n 1988 Michael Rhoads was 22 years old, recently married, and working a full-time job as a machinist and two part-time jobs to make ends meet. With little money to spare, this didn’t seem like a good time to start a business. But that’s just what Rhoads did, spending the couple’s last $175 on a weed whacker so he could start Mike’s Lawn Maintenance in Allentown. He had worked for other lawn care companies cutting grass and liked the work.

“I quit my full-time job in March of 1988 and only made $7,000 that first year,” Rhoads says. “It was a lot of hard work, but I was determined not to fail.” By the end of the year he had 40 accounts, and the business continued growing from there. “I wanted to prove the naysayers wrong,” he explains, and he worked long hours to do so. His wife, Tammy, answered phones and did the paperwork in those early years. By 1992 Rhoads was able to buy a home on Main Street in Macungie with an apple orchard out back and room to put up a shop. The couple and their growing family of three children lived in the home running the business from there. “It took a lot of sweat, blood, and my wife’s tears to make it work, but we did it responsibly. We never borrowed money, and I worked 10 years straight from sunup to sundown in the season,” Rhoads recalls. Six or seven years in, there were more “Mike’s” businesses popping up, so Rhoads changed the name of the business to Turf Professionals, Inc. (Turfpro). Today, the


business is still run out of the Macungie house, while the family lives nearby. Turfpro now does business in Lehigh, Bucks, and Northampton Counties. Their team consists of dozens of employees on work crews, several people in the office, and they're equipped with a fleet of trucks to help get their jobs done. The company has five divisions: Landscape Design, Lawn Care, Detail Division, Weekly Mowing, and Irrigation—a far cry from one man with a truck and a mower. Turfpro’s extensive work in landscape design grew out of Rhoads’ lawn customers asking him for the service. He accepted all jobs, learning through trial and error and by taking courses in horticultural and landscape design at Penn State. “I also have a good vision,” he says, that allowed him to design and build outdoor living spaces and plantings. Vegan Mac + Cheez at Greentruth Plant-Based Kitchen BY RYAN HULVAT

I

have a secret: this food photographer is a huge fan of cheese and also lactose intolerant. It sucks. I’m often left with the painful choice if eating the dish before me is worth the pain it will mostly likely inflict. (Now, if it's a cage-aged cheddar from Lancaster County, for example, then the pain is worth the experience.) While on a shoot this summer at Greentruth Plant-Based Kitchen, located on beautiful tree-lined North 2nd Street in Easton, I was intrigued by a dish on the menu, Mac + Cheez. Greentruth is the brainchild of Sarah Hinch. Hinch was inspired by her own healing journey through food to build a restaurant where she could share her passion for sustainable vegan and organic dishes as well as heal her friends and community through food. Despite her passion and attention to healing food, I was still skeptical if there could possibly be a vegan mac and cheese that was worth eating. Honestly if a dish trades the feel and taste for an over processed facsimile of a traditional dish, I would rather pass. This foodie would rather enjoy food that is honest and highlights the ingredients for what they are. During my shoot, Sarah insisted I try the vegan Mac + Cheez. I discovered that her version of the iconic dish was not what I had expected. In my years of trying other non-dairy mac and cheese dishes, I was often disappointed with chemical and oil concoctions that were as unhealthy as they were disgusting. Greentruth’s version, however, is made with roasted butternut squash carefully blended with coconut milk, cashew cream, and nutritional yeast—which is often used in vegan dishes to mimic the flavor of cheese. Their Mac + Cheez dish was both creamy and cheesy tasting, providing all the flavor and mouthfeel of real mac and cheese. The gluten-free fusilli pasta was a perfect base. Greentruth Plant-Based Kitchen makes dishes that stand on their own merit, using honest ingredients prepared simply. Now when I get the craving for mac and cheese as well as nachos, I don’t have to make any sacrifices to enjoy it. Hinch's creative approach to cooking proves vegan food doesn’t have to trade flavor for health. ven before the coronavirus pandemic, homeschooling has been on the rise. With bullying, teacher strikes, and the idea that one learning style fits all, it's understandable that some parents might want to take their child's education into their own hands.

ASK A HOMESCHOOLER WHY THEY CHOSE TO TAKE THEIR KIDS OUT OF THE CLASSROOM AND YOU’ LL OFTEN HEAR THE WORD " FLEXIBILITY." 28

The National Center for Education Statistics estimates that nearly three percent of the school-age population are homeschooled, which means 1.5 million students were taught at home compared to only 850,000 in 1999. And the most common reason cited for homeschooling was “concern about the school environment.” That’s not to say that religion doesn’t factor into the decision to keep kids home, but it’s not the only reason and may not even be the deciding factor. Homeschoolers claim they produce well-rounded students who get into great colleges and are able to supplement their home-time with plenty of socialization. One study published in the School Community Journal suggested that whether homeschooled or not, the more involved a parent is in his child’s education, the better that child will do academically. This is especially true among high schoolaged teenagers. The study determined that kids who are schooled at home tend to have highly involved parents who take an active role in their education, and that

inherently translates to an education that competes with public school.

HOMESCHOOL — THE FLEXIBILITY TO MAKE THE WORLD YOUR CLASSROOM The term “homeschool” is a bit misleading because many students don’t spend their school day at home. “Over the years, we have only spent about two-four hours doing lessons at home per day,” says Angela Landis of Allentown who has homeschooled her two children. “We do fun stuff like field trips and scouts. My kids get out there; we don’t just spend all day sitting in the kitchen.” When Landis’s son entered first grade, she felt a disconnect between the educational priorities of an overworked teacher and what she wanted for her son, so she made the decision to teach from home. For parents like Landis, homeschooling is really about creating a personalized education that fits the temperament and interests of their child. Ask a homeschooler why they chose to take their kids out of the classroom and you’ll often hear the word “flexibility.”

Cyber Charter students are provided a laptop, high-speed internet access, a printer as well as an instructional supervisor who will provide guidance and mentoring— and since it’s a charter school, there is no cost. The supervisors are certified teachers who stay with the same family throughout their entire K-12 years, providing a unique, consistent relationship that is uncommon in the mainstream system. Surveys have found that students choose cyber for three basic reasons: more curriculum options, flexibility of schedule and getting away from a negative situation at school. For kids who still like the structure of classroom instruction (albeit, a virtual classroom attended via computer), but prefer to have more input in their schedule, Cyber Charter offers a good mix of homeschooling with traditional public schooling.

Another Allentown mom I spoke to said she’s thankful to be able to teach her kids at home because her husband was recently diagnosed with cancer and she appreciates the ability to schedule school around his cancer treatments. Taking on the education of your child not only offers the flexibility to make a schedule that fits your family’s lifestyle, but it means you can focus on the subjects that really motivate and inspire your kids. “My daughter loves to write, but I noticed she struggled with writing assignments in the morning,” says Landis. “So we switched writing time to the afternoon and she has flourished.” When parents are in charge of their child’s education, they can cater the curriculum to maximize their interests. “Kids are natural learners,” says Landis. “They are curious; you just need to tap into that.”

HOMESCHOOLING — IT TAKES A VILLAGE A main concern of homeschoolers is feeling isolated and lacking a social network.

“When kids on my son’s sports team would ask what school he went to, it made him feel uncomfortable that he didn’t have an answer,” recalls Landis. So she decided to start Fireside Academy (firesideacademy. org)—a homeschool co-op where parents pool resources to provide instruction. For example, a parent with a degree in chemistry might teach a science class while a chef might offer a cooking class. The end result is a community where kids can socialize, parents can get support from other homeschooling parents and families are still able to maintain the flexibility of homeschooling. There are roughly 90 families registered for Fireside Academy, including newbies who are looking for help getting started with homeschooling.

In fact, school districts are catching on to the benefit of offering flexible online school. "The Lehigh Valley Cyber Consortium boasts local school districts including Parkland, Southern Lehigh, Whitehall-Coplay, and more."

HOMESCHOOL — IT’S YOUR CHOICE As parents, we often feel judged about the decisions we make in raising our children. Making the tough decisions for your child begins the moment you decide to bottlefeed or breastfeed or whether you let your kid sleep in your bed or cry it out at night in a crib. Providing an education is one of the most important jobs of a parent, and your child may thrive in the public school system. But if not, homeschooling is a viable alternative that is definitely worth exploring.

Before settling in to read this story, get comfortable. Close your eyes for a few moments. Take a few deep breaths. Let the day’s stressors ease out of your body. Feel better? You’ve just had a taste of the ancient tradition of yoga. Yoga is the centuries-old practice of aligning a person’s physical, mental, and emotional energies through a series of deep stretches and breathing. When done correctly and regularly, it creates a powerful feeling of calm and inner peace. “It helps in everyday living,” says yoga instructor Silver Kim. “The more you do it, the more you’ll find that everyday stressors melt away. It starts to create space in your body for ‘life energy,’ and once you do this, you may not realize it’s even happening. The changes in your body might be subtle. It’s really about how you breathe, how you move, and your attitude toward the process that affects a person’s progress.”

Yoga doesn’t change you— it brings you back to who you are.

Although yoga has been around for hundreds of years, it’s had a recent surge in popularity as more people learn about its many benefits. Literally hundreds of variations on traditional styles are popping up in studios across the country, and the Lehigh Valley is no exception. There are dozens of classes offered in the area for people of all ages, body types, and physical abilities. “There are no limitations in order to do yoga,” Kim said. “You can do it sitting down or in a wheelchair. I work with senior citizens who have various health issues and children with special needs. Anyone can do it.” Many “yogis” (yoga loyalists) started taking classes at the suggestion of a doctor to help with various medical conditions, especially arthritis and high blood pressure. Prenatal yoga helps moms-to-be prepare for childbirth. Child psychologists often recommend yoga for children with behavioral problems, particularly attention deficit disorder (ADD) or attention deficit hyperactivity disorder (ADHD), as it forces them to focus, quiet the mind, and simply be. Hatha is the most widely practiced style of yoga, and can be found in most studios throughout the region. Ashtanga and vinyasa are other common versions. According to yoga instructor Midi Miller, most of the newer, “trendier” yoga 32

classes are really just a twist on the standard hatha poses. A typical hatha class will start with a few minutes of quieting the mind, following by a Pranayama, a controlled breathing exercise which helps to prepare the body for the work ahead. Most hatha classes last between 45-65 minutes, but Miller says it’s the last few minutes that are the most meaningful. “We end with a final relaxation exercise that’s meant to integrate what you just did in yoga into the day ahead,” she says. “Hopefully you bring whatever you got out of the class into the day.” One style that’s popular with celebrities and has made its way into the Valley is the intense “hot” yoga, which is done in a room heated to 90-95 degrees. “The idea is to detoxify your body,” explains Jacqueline Porterfield, owner of Upper Perk Yoga. “You build up an incredible amount of heat and drip with sweat. You’re getting a deeper range of motion and stretch in the hotter room. It’s not for everyone—you have to be at a certain fitness level to try it. But it’s very challenging and intense. It pits you against yourself, and it puts you in this moment of stress and teaches you to quiet down and let it pass.” Porterfield says that hot yoga is popular with athletes, who use it as part of their strength training, and also with


arthritis sufferers because the combination of the heat and deep stretching help to relieve chronic pain. Despite its rise in popularity, yoga is still widely misunderstood. People are still hesitant to try it because of a few persistent myths. Contrary to popular belief, yoga is not sitting in a Lotus position and contemplating your navel while chanting. That’s meditation. Although there are some similarities, they’re very different. Meditation is more internal, where mindfulness, quiet, and self-reflection are the main focus. Yoga is physical, with the mental and emotional elements added. It’s also not connected to any particular religion as some believe; rather, as Porterfield explains, it’s more of a philosophy that can bring you fulfillment from your religion, whatever it might be. You also don’t need to be all that flexible when starting out—you build up your strength and flexibility through regular sessions. "Yoga is a practice of self-inquiry. It helps us to find our way and our personal paths, not only in our bodies but in our hearts and minds as well," says Melanie Smith, owner of Miss Melanie Yoga. "Yoga can be extremely therapeutic, it can be a work out, it can be a spiritual practice. Yoga means to yoke together or unit. It's a coming together," she adds.

Just like any physical activity, it’s important to do some homework on a studio and the styles of yoga they offer prior to signing up for a class so you can find the one that’s right for you. Depending on your fitness level, you may want to start with gentle yoga. If you’re in good shape and up for the challenge, something more intense like hot yoga might be a better choice. It’s a good idea to meet with the owner of the studio you’re considering before registering for a class. People who are open to trying yoga will be amazed at what it can bring to their life. “It makes everything you do easier,” Porterfield says. “Even if you sit at a desk all day, it will make you feel better. It helps you build strength and flexibility; it can help you lose weight if you choose. It helps a person learn mindfulness, and love and compassion for other people. It will also change and sculpt your body.” Though people try yoga for various reasons, it quickly becomes a part of their regular routine. It provides a much-needed escape from the hectic everyday pace, and more than a few people say that it has made them better versions of themselves.

Maybe you are bored with your current exercise routine and would like to try the latest workout trends. Fortunately, there are a variety of ways to achieve your fitness goals this spring. You can explore a new routine or stick with exercises that are tried and true, but either way you will stay active and engaged with these choices to help you stay energized and in shape.

KETTLEBELLS Kettlebells are bowling ball-sized cast iron weights with a single looped handle on top. They range in weight from two pounds to more than 100 pounds and can be used in countless movements for a cardiovascular and strengthening workout. It is important to start with a light weight and make sure you have the correct form. The unique shape of kettlebells forces the body to move in different ways than it would with a traditional handheld weight. “Kettlebells are great for the core, too,” Kim Fallon, Certified Personal Trainer and AFAA Certified, of Heart in Motion says. Kettlebells can be incorporated into an aerobic class at the gym, or can be purchased in a store or online for use at home.


BACK TO BASICS “Getting back to basics seems to be making a comeback. This is basically using your own body weight and minimal equipment. You don’t need expensive equipment to get a good workout,” says Meredith Flacks, a Certified Fitness Trainer of Fit & Fab. “Walking is great and you can easily incorporate some lunges, stop to do some push ups, etc.,” she says. You can get a full body workout with no equipment needed. Another effective workout is interval training–that is, short, intense bursts alternating with short recovery periods such as alternating sprinting and walking. Joseph Arangio, MS, CSCS, of Arangio Athletic Fitness in Allentown recommends resistance training. “Resistance training strengthens bones, lowers blood pressure, boosts mood, increases energy, burns fat, and builds muscle. Resistance training is the closest thing we have to the fountain of youth,” he says.

TONING SHOES AND BAREFOOT TRAINING You may have seen the advertising—toning shoes “technology is designed to give you a better butt and legs with every step.” Is that true or is it too good to be true? Most of the personal trainers I talked to are not that impressed. “There are no shortcuts to fitness. I believe these shoes make ankle injury more likely due to the lack of ankle support, the elevated sole, and the curve of the sole,” Flacks says. “These shoes may increase the range of motion in the foot and ankle, which can recruit more muscle fibers than walking in flat-bottomed shoes, however, after a short period of time the benefits will wane.” Arangio agrees that these shoes are not a “magic bullet.” He says the real trend to watch is barefoot training. “The rationale is that most modern shoes are responsible for a host of musculoskeletal problems from Achilles shortening to back pain. Also, the side effect of wearing shoes all day long is that most folks spend little to no time developing strength, mobility, and

proprioception (the ability to feel your body in space) in their feet,” he says.

recommends exercising four-five times a week for the best results.

“In essence, wearing most shoes can make your feet weaker. To strengthen your feet, you should gradually increase the amount of shoeless strength and mobility training you do each day.”

“Proactive health investments, like personal training and good food, pay huge dividends in the quality of your life. That means feeling energized and happy every day, plus a laundry list of other health benefits (less fat, more muscle),” says Arangio. According to Arangio, if you have not worked out in a while, his best advice is to hire a professional, experienced fitness coach. “I suggest you get a personalized workout that includes step-by-step exercise instructions, detailed how-to pictures, and savvy coaching tips,” he says. “A professional, experienced personal trainer will help you manage your training, nutrition, and recovery (sleep and stress management).”

Fallon says she thinks these sneakers are just a trend “however if it gets some folks up and moving then I’m all for it.”

KEEPING MOTIVATED The most important, and hardest, thing to do when adopting a new exercise routine is teaching yourself to stay on a regular workout schedule. That is where hiring a personal trainer can be useful.

Fallon points out that if you cannot afford a personal trainer, you should work out with a buddy. Not only will it keep you motivated, but clients who work out with a partner save money because often personal trainers offer a “buddy system” where two friends can share the cost of training sessions. Flacks agrees that someone to meet at the gym or train with and be accountable to is key to sticking with an exercise routine. “Another is making a list of your goals and the reasons you want to be more fit. Keep them somewhere you will see them as a daily reminder,” she says. Everyone should devote time to exercising for a healthier body, and with a new season, a new outlook, and fresh motivation, there is nothing stopping you from achieving your fitness goals.

According to Fallon, the goal is to get everyone working out at his or her own level. Some people are not motivated enough to join a gym or even follow an exercise video at home. For those people, hiring a personal trainer may be the motivation they need, she says. For anyone starting out, Fallon recommends working with a trainer at least three times a week. f you ask children’s yoga instructor Kira Willey the career milestone she’s most proud of, the answer may surprise you.

The singer-songwriter has recorded four award-winning albums of children’s music and mindful moments, published a children’s book, had multiple yoga and mindfulness episodes air on PBS39, and heard her song “Colors” featured on a global ad campaign for Dell. But it’s a connection built with the staff and students at Donegan Elementary School in Bethlehem that causes a smile to inch across her face every time she talks about it. She’s become something of a familiar face (and voice) at the school over the last several years. She’s done teacher trainings, benefit concerts, and brought her Rockin’ Yoga programs to the school. She’s featured Donegan students on her recordings. And breathing exercises from her “Mindful Moments for Kids” record have been played across the school during daily morning announcements. “I think I’ve made something of a difference in the culture of that school, and that’s something I’m really proud of,” Willey says, noting that it’s all because of the openness of the principal and staff. In 2018, Willey led a six-week after school program for Donegan students who had to leave their homes and extended families in Puerto Rico, following Hurricane Maria’s devastation.

“They’d been through some horrible stuff,” Willey says. She worked on mindfulness and breathing exercises to help the students recognize and manage their feelings. “Any way you feel is okay,” Willey would tell them. “But don’t let anger drive the bus. Use mindfulness to pause, take a breath, and make a choice.” She’d talk about scenarios, like a student running through the hall and bumping into another. Rather than react with anger, Willey cautions students to pause, breathe, and consider the situation. Maybe the student heard a sibling got hurt on the playground and he or she is running to get there but didn’t see the student up ahead. “I can’t solve the kids’ problems, but I can try to help by giving them coping strategies,” she says. Willey would also demonstrate five-finger breath, breathing in and out as she traced each of her fingers. “It only takes about five deep breaths for your brain to get the signal that everything’s okay,” Willey says. Mindfulness is all about paying attention with kindness, she explains. “It’s not very often that we pay attention to what’s going on in our minds and bodies,” Willey says. “And when we do, we’re self-critical.” While the yoga portion of her lessons focuses on strengthening the body, the mindfulness part is exercise for the brain.


MINDFULNESS IS ALL ABOUT PAYING ATTENTION

with kindness. “Paying attention is a skill. We get told this all the time, but we don’t teach kids how,” Willey says. “When I ask kids if they ever get distracted, every hand goes up. It takes work to learn to focus on just one thing.” It’s something she encourages her own children to do. The mother of three jokes that her kids have been “my guinea pigs, my backup singers, and involved from the getgo.” Bear Breath, for example—taking long breaths in and out while imagining you’re tucked safe and cozy in a cave—is how she’d get her own son to sleep.

Not all of the donations are used—some are brand new, but unneeded by the individual or business, and all items are sold well below their full original retail price. Sometimes remodelers (professionals and the do-it-yourselfers), rather than send unneeded materials from their jobsites to the dump or landfill, take the time to uninstall things which they then donate. The ReStore is one of those hidden resources especially if you are looking to do a period renovation—where else might you find a harvest gold or avocado green appliance for that retro rec room in your basement? Taking a trip to the ReStore, you might find as you wander around the warehouse complete kitchens (including cabinets, sinks, and so forth), or a vintage sink you need for your 1960’s house. I’ve seen rows of exterior windows and doors that must have come from an older home that were donated. It’s also a great place to look for mid-century modern furniture if you’re into that vibe. What’s great about places like this is that the inventory changes over quickly, so it’s worth checking out periodically. I can tell you firsthand that they are appreciative of donations large and small. When I updated all of the hardware on my kitchen cabinets (they were a lovely 1970’s-era antique brass door knocker-style with ornate backplate), I dropped off a large box of complete hardware. FYI, the two bathrooms and laundry room also had the same hardware! The folks there are great and very helpful (habitatlv. org/restore-home) and can also address questions if you need details on the types of donations they accept. If you’re unable to drop the items off yourself, they also can pick up large items, too.

Habitat Lehigh Valley has been around since 1989, and their mission is to offer local families in need a hand up, not a hand out. The Habitat ReStore opened in January 2013. Habitat LV uses the proceeds from ReStore sales to support efforts right here in the Lehigh Valley. They like to say their store is part home improvement store, part home goods store, and part resale store. If you are someone who is environmentally conscious, ReStores across the country help divert hundreds of tons of waste materials from landfills!


3 WAYS TO DONATE 1 | DONATE ITEMS You can either drop off donations, or contact the store to see if free pickup can be arranged. Check the website for details and specifics as to what is accepted. Think about what could be used by someone else. They also can be tax deductible (check with your CPA to be sure!). 2 | SHOP FOR ITEMS If you don’t have anything to donate but still want to help, consider shopping at these stores for home project materials! If you have a penchant for thrift stores and yard sales, you may want to add the ReStore to your route. 3 | VOLUNTEER YOUR TIME There are a myriad of ways you can volunteer including customer service, furniture repair, pricing inventory, and more. You can volunteer on a build site, too! You must be at least 16 for the construction site, and at least 18 to volunteer at ReStore.

Our ReStore can also recycle latex paint at no charge. According to paint.com, an estimated 10 percent of the more than 650 million gallons of architectural paint sold each year in the United States is unused. Post-consumer paint is the largest component of local household hazardous waste collection programs and is costly to manage. Recyclable latex paint is collected by the ReStore folks, mixed locally, and then sold. You reap the savings!
