So if you do have a few bucks to spare, friend, please, please support the Main Streets in small towns across the country – places like Port Townsend that cater to customers they often know by their first names, by their likes and dislikes, by their family stories. Even if they don’t know you, small business owners – many of whom are tending to the shops themselves these days – still go the extra mile to make you feel like the dollar you spent at their shops has made a difference. And it does make a difference – to both the shopkeeper and to you.

Townsend Boat Haven. It’s free, and interesting to look at boats out of the water being repaired. Then come downtown and breathe in the aromas of pizza on Water Street and Thai food on Adams. Odds are there will be some street musicians around, and maybe even a horse-drawn carriage. A Victorian good time H

Oh cheer for the good ol’ days when houses were big and cozy with fireplaces everywhere, Victorian style was in, and cars had real chrome and real engines you could tinker with all afternoon. If your “cup of tea” is classic romance, book a room at Holly Hill House on Polk Street, get a map from the Port Townsend Chamber of Commerce and take a tour of Victorian homes before enjoying lunch at Sweet Laurette Café & Bistro in Uptown (1029 Lawrence), or stroll downtown to the Fountain Café (902 Washington). Walk – remember fresh air – a block and check out Bergstrom’s Antique & Classic Autos (809 Washington St.). It’s part classic-car store and part museum. Don’t miss Insatiables next door. It has an amazing collection of one-of-a-kind antique books. Across the street is the Port Townsend Antique Mall (still on Washington Street). Just browse and enjoy. Walk around town and consider a matinee at The Rose Theatre (235 Taylor), where movies are introduced by theater staff. It’s a classic date in Port Townsend. Note: Remember to return in the spring for a drive down memory lane with a movie at the drive-in. – Allison Arthur

H A rural romance: U pick a tree

Taking your sweetheart to Jefferson County does not necessarily mean going to Port Townsend. U.S. Highway 101, the Olympic Loop, takes you through the heart of Quilcene. The small town is rightly known as the Pearl of the Peninsula, so any sign you see advertising fresh shellfish is worth a stop (here, farther south in Brinnon or anywhere along Hood Canal). Fortified with a hot chocolate or coffee from the Quilcene espresso stand or Twana Roadhouse, take your quest for a Christmas tree to any of several U-cut tree farms between Quil and Lake Leland, or visit the ranger station before seeking a holiday tree within Olympic National Forest.(Call the station at 360-765-2200.) While in town, check out the Picket Fence (21 Dutch Lane, just off the highway near the Quilcene River Bridge) specializing in custom embroidery, along with home and garden gifts. And your drive home between Thanksgiving and December takes you past some wonderfully decorated holiday light scenes. Whitney Rhododendron Gardens and Nursery in Brinnon brightens the season with about a million lights. – Patrick J. Sullivan

Every couple needs a romantic vacation, but if you can’t afford Hawaii, come to Port Townsend. You can have a romantic holiday weekend for no more than $50 a day. In the morning, grab a cup of coffee at the Boiler Room (711 Water St.), where two cups of coffee cost a whopping $2. Roam around, absorbing the beauty of the city’s architecture, painted murals and tree-lined streets. Take a drive up to the Habitat for Humanity Furniture and More Store (2001 W. Sims Way) and find something unique, maybe a bowl? (Keep reading for an explanation.) Feel good about shopping at Habitat since proceeds help build affordable homes. Keep it under $10; we’re on a budget here. If you can’t live on coffee alone, hit the Little Rose Thai (227 Adams St.) restaurant during lunch hour. Bring your own bowls; they’ll fill them up for you (two bowls: $10). Walk over to Quimper Sound (230 Taylor St.), Washington’s oldest independent record store, and pick up a new LP for your sweetheart. Prices vary; keep it under $28. Now that it is evening, take a trip to North Beach, where you can stroll along the water’s edge or hike all the way into Fort Worden State Park. Or, you can just snuggle on the beach and gaze at the stars. Either way, you’ve made it a day to remember on less than $50! Island getaway – no ferry needed H

For an island getaway that doesn’t involve ferries, head for Marrowstone Island and bring your bike. It’s flat and easy to ride around the island. Oh, and you get to the island by going over a bridge! Easy come, easy go. Consider a stay at the Beach Cottages on Marrowstone (especially in the winter). There’s a private beach, and the goal is to check in, then check out and unwind. Do venture out to the Nordland General Store (7180 Flagler Road), where there’s plenty of locally made goods, and you can sit around the woodstove and talk to the locals. Lucky you if you happen to come when Santa arrives by boat on the first Sunday of December. It’s a Santa visit like no other! Bike or drive to Fort Flagler State Park – bike in if you don’t have a Discover Pass. There are lots of great trails to explore, and Fort Flagler has a to-die-for view of the world. When you head back to civilization, check out the Northwest School of Wooden Boatbuilding in Port Hadlock and then, whatever you do, have dinner at Ajax Café (Water Street in Port Hadlock). Ajax is known for its many colorful hats – which guests are invited to don while there – and its excellent Northwest fare. – Allison Arthur

A cool winter afternoon in Port Townsend can be a blustery one. But that’s no reason to miss a breathtaking sunset while watching the submarine races from the edge of a cliff called “The End of the World” (follow 49th Street west past the county fairgrounds and 53rd Street until it comes to a dead end). When your blanket no longer keeps you cozy and you’ve dangled your feet as long as you can stand, head to the Undertown Coffee and Wine Bar (211 Taylor), positioned below Port Townsend’s historic downtown business district. Once warmed by an espresso or glass of wine, duck out the back and poke your Old-timers talk about checking out the submarine heads into the Upstage Restaurant (923 Washington), where you’re likely to find live races. Port Townsend actually has real submarines you music and dancing to go with any number of can spot on occasion as they come in and out of Naval fine seafood entrées. Fine & Funky Expect the unexpected here and there Shopping in Port Townsend is sort of like shopping around the world – in a span of about six blocks. You might find something from Russia or Thailand or Ireland or Paraguay or Germany. Then again, the item could be handmade by the woman running the store. And window decorating is taken to a whole new level in Port Townsend. Every window is a work of art, showcasing items within the shop. It makes you want to just stand and stare. But the fun in shopping is the sense of humor in Port Townsend. Expect whimsy. Expect political incorrectness on occasion. Expect the unexpected. Whip up your own delicious gift Whether your favorite is Christmas, Hanukkah, Kwanzaa or the Solstice, the end-of-the-year holiday season is fast approaching. It’s a wonderful opportunity for cooks of all persuasions. What could be more personal than a gift you cook yourself? Yet food gifts can be tricky. We want to give something a bit luxurious, yet our gift list may well include friends or family with a variety of special dietary restrictions ranging from the purely philosophical to the medically necessary. In this season of light, the last thing we want to do is offend the sensibilities or clog the arteries of our nearest and dearest! The recipes below offer a variety of options. The Roquefort Pistachio Biscuits and the Mocha Fudge Sauce are as over-thetop in fat, sugar, salt, chocolate or cheese as traditional holiday food usually dictates. But the group also includes recipes that are appropriate for people with common

restrictions. All are OK for vegetarians. By substituting the egg white with a tablespoon of oil, the pecans would be fine for vegans. For the glutenintolerant, the fudge sauce or the pecans would be a good choice. For those trying to restrict sugar, or those who can’t tolerate dairy products, again try the pecans, omitting or reducing the salt for those on salt-restricted diets. And remember, these gifts don’t have to be consumed right away or all at once. For a friend trying to lose or maintain weight, or for the harried host or hostess, give the Roquefort Pistachio Biscuits in the form of dough so the cookies can be sliced and baked at leisure when the next party comes around, or to celebrate a weight loss milestone. Ditto the fudge sauce, which freezes well and makes a good gift to use after the holiday glut on a gloomy January or February day.

Spicy Pecans

2. In a large bowl, whisk egg whites until frothy. Add nuts and stir to coat evenly. 3. In a small bowl whisk together the spices and salt. 4. Toss nuts with spice mixture until thoroughly coated. 5. Spread evenly on the baking sheets and bake about 45 minutes to one hour, stirring every 15 minutes to separate any clumps. Nuts are done when golden brown. 6. Remove to a rack to cool. Store in airtight container.

Makes 4 cups Preparation time: About 50 minutes 2 egg whites 4 cups shelled pecans 1 teaspoon freshly ground cumin ¼ teaspoon freshly ground black pepper 1 teaspoon smoked paprika (available in the spice department of local supermarkets) ½ teaspoon sea salt ½ to 1 teaspoon cayenne pepper 1. Preheat oven to 250 degrees. Line one large or two small baking sheets with parchment.

Roquefort Pistachio Biscuits Makes about 8 dozen Preparation time: 20 minutes plus time for chilling dough 1 cup unsalted butter, softened 6 oz. Roquefort or other firm blue cheese ½ teaspoon salt ½ teaspoon cayenne ¼ cup milk ¾ cup finely chopped walnuts ¼ cup potato starch (Available in the baking section of local supermarkets) 1/8 cup powdered sugar (optional) 2 ½ cups all-purpose flour ¾ cup shelled pistachios 1. Place all ingredients except

pistachios in food processor and pulse to form a smooth dough, adding a bit more milk if the dough is too dry. 2. Stir in pistachios. 3. Using plastic wrap, form the dough into two logs, each about 18 inches long. Wrap tightly and chill several hours or overnight. (Dough may also be frozen until ready to use.) 4. When ready to bake, preheat oven to 400 degrees. Remove plastic wrap and slice dough into ¼-inch slices. Place on ungreased cookie sheet and bake until light brown all the way through, about 15 minutes. 5. Remove and cool the cookies on a rack. Store in airtight containers. Great as a cocktail snack or with tomato-based or other soups.

Mocha Chocolate Sauce (Chocolate Sauce for Grown-ups) Makes about 2 ½ cups Preparation time: about 20 minutes 1 cup half and half 1 cup sugar ¼ teaspoon salt ¼ cup light corn syrup ¾ stick (= 6 T) unsalted butter, cut in ¼-inch slices 6 to 7 ounces dark semi-sweet chocolate* 1 teaspoon vanilla extract 1 Tablespoons instant espresso powder Large pinch of cayenne 1. Put all ingredients, except the vanilla, espresso powder and cayenne in the top of a double boiler and place over – not into – simmering water. (If you don’t have a double boiler, use a heatproof bowl that fits snugly over a

saucepan.) Heat the mixture, stirring with a whisk, until it becomes glossy and smooth, about 5 minutes. 2. Remove from heat and whisk in the vanilla, espresso powder and cayenne. Taste and correct seasoning. Store in the refrigerator until ready for use. This sauce also freezes well. Re-heat very gently over hot water or in microwave.
