COUNTY: NORTHAMPTON ZIP CODE: 18351 POPULATION: ~ 519 About 20 miles north of Easton along the alluvial plains of Route 611, the terrain suddenly dips and with it comes the beautiful Delaware River. Settled in the early part of the 18th century to support the country’s expanding industry, a pair of bridges bear the name of the humble borough. This is Portland. Built around the logging and slate trades in the late 1700s, folks used a ferry to move lumber and other materials to New Jersey and beyond. A great covered bridge, the longest in the country at the time (775'), made travel and the exchange of goods and services between Pennsylvania and New Jersey easier. Stately Victorian homes with gingerbread cornices, built in the 1870s, share the streets with rows of Cape Cods from the 1950s and century-old structures provide a clear sense of their original purpose. Today, primarily a summer town, Portland sleeps through the winter and its 500 or so residents patiently bide their time until the weather warms. “It’s a nice quiet place,” says town historian Walter Emery, a fourth-generation Portlander and a retired teacher. Mayor Lance Prator says things liven up in the spring and summer when events like Sundae Sundays, picnics and parades bring the community together. Warmer weather also brings visitors, thousands of them, drifting down the Delaware on kayaks, boats, and inner tubes. Over the past 200 years, historic floods have challenged the town from an advancing and retreating river. Its resilient population has adapted by making their homes along streets in the town’s western village. Since taking office in 2011 Prator has worked to make improvements, but finding a way to protect the town against flooding is beyond his fortitude. “The flood that destroyed the covered bridge in 1955 was not the first or last, and a series of them from 2004-2006, proved to be a lot for us to handle,” he says.

TIMELINE Columbia, located just across the river, opened a glassworks and various saw and grist mills along Jacoby Creek to support the growing town.

A local newspaper, The Portland Enterprise, was started by L.G. Raymond to inform residents on both sides of the river.

The Columbia, NJ-Portland, PA Bridge was built. It was converted to a footbridge in 1953, but unfortunately destroyed by Hurricane Diane in the great flood of August 1955. It was replaced by a pedestrian crossing, which bears a plaque honoring its ancestor.

The railroad arrived and the population became sufficient enough to incorporate a borough.

The Portland National Bank was organized and received its charter and served the population. It closed 1932 with the economic pressures related to the Great Depression.

A man named Donald Gardner, a Portland native, introduced the country to a classic, longstanding holiday song “All I Want for Christmas is My Two Front Teeth.�

COVERED BRIDGES The earliest covered bridges in America were built in the late 1700s and early 1800s to provide shelter and, so horses wouldn't fear crossing water. They were also intended to keep wooden supports dry allowing the structures to last longer. As many as 12,000 covered bridges once existed in the United States which decreased to under 1,500 by the 1950s. Pennsylvania currently has the most covered bridges in the country with 213. Ohio is second and has 148.

Although Northeast Pennsylvania is most famous for its once-thriving coal mining industry, it was also known for a mining trade that was equally important in the late 19th century–slate. The largest deposits came from “The Blue Mountains” of upper Northampton County,

In the beginning, some schools were unsure about the decision to make the program a competitive event, but it's created innovation and led to performances that are more and more ambitious, elaborate, and skillful year over year. In 2002 theatre Executive Producer Shelly Brown learned of similar Tonystyle awards shows for high schools around the country, notably the statewide Rising Star Awards in New Jersey. Eager to offer the Lehigh Valley its own version, she used her history as a television producer to take the idea a step further and created a partnership to WFMZ Channel 69 to televise the production live. The show is entirely different every year. New performances, new sets, and a new cast of eager young talent take the stage. “It’s just gotten to be this live, wonderful, unscripted thing that people can watch. And their kids are in it, and their friends, and their neighbors,” Brown says. “Even if they don’t have kids of their own in it, they just watch and say, ‘Look at these wonderful kids. Isn’t this fantastic?’ To see the performers so excited for one another, all this heart and soul the kids have, it’s just fun. It’s the original feel-good thing to watch.” Schools work really hard with the resources they have to make the show fantastic. Brown says when she began developing the program she was concerned that schools with the most resources and largest budgets would win every year, and that’s not proven to be the case. Great performances come from hard work, preparation and heart, not expensive or extravagant sets and


costumes. Some schools have only a gymnasium to perform in while others have big theaters, but it’s the soul put into the shows that makes the difference. For many years, Louis E. Dierfuff High School in Allentown didn’t have the resources to produce a musical, but recently resuscitated their theatre program to participate in the Freddy© Awards. After only a few years they won outstanding production two years running, a first in the program’s history. What people see the night of the event is just the tip of the iceberg. An estimated 3,000 people participate in Freddy-related school programs each

While only a fraction of the thousands of students who perform or participate in the Freddy© Awards program may yearn for a career in theater, it’s still said to be an event they’ll remember and cherish forever. Since its inception, over $1 million in scholarships, internships, and community awards from the program have helped students progress into the next stage of their lives.

THE STATE THEATRE Designed by architect William H. Lee and built in 1925, the State Theatre on Northampton Street in Easton replaced the small Neumeyer Theatre in 1925. Threatened with demolition in the early 1980s, a group of concerned citizens calling themselves “Friends of the State Theatre” raised enough money to buy the theatre and established it as a 501(c)3 non-profit organization. Today, the organization continues their incredible commitment to our community and sets the standard for high quality arts and entertainment in the region. The Freddy© Awards are named after J. “Fred” Osterstock, the legendary “Fred the Ghost” of the State Theatre, who managed the company that owned the theatre from 1936 until his death in 1957.

For years, Leslie Warren of Bethlehem had been an avid gardener and motorcyclist. That is, until sharp pain in his hip started interfering with his activities. “Getting on and off the bike started to bother me,” he recalls. “Then it became painful just going up and down stairs. I consider myself to be a tough old bird, so I just sucked it up and kept going.”

As the pain persisted, Leslie tried various simple remedies. Yoga and stretching exercises helped a bit. Chiropractic care gave him some relief – but all only for a short time. The last straw came when he added a slip-sheet to his truck’s front seat, so he could slide his way in and out. His daughters laughed and said, “Dad, you really have to get that hip fixed!”

His choice of physician was easy. “My wife, Maureen, had had her knees replaced by Dr. William De Long of St. Luke’s Orthopedic Care,” Leslie said. Her outcome was so good that he was confident that he’d have similar results. Dr. De Long is the chairman of orthopedic surgery at St. Luke’s, and he’s well known in the medical field for his passion, expertise, and reputation. Although surgery is sometimes necessary, his philosophy is to “cut last”. As he puts it, “You shouldn’t be aggressive with surgical intervention. The joints you’re born with are the best you’ll ever have, so we do our best to make those joints serviceable again. You can buy time with injectables, oral medications, physical therapy – these are all ways to make joints that are starting to wear last longer.” In a sense, Leslie had already been taking that approach, but it went further under Dr. De Long’s care. “Leslie came to me in 2016,”

De Long says. “His family doctor had been treating Leslie’s pain with medication often used to treat arthritis, but he wasn’t getting enough relief. After a physical exam and X-ray, we knew that his hip problem was far advanced.” Even cortisone injections failed. Finally, as a last resort, Dr. De Long proposed surgery. “When other treatments aren’t working, and the pain and disability really affect the patient’s quality of life, we have the option of surgery,” Dr. De Long says. He and Leslie had a long discussion about the proposed procedure – its risks and benefits, the possibility of complications, and a post-op recovery plan. Thanks to the highest level of confidence that Leslie had in Dr. De Long, he decided to move forward with the procedure. “I didn’t look at the surgery lightly,” he says. “A hip replacement is a major operation. But we had already tried everything else, and the pain was still there. It kept me awake at night.” Although many surgeons use a traditional “posterior” entry, Dr. De Long favors an “anterior” approach. He explained that it’s a less complicated procedure. It requires a smaller incision, and the surgeon simply separates two muscles to gain access to the joint capsule. The posterior approach requires actually cutting muscles and tendons during the operation.

“I’ve found that such patients recover much more quickly,” he says. “In fact, 95% of them have only an overnight stay in the hospital, and are ambulatory right away, just using a cane to get around.”

“I had an incredible experience with my surgery” “When I woke up post-op, the world seemed different to me,” Leslie recalls. “And then I realized why – I’d been in severe pain for years, and now it was gone! It was a real breakthrough.” Leslie was out of bed and walking around a bit that same day, and the next day, “I raced a nurse down the hall! Of course, I was using a walker,” he laughs. “You really can’t understand how disabling chronic pain can be until you experience it yourself,” Dr. De Long adds. “Getting around becomes a real challenge, and Leslie wanted to overcome it.”

But major orthopedic surgery doesn’t end with stitches and staples. Physical therapy is necessary to rebuild strength and mobility. Dr. De Long says a course of physical therapy for posterior patients usually lasts 6-8 weeks, but just 3-5 for anterior. “But Leslie finished his in just 2 weeks. He did extremely well, in part because he was in good physical shape before the surgery.” Less-fit patients sometimes undergo a period of “prehab” work, which can help make the rehab phase proceed better. Leslie explains, “I kept working out prior to the operation, and tried to accept the pain as the price I was paying to stay fit.” His physical therapy program included stretching, muscle building, and movement coordination. “It was very helpful,” he says. “The staff there really got me going again.” Leslie has since returned to his personal exercise regimen, which includes three weekly sessions at the Bethlehem YMCA of weight lifting, and “running” on an elliptical trainer. “I had an incredible experience with my surgery and with the follow-up care,” Leslie concludes. “I know that St. Luke’s is concerned about the ‘big picture’ of people’s health, not just individual procedures.” “And I have a much better attitude toward life – physically and psychologically – since becoming pain-free.”

GET YOUR One of the best ways to enjoy the outdoors and also get exercise is by visiting any of the dozens of exceptional hiking trails available to us locally. Don’t be fooled, just because they’re largely referred to as hiking trails, most of them are also perfect for walking, decompressing from the work week, and taking in the scenery. One of our favorites is Lehigh Parkway. With roughly 7 miles of trails, it’s a perfect spot for biking, running, or walking. For a more scenic experience, visit Hawk Mountain Sanctuary. We love this one because of the incredible views. When you go, be sure to try to get to South Lookout. Trexler Nature Preserve is also one of our favorites. With almost 20 miles of trails, much of it is flat and easy to navigate. If you don’t get a glimpse of the elk and bison often seen here, be sure to stop at the Lehigh Valley Zoo located nearby. For another great trail experience, visit Ironton Rail Trail. This one runs about 8 miles, the majority as a large loop. When you’re there, be sure to also stop at Saylor Park.

OCTOPUS MEDITATIONS Ed Kerns, Clapp Professor of Art at Lafayette College, has been exploring levels of consciousness for years and using layers of paint to create an abstract understanding of awareness. His Octopus Meditations exhibition, which opens at 6 p.m. on April 7th at Brick and Mortar Gallery in Easton, is another manifestation of his perception of consciousness. Paintings from the series have also been selected for permanent display in Rockwell Integrated Sciences Center. Kerns was inspired by Bernardo Kastrup’s article in Scientific American about levels of consciousness, Sy Montgomery’s book The Soul of an Octopus, and numerous collaborations with neuroscientists and biologists over his 45-year career. “It’s something I have been thinking

about for years in visual collaborative work with neuroscientists, computer scientists, and biologists,” he says. Octopus Meditations is another manifestation of consciousness, he says. “I wondered what octopus consciousness might look like,” Kerns says. “They are brilliant. They have nine brains and an integrated network, which presupposes a different kind of awareness or consciousness. Humans have a central processing unit with the brain and neurons intimately connected with our body.” “Their perception of the world, however, is likely to be very different from ours given the distinctive organization of their nervous system,” says Elaine Reynolds, associate professor of biology at Lafayette College. Kerns’ art envisions it through an imaginary world.

Scheduled to open in 2019, the $75 million Rockwell Integrated Sciences Center is the largest capital project in Lafayette College history. It will be one of the country’s most innovative collegiate buildings and house scholars teaching and conducting research in biology, computer science, environmental science, and neuroscience.

“Aging gracefully, in place” is everyone’s goal. Fortunately, St. Luke’s University Health Network offers many convenient programs to help us accomplish that. Here’s a quick look at three of them.

THE CENTER FOR POSITIVE AGING Located at the St. Luke's North in Bethlehem, the Center offers several options to address physical, emotional, and social wellbeing issues related to aging. “Many of our patients are self-referring,” says Patricia Strupp, MSW. “Others are referred by a primary-care physician, or by family members.” The assessment process begins with a thorough evaluation. A physical exam, review of medications, psychological testing, and

diagnostics are performed as a function of the individual’s needs. Screenings are done to evaluate depression and memory loss. A comprehensive review of current medication use is completed to assess utilization, side effects, and potential drug interactions. Simple diagnostic tests may include lab studies, x-rays, and imaging. “The process ends with a meeting between patient, caregiver, and the St. Luke's team,” Strupp concludes. During the meeting, attendees discuss the team’s findings and recommendations for action or follow-up. A full medical report is sent to the family physician. Caregiving can be physically and emotionally draining, but St. Luke’s Caregiver Support Group offers relief. Its regularly scheduled meetings provide a welcome mix of emotional, educational and social support to help each other solve problems, as well as share stories and resources. Knowing that you’re not alone in your struggles contributes to maintaining personal, physical and emotional health while providing care for loved ones.


The Caregiver Support Group meets on the 4th Thursday of every month at 5:30 p.m. at St. Luke’s North, 153 Brodhead Road, Bethlehem.

SENIOR EMERGENCY ROOM "Medical emergencies are stressful for everyone, and can be especially so for seniors," says Carrie Fleckenstein, Sr. Network Director, Senior Care Service. St. Luke’s Bethlehem Campus is the only hospital in the Valley with a Senior Emergency Room focusing on the needs of patients 75 and older. This program is a team approach to meet the needs of older adults. St. Luke's has ER nurses with specialized geriatric training who evaluate patients 75 and older with a risk assessment screening. The results of the risk assessment help the treatment team determine next steps such as physical therapy consults for fall risk, pharmacy for medication assessment, and comprehensive geriatric consults. Case management work with the patients and their caregivers to schedule follow up appointments and provide other recommendations and resources.

SENIOR-FRIENDLY MEALS Most of us remember mealtime tables surrounded by family members, with lots of interaction and stimulation.

Many participants go every day, forming their own little communities. It’s a friendly gathering place, where they can socialize, meet new people, sometimes even hear a guest speaker.

Also available at St. Luke’s Center for Positive Aging, seniors or caregivers of seniors may choose a Mindstreams® Cognitive Health Assessment. This technology provides unbiased, standardized performance testing of an individual’s memory, executive function, visual spatial perception, verbal function, attention, information processing speed, and motor skills. Ultimately, these convenient tests are available and used to evaluate a patient’s cognitive health and identify deficits early on. The benefit enables patients and caregivers to develop an appropriate course of treatment before a potential medical issue or disease progresses.

But for seniors, mealtime is often experienced in solitude. St. Luke’s lets seniors break out of that lonely situation with its ongoing Older Adult Meal Program. Offered at the Anderson, Monroe and Warren campuses, it’s a simple way to enjoy nutritious food at much lower prices while catching up with old friends (and making some new ones). “These events are open to the entire community, not just hospital patients and visitors,” Fleckenstein says. “All meals are prepared fresh daily, and provide some really healthful eating choices.” For $3.99, patrons aged 65+ get an entrée, salad, side dish, vegetable, dessert, and a 12-ounce drink. “You can’t get a meal like this anywhere for $3.99,” she says. “You couldn’t even make the meal yourself for that price!”

move for fitness and fundraising Around 8:00 a.m. on Sunday, April 22, thousands of dedicated runners will assemble at William Allen High School to participate in the St. Luke’s Half Marathon and 5K – the oldest such race in the Lehigh Valley.

And this year will be no different – with one exception. “This is my first time in the 65-69 age category, and I hope to win that category,” he says. “My goal is to come in around an hour and 50 minutes. It really gets me motivated on cold mornings.”

But he’s not the only one from St. Luke’s to participate. “We promote the race throughout the network,” he says, “and we get great participation. Between volunteers and runners, there are usually about 250 St. Luke’s employees involved.”

Among the entrants will be Frank Ford, the network’s recently appointed Chief Integration Officer. An avid runner for most of his adult life, Frank’s been involved in the race – corporately and personally – for many years.

How does he manage to fit race training into his busy schedule? “You have to make it a priority, a discipline,” he says. “It becomes the way you start your day.”

And the race offers a benefit beyond fitness and enjoying outdoor activities. Funds raised by the St. Luke’s Half Marathon and 5k support the Lehigh Valley Road Runners Kids Races, scholarship programs for education and equipment, and expanded communication with parents.

“I arranged for our presenting sponsorship in 2010,” he says, and worked closely with the Lehigh Valley Road Runners. “The race fits well into our mission of health, wellness and promoting an active lifestyle.” He’s also taken part in the race every year since then.

Although he routinely runs about 30 miles per week, he gets serious about the race in January. In addition to his usual mileage, Frank pushes harder on weekends. “I add a mile each week to those sessions,” he says. “By the time the halfmarathon comes around, I’ll be able to go even further than the 13.1-mile course requires.”

DIRECTIONS In a large bowl, stir together mayonnaise, eggs, Worcestershire, Sriracha, hot sauce, mustard, Old Bay, parsley, and lemon juice until mixed thoroughly. Place crab and lobster in a separate large mixing bowl. Add 1/2 cup wet mix and 2/3 cup panko to crab, folding together gently. (Note: Do not add the crab to the wet mix; always add wet mix to the crab.) Gradually fold in remaining wet mix until the ingredients hold together. If mixture is too wet, add more panko. Use an 8 ounce scoop to form two large crab cakes. Place them on a lightly greased baking pan and broil on a lower rack on in the oven for 12 minutes or until golden brown.

DIRECTIONS Dust short ribs in flour, season with salt and pepper, and sear all sides of meat in a lightly greased pan. In a separate pan, gently sauté garlic in oil for a minute, then add bacon, and onions. When onions and bacon are nicely caramelized, transfer the short ribs to a large baking pan or casserole dish, top with onion-bacon mixture and add thyme, rosemary, celery and carrots to pan. In a separate pot, bring water, beef stock, and honey barbecue sauce to a boil and simmer for five minutes. Pour the liquid mixture into short rib pan, cover, and braise in a 250°F oven for 4 hours, checking periodically. Serve short ribs and sauce spooned over freshly mashed Yukon gold potatoes.

"Camelot, located nowhere in particular, can be anywhere," wrote Arthurian scholar Norris J. Lacy. But if you were to ask thousands of families benefitted by Camelot for Children here in the Lehigh Valley, they’d say that Camelot is located on Emmaus Avenue in Allentown. Camelot for Children was founded by Patricia Mullin and Kostas Kalogeropoulos more than three decades ago. It was created as a place for children with pediatric cancer, cystic fibrosis, and various developmental disorders, including cerebral palsy, autism, and Down syndrome, to connect with other children facing the same challenges. The inspiration for Camelot for Children was Mullin’s own kids. “My children dealt with severe illness with great courage,” she said. “They were the inspiration for Camelot for Children, which provides a meeting place for ill children and their families for the purpose of providing friendship and support.” In 1987, Camelot for Children served just 20 families. That number has grown over the years to thousands of families. Today, Camelot for Children offers year-round social and educational opportunities, such as Teen Night parties, Sunday Children’s parties, an Afterschool Help Program, and a full-day seven week summer camp. The organization serves children with disabilities and chronic or terminal illnesses in a supportive, developmentally appropriate, enriching environment.

otherwise feel misunderstood or burdened by having a sister or brother with extraordinary needs. These siblings are invited to take part in many of the events at Camelot. Camelot for Children also helps give respite to the parents and caregivers of children. These parents find empathy and compassion in other parents who truly understand what it’s like to parent special needs children. Parents are given the opportunity to leave their child in a nurturing and safe environment, or stay and watch how their child interacts with other children, learns, and grows.

“My children dealt with severe illness with great courage” The calendar of events at Camelot for Children is varied and growing. It offers events such as an Afternoon Help Program, where volunteers help Camelot kids and their siblings work on their homework and practice other social and developmental skills. The program also gives Camelot parents and caregivers a night off from their homework routine. Other events include Teen Nights, such as a recent Valentine’s Day Social, and St. Patrick’s Day Night, where Camelot kids were encouraged to dress up. These children and the many volunteers enjoyed dinner, singing, and dancing. Upcoming events include a Teen Night Fiesta in April. For Earth Day, April 22nd, Camelot kids plan to plant seeds for their gardens at home and at Camelot. Camelot could not be Camelot without its many volunteers – from the student volunteers who are paired with each Camelot camper to assist them to get the most out of each camp day and spend countless hours holding monthly parties

and planning fundraising events, to the Board of Directors, who consistently demonstrate their strong compassion and commitment to Camelot, investing numerous hours and financial support to ensure that Camelot remains strong and vibrant for many years to come. “There are so many people who have been integral to the growth of Camelot,” said Mark Jaindl, President of Camelot. “Our staff and Board of Directors, both past and present, have invested their time and talents to ensuring that we can offer the programs that our Camelot children and their families need. In addition, our volunteers have played an important role as they have put in countless hours in so many ways to help Camelot. WHAT TIME DO YOU TYPICALLY GET UP FOR WORK AND HOW DO YOU START YOUR DAY? The specific time varies as a function of the golf season and weather. Generally speaking, guests arrive to play golf as early as 7:00am during peak season (May-August), so I arrive at work at 6:00am. This enables me to review scheduled activity for the day and hold a brief meeting with staff.

WHAT DOES YOUR TYPICAL DAY INVOLVE? Other than keeping a very close eye on the weather, every day is different. Like other business professionals, there are days when I’m in my office answering emails and phone calls all day. Thankfully, there are other days where I’m on the lesson tee with students or conducting golf clinics. At Brookside, we have a very strong golf event schedule, so a lot time goes into preparing and administering tournaments and golf activities. It's extremely detail driven to ensure guests have the best experience possible.

Although there are always opportunities to get out to play, most PGA Professionals are consumed with providing a great golf experience.

It’s a great game for so many different reasons, but the best part is meeting people and personalities from all walks of life. I suppose like most sports, there’s an instant connection between players. For golf, the connection goes deep, and it’s lifelong. ​

HOW OLD WERE YOU WHEN YOU MADE THE DECISION TO BECOME A PGA PROFESSIONAL? WHAT WAS THE MOMENT OF TRUTH? If I remember correctly, I was 14 or 15. Throughout high school, I worked part time at the Allentown Municipal Golf Course. When the time came to decide what was next, I wasn't ready to move on from golf. I admired the PGA Professionals I worked for, so I thought the golf business could be for me. I knew it would be a career that I could be passionate about. Upon reflecting, it was a simple decision to go into golf professionally.

The fleeting appearance of many springtime tastes, both exotic and familiar, only seems to add to their ephemeral appeal. Culinary experts celebrate the most sought-after examples of nature’s early bounty, and home cooks who follow their lead will discover how seasonal veggies can reinvigorate both the plate and the palate. Think of it akin to the way that a man who wears a suit to work might choose a bright, eye-catching tie to distinguish his appearance.

“It’s really just a matter of letting the ingredients talk to you. They have a lot to say” To explore the mindset and creative process of a chef, we invited Shawn Doyle of Savory Grille in Macungie to prepare an impromptu spring-themed meal in the kitchen to visually document this gastronomy-in-action. Shawn was presented with a market basket of varied fresh produce from which to choose accompaniments to a maindish protein. “When we jump seasons into spring, it's a transition into lighter fare, and I look forward to the change of tastes, like garlic scapes, morels, fiddleheads, ramps, things like that,” he says. “These ingredients have such good flavor by themselves, you don’t want to do a lot to them—but they can accentuate whatever the main course is.”

seasonal inspiration For the entrée, Shawn selected Frenchboned spring lamb chops, which were seasoned simply with salt and pepper, seared in a cast iron skillet and finished by roasting briefly in a hot oven. Perusing the produce, he decided that the rhubarb looked “really sexy,” and, in fact, these chunks of the vibrant, rosy-hued stalks brought an unexpected architectural element to the plate. The rhubarb was cooked in a basic simple syrup of white balsamic vinegar and sugar until fork tender—which is a markedly different approach from this area’s traditional Pennsylvania Dutch method of stewing rhubarb into a sauce, often prepared with other fruits such as apples, pears, or strawberries. The tart-sweet rhubarb proved to be an excellent complement to the mild succulence of the lamb. After considering making a salad with shaved asparagus—a departure from

The accompanying salad made with these tender greens, which brought texture to the plate, was dressed in a bright vinaigrette made the juice of a blood orange. (This exquisite, jewel-toned winter fruit remains in season through April and should be used as often as possible while available. It’s a long wait until it returns to market.) For a companion beverage, Shawn selected Magic Hat #9, a not-quite-pale ale with a citrusy finish. And with that bubbly flourish, the mission was deemed a delicious success—though any one of a dozen or more possible variations would have been equally delectable, and as easy to make on-the-fly.
