Lighten up! is Candle Store mantra About the business: We started out 11 years ago as an outlet and showroom for Coyote Found. When the factory closed, we were able to source out handmade taper candles from other handcrafters. A source to buy candles was needed and continues to be a much needed Pacific Northwest staple. We need all the warmth and light we can get.

You moved recently; how’s that going?

It’s been an adventure. We had the full support of Port Townsend and it made all the difference. When things looked down, the town inspired me to keep going. We bought everything we needed locally. Our fellow merchants have been so kind to guide people to our new location on Taylor Street and have been so supportive urging the move with encouraging words.

How do you cater to local shoppers?

Our business is all about the locals and what we call “long distance locals.” I strive to source items that people would like to buy here. We are available seven days a week to try to accommodate people’s schedules and sometimes we have delivered an order or two. Locals are our bread and butter so we never forget it.

Everything possible. With the exception of a few specialty items, I shop locally, too! We have some great shops here in PT and there’s always a surprise in store when I ask locals where to find something. It’s usually here in PT or Hadlock. I am truly blessed to live, shop and work here.

El Sarape Mexican Restaurant has been in business since 1991 in Port Townsend at 628 Water St. Ricardo Vega has been here since 1995 and took over in 2007. It’s always been under the same name and same employees. We’re a family business.

How important are local customers to El Sarape?

Local customers are really, really important. They are the ones who make us strong to survive the long, cold winters. I’m happy to serve them and I guess they like our food. They still keep coming. We have reasonable prices. i n s u la .

In game season, every Thursday and Friday, they come up and have a late dinner. They like our customer service.

Sports teams in Port Townsend come here often. Tell us about that.

The kids from the high school come here to practice their Spanish. We do special reservations for them. Even middle school kids come to practice their Spanish.

What’s the most popular thing on your menu?

We have fajitas with steak and chicken, and our special chorizo. It comes on a hot sizzling plate. We have lots of house specials, all homemade and fresh. We try to keep the menu simple. Our customers are happy with it, so we’re happy with it.

A few years back, the city was doing work on the street in front of your restaurant. What was the impact on your business? We were struggling after that. Older people were having a hard time getting here, especially during the bad weather. It’s almost back to normal. We really appreciate all our customers over the years who have stuck with us during good times and hard times.

A new one-man bakery in PT How long have you been in business?

The idea for Dalla Notte Baking began fermenting when I was at the Seattle Culinary Academy, but it wasn’t until last fall that I knew I had to act and go for it. I’ve been in business since December 2012. I do special orders for bread, pastries and cakes, and do the Port Townsend Farmers Market on Saturdays.

Why did you decide on Port Townsend?

I grew up in Port Townsend, and I’m so thankful for the opportunity to return home from Seattle to do business. Port Townsend has an infectious friendliness and way of life … when combined with our burgeoning food scene, you’ve got one special place.

What do you do that’s different than other bakeries?

Dalla Notte Baking has become known as “the one-man bakery” because I alone produce my menus, bake my bread and sell at the markets. However, what may set me apart most is how much I love pushing the community’s culinary imagination. I actually enjoy intimidating my customers a bit with my menu.

Give an example of “intimidating” your customers.

It’s mainly my ready-to-go items, like sliders. On one, I use nasturtium leaves, avocados, radish and a garlic aioli, and take all the components of a meat slider and transpose them into a veggie slider.

How important is shopping locally, in your mind?

Shopping locally is a given in this community. I feel absolutely blessed with our local abundance in food. If you’re feeding people in this town and not utilizing our locally grown and created goods, you may need to re-evaluate your business.

What do you shop locally for in your business?

Measured by weight, it would be Nash’s flour. Measured by quantity, however, it’s between Midori Farm’s potatoes and basil, Red Dog’s radishes, and Colinwood Farm’s cucumbers and spicy peppers. Je

Gatheringplace offers something for people with all abilities About the program: Gatheringplace started in 1994 after Megan Ferris graduated from Port Townsend High School’s special education program and her parents, Linda and Bob Ferris, were looking for a way to provide Megan, who has developmental disabilities, with a future. The private nonprofit has blossomed into providing cooking, art, music and movement, and dog-biscuitbaking programs for more than 30 adults with disabilities.

What is Gatheringplace best known for in the community? That’s a toss-up between our organic dog biscuits and the annual Port Townsend calendar. We sell our dog biscuits at the Saturday Port Townsend Farmers Market as well as at the Food Co-op, Quimper Mercantile and Getables. The calendar comes out annually and has all the big events for the next year on it and it features local artists.

We have lots of choices: cheese and bacon, chicken, beef, lamb, salmon, vegetarian, pizza, peanut butter and wheat-free gingerbread. Every dog owner picks what he or she thinks is best. Our biscuits are made fresh weekly using organic ingredients, and a lot of people appreciate that.

They are so important. People in the community know our biscuits are rolled and cut out and bagged by people in the community who have disabilities and others who volunteer. And so many businesses, as well as Port of Port Townsend officials, really support what we do. We couldn’t do it without them. on

What do you shop for locally?

Actually, we have a garden that our staff and participants attend to so we raise the veggies we use in our cooking program and some herbs, too. And there are businesses, like Key City Fish Company and the Food Co-op, that we buy from. We have so many local contributors. Local artists donate their work for our calendar. We’re really all about serving local people and relying on locals to buy our calendar and dog biscuits.

Millbrook Clayworks crafts local treasures About the business: Started in 2008 by Todd Stephens, Millbrook Clayworks Gallery produces custom and wholesale orders of pottery pieces, including cups, plates and other kitchenware. Stephens tries to use sustainable materials and green energy and encourages others to do the same.

What do you provide that’s unique?

We also think of ourselves as providing a service, and one of the ways we do that is we produce a lot of custom pieces. We craft unique, one-of-a-kind pieces as gifts or trophies. Millbrook Clayworks has produced trophies for everything from paragliding competitions to bike races in Bellingham. Ultimately, what we try to do is produce a high quality product that people look at and say, “I haven’t seen that before.”

Do you do it all by yourself?

We have two part-time employees, and then my partner Sarah Leonard is here; she makes jewelry as well. We generally do most stuff, most of it ourselves. We also have lessons, everything from kids who come in here every year to adult lessons. The gallery has an open studio space at an hourly rate for the do-itthemselves types.

How important is it to shop locally?

We’re around a lot of farmers and we’ve made friends with a lot of farmers, and that’s where we get a lot of our produce, at the farmers markets.

How do you encourage people to shop locally?

Picket Fence specializes in one-of-a-kind About the business: KaraLee Monroe has been making crafts all her life and selling them for nearly 20 years. She started out in a borrowed office with a sign by the road and an ad in the Leader, expanded and cut back, and now has a shop next to her home, open four days a month at 21 Dutch Lane in Quilcene. She’s currently exploring a new space with potentially more open days.

What do you provide that’s unique?

We’re kind of a vintage country cottage with handmade, vintage, and some things that I buy wholesale. That’s what we go with, the unusual, one-of-a-kind thing. Lately, I’ve been repainting a lot of old furniture to sell. Never a dull moment.

Do you do it all yourself?

No. My daughter Becky makes things; another woman in Port Angeles; a woman from Sequim; and a couple people from Quilcene. I try to limit it because I’ve only got so much room. If I can find somebody to do something, I do that.

What are some of your best-sellers?

I do the Quilcene Pearl of the Peninsula embroidery on sweatshirts and other things, and other embroidery. I’ve made so many embroidered tea towels I can practically make them in my sleep.

How important is it to shop locally? Extremely. We do as much as possible.

I do a lot of stuff on Facebook. I have a weekly email, and anything going on in Quilcene I always list it. People ask why would you want to do that, but that’s how you connect with people, and find out different things.

Quilcene’s Habitat: Local donations, initiative About the business: Habitat for Humanity has been working to support home ownership to those in need in Jefferson County for 15 years. Stores in Port Townsend and Quilcene sell donations to help finance this work. The Quilcene store, opened in 2011, just hired its first-ever store manager and community engagement officer, Debbie Williams.

How local are you?

All our volunteers are local, and donations of time, property, and items come from all over the county to help county residents. Quilcene hasn’t had a [Habitat] home built here yet, but it could happen. Store donations get filtered through Port Townsend, and we get a delivery once a week. We take donations here on Wednesdays from 11 to 2, and usually our volunteers look through them.

What kind of things do you offer?

People can find little knickknacks, pots, pans, glassware, books, and other stuff in the store. We’re in need of gently used furniture and things for the home.

What do you provide that’s unique?

The Neighborhood Revitalization Initiative is very unique. There are not many throughout the country that get to use this program. There’s an area here where homeowners, if they qualify, can get no-interest loans. It could be a really big help if they just need a roof, and it can be a really big help if they are on a fixed income. Three new roofs have been put on; we’re in partnership with the Bluebills.

Beer, with a side of local inspiration About the business: Twana Roadhouse owner Melody Bacchus wanted to do something new when her children left home. Last year, she started a microbrewery, The 101 Brewery, making 15 gallons at a time in Quilcene.

What do people like about your product?

If you’re a beer-lover, you’re going to love our beer. When beer is fresh, it tastes the best. That’s what makes microbreweries so popular.

What do you provide that’s unique?

We have four flavors, all from recipes that I developed. Pecker Pole Ale, the beer that stands alone, is a best seller. The local loggers love the name and the ale. We have Sidewinder White Wheat, Hook Tender Brown Ale and Look Out Stout.

By having something unique and different. It’s hard to survive in a small town, especially in winter, when you don’t have that influx of people stopping by. You depend on your locals, so giving them something to be excited about is a win-win. We’ve added something new and exciting.

Pourhouse: Success by the glass About the business: The Pourhouse is a craft beer taproom and bottleshop owned by Ned Herbert and Virginia Marston offering the finest craft beers and ciders being made today. “We also provide Port Townsend a community gathering space,” Herbert said, “a place to hang out after work, celebrate a life event, or play a game with friends while enjoying the beautiful place we live.”

What do you provide that’s unique?

With more than 250 bottled beers and 12 rotating taps of craft beer, the Pourhouse offers the best selection of beer around. Also, in the Impound Lot beer garden, we offer a casual place to hang out on the water. Patrons can also select from a wide variety of bottled beers and ciders to go.

Do you do it all yourself?

Of course not! No one ever does anything all by themselves. We have a great group of beertenders and a bunch of wonderful regulars who all help keep it happening.

Silverwater spices it up for locals What’s your history in Port Townsend? Silverwater opened in 1989 and started small with a staff of 10. It slowly outgrew its original location behind the old Town Tavern and purchased and remodeled the Elks Building in 1996. The staff now reaches 40 in the summer, says co-owner Alison Hero-Powers. She and David Hero own the café in Port Townsend.

What’s the story of your spices?

We developed spice blends that we used in many dishes in the kitchen. People started asking if we would sell them to take home so we were sending out paper coffee cups full of spices. We decided to start bottling them to sell and we sell a lot. They are also carried at What’s Cookin’ on Water Street, the Food Coop and Sunny Farms.

What are the most popular spices?

The eight spices, in order of most popular, are Secret Spice (this one Rocky carries for popcorn at the Rose and the Starlight theaters), Roasted Potato Seasoning, NorthWest Grilling Spice, Lavender Pepper, Popcorn Seasoning (also at the theaters), Seafood Seasoning (used in our fish and chips batter), Sicilian Herbs (used in our cioppino), and Hot Cider Spice, which is fabulous for baking, with cinnamon, ginger, nutmeg, allspice and orange peel. At home we go through the Potato, Secret and Hot Cider the most.

How important are local customers to Silverwater?

Our local customers are our priority. Their support is what keeps our staff employed. We recently started our frequent dinner program as a thank-you to our locals. rs

What do you shop for locally?

Being green, supporting local businesses, being first employers for many young people entering the work force, helping support local arts and nonprofits. We have a pay-itforward charitable donation program that will donate 2 percent to local charities.

Farm’s Reach Café growing in Chimacum About the business: Farm’s Reach Café owners April and Jesse Ryan bought the café some years ago and operated it for three years, then sold it when she got pregnant and wanted to spend more time at home. The restaurant had been called On Common Grounds. The Ryans took back the restaurant two years ago and have been growing it since. A juice bar is planned for the property next door.

What’s your history in Chimacum?

My history in Chimacum goes way back to middle school. My family moved back and forth between here and California. Jesse and I met many years later at the Chimacum Café.

What are you planning for the future with your business?

Farm’s Reach has been really something special for us. It has become such a community in itself. We are excited to see the gardens in the back grow and thrive, and to continue in the direction of as many local and organic foods as we can. Soon, very soon, we will open our juice bar next door and that will offer everything we haven’t had the room to do in our current space. Fresh squeezed juices and smoothies, steel-cut oats, yogurt and granola and a great salad bar with soup to go.

What’s your most popular item?

We are hugely supported by our locals. If I had to guess, I would say 95 percent of our business is our wonderful local people. We feel beyond blessed to be part of such an amazing community.

What do you shop for locally?

We get as much of our produce locally as we can, Red Dog Farm, Dharma Ridge Farm, SpringRain Farm. Our eggs are all organic and from Washington and we also offer local and organic SpringRain Farm eggs. Other relationships include Mystery Bay cheese, Pane d’Amore bread and Short’s Family Farm beef, and organic milk from Washington.
