Long golden sunsets gleam across stretches of cornfields, while shadows deepen behind the softly rolling hills. The air is still, but the mechanical buzz of four-wheelers can be heard nearby, and every house dotting the bucolic countryside seems to have a barn or old work truck out back. This is Schnecksville, a small unincorporated village of North Whitehall Township. In 1766, German immigrant Adam Schneck was the first to settle in Schnecksville; and in 1840, his son Daniel became the founder of the village, following the passage of a treaty that allowed the sale of lands previously held by Native Americans. In the following years of development, the village became home to laborers, including wheelwrights and brick makers, as well as the popular Trexler Farms Orchards. Today, people often move to Schnecksville to escape the hustle and bustle of the city. Many make the relatively quick commute into Allentown for work. But once back home, they’re able to take a deep breath, smell the acres of freshlytilled earth, and appreciate a simpler landscape and lifestyle. That’s not to say there’s nothing going on in Schnecksville—far from it. There’s a steady stream of visitors (at least 200,000 a year) spending money as they travel to and from the village’s main attractions: The Trexler Nature Preserve and the Lehigh Valley Zoo. This has helped create a more vibrant community and allowed some of the village’s lesser known attractions to get the attention they deserve.

The Main Attractions The Lehigh Valley Zoo The 29-acre Lehigh Valley Zoo located on the Trexler Nature Preserve has 65 exhibits, 130 different species of animals, and more than 340 individual animals from North America, South America, Africa, Australia, Europe, and Asia. Conservation efforts, both at the local and global level, are part of the zoo’s mission. “We focus on local, national, and international species for conservation efforts,” says Pete Fox, vice president of marketing and operations at the Lehigh Valley Zoo. Locally, they focus on the spotted turtle. Nationally, the Mexican gray wolf. Internationally, the African black-footed penguin. Additionally, the zoo donates to Giraffe Conservation Fund, Sahara Conservation Fund, and the Southern African Foundation for the Conservation of Coastal Birds.

But that’s not all. “We acquire animals from other zoos accredited by the Association of Zoos and Aquariums,” says Fox. “Animals such as our Mexican gray wolves, scimitar horned oryx, Masai giraffe, and African black-footed penguins are a part of Species Survival Plans, which are programs used to maintain and grow the zoo population with goals of releasing some animals back into the wild.” The zoo’s most unusual resident, the scimitar horned oryx, has been determined to be extinct in the wild due to loss of habitat and over-hunting in the late 1980s. “Efforts to reintroduce the scimitar horned oryx back into its native range of Chad are currently underway, with approximately 40 of the animals now released,” says Fox.

So, what else should you see at the zoo? If you’re interested in something cold blooded and scaly, the Reptile & Amphibian Discovery Center houses species like West African dwarf crocodile, eastern hellbender, eyelash viper, and poison dart frogs. If something tall, cute, and slightly goofy is more your style, then head over to see Murphy and Tatu—the zoo’s two Masai giraffes—at the recently opened St. Luke’s Giraffe Barn, Giraffe Exhibit, and Kiannala Giraffe Feeding Deck. Asked what animals and exhibits are the most popular among visitors, Fox says it’s a three-way tie between the penguins, giraffes, and sloths. “All are very popular in their own way,” he answers, diplomatically. Three new things in store for the future: Fox reveals that the zoo is looking to bring in an Aldabra tortoise, one of the oldest animals to roam the earth; the slumbering bobcat may soon be out-felined by a much larger kitty; and plans for a tiger exhibit are well within reach. The Trexler Nature Preserve The Trexler Game Preserve (now the Trexler Nature Preserve) was established by philanthropist Gen. Harry C. Trexler in the early 1900s to save the American bison, elk, and whitetail deer from extinction. Today, the 1,100-acre wildlife protection area is still home to these animals, and much of it is crisscrossed with more than 20 miles of scenic nature trails for hiking, mountain biking, and horseback riding.

This idyllic landscape provides a beautiful vista for photography, painting, and other artistic reflections. It’s also great for fishing in the well-stocked Jordan Creek, where trout season is just beginning (there’s even an area designed for use by children and handicapped people along the creek). Archery and hunting areas exist on the North Range, and activities such as snowshoeing, skiing, and camping for scout troops are allowed, depending on the weather. Recent focus in the Preserve has been in fighting an invasive plant species called autumn olive from the North Range and converting the area back to native grasses and habitats. Because it’s a public property, the park is open from dawn until dusk every day of the year and is completely free to the public. “It’s a wonderful place to get out and enjoy nature. It’s really right in the backyard of everybody in Lehigh County,” says Robert Stiffler, Lehigh County Director of Parks.

The Schneck House is an unadorned two-story log cabin on a piece of land once owned by Thomas and John Penn. “As a child, I was always interested in the outdoors,” says Stacey. “Mom would take us to botanical gardens and public gardens, and we would go on hikes in the mountains.” But her education at Temple University sealed the deal, she says, by stressing the importance of connecting to the environment through the plants you choose and the way you design.

She admits, taking those ecological principles and bringing them to the home owner is a tall task at times. “We always try to do right by the client and the environment,” says Stacey. “That may mean explaining why we won’t select a particular plant species. Sometimes it costs us a job, but sometimes they really listen and understand, and we gain a longtime client and friend.” And it’s that strong commitment to their mission that’s partly responsible for Parkland’s success. “People are more inclined to listen when you have a specific reason for doing something,” says Jurate. “Maybe you’re advising them why not to fertilize constantly. Or that just because you see a bug doesn’t mean you need to use 20 insecticides.” The Parkland staff—which also includes Stacey’s husband Timothy Nash, a landscape architect and certified pesticide applicator—uses integrated pest management practices. They focus on observing and identifying the pest, identifying the level of damage, deciding if and when to treat, and choosing whether to treat chemically or organically. “It is often largely a monitoring process,” says Stacey. “We only treat problems.”

parkland nurseries Personalized Lawn and Garden Design While the Parkland staff clearly has the environment in mind in everything they do, the landscape architects also take their clients’ property and preferences into account when designing outdoor spaces. The shape of the property, whether it’s shady or sunny, whether it’s wet or dry, and what the owner wants to use the land for are all crucial to the design. So are the owner’s tastes, interests, and time constraints. “If you say ‘gardening’ to the clients and they run, you know you shouldn’t be designing something that will have them going out and working in the yard every day,” says Jurate. Instead, the Parkland team might plan something that would be easier to deal with such as a large grouping of plants, rather than an intricate border. The staff also takes care to select plant varieties that appeal to the homeowner’s aesthetic. If they want something showy, there are plenty of native plants available to fit the bill.

“Dried leaves and hollow stems provide a more natural environment for everything that uses the space,� she says, adding that plants can be sources of food and cover for wildlife. “There are entities that need this type of environment to live,� she says. “Allow things to keep their course.� You should also think about what lies beneath. “There are lots of things we don’t see in the soil,� Stacey says. “Be aware of the fact that you’re living with other organisms, and while something may not suit your fancy, maybe it suits something else’s. You may be using a chemical to save a plant, but the chemical taken up by the plant lives on longer than you can see.�

We hear so much music in a day—on TV, at restaurants, blasting from car stereos—that we often take it for granted. But from time to time, it’s good to remind yourself just how amazing it is. After all, no other species on the planet makes music! “Music-making is one of the activities that make us distinctly human,” says Paul Murphy, PhD, chair of the music department at Muhlenberg College. “We do it for what we get out of it—enjoyment—and that’s what makes us special.” Beyond just enjoyment, listening to music and playing it can have a profound impact on a child’s social and intellectual development.

THE BENEFITS Music allows children to express themselves without even speaking, and helps them stretch their minds just by listening. “They might not know what a piece of music is about, but they can ponder it and try to make some sense of it,” says Murphy. Budding musicians also develop a real-world sense of space and time as they explore the differences in pitches and varying durations of notes and rests. Self-discipline and teamwork come into play, too—first in learning the instrument or vocal part, and then by working with other musicians to create something unique and beautiful. The social benefits are also impressive. “We host jams at our stores, mainly with adult players, but kids are welcome,” says Paula Taylor, co-owner of Meadowood Music in Blandon, PA. “Your age, background, and education don’t matter, because everyone’s there to make music.”

Saving for College: Why You Need a 529 Plan BY FREDERICK JERANT

Is college on the horizon for your kids? If so, you’ll probably face some extreme sticker shock when confronted with the bills. The average cost of a four-year private college was $35,260 for the 2017-2018 school year, according to the College Board. But on the priciest end of the spectrum, you could pay up to $60,000 per year. You should obviously be saving, but simply socking money away can be counterproductive. “Historically, tuition costs have increased five percent each year,” says Jeffrey J. Febbo, CFP, president of his Easton-

Parenting is Hard-The BY JENNIFER BRIGHT REICH Back in 2009, I found myself wishing I could phone up my kids’ pediatrician during every moment of parenting confusion and panic. After a while, an idea hit me: I should create a book series featuring tips from doctors who are also moms, but only tips that they’d actually use themselves. I decided to call the books, and the experts in them, the Mommy MD Guides. To make these books a reality, I first joined forces with Rallie McAllister, MD, MPH, a family physician in Lexington, KY. Today, we’ve grown to a team of 150 physicians, including several Lehigh Valley doctors such as Eva Mayer, MD, a pediatrician at St. Luke’s University Health Network. “When I first learned about the Mommy MD Guides, I thought, what an amazing idea!,” says Dr. Mayer. “A doctor may need to guide a patient based on set scientific guidelines, but

The best part: “As long as you use the money in a 529 Plan for educational purposes, the withdrawals are federal tax-free,” says Febbo. If you use the money for anything else, the withdrawn funds will be taxed and you’ll have to pay a 10% penalty. In the past, the money in a 529 Plan could only be used for college. Now you can use up to $19,000 per year to pay for private elementary and high schools. You can also apply the funds to public schools outside of your tax district. If there’s still money remaining in the account after your first child graduates, that balance can be assigned to another child. Of course, many factors come into play when saving for college, and Febbo urges parents to always discuss their particular situation with a qualified financial professional.

One in eight women in the United States will be diagnosed with breast cancer in their lifetime, making it the most commonly diagnosed cancer in women—a pretty sobering statistic. The good news: Breast imaging has come a long way since the late 1960s, when modern mammography methods were developed.

state-of-the-art breast imaging technologies to help detect breast cancer at its earliest, most treatable stage, including breast MRI, automated breast ultrasound, and low-dose 3D mammography (aka digital breast tomosynthesis). These advanced tools are reassuring for many women and may even save your life.

The ACS says that women should have their first screening mammogram by age 45, and that they should have the choice to start screening as early as age 40.

By 1976, mammograms were officially recommended by the American Cancer Society (ACS) for the detection of breast cancer. Today, physicians continue to use mammography and a number of

I was in my early 40s when I had my first mammogram at the Women’s Imaging Center at St. Luke’s North in Bethlehem. I was nervous—a very good friend of mine had recently fought a battle with breast cancer, and the thought of it loomed large in my mind—but I was pleased at how quick, efficient, and painless the process was. I was also extremely relieved to learn I was cancer-free. Having my first mammogram go well put me at ease.

This results in earlier detection of breast cancer and can decrease the number of return visits and unpleasant biopsies.

Today, mammograms can be better and safer than ever—especially if you go to a facility with modern equipment and experts specifically trained in breast health. St. Luke’s offers screening mammograms at Women’s Breast Imaging Centers throughout the Greater Lehigh Valley and offers the lowest dose 3D mammography in the region.

“This means that a woman’s personal risk of breast cancer and her specific breast density are factored into determining the best screening regimen for her,” says Dr. Russo. “If a woman has dense breasts, this may result in a combination of screening exams.”

In addition to mammograms,

“For years, the trade-off of 3D mammograms was the increased radiation dosage,” says Joseph Russo, MD, section chief of Women’s Imaging at St. Luke’s University Health Network. “But that’s not the case anymore.” St. Luke’s is in the enviable position of having waited for the latest generation of 3D equipment, which delivers the same low-dose radiation as the standard digital mammography equipment that’s been in place for decades. “In other words,” says Dr. Russo, “we are able to detect more cancer without putting patients’ health at an increased risk.”

A MORE RELAXING EXPERIENCE Even thinking about having a mammogram can stress out some women. To ease this anxiety, St. Luke’s offers mammograms in a room known as a Sensory Suite, which features a flat screen TV that display relaxing natural scenes and sounds in a variety of themes—seaside, garden, or waterfall. “Women can control what they see and hear during a mammogram, which is tremendous,” says Dr. Russo. “Moreover, it’s a symbolic expression of how every woman is different.” To further enhance the patient experience, St. Luke’s became first in the region to offer the Dueta remote, a device that offers patientcontrolled compression during a mammogram with the help of a technologist. This technology is available at the new Stroudsburg location.

PERSONALIZED OPTIONS FOR HIGH-RISK WOMEN If you’re a woman at high risk of breast cancer, or if you find a lump or other concerning symptom, St. Luke’s creates a screening approach based on your personal risk factors.

Place cucumbers and onions in a large bowl and toss with sugar and salt. Let mixture rest overnight. Transfer cucumber mix to a sealable half-gallon glass jar or divide among several smaller glass jars. Bring the apple cider vinegar, water, mustard seeds, black peppercorns and turmeric to a boil. Strain the hot liquid over the cucumber mixture and cool to room temperature. Cover and refrigerate for 24 hours before eating. The pickles will keep in the fridge for up to two weeks.

Cut chicken into 1-inch wide slices and set aside. Mix remaining ingredients in a large bowl. Place chicken in the bowl of marinade and stir to coat. For the spiced pineapple syrup: Place all ingredients in a large saucepan over low heat. Stir mixture slowly until just boiling. Remove from heat and strain through a fine mesh sieve. Cool to room temperature and then store in refrigerator. (yields about 1 quart) For the cocktail: Pour mezcal or tequila, spiced pineapple syrup, triple sec, lime juice, and pineapple juice into a cocktail shaker; add s ice and shake well. Rim a rocks glass with smoked sea salt and fill with fresh ice. Strain the cocktail mixture into the glass. Garnish with a pineapple wedge.

Process cashews in food processor until fine, but not pasty. Spread ground cashews evenly on a plate. Season both sides of chicken with salt, garlic powder, and pepper, then dredge in cashews. Melt butter in large nonstick skillet over medium-high heat. Place chicken in pan and cook until browned, 4 to 5 minutes per side. Flesh should be firm. For butter rum sauce: Melt 1 tablespoon butter in small skillet over medium-high heat. Add shallots and garlic and sauté until shallots are tender. Reduce heat to low. Slowly whisk in rum, lemon juice, and remaining butter. Add pepper as desired. Cook for 1 minute, stirring occasionally.

Like most farmers, Lynn Trizna works long hours and is hyper-focused on the weather, a common fixation in her profession. But unlike most agriculturists, this energetic 30-year-old earned a bachelor’s degree in Urban Studies from the University of Pittsburgh before deciding that her true passion lay in a different field, quite literally. After an intense, hands-on education in organic agriculture and agronomy, Lynn became the project manager of St. Luke’s Rodale Institute Organic Farm (different than the Rodale Institute in Kutztown), which launched in 2014 at the St. Luke’s Anderson Campus in Easton and now boasts 11 cultivated acres.

After walking through the greenhouse and hoop house to check which seedlings are ready to transplant outdoors, Lynn meets with assistant manager Stephanie Zimmerman-Schmitt to develop a game plan for the staff. “With farming you have to be flexible about what you can accomplish because so much is out of our control—mostly weather. Is it too wet to be out in the fields? Then maybe we should work on harvesting since we can’t plant or do tractor work. If it’s dry, we might focus on prepping fields and laying plastic or mulch for weed control and water conservation.”

Lynn provides a food safety training review for interns and hired workers before heading to the fields. “What’s interesting about this project is all the education that goes along with it. They get to really understand the farm and what goes into growing produce—I’m so


proud of them!” As Lynn and the group begin the labor-intensive task of planting, she demonstrates form and technique. “It’s backbreaking work, but you if train your muscles and move in certain ways, you can accomplish things in a certain amount of time.”

After loading the van, Lynn grabs a sandwich to scarf down as she makes deliveries to the Anderson, Bethlehem, and Allentown campus kitchens. “Chef Paul Meola at Anderson has become our farm liaison and helps coordinate ordering with the other locations. He’s a gardener himself and understands the language of farming.” When she catches the eye of Chef Gary Hall in Bethlehem, he asks when the Brandywine tomatoes are going to be ready—despite knowing they’re several months away. “I grow those for him, and that’s how our conversations always start.”

While record keeping is often a rainy day project, Lynn decides to enter some data from notebooks that she and Stephanie carry in the field. “That helps with planning. We can remember what worked and didn’t work, but we don’t necessarily remember when we do a certain thing.” They also take a lot of pictures. “Everyone always has their phone in their pocket. My phone is like a diary: If there’s a weird bug, I take a picture of it. Because cover crops are important to soil health—they increase organic matter and biomass, and attract pollinators—we refer to those photos to plan timing.”


4:30 p.m. It’s a nice day, and Lynn isn’t ready to stop working. “Farming is a stress release for me and I love doing it. During this quiet time, I can do smaller tasks that are a bit more enjoyable or take care of little things that don’t need a whole crew, like fixing a leak in the irrigation system. We try to use our manpower very strategically.”

5:30 p.m. Lynn caps the day with her favorite activity—weeding. “I get bummed out if I can’t weed, which people think is crazy. It’s hard work but I love doing it. That’s why I’m a farmer.” As a further reward, Farmer Lynn is treated to a fabulous farm sunset.

It’s often said that the eyes are the windows to the soul. But in reality, eyes are the windows to knowledge. As kids, they’re how we learn about shapes, colors, letters, numbers—and the limitless ways in which they can be combined in the world around us.

But not every child is graced with perfect vision, and that can lead to difficulties around the home, in the classroom, and on the sports field. What does a parent do then? And how can you determine whether there’s a problem in the first place? Here, we get the lowdown from a Lehigh Valley optometrist.

Common Eye Problems in Kids “The most common eye problem I see in kids is near-sightedness,” says Steven Eiss, OD, owner of Eyecare of the Valley in Pennsburg and former president of the Pennsylvania Optometric Association. That occurs when you have difficulty seeing things that are at a distance. Near-sightedness is usually discovered

by in-school screenings, but school screenings have limits and easily miss several other eye problems. These include farsightedness (difficulty clearly seeing close-up objects), astigmatism (uneven focusing of light on the retina), and amblyopia (the so-called “lazy eye”), according to Dr. Eiss. All of these can impact a child’s ability to learn. The good news: These problems can be detected readily during a comprehensive eye exam by an optometrist. “These exams will look at overall eye health,” Dr. Eiss says, “and they’re recommended for children ages one, three, and five, and every two years after that.” And yes, an eye exam for a one-year-old is more important than you think. hues. But at six months, their power of vision sharpens. And any undetected problems at this age could affect one or both eyes, perhaps permanently. “At one year of age, we look for things like retinal blastoma – that’s a cancer of the retina. It’s not common, but it does occur. We can also check for congenital glaucoma, congenital cataracts, or other conditions that might impede the eye’s proper function. These conditions are easier to deal with at younger ages than if they’re found later,” he adds. By the age of three or four, a child’s eyes have basically stopped developing. Prekindergarten exams are a simple way to be sure your child can properly perceive the bombardment of visual information that school delivers via books, smart boards, and tablets.

• Losing one’s place while reading. Does your child skip lines


or lose her place entirely? This can be a sign of an eye muscle problem, or perhaps astigmatism.

• Frequent headaches. Frontal headaches can come from a farsighted child’s struggle to clear up uncorrected blurry vision. “Some other indicators can be trickier to spot,” Dr. Eiss says. “If your child tends to shy away from doing close-up work or reading, it might mean that they can’t see well enough to do the task but don’t understand that it’s not supposed to be that way. Instead, they might just say, I can’t do this!, or avoid reading. And that can prevent them from keeping up with classmates.”

Preventing Problems Before They Start There are proactive steps parents can take to reduce the chances of future eye problems, too. “We know that UV can contribute to cataracts and macular degeneration,” he says. “That’s why sunglasses that offer UVA and UVB protection are a good idea.” Active children can also benefit from wearing protective sports glasses. “Every

few years, I see a child whose eye gets hit by a ball or poked by an elbow, and the result is often retinal detachment or traumatic glaucoma,” says Dr. Eiss. “They’re important, especially if your child is already wearing glasses or contacts. And they’ve become more fashionable, too—they’re not like the ones Kareem Abdul-Jabbar wore.” We get only one set of “windows” in our lives, so it’s vitally important to care for them properly. “It’s like any other form of healthcare,” says Dr. Eiss. “Early detection and treatment is always better.”
