Societies have been celebrating the tradition of Christmas for centuries. In Northern Europe, specifically the Nordic countries of Denmark, Finland, Iceland and Norway, it was known as Yule. On December 21st, the winter solstice, families brought evergreens in from the cold as a reminder of life and set logs on fire as a promise of good fortune. On December 17th, just before the onset of winter, Ancient Rome celebrated Saturnalia, a festival of food and drink in honor of the god of agriculture. Alternatively, for some Roman soldiers and government officials, the celebration of Mithra, god of light, occurred on the 25th because it was believed to be the holiest day of the year. By the fourth century AD, the rise of Christianity led to other reasons to celebrate when Pope Julius I officially declared the birth of Jesus as December 25th, which became known as Feast Day of the Nativity. Evergreens were decorated with apples symbolizing the Garden of Eden, eventually becoming ornaments. The story of Santa Claus also began in the fourth century with Nicholas, a beloved Turkish bishop. Familiar to some as Nicholas the Wonderworker, the anniversary of his death became known as Saint Nicholas Day, which was celebrated on December 6th. Tradition has it that good children woke to gifts from the generous saint, and bad children woke to nothing. Fifteen hundred years later in America, professor and writer Clement Clarke Moore reimagined the legend of Saint Nicholas. In 1822, he wrote “The Night Before Christmas,” a poem about a good-natured saint named Santa Claus who was pulled by a group of reindeer and came down the chimney on Christmas Eve. Like “Saint Nick”, Santa Claus gave gifts to children and spread good cheer. An American icon was born. No matter what your traditions or beliefs are, take time this year to spread good cheer. Everyone knows the legend of Apple’s humble garage-based origins. Full-service kitchen remodeler Kitchen Magic, headquartered in Nazareth, has a similar tale to tell–but this one’s actually true. The company began in a “mole hole!” Rewind to 1979. According to James Mayers, Assistant Vice President of Operations, company founders Jost (“Joe”) and Reine Fleck had been operating a basement waterproofing business. A particularly dry year put a severe crimp into it, and the Flecks sought a different income stream. They chose cabinet refacing–a home improvement method that can substantially refresh a kitchen without the time and expense of installing completely new cabinetry. Existing cabinet frames are reinforced with a layer of plywood topped with a veneer of actual wood or laminate material, carefully color-matched to the new doors and drawer fronts. Complementary hardware and molding finish the look.

Keebler has Ernie; Frosted Flakes has Tony the Tiger. But since the company’s founding, Kitchen Magic’s mascot has been the humble gnome. Those bearded little fellows are known throughout Europe for their many fine qualities–they’re creative, industrious, take a good deal of pride in their work. And while they’re never seen by humans, the results of their labors are outstanding. Little wonder, then, that Jost and Reine chose the gnome to represent Kitchen Magic’s commitment to high-quality craftsmanship. Reine’s late father, Stanley Waite, was a professional commercial artist. In 1979, he created the illustrations that adorn Kitchen Magic’s logo to this day. Come to think of it, gnomes are also rumored to live underground–perhaps they were looking after Joe when he was working in the “mole hole!”

It’s a concept that makes sense. “Eighty percent of what you see in a typical kitchen is the doors and drawers,” said marketing manager Linda Fennessy. If the cabinetry itself is still solid, there’s little point in tearing it out. And refacing is a permanent solution. Joe developed an application method that was so reliable, he offered a “lifetime of home ownership” warranty. The company’s first office was in a flood-prone basement in Allentown, a cramped spot that Joe referred to as “the Mole Hole.” He announced the business with a pricey gamble–a full-page newspaper ad–that paid off. Today, the mole hole is long gone; after several relocations, Kitchen Magic settled into its current headquarters in Nazareth in 2010–and that represented a major change for the company. “It’s the first building the company has owned,” Mayers said. “For years, we operated in rented facilities, in scattered locations. Even when we were in a single office complex in Phillipsburg, our offices were on the second floor of one building, while our fabrication shop was in another. Now, all of our operations are in one 62,000-square foot facility.” While its heart may be in one place, its sales operations cover New Jersey, New York, many of the New England states and
Delaware. Its scope of products and services has likewise expanded to include all aspects of kitchen remodeling–from simple refacing jobs to building and installing completely new cabinets, shelves, countertops, backsplashes, and floors.
Other companies may tell you they ‘go the extra mile’ for customers. But at Kitchen Magic, we go the extra five miles! Kitchen Magic is still a family-owned company. “Joe and Reine wanted to have a business that they could pass along to their daughters Cindy, Renate, and Lotte, which are all Senior Vice-Presidents,� Mayers said. “They grew up with Kitchen Magic, and they have a real love for it.� President Brett Bacho is married to Lotte, and her sisters Renate Sprung and Cindy Purcell are deeply involved in its operations as well. But that doesn’t mean Kitchen Magic operates in a familial bubble. “We realized the importance of building this business beyond just the family members,� Mayers said. “It’s a good way to bring in new ideas and new approaches.� One example is its embrace of “lean manufacturing� procedures and processes. “One of the main principles of lean manufacturing is to protect jobs, not eliminate them,� Mayers said. “It emphasizes becoming more efficient, so there will be more time available for job training and learning about overall operations.� Kitchen Magic’s openbook management technique helps employees better understand how their own performance contributes

Unlike its competitors, Kitchen Magic relies on in-home sales. Rather than requiring its customers to travel miles to a showroom, Kitchen Magic’s team of 30 sales reps visits pre-qualified candidates to make their presentations. “Basically, we bring the showroom to you, with samples of doors, countertops, tile, drawer pulls and hinges and other hardware,” Mayers said. “You can get a better idea of how each component will look in your own home that way.” And while “in-home sales” may conjure images of loud, pushy sales reps who won’t take “no” for an answer, Kitchen Magic’s staff uses no high-pressure tactics. “Even if you’re just thinking about a kitchen makeover, call us,” Fennessy said. “The presentation lasts between 45-60 minutes, and there’s no obligation.” Kitchen Magic also maintains a traditional showroom, which offers appointmentonly visits. That low-key approach is extremely effective; Mayers said fiscal 2017 revenues were over $27 million. “Our customer service team works tirelessly to assist our customers throughout the installation process. They handle every aspect from delivery of materials to fabrication scheduling to installation. It’s a huge undertaking, but our staff makes it look easy.” After a project is sold, a drafter comes into the home and takes precise measurements for each door to ensure a seamless fit later. Kitchen Magic doors are constructed with an engineered furniture

During the day, you’ll find Courtney Dech, 28, managing The Joint Coffee Co. in Bethlehem. She may even serve you a soda or latte with fresh sage from her garden. But after hours, in her grandmother’s second kitchen in Easton, Dech makes magic happen with candles, body oils, bath salts, herbal teas, and cleansing sprays.

Since 2014, Dech has been making holistic self-care products. “I always made these things for myself, but I wanted to give them to the world,” she says. “We can’t care for anybody else if we can’t take care of ourselves.”

Dech’s company, Quartz in the Clouds, has found success in local craft fairs and on Etsy. The name is a play on Dech’s name, Court. “I feel like I’m kind of airy and spacey. That’s where the clouds came from,” she says.

“I want to put good energy into people’s hands and let them use it.” While baths are Dech’s favorite self-care ritual, candles are her main focus right now. Her soy candles come in a range of scents designed to calm and soothe, including rosewood and black currant, honeysuckle, nag champa—think: incense—and the holiday limited edition, spiced chai. Dech experiments with adding crystals to her products, something she says can give energy to the salts, candles, sprays, and teas.

homemade oasis “Charged crystals are charged minerals from the Earth,” she says. “If they’re passed around a lot, they’ll need to be cleansed and recharged. You can charge them by moonlight or burying them underground, or running them underwater.” Dech found power in these crystals long before she started creating her wellness products. “I got into a spiritual way of living,” she says. “I’ve always been Earth-conscious.” Dech grows her own vegetables, flowers, and herbs. She often uses her herbs in her products and hopes to do more of this in the future. “I started making cleansing mist sprays, and my favorite right now is a sage cleansing spray,” she says. “You spray it on your body and around your room.” Many of Dech’s products have a focus on dreams. She created a spray for pillows and a tea that she says helps with dream recall.
WHERE BOOTY MEETS BEAUTY
On the flip side, she has a tea that helps people sleep. “If I dream too much I wake up exhausted,” she says. “This tea helps with sleep and there’s been a good response.” As Dech looks ahead, the ultimate dream—if you will—is to have a small apothecary shop that also serves as a studio workspace. “I want to share what I see as beauty in the world,” she says. “I want to put good energy into people’s hands and let them use it.”

we love Owner John Trapani and Chef/Owner John “JP” Pukanecz have teamed up to open this exciting new restaurant in South Side Bethlehem. ZEST brings a new twist on some of the award-winning flavors of its Lehigh Valley sister restaurant, Grille 3501, such as the crispy lobster risotto appetizer, sea scallops, and filet, along with a few carryovers like the crab and mango spring rolls appetizer, crispy sesame chicken dumplings appetizer, and short ribs entrée. The chef will, of course, introduce a selection of original dishes available exclusively at this innovative new eatery, like the Pork Cheek and Veal Rib Chop. We’re looking forward to opening ZEST at a similar time in the development in the South Side of Bethlehem with some exciting things that are coming up in that part of Bethlehem. Our chef visits some of the local farms, trying different vegetables and ingredients and building and honoring relationships that evolve.

The view! Being on the sixth floor with two sides of the restaurant made completely of glass—there’s nowhere else you’re going to be able to see directly over the Fahy Bridge, across the north side of Bethlehem, to City Hall, with the Steel Stacks to the East, and you can get a great view down 3rd Street and see the fireworks from Sand Island.
With the New Year ahead, we’re going to start to kick off in-house events. We’ll also open it up for private dining, which we aren’t necessarily opening up right away. We have two dining areas that can be completely private or used for dinner service. The bigger area holds 40 people and the smaller one holds around 25. There are also multiple other spaces that can be booked for semi-private events including the best corner in the restaurant as a small cocktail party and the enclosed balcony with sliding doors. We won’t have that open until spring, but you’ll have access to a partially enclosed balcony.

This month, 14-year-old Ryan Baki will embark on an incredible adventure: Hiking to the peak of the tallest freestanding mountain in the world– the 19,340-foot Mt. Kilimanjaro in Tanzania. But he isn’t doing it just for the experience; it’s the linchpin of his efforts to raise money for a global charity that benefits people in third-world countries.

He arrived at this point through a convergence of several disparate life experiences. Here’s how they all came together. Ryan, a ninth-grader on a math/science track at Moravian Academy, is also the son of Dr. Fayez Baki, owner of Keystone Dentistry in Bethlehem and Nazareth. Over the past few years, “I’ve been shadowing my dad at work, so I’ve been exposed to many kinds of procedures on people’s teeth. It’s really intriguing to see before-and-after views of his cosmetic work,” Ryan said. (Little wonder that he hopes to enter the dentistry field himself, someday.)
“Operation Smile will fix the condition for about $240 with a 45-minute surgery.” Among his many activities at Moravian Academy is membership in the “Operation Smile” club, which promotes that international charity. The nonprofit medical service was founded in 1982 by Dr. William (Bill) P. Magee, Jr. and his wife Kathy after an overwhelming medical volunteer trip to the Philippines. Far more people needed reparative surgery for cleft palates or cleft lips than their small group could provide. That inspired the couple to create the organization that has since repaired well over 200,000 instances of

If you’ve never seen anyone with a cleft palate, it’s probably because, in the US, the condition is easily remedied shortly after birth. But people in poorer countries often lack the money or access needed for the procedure. “Operation Smile will fix the condition for about $240 with a 45-minute surgery,” Fayez said, “and their doctors will teach local physicians the proper techniques.”

Both Ryan and Fayez are experienced mountaineers. “Last November, we hiked the trail to Machu Picchu [an ancient fortress city in Peru, at nearly 7,800 feet above sea level], and I also spent a day in the Swiss Alps with my uncle and cousin,” Ryan said. “His performance on Machu Picchu was impressive,” Fayez added. “Among our party of seven, he did the best of all.” As Ryan neared ninth grade, talk turned to their next challenge–and they chose Mt. Kilimanjaro. “When we reviewed the ninth-grade curriculum, we agreed we should support a charity. Ryan wants to be a dentist, and when he learned about Operation Smile, he decided to use the trip to raise money for it,” Fayez said. Ryan has set a lofty goal for his fundraising work. “Originally, I hoped to raise $5,900,” he said. “That’s the elevation of the mountain above sea level in meters. Right now [mid-October], we’ve raised over $7,000–so my new goal is $19,000, the height of the mountain in feet. I think I can hit that if I work hard enough.” Fayez is quick to point out that he is underwriting the cost of their excursion
himself. “We have also covered the costs of several fund-raising events,” he added. “It’s important for people to understand that every dollar Ryan raises will go directly to Operation Smile; none of those funds will be spent on our trip.”

Their trek will be arduous. “Technically, Kilimanjaro is not a difficult climb,” Fayez said. “It’s more about perseverance and dealing with the elements. “About 45% of the people who attempt the climb turn back. They either try to go too quickly, or completely underestimate the impact temperatures and the elements will have on them.” The Bakis will follow their guide, who will lead them along a set route with pre-determined stops. Native porters will move ahead of the group, each one carrying about 50 pounds of supplies. “There are no buildings along the way,” Ryan said, “so we’ll be eating and sleeping in tents that the porters set up.” During their seven-day trip, the Bakis (and the rest of their group) will pass through five distinct climate zones. Temperatures can be as balmy as 70°F at the base… and drop to a bone-chilling -20°F at the summit. The air’s oxygen level drops dramatically as you go higher; at the peak, it can be 50% less than at the base. In fact, the mountain creates its own weather, and climbers are cautioned that it’s completely unpredictable. The final leg of their journey will begin at midnight, so they can reach the summit before the sun rises too high. “At that elevation, it’s extremely cold, but the sun is very intense. We will stay there only about 30 minutes before starting back down,” Fayez said.

Ryan spends an hour on cardio training at the gym every other day (bike and treadmill, for example) and plays soccer after school to build up his strength, endurance, and wind; Fayez concentrates on basic cardio–“I play a lot of sports,” he says, “mainly tennis,” and, when we spoke, he said he planned to ramp up his intensity as the climb draws nearer. holiday meal A chef’s secret to a stress-free, delicious holiday meal? Timing. Domenico Lombardo, chef/owner of The Mint in Bethlehem, doesn’t balk at hosting the extended family for the holidays because on the morning of the actual feast, chances are he’s doing very little cooking. “People underestimate how far in advance they can prep for a meal,” Lombardo says. The chef, who has nearly three decades of cooking under his belt, says he starts three to four days ahead. “There hasn’t been a holiday I’ve prepared where I haven’t had everything but the turkey ready.” He works on his casserole sides and stuffing–dishes he knows will be heated to a high temperature again before being served. The morning of the feast, he just has to pull them out to get them to room temperature before cooking to their proper internal temperature. Lee Chizmar, chef/owner of Bolete in Salisbury Township and Mister Lee’s Noodles in the Easton Public Market, agrees that planning is key for a stressfree meal. He gets the prep work like peeling carrots and chopping potatoes out of the way so he’s not spending the whole holiday in the kitchen.

Even the cocktails can be made well before guests arrive, says Robert van Thiel, beverage director for Molinari’s in Bethlehem. “When my wife and I host, to ease some of the headaches, we batch cocktails,” van Thiel says. For the holidays, he often makes a batch of Manhattans - a classic for cooler weather that also works well with rich, heavier dishes.
Break it down Another time saver? Break down the bird instead of roasting the whole thing. Chizmar often brines or smokes the legs, sears the turkey breasts, then finishes them in the oven at a low temperature. He’ll use the bones to make a rich, flavorful stock for gravy. “People say, ‘You’re going to do what?’” when Chizmar says he’s going to break down the bird. “But no one fights me on it after they try it.”

Play with flavor but play to the crowd While van Thiel loves trying new wines, and playing with flavors at his bar, the Northampton Community College mixology instructor knows the holidays aren’t when he wants to do a lot of experimenting. “If half your guests don’t like gin, don’t go with a gin drink. Chizmar says when he’s hosting, he’s happy for any extra thing he doesn’t have to cook the day of the holiday. “People get nervous I’m going to critique their food,” Chizmar jokes. “I’m just happy to be with everyone and eat.” On Christmas Eve, Chizmar says certain family members have dishes they’re just known for, and bringing all the dishes together makes for a delicious meal. There are shrimp cocktail and oysters, his Mom’s marinated bay scallops, twice-baked potatoes, creamed onions and mushrooms, greens, stuffed ribeye, and a Crab Imperial that Lee and his dad make every year. “One of the things that bring families together is sharing food,” Chizmar says. Don’t feel like cooking? Bring a bottle of something. Van Thiel says often a host will plan to serve cocktails or a wine with their meal, but it never hurts to bring a bottle of chilled sparkling wine or a dessert wine to enjoy with dessert. Italian Vin Santos (with notes of caramel and honey and not overly sweet) or French Sauternes (a sweeter pick with notes of honeycomb) are van Thiel’s go-to host or hostess gifts.

Don’t put liquid in the roasting pan for a turkey. Lombardo says it’s the No. 1 mistake as the steam renders all the fat into the bottom of the pan, making for a good gravy, but a very dry turkey. Go empty-handed. Even professional chefs and mixologists appreciate the offer to contribute to the meal. Go overboard on too many specialty cocktails. Van Thiel says no more than two cocktails for a crowd of 20 (preferably one with clear liquor and one with brown), in addition to other beverage choices.

Add fat. Lombardo recommends adding bacon or bacon fat to make a moist, flavorful turkey. Write yourself a cooking timeline. What goes in when? At what temperature? Write it out. Test the pour spout of your beverage container before adding the cocktail. Avoid clogs in the spout by nixing the chopped fruit. Get creative with your celebration. Chizmar and wife Erin Shea host an oysters and champagne party for 80-90 family members and friends on Thanksgiving morning. “Everyone really loves it as a great way to start the holiday and take a break from cooking,” Chizmar adds. “For me, it’s one of my favorite times of year because I don’t get out of the kitchen very often.” Ask for help. “Even I say ‘I’ll do x, y and z. But I could use some help with…,’” Lombardo says.

DIRECTIONS In the biggest pan you have, add the onions, garlic and 1/3 of the butter. Once the onions have softened, add the kale. Do this in batches to make room, and remember–a lot of raw kale equals not a lot of cooked kale. Once all of the kale has been packed in and carefully turned over a few times, dump in the hot sauce and cover with a lid. Keep everything moving on medium heat. Once the kale has wilted and braised, remove from heat. Remove the lid and add the remaining butter in chunks.

SWEET POTATO GRATIN INGREDIENTS • 10-12 SWEET POTATOES, SLICED SLIGHTLY THICKER THAN POTATO CHIPS • 1/2 POUND SLICED GRUYERE • 1/2 POUND SLICED JARLSBERG • HERBS DE PROVENCE • 1/2 POUND BUTTER MELTED (JUST MELTED, NOT SEPARATED) • ALLSPICE • FRESH SAGE LEAVES • SALT & PEPPER • 2 - 9X13 NON STICK BAKING PANS • GRATED CHEESE, OPTIONAL
DIRECTIONS Use part of the melted butter to thoroughly grease one of the 9”x13” pans. Then begin lining the bottom with the thinly sliced sweet potato, adding a layer of sweet potatoes on the bottom and around the sides of the pan. Spread some butter, salt, pepper, a light dusting of herbs, allspice, and scatter a few fresh sage leaves on each layer. Then add another layer of sweet potatoes on the bottom. Layer the cheeses and the potatoes intermittently, ending with another double layer of potatoes on top. Pour remaining butter and another sprinkling of all seasonings. Cover with plastic wrap then aluminum foil and bake at 350°F for 45 minutes. Be sure to put a sheet pan under the pan in the oven to catch the inevitable spillover of deliciousness. After 45 minutes, remove the foil and plastic wrap and return to oven for 20 minutes or until it becomes more colorful. This presents an option to add more cheese, either the same or grated cheese. Remove from oven and allow to cool for 10 minutes. Place another layer of plastic wrap and foil over the pan (not tight), then place the second pan on top and weigh it down evenly (I prefer bricks wrapped in foil or large cans of tomatoes or soup, etc. Allow it to sit with the weight for an hour minimum. This compacts everything and makes it look super clean when cut. I prefer it be served warmed through but not piping hot and if need be this can be done ahead of time (days even) and re-warmed to serve.

Nestled between centuries-old trees and historic mansions, The Restoration Space in Fountain Hill is an integrative health care practice focusing on whole-person health—that means healing the mind, body, and soul to achieve a balanced, pain-free life. If words like pseudo-science are rushing to mind, make no mistake: this is evidence-based care, but with your best interest at the center of it. And yes, they take insurance! At the heart of The Restoration Space sit two physical therapists, Megan Eyvazzadeh, PT, DPT, OCS, and Julie Spencer, PT, DPT, committed to bringing a different type of physical therapy practice to the Lehigh Valley—where the first priority is the patient, not the bottom line.
How it all Started “Sixty-percent of people with chronic pain have some sort of trauma history,” says Eyvazzadeh, who became frustrated with the common model of physical therapy treatment early in her career. “Physical therapists are trained to do real movement science and analysis, and if you’re seeing two to three people at a time, especially those with deeper trauma issues, it’s not the way people get the best care.” Trauma isn’t new to Eyvazzadeh—she spent years working in the shock trauma department at a Baltimore hospital. But continuing education triggered an important revelation: patients who experience trauma tend to heal slower, despite the best of efforts.

“When we’re dealing with pain or injury associated with any sort of trauma— natural disasters, car accidents, sexual trauma—I quickly found that people don’t heal the way they do in the textbooks. All the factors for healing can be right, but they simply aren’t healing.”
“There’s nutrition, mindfulness, and self-awareness– things that just one practitioner could never give them alone.” After a particularly frustrating day, Eyvazzadeh found herself venting to her neighbor who happened to know of another physical therapist, Spencer, with the same frustrations. They’ve since recruited Pilates instructors, counselors with trauma experience, an art therapist, massage therapists, an acupuncturist, an energy practitioner, and a registered dietician nutritionist—all independent contractors—to The Restoration Space to approach ailments from all angles.
What They Treat Since opening in February, they’ve treated patients for a myriad of conditions, including low back pain, plantar fasciitis, incontinence, chronic pelvic pain, athletic injury, chronic pain (from conditions like autoimmune diseases, stress, and fibromyalgia), balance issues, falls, and oncology scar tissue patients. Many of these patients have failed traditional therapy, are seeking one-on-one personal approach, or haven’t seen a doctor in years—sometimes because they weren’t believed.

The Shoppes of Patients often come in for a specific complaint and end up receiving treatment for a variety of issues—be they mental, physical, or emotional—on the search for the “root cause” of their pain. But for as many conditions as they’ve seen walk through the door of this South Bethlehem converted mansion, there’s one thing that remains at the core of The Restoration Space’s mission: women’s health. Since moving to the Lehigh Valley 13 years ago, Spencer has worked diligently to raise awareness of pelvic girdle and pelvic floor issues in the community. But normalizing conditions that are, frankly, difficult to talk about has been slow. “What has been the most frustrating is there is so much we can do for these patients, but they’re not even aware of their options,” says Spencer. “There’s nutrition, mindfulness, and self-awareness—things that just one practitioner could never give them alone,” and definitely not in the typical 10- to 15-minute office visit.

WHY: It doesn’t seem possible that the fuzzed-out rhythms and walls of sound coming from Bethlehem, Pennsylvania could be produced by anything other than a fully-fledged guitar band.
