy alligator lurking in the marshy water. “My mission in life is to cause people to be grateful for that beauty that we see in everywhere we look,” John says. Though John has captured that beauty in photographs of the environment and its various inhabitants, some of his most colorful images feature the adventures of birds both big and small. From permanent residents like the graceful Snowy Egret, the petite Blue-gray Gnatcatcher and the symbol of America: the Bald Eagle to migratory visitors like the Swallowtail Kite and the vibrant Prairie Warbler, Florida’s warm weather mixed with its coastal and inland landscapes allow for a variety of birding opportunities to simply observe or to photograph. “We just have tremendous habitat diversity and a wonderful climate that sustains life year-round and so it’s a marvelous place to be,” he says.

get them from a big-box store because many of those have been treated with systemic insecticides.” Milkweed, red salvia, sweet pepperbush, black-eyed Susan, white lantana, Florida flame azalea, coral honeysuckle and live oak are just a sample of the Florida native plants and trees that attract birds and butterflies—including the always-popular, easy-to-miss hummingbird. “Most people are really fascinated by hummingbirds, you know, to think that they fly completely across the Gulf of Mexico to the Yucatán Peninsula, and you picture a bird that weighs about as much as a quarter; it takes more than five million wing beats to get there—they’ve lost about half of their body weight by the time they arrive. They must arrive where there are flowers in bloom going and coming because they’ve got to restore their energy right away,” John says. While migratory birds garner the most attention due to their irregularity, birds that call Florida home year-round are just as alluring to see firsthand.

PRESERVING NATURAL FLORIDA IN

The city of Live Oak is historic in many ways, so preserving the history of this North Florida town is of the utmost importance. Eco-tourism brings many visitors to the city of Live Oak and Suwannee County each year as patrons enjoy the natural beauty that are local springs and attractions. The Spirit of the Suwannee Music Park draws crowds throughout the year with festivals, concerts and celebrations, and the Suwannee River State Park provides a great stop for nature enthusiasts to enjoy. While there are many characteristics that make the city of Live Oak unique, it is important that these characteristics are preserved and cherished, and one way that Live Oak does this is through the preservation of native trees. Tree preservation is not just about preserving the aesthetics of the city, but rather more importantly about preserving the history of the land. The city of Live Oak has a tree ordinance in place that states that no champion or heritage live oak Trees are permitted to be removed or relocated without a permit. This ensures that the trees that are native to the area are not to be chopped down for new development, whether that be a new building structure, parking lot or other recreational area. Set in place to protect the beauty of natural North Florida, this tree ordinance assists in keeping Live Oak beautiful. As new developments come to Live Oak, the corporations and small businesses are supporting these efforts and committing to keep Live Oak landscaping consistent. These organizations and businesses have placed an emphasis on not only preserving any historic trees that may be located onsite, but also planting new trees that are native to the area. Building plans for a Live Oak Dollar General show that the business requested the removal of several trees on site, but proposed adding in new trees to further enhance the look and feel of the property. While historic trees can be seen throughout the city, there are companies making an effort to plant more trees in order to continue the legacy of Tree City USA. The Live Oak Lowe’s, built 15 years ago, placed a high emphasis on landscaping. The beautiful trees can be enjoyed by patrons, reminding Live Oak shoppers of the beauty of North Florida. Another great example of a nicely landscaped parking lot is the new Publix located in Live Oak. This popular shopping destination was just completed in early 2021, and the corporation worked hard to create a beautifully landscaped entrance that focuses on trees and shrubbery that make a statement.

Live Oak was given this recognition by achieving all four of the Arbor Day Foundation’s requirements: having a tree board/department, implementing a tree ordinance, having an annual community forestry budget of at least $2 per capita, and for observing Arbor Day. A message from the Arbor Day Foundation shares the importance of George Curtis planting and LIVE OAK CITY MANAGER conserving trees in our local communities now more than ever as some cities across the United States deal with issues of air quality. The city of Live Oak is proud to be a recipient of the Tree City USA name, knowing that causes like these are wonderful for instilling community pride and a basis for education and engagement from the community. With these conservation efforts in place and area businesses contributing to the cause, it’s no surprise that the city of Live Oak has been given the honor of being a Tree City USA recipient. Brit and Brian Papka are the yin and yang of homebuilding—complementing each other’s strengths and acting as one another’s biggest supporters through every decision and new venture they take on. Brian grew up in the construction field—learning various tricks of the trade from framing and plumbing to cabinetry and interior trim—and like most contractors, he held a big-picture outlook for each and every project: simply viewing it as a wooden box that needed to be pieced together correctly and efficiently. Brit on the other hand, who’s no stranger to the physical tolls of building a home, is a visionary, a planner and focuses on the interior details of a build, whether it’s choosing the right tile, light fixtures or paint colors to transform any house into a home.

There’s just something about a yummy, frozen ice cream treat on a warm, sunny day that makes life a little sweeter. Whether you have it on a stick or in a cone, have way too many scoops of it in a bowl or use it as a topping to balance out the richness of a favorite dessert, ice cream is certainly one of our favorite treats. In fact, according to icecreamhistory.net, Americans are the largest consumers of ice cream in the world, with the average person eating around 48 pints of ice cream per year. While vanilla, chocolate and strawberry are the most common flavors of ice cream found in the grocery store or ice cream shop, it can come in many different flavors, including—strangely enough—a hot dog flavor that originated out of Arizona. So, how do you enjoy eating your ice cream? How about having it on a warm, fudge brownie that slowly melts and creates a delicious creamy topping. However you enjoy your ice cream—different flavors and all—is unique to you. EASY, NO-MACHINE VANILLA ICE CREAM RECIPE COOKING LEVEL: EASY

Total Time: 5 hours 15 minutes (includes freezing time with 15 minutes active) Amount: 12 servings (6 cups total) Cooking Pan: 9 X 5 X 3 inch baking pan, chilled INGREDIENTS:

One 14-ounce can of sweetened condensed milk 2 teaspoons of pure vanilla extract or vanilla bean paste Pinch of fine salt 2 cups of heavy cream, cold

DIRECTIONS:

• Whisk together the condensed milk, vanilla and salt in a large bowl; set aside. • Whip the cream with a mixer on medium-high speed until firm peaks form, about 2 minutes. Fold about 1 cup of the whipped cream into the condensed milk mixture with a rubber spatula until combined, then fold the lightened mixture into the whipped cream until well blended. Pour into a chilled 9-by-5-by-3-inch metal loaf pan and freeze, covered, until thick and creamy, like soft-serve, about 2 hours. Swirl in any desired mix-ins with a spoon. DULCE BAKERY & SWEETS SHOP Jesenia and Adrian Minniefield have always loved sweets and took a leap of faith in opening their sweets shop in their hometown of Fort White this past year, despite the pandemic hindering many businesses around the country. “The pandemic really put things into perspective for us, and we realized there was no time like the present,” says Jesenia. “We are so excited to eventually open our brick-and-mortar shop in Fort White, although this has proven to be a bit more challenging than we thought. In the meantime, we have come up with another way to expand our services; this will be revealed in the next couple months.” Dulce currently rents out a gourmet cotton candy cart and novelty ice cream cart for all types of events, and Jesenia explains they have recently expanded their bakery services by providing dessert catering. “We really wanted to bring back the simple pleasures experienced from classic treats like ice cream bars, and oh so sweet cotton candy, and decided our carts would be the perfect solution,” Jesenia says.

ABOUT THE FIRST ANNUAL “ S T R U T T I N ’ F O R T H E PA W S ” FA S H I O N S H O W

The Lake City Humane Society is growing! Serving Lake City since 1964, this organization was founded by a group of individuals to address animal welfare issues within our community. The Lake City Humane Society seeks to provide a safe, loving and healthy environment for companion animals until they find their “furever” home. The organization is committed to helping animals in need, and with the demand in our community, the shelter is working on many expansion projects and community development opportunities. The First Annual “Struttin’ For The Paws” Fashion Show was an idea that came to the Board of Directors earlier this year. The board, along with the LCHS employees and volunteers, were searching for a way to raise funds for their new facility, the James Montgomery Animal Wellness Center, and bring awareness to their cause. The fashion show idea was birthed out of a desire to incorporate all areas of the Lake City Humane Society into one event, from the adoptable shelter dogs to the veterinary services and the newly opened thrift store. Each and every item worn by the models in the show are items available for purchase at the thrift store, and every item of decoration was also brought from the thrift store. Attendees were given the opportunity to purchase table decor, glassware, clothing, accessories and so much more at the event, all while supporting a worthy cause. The evening was full of laughter and fun as the models strutted across the stage and the audience had the opportunity to interact with the dogs up for adoption. A great time was had by all and the board is very hopeful that the James Montgomery Animal Wellness Center is well on its way to being fully funded, thanks to the generous community members and friends of the Lake City Humane Society who helped pull off such a successful event. INGREDIENTS: • Dough for single-crust pie • 1-3/4 pounds tomatoes, seeded and cut into 1/2-inch slices • 1/4 cup thinly sliced green onions • 1/2 ricotta cheese • 1/2 cup shredded pepper-jack cheese • 2 tablespoons fresh basil • 1/4 teaspoon salt • 1/4 teaspoon pepper • 2 bacon strips, cooked and crumbled • 2 tablespoons grated Parmesan cheese

Makes 8 Servings

DIRECTIONS: The tomatoes need to be prepped before the bake. After slicing them into ¼” rounds, they need to be salted and drained for about 15-30 minutes. They might not release a ton of liquid at this point, but after they’ve been salted, they should be patted dry with a paper towel to trap any remaining excess moisture. This step is essential to make sure your galette doesn’t end up a soggy mess. Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate. Place half of the tomatoes and half of the onions in crust. Combine ricotta and pepper-jack cheeses, basil, salt and pepper; spread over tomatoes. Top with remaining onions and tomatoes. Fold crust edge over filling, pleating as you go and leaving an 8-in. opening in the center. Sprinkle with bacon and Parmesan cheese. Bake on a lower oven rack until crust is golden and filling is bubbly, 30-35 minutes. Let stand 10 minutes before cutting. If desired, sprinkle with additional basil.

HOMEMADE DOUGH: Combine 1-1/4 cups all-purpose flour and 1/4 tsp. salt; cut in 1/2 cup cold butter until crumbly. Gradually add 3-5 Tbsp. ice water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap and refrigerate 1 hour.

Even in its simplest form, cosmetology at its core is an in-demand field filled with creativity, artistry and infinite possibilities. From trending techniques in ombré blending, balayage and the use of vibrant colors to changes in length, style and texture, hair is a blank canvas for inspired beauticians to showcase their talents. Of course, transforming luscious locks isn’t the only platform in cosmetology as aesthetics and nails are also part of the package deal. Manicures range from modest and clean to miniature works of art; skincare has become tailored to individualized needs and concerns; and makeup, well, makeup is like a painter’s box overflowing with colors, mediums and tools to create a look that’s soft and subtle or playful and imaginative. While budding cosmetologists can choose to delve deeper into one of these areas or experiment with all aspects of the profession, before they can do any advanced approaches, they have to learn the basics. 50 |

Florida Gateway College’s cosmetology program is a 1,200-contact-hour occupational certificate course that provides aspiring students the training, skills and knowledge to become licensed cosmetologists. “Once the students leave our program they are skilled in the areas of hair care services on all types of hair such as hair analysis, haircutting, hairstyling, and hair coloring. They also learn permanent waving and chemical relaxing. The students also learn the basics of manicuring and pedicuring. They also learn the basics of skincare,” says Brenda L. Jernigan, who is the Cosmetology Program Coordinator. Jernigan, a previous graduate of FGC’s cosmetology program, returned to her alma mater to become an instructor and more recently was named the new program coordinator for the department. Though she hasn’t had the new title long, Jernigan has already taken steps to make advancements to the program by reforming the advisory council board and arranging for new workshops for students. While nothing is set in stone, Jernigan has other changes for the future lingering in the back of her mind from physically expanding the program’s space to the goal of one day developing a finishing school for graduates to continue their education and keep up with the latest trends and techniques. “We have an awesome program but I see it being much bigger,” she says. As it stands now, FGC’s cosmetology certification, which accepts enrollment each January and August, begins by teaching students the fundamentals of the industry with the first semester dedicated to subjects like what is hair, what is it made out of, how to formulate color and the proper use of tools. Once the theory is understood, students take on a more hands-on approach by working with clients in a salon-style atmosphere. Throughout their time in the program, students study and perform a variety of hair care services; nail services like manicuring

and pedicuring; and skincare services including skin analysis, facials, makeup application and superfluous hair removal.

“We are always working hard to make sure that the students that come through this program are getting the best education that they can possibly get to be able to go out into the real world and to leave here right after they finish and start making money,” Jernigan says. “This is a place where you’re going to have fun while you’re learning, and when you leave here, you’re not just going to leave here with the knowledge of hair, but you’re going to have a little bit of everything from life lessons to learning how to adapt.” ■

This trend took the design world by storm, and for good reason! If you love the look of ceramic vases and earthy pottery on display but do not want to invest in a large quantity of pieces at a higher price tag, this DIY is for you. Not only do the completed vases look like an expensive work of art, but it is a great way to reuse an item you may already have lying around in your home. The best part? This DIY is super simple and only needs a few materials.

Searching for a large piece of art for a blank wall in your home? If so, you will likely notice that the larger the art, the pricier it can be. We are huge fans of supporting local artists and their stunning work, but if your budget does not allow, we have a solution for you: DIY textured art! This is a great option for someone who is looking to try their hand at creating a special piece for their home, and it is really simple to accomplish—no art skills required!

Materials: • Glass vases of choice • Paint of choice • Baking Soda • Paintbrushes Directions: Begin by cleaning your glass vases and ensuring they are dry. Next, mix together a ¼ cup of the paint of your choice and 1 tablespoon of baking soda. Mix until combined. Ensure that the paint is spreadable but not too thin. If needed, add more baking soda or paint until the desired amount of texture is reached. Paint the mixture on your vases in an even layer. Allow it to dry before going in with another coat, repeating these steps until the desired look is accomplished. Let dry completely before styling on a shelf, using as a planter or decorating with it in your home. Pro Tip: If you do not already have vases to use, a visit to your local thrift store is a great place to search. Not only are the glass vases inexpensive here, but you can also find many unique shapes and textured vases to play around with. Plus, this is a very sustainable way to source pieces to complete your home decor.

Materials: • Blank canvas - In size of choice • Spackling paint • Putty knife • White paint • Paint in color of choice (optional) Directions: Begin by prepping your space with painters drop cloth and placing your blank art canvas on top. Next, begin layering on the spackle using the applicator. The key is to create organic strokes and shapes as you see fit. Do not be afraid to play around with different shapes, strokes and textures to create the art of your liking. If you need some inspiration, there are many tutorials on YouTube or Pinterest that you can glean ideas from. Cover the entire canvas in spackling paint as desired, then allow it to dry overnight. Once it is completely dry, begin to paint over the entire piece of art with your white paint, or the paint of your choice. Feel free to mix colors and tones to create shadows and highlights over the texture. Let dry in between coats. After you have achieved your desired color, let the piece dry overnight once more before hanging in your space.

Pro Tip: While this trend originally became popular on large canvases, this can easily be adjusted to fit your space. Only need a small piece of art to complete a gallery wall? Use this technique on an 8x10 canvas. Need to fill a large wall? Invest in a large canvas or three smaller canvases to hang side by side. Don’t be afraid to get creative and adorn it in colors that work best in your space. The sky’s the limit!

Take a tour around your house and look for items that you’re bored or tired of. Then with a little creativity, give them a fresh new look. It can be as simple as a coat of spray paint (in a fun, vibrant color) or taking the item and completely changing its function. It can be a super simple reuse of an item, but I guarantee by changing its look, the item will be new again!

Directions: Once you have acquired your flip item, clean it well and prep the surfaces for paint. If your item has pieces that need to be removed prior to painting, like doors or drawers, remove those now and wipe them down as well. Sand down the areas that are going to be painted, if needed, to prepare for the first coat. Spread out painters drop cloths to avoid messes, and begin painting your piece in the color of your choice. It may take a few coats for the color to become completely opaque, so repeat this step as needed, allowing it to dry completely in between coats. Once the piece is dry, it is time to reassemble it and give it an upgrade with new hardware. For this storage bin, we chose a sleek, silver pull that compliments the other finishes in the space. Get creative with this step and find knobs or handles that you love! There are great options at your local hardware store, but other options can be found at craft stores, on Amazon or on Etsy. This is an inexpensive step that truly makes a world of difference! Once your new hardware is on, your piece is ready to find its home and be styled for your space. ■

You’ve heard of golf, you’ve heard of ultimate frisbee… But have you heard about disc golf? Formalized in the 1970s, disc golf is a flying disc sport in which players throw a disc at a target on a designated course. Similar to golf in rules and objectives, the object of disc golf is simple: the winner is the player who has the lowest Adam Gill number of total throws across the game. So, how do you play? On a disc golf course, a player must accurately land a disc in a target from a tee area. This is considered to be the “hole,” similar to that of the game of golf, and this target is most commonly an elevated metal basket. As a player continues the course on the fairway, they must make each consecutive toss from the spot where the disc landed until they reach the target. Often, the courses have shrubs, trees and other objects throughout, offering up a challenge for players as they navigate the course and avoid the obstacles in their way. 58 |

The disc landing in the basket signifies that the hole has been completed, and the player is marked accordingly on a score sheet. Some recreational players keep score the old fashioned way with pen and paper, but there are also mobile apps that help players keep a record of their scores on all courses across a long period of time. This helps the players to identify patterns on familiar courses and encourages players to find ways to improve. Like any sport, practice makes perfect! The best part? This sport was created for everyone, no matter their skill level. Disc golf can be played competitively by men and women, regardless of their age. This makes it a great option for children and teens who are searching for a sport to get involved in, but it also serves as a great activity for adults and seniors alike.


It’s often described as a lifetime fitness activity, so players can truly begin enjoying the sport at any point. While the object of the game is similar to golf, many players enjoy that this sport is often free to play and rarely requires the rental of a golf cart to navigate the course. There is a well-manicured disc golf course located in Heritage Park in Live Oak, along with a great course at the Spirit of the Suwannee in Live Oak, and another course at Alligator Lake Park in Lake City. If you are searching for a new challenge, there are always toprated disc golf courses in Gainesville, Ocala and Orlando. A Wing and a Prayer He’s gone scuba diving to a depth of 124 feet off the coast of West Palm Beach, flown a single-engine fixed-wing aircraft over the mountains of Gatlinburg, went hanggliding in Chattanooga, has traveled the world and had a career as a nurse for over 20 years, but Dan Hartley insists he’s not an adrenaline junkie. Despite this self-admission, Dan’s latest hobby involves harnessing himself to a motor-powered trike that can lift him into the air, with the help of a parachute-style wing, and give him an unobstructed view of the world below his feet. A trip to Gainesville in 2019 introduced Dan to the concept of paramotor flying. Watching strangers float above the clouds instantly captured his attention, and after a lengthy period of research, he found a company called Flight Junkies, which offers both equipment and training through their bases in Ohio and Florida. With the company’s seasonal stint in Florida coming to an end, Dan drove to Ohio to experience the act of flying without the comfort of an enclosed plane to keep him at ease.

“I was absolutely beyond belief terrified, I was ready to sell it as soon as I got back on the ground,” Dan recalls of his first ride. “I only went up maybe a couple hundred feet—if that—and it just absolutely terrified—it was exhilarating, but it was equally terrifying—and I was just, I was really having doubts.” Undeterred by his initial fears, Dan flew a few more times before he packed up his new, rather unusual flying machine and headed back to Florida. Since he returned, Dan has clocked in around 30 to 35 flights and, although he’s become more confident in the sport, he still ensures an overall sense of safety before and after takeoff by repeatedly checking the weather, doing a detailed precheck flight, monitoring the wind speed and wearing a radio-capable helmet to keep tabs on local aerial traffic. “My instructor said, ‘There’s something you always need to remember: It’s better to be on the ground and wish you were up in the air, than be up in the air and wish you were on the ground’ and so I try to live by that,” he says. “I get close to Jesus when I’m flying. I pray before I leave and I pray up in the air so—I just want to be prepared if something were to happen.”

After setting up his equipment and performing a final safety check, Dan buckles himself into the trike, starts the engine, pulls on the throttle, grabs the risers to control the direction of the wing and gives it gas. In less than 10 seconds, he’s up 100 feet watching the world slowly shrink below him. For the most part, Dan sticks to an elevation of around 300 feet from the ground—in comparison, cell towers stand anywhere from 50 to 200 feet tall—but he’s managed to far exceed that on a few occasions.

“The highest I’ve ever gotten up is 1,200 feet, and that’s really high— I can just tell you when you’re sitting on that little seat and there’s nothing around you but wind and you’re up 1,200 feet, Lake City looks awfully small,” he says. Though the height makes for a lengthier landing—giving him the appearance of a buzzard repeatedly circling the area preparing for a smooth descent—he’s gotten to witness some of the most breathtakingly beautiful sights while soaring above the horizon line. “You see some of the most amazing, absolutely amazing sunsets and sunrises because you have nothing to obstruct your view. It’s incredible,” he says. “When I was up 1,200 feet, I was flying over a rather large pond,” Dan recalls. “About 600 feet below me were these white birds—I’m guessing they were cranes—and they were flying over the water, and the contrast of the dark water against their white feathers—they were flying a perfect v—it looked like something on National Geographic.” While flying during the early mornings provides cooler temperatures and calmer winds, extended summer nights allow for evening flights that end in star-speckled skies and one-of-akind scenery. “I’ve been flying at night when there was a full moon, and it was, it was amazing. It was like if I had 30 more feet of an arm, I could touch it. It was amazing. I mean, the clarity up there is incredible too,” he says. It’s been almost a year since Dan embarked on his first heartsinking flight somewhere over northern Ohio, but it’s quickly become a thrilling, incomparable hobby he’s eager to expand on, whether it’s planning to fly over Florida’s beaches or eventually taking it on the road to see the country from a birds-eye angle. All-in-all, flying a paramotor is a feat that allows anyone—regardless of age or prior flight experience—the chance to enjoy a walk in the clouds. ■

Celebrates 70 Years of Business By Emily Pazel

There are many things that attribute to making a company successful—pursuing a mission, employing a great team and retaining talent, focusing on customers and exceeding their expectations and even adapting to new technology in this ever-changing society. For decades, Odom, Moses & Company, LLP has climbed the latter of success and continues to go above and beyond for their clients and community as they celebrate 70 years of business. Odom, Moses & Company, a certified public accounting and financial advisory brokerage firm, planted its roots in Lake City on June 1, 1951, in the People’s Hardware Building on Marion Street in downtown Lake City. When the firm first began, it was originally called Darby, Darby and Odom, which was named after the founding partner, Drakon B. “Hayes” Odom, and his two initial partners, C. Dwight Darby and Richard E. Darby. Ralph Abrahamsen, LeRoy T. Knapp and Fredrick E. Fisher were added as partners later that same decade. In the following years, James Lackey, Earl Gause, Philip J. Moses, Jr. and G. David Brewer were admitted as partners.

“When I was offered the job in August of 1972, the company at the time was named Darby, Darby, and Odom,” says Philip J. Moses, Jr., Managing Partner of Odom, Moses & Company. “The firm was very prestigious and well respected throughout North Florida. In the beginning, we served many business clients in the Lake City and Live Oak area as well as performed the audit for the University of Florida.” Philip explains that Columbia County, at the time, was a very small community and began to grow when the two interstates began to attract more business to the area. Many of the businesses during this generation were owned by World War II Veterans that had come home to start their businesses and firms. “These men and women were of high moral character and worked very hard to provide for their families,” Philip says. “I believe they established the foundation and integrity that has made Lake City a desirable place for us to live.” In 1980, the firm was reorganized and renamed to Odom, Moses & Company and continued as a certified public accounting firm until the business


expanded in 1999 by partnering with Raymond James. While Odom, Moses & Company continued its tax and accounting services, it was also now available to offer financial and investment planning. Partners today are Philip Moses, Cammy Scott, Tammy Hall, Patricia Stuart, Deserrai Goosen, Clarence Brown and Charlie Cowen. “Though I am still a CPA, I began providing financial services in 1999 and initially had $10 million in assets under management,” Philip says. “Today, we currently have $725 million in assets under management. We have experienced compound growth of 20 percent per year since we began providing financial services. We also provide comprehensive financial services to these clients as well as managing their assets. Our staff of 23 professionals and paraprofessionals also prepare over 1,000 tax returns to clients throughout the United States.” Today, Odom, Moses & Company services over 1,300 families within 29 states throughout the country. Through its affiliation with Raymond James, the company has evolved from an accounting firm providing financial services to a financial services firm providing accounting and income tax services. “When I first started, we were still using DOS,” says Cammy Scott, who started at Odom, Moses & Company 28 years ago and is now a partner at the firm. “About a month later, David started us on Windows. I can remember having to exit a program to open the email program because you could only have one program at a time open.” As the business grew over the years, the company adapted with the times and started filing tax returns electronically around 1999, Cammy explains. And now, they actively encourage their clients to make tax payments electronically as well.

EMPLOYEE LONGEVITY AT ODOM, MOSES & COMPANY For professional accountants and financial advisors, numbers and consistency are a big deal. And when it comes to employee longevity and retaining employee talent, Odom, Moses & Company is proud of this accomplishment. The average years of service for all 23 employees, including the seven partners, is 17.3 years. And to break the numbers down even further—the average years of Odom, Moses & Company’s staff is 12.4 years, and 19 years for the partners. “We have at least five employees that have worked for us, left for continued education or other personal commitments and come back,” Tammy says. “I think that shows the company’s commitment to its employees, our commitment to our clients and therefore, our relationships with those clients are why these employees come back. We provide service above and beyond. We exceed our clients’ expectations.”

GIVING BACK TO THE COMMUNITY Odom, Moses & Company has deeprooted ties to Lake City, and the partners and staff firmly believe in the value of relationships. They view every client relationship like a partnership and many clients have been with the firm for over 30 years. The partners and staff strongly believe in giving back to our community, and each year the firm contributes approximately $70,000 to charitable organizations throughout our communities. In the past the firm has participated as a team in community fund-raising events such as Relay for Life, Hunger Fight and March for Babies. Last November, the staff put together and donated 50 shoeboxes to Samaritan’s Purse Operation Christmas Child. Additionally, with this year being Odom, Moses & Company’s 70th anniversary, they decided to donate $7,000 to Catholic Charities and will be giving two highschool scholarships in the amount of $700 each to one student at Columbia High School and Fort White High School. “It’s important to us to express how much we appreciate the community’s support of us because not only do our employees not leave us, our clients don’t leave either—so we appreciate our clients’ commitment to us as their financial professional and all the relationships we’ve created in our community,” Tammy says.

Between the firm’s seven partners, there is a big diversity in age and expertise, but all the partners are long-term, local residents whose families have grown up in the community. Having familiar faces and local support is why the partners feel there is a lot of continuity among the staff. Philip has been with the firm now for several decades and gets asked frequently if he has any plans to retire. He explained that he and his wife, Sarai, try to travel often and spend time in the town of Suwannee on the Gulf of Mexico and they have a small home on the Santa Fe River, and he doesn’t have any plans to retire soon.

“We are planners by nature,” says Tammy Hall, who has been with the firm for 26 years and is also a partner at the firm. “As CPAs and financial advisors, we are just planners by nature, so we are always planning for the future.”

“Consequently, I love my practice, partners, staff and most importantly, our clients,” Philip says. “And I plan to serve them as long as I am mentally and physically able. My father, Philip Sr., who was a forester, worked until he was 90 years old and had a wonderful life serving his clients, and I would like to do the same.”

In December 2015, the firm relocated its business to the newly constructed building and current location along Highway 90 in Lake City. “When we built this building, we built it with the thought of growth in services, staff and expansion of facilities eventually. However, with how times have changed, especially with more transition to virtual, we see our ability to serve all of our clients wherever they may be at without having to have additional locations,” says Patricia Stuart, who is a partner and has been with the firm for 25 years.

IN MEMORY OF MR. ODOM Drakon B. “Hayes” Odom was a driving force in the business and is therefore still a lasting part of the company. After serving in the Army Air Corps during World War II, Mr. Odom graduated with High Honors from the University of Florida in 1947 and joined their faculty, serving as professor of accounting. Mr. Odom was the very first Certified Public Accountant between Jacksonville and Tallahassee and was appointed by the Governor to the State Board of Accountancy. He also served as President of the Florida Institute of Certified Public Accountants from 1970-1971. In 2001, Mr. Odom was recognized as an Honorary Member for fifty years of membership to the American Institute of Public Accountants. After a long and distinguished career and having served as an active civic and political leader in our community for more than 50 years, Mr. Odom died March 6, 2007.

SENIORS HOW TO STAY ACTIVE AT HOME By Hayli Zuccola

If the pandemic taught us anything—besides the importance of hand sanitizer and toilet paper—it was the realization that you don’t have to go far from home to maintain an active lifestyle. Of course, being active doesn’t just pertain to physical exercise, but encompasses all types of engagement including mental and inspirational recreation. For seniors who aren’t ready to face the uncertainties of the ongoing health crisis, here are just four ways to continue being active at home.

PHYSICAL ACTIVITY Though it isn’t the sole source of sustaining a healthy existence, exercise is vital not only for physical health, but mental health as well. According to the CDC, “regular physical activity can help keep your thinking, learning, and judgment skills sharp as you age. It can also reduce your risk of depression and anxiety and help you sleep better.” Now you don’t have to run a marathon or partake in strenuous weight lifting to reap the benefits of exercise. Simply going for a walk, stretching or doing a round of seated yoga can make a huge difference, but it doesn’t have to be a chore. Take the exercise routine outside to absorb the sunshine and immerse yourself in the beauty of nature.

FIND A NEW HOBBY Taking up a new hobby is a great source for staying active at home. Since the pandemic began, gardening has become more popular than ever, but if digging in the dirt leaves little to no interest for you, there are tons of other hobbies to choose from including baking or cooking; bird watching; photography; painting and even coin collecting. The possibilities to sort through are endless, and dozens of them can be done inside or right in your backyard. MENTAL EXERCISES While physical fitness has its place in an overall wellbeing, it’s also important to keep your brain in shape too. Working on crossword puzzles, playing memory games, reading or even trying to learn a new language are all ways to keep your mind sharp and engaged in the moment. STAY CONNECTED Seniors, especially those with health issues that leave them more at-risk, have been spending a lot more time at home, but that doesn’t mean they have to be alone. Technological advances have made it so much easier to stay connected with friends and family. Even those who aren’t the most techsavvy don’t have to depend on social media or video communications to keep in touch, just picking up the phone to call a friend can help fill the need for some socialization. ■ S U M M E R 2021 | 75


A HEART FOR REILLY —Winning the battle one obstacle at a time.

A Story of Hope

“Reilly was born with a congenital heart defect. I found out at my 20-week anatomy scan that there was an abnormality on his heart” Dawn, Reilly’s mom, shares. “From there, they sent me to UF to be closely monitored.” At 22 weeks gestation, Reilly was officially diagnosed with Hypoplastic Left Heart Syndrome (HLHS), which means that the left side of his heart didn’t form correctly, causing the right side of his heart to be enlarged—because it was trying to make up for the left side’s malfunctioning. “Just after Reilly’s diagnosis, I had lots of ups and downs. I struggled. Until one day, a song (“All of Me” by Matt Hammitt) changed my perspective, and it all just ‘clicked’ I know that whatever came our way, we would get through it with God.” Dawn, continues, “We anticipated 3 open heart surgeries once he was born. The first was when he was 11 days old and the second when he was 5 months old, and then the third when he was three and a half years old.” After his second heart surgery, Reilly did very well. “I was able to stay home with him for his first 18 months, be there for him and keep him from getting sick,” says Dawn.

Life is a pure miracle as the Rogers family has experienced first-hand as they’ve been winning one battle at a time for Reilly’s heart. When parents suddenly lose a child, often the last thing on their mind is to donate their child’s organs. However, if you knew you could donate and help save another child, would you? “Until Reilly got on the list, I didn’t know the need for donation,” Reilly’s grandmother, Nancy Rogers, shares. Organ donations save lives. You may not think of it for yourself or children. If you take away anything from Reilly’s story, just be aware that organ donations save lives no matter the age of the organ donor!

With summertime in full swing and children enjoying their days off from school, it’s hard to imagine another school year beginning again so soon. But just as quickly as the summer started, it’ll be time for children to go back to the classroom again, growing and expanding their minds while learning all the knowledge they need for life’s challenges ahead. For many parents, your children are most likely nestled into a good school and will continue moving forward with that same program. However, maybe you are new to the area and trying to find a good school program, or maybe your son or daughter just needs a change of scenery. Whatever the case may be, your child’s education is important and should be treated as such. By Emily Pazel

school options for your child With the new school year approaching quickly, it’s time for parents to decide how their child will head back to school and keep those young minds learning new, exciting things. And while you might think there’s only one or two ways for your child to attend school, you might be surprised to learn there’s a few. The majority of children throughout the county attend a public school, where the school is supported by public funds and is free for children to attend. Typically, there are several public schools around the school district that teach thousands of children throughout the school year. This past year, children were able to learn inside the classroom as well as have a remote-learning option due to the pandemic. The alternative option for in-classroom learning other than going to public school would be attending a private school. A private school can be a religious or nonreligious school where students pay tuition to attend. A private school also does not participate in state testing and typically has admission procedures. Many private schools will also typically offer scholarships or financial assistance to families and students that meet the requirements. If you feel your child would do better in school without stepping into a classroom, you can also look into online learning programs, such as Florida Virtual School (FLVS), which is a public, non-tuition way to attend school while learning from a distance. Children learn and thrive in many different ways, and so it shouldn’t be a surprise that some children might do better in a smaller classroom or online while others do better in a larger, more diverse learning environment. So, do your research. Before enrolling your student into a school, try researching what you feel would be best for your child.

go back to school When children get ready to head back to school, there can be a lot of different emotions that get dragged into this time of the year, including excitement and happiness, nervousness and even sometimes fear and anxiety. But there are ways that you can make this transition into the new school year a little less of a rollercoaster. #1 Don’t talk about school just yet Let your children enjoy their summer break. Even with the school year a month or so away, it’s a good idea not to let children worry about the new school year starting too early. Although each child is different, most children don’t need a lot of preparation time and, instead, should try to spend their summers worry-free. #2 Be sure to communicate with your child’s teacher Once you find out what teacher your child is going to have this school year, try reaching out and talking with them to let them know important information about your child. For example, if you child has anxiety and may get scared or nervous often while away from home, it might be a good idea to communicate that to the teacher so that they can provide the best learning environment for your child. #3 Get a new routine established A week or so before the school year starts, it might be a good idea to establish a new routine so that everyone has a better transition into the school year. Try to establish a calm, yet happy way to bring in the new school year, such as having a big breakfast on the morning of the first day of school. Heading back to school after a long summer break is always an adventure. Although the fun summer memories will be missed, getting back into school is where our children are able to grow and learn, and hopefully the new school year is just as exciting.

Easy After-School Zucchini Pizza Bites Time: 20 minutes total (10 minutes of prep; 10 minutes to cook) Servings: 4 Ingredients: • 2 large zucchini • ½ cup of marinara sauce • 1¼ cup of shredded mozzarella cheese • ½ cup of mini pepperoni slices (or turkey) • Fresh chopped parsley or basil to garnish Instructions: • Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper • Slice the zucchini 1-inch thick, and use a melon baller to scoop a little from the inside to create a small cup that will hold in the sauce • Arrange the zucchini on a prepared baking sheet and top with marinara sauce, mozzarella and pepperoni slices • Bake in the preheated oven for 8-10 minutes or until the cheese has melted and is bubbly

Snacks Chicken & Bacon Roll Ups Time: 1 hour, 10 minutes (10 minutes prep, 1 hour chill) Servings: 5 Ingredients: • 1 can (9 3/4 oz) chunk white chicken, drained • 1 tub (8 oz) spreadable garden vegetable cream cheese • 1 cup salsa, divided • 4 pieces ready-to-serve fully cooked bacon, crumbled • 6 flour tortillas (8 inch), room temperature Instructions: • Mix chicken, cream cheese, ½ cup of salsa and bacon in mixing bowl • Spread mix over tortillas and roll up tightly: wrap in plastic • Refrigerate for at least 1 hour • Before serving, unwrap and cut tortillas into 1-inch slices and serve with leftover salsa ■
